I’ll admit I went to Kink’s baroque bordello atop the Mission Tuesday night to check out the fine china and torpedo breasted, roped-up female statues  – but I stayed to watch men in leather pants give away monies to local angels. 

Those dashing fellows would be Folsom Street Events, who used the ambiance of the Amory’s penthouse to donate $326,161 in 2010 proceeds from the Fair, Up Your Alley, and Magnitude to their 16 beneficiary non-profits. It was a gentle flog on the ass of a reminder to anyone who says that perverts never did anything for our city, not to mention a welcome sign that our great grant-making institutions haven’t completely gone under yet.

Who got their sticky paws on the giant cardboard signifier? Everyone from Pets Are Wonderful, the support agency for low income patients and their animals, to the Queer Cultural Center, to SF Sex Information (for a full list of the leather set’s lucky ones go here). The presenter and announcer of all this do-gooding fuzziness celebrated our momentouxxx surroundings by thanking Kink creator Peter Acworth, who was padding about in baggy jeans and flip-flops, for using the space “even if we don’t enjoy it quite the way you do – or maybe we do, just in different clubs.”

FSE executive director Demetri Moshoyannis told me that the most that his organization has ever donated in a year is $350,000 – but at close to $4.5 million over the history of the fair, Folsom’s making the SF’s charitable contributions look like they just got done skinny dipping in a frigid mountain pool. 

But who can focus on non-profit pissing matches when there’s cock ring cake to be had? Not to mention the well-scrubbed, epically proportioned dinner tables on which one ponders setting down one’s app plate, the chains hanging becomingly from the rather sumptuous ceilings, and the fifteen-foot high oil painting in the Amory stairwell of a well dressed woman offering scraps to a dignified greyhound and crouching blonde clad in nothing but a leather doggie mask?

“Did you notice the statue?” a spiky haired attache in leather pants inquired in the midst of our reluctant retreat from the Armory’s philanthropic festivities. We had, possessing the facility of sight and rudimentary powers of observation – she stands four feet tall and occupies the center stage of the sitting room upstairs. 

“Did you know that Peter Acworth’s mother sculpted that?” We are treated to the history of the busty bust, who apparently went through three drafts before Acworth told Momma that her lady’s tits were of a prominence suitable for placement in his debauched drawing room. 

As this conversation took place alongside a glass case containing Kink’s gift shop, we had the chance to admire the red and black towels for sale (at one point complimentary clean ups for the on-screen talent, recently put into production when guests started filching them for their own). And then off into the night we went, grateful to see that San Francisco’s sex community is still well endowed in the areas of financial generosity, artistic vision, and commercial enterprise.

DINE When, in the course of human events, you come across a wood-fired pizza oven in a seafood house — in a seafood house tending in the direction of a sushi bar, no less — you probably blink twice, wondering if you’ve somehow mixed up your meds. But no: step into Skool and there it is, flickering on your left. There is a small catch (!) to stepping into Skool, and that’s finding it in the first place. The restaurant, which opened early in July, lies in a nameless border country surrounded by Mission Bay, Potrero Hill, and the gallery district.

Fifteen or 20 years ago this bricky warehouse neighborhood was deserted at night, and even today, you’d never think you were at the corner of 16th and Valencia streets. Compounding the mystery is the reticence of Skool itself; the restaurant’s street face is a row of tall steel posts, like some kind of barrier to keep tanks from rolling through, marked only by a graphic of an orange fish.

From a checkpoint-like gate you trek steadily uphill, around three sides of an open-air patio, until you finally step inside and find yourself under a firmament of halogen-spot stars, on a loft-like concrete planet forested with gorgeous wood furniture, some pieces of which (I am thinking in particular of the long communal table) look as though they could have come from the workshop of Gustav Stickley himself. It’s sleek, elegant, open, and warm, and the wood makes all the difference.

The restaurant’s style of cooking both does and doesn’t belong in such a setting. It, too, is sophisticated and urban, but — unlike the interior design — it too often goes too far and seems complex for the sake of being complex. The servers are well-drilled in explaining the nuances of the menu and the ingredients that grace the various specials, but the recitations, in their extensive and ruthless precision, made me feel as if I were watching one of those pharmaceutical ads on television, with their windy warnings about side effects that can include drowsiness, dizziness, and sudden death, not to mention certain phenomena lasting more than four hours.

The kitchen’s tendency seems to be not to let high-quality ingredients speak in their own voice without being interrupted — a kind of culinary version of SPIRD (smartest person in the room disorder). We were assured, for instance, that the cubed halibut in the ceviche ($11) was “sashimi grade,” yet it was inflamed with serrano chili and cilantro — two items I love, but they can overwhelm the delicacy of pale-fleshed fish. House-cured sardines ($10) held up a little better, with their oiliness and firmness of flesh not disappearing in the presence of raspberried onion, herb oil, and pillows of ripe avocado. But still, it was a struggle.

A straightforward bowl of squid-ink spaghettini ($17) turned out to be a treasure trove of complexity, with Monterey Bay squid and local white shrimp bathed in a broth of lemongrass, red curry, seaweed butter, and diced tomatoes. These flavors were harmoniously blended, and the look of the dish was striking — a mass of writhing purple-black filaments, like a wig from a character in a Pixar movie — but it did seem to lack a clear direction. A lot of voices, skillfully directed, can become a choir, but they can also turn into a tower of Babel.

Spiced panko salmon ($18) — a thick, shapely filet crusted on one side with bread crumbs — was served atop a sauté of green and yellow wax beans. It was moist and flavorful, but so rich I felt as if I was eating a stick of butter. The fish had been “pan grilled” — in butter?

Some of the best dishes had nothing to do with the sea. The mushroom risotto ($20) was beautifully cooked al dente, and its troupe of wild fungi (among them enoki, buna shimeji, and eryngii) was enhanced by a strong charge of truffle oil, along with plenty of grated Parmesan cheese for that final nutty-salty touch. And (from the pizza oven!) a wonderful flatbread, or coca ($15), like a slimmed-down focaccia, with Laura Chenel goat cheese, sun-dried tomatoes, tapenade, and greens.

The dessert menu, of all places, was an oasis of calm amid the frenzy. A rich slice of chocolate tart ($6) was subtly enhanced with cardamom, while a pear tart ($6) was a disciplined reimagining of that old autumn classic from France, tarte tatin — flaky housemade pastry, fruit in its prime, some whipped cream, not much too it, really. And yet: from less, more.

Live Shots: Dance Brigade, 11/12/2010

They are part bird and part woman — the dancers in the all-female dance company Dance Brigade, in a current program entitled “Manifest!val for Social Change: Like Oil and Water, from Gaza to the Gulf,” moved between flight and rest.

Their dance tells the story of women in the Middle East, their movements hinting to a tragic ballet and the music being a version of the classic score from The Dying Swan. The dancers ability to combine pure grace and total frenzy was incredible, creating both an image of beauty and struggle in the same instant. Through Nov. 20, Dance Mission Theater will host fifteen different dance groups, as part of Dance Brigade’s Manifest!val for Social Change, which is a great opportunity for anyone to see some amazing local dancers, but also a chance to promote social awareness and community.

Red-eyed and happy at the Cannabis Competition

Somewhere amidst the marijuana energy drinks and exuberantly filled bags of Volcano vapor at yesterday’s fourth annual Cannabis Competition, a young lady named Lacey was making a name for herself. 

“Sales have been excellent – we’ve cornered it! I think the best sellers have been the shortbread cookies. You can have them alone or we also make them into filled sandwiches,” said the fetching entrepreneur of Laced Cakes, who sat with her girl friends behind stacks of individually packaged marijuana edibles, all attired in vintage approximations of boho homemakers.

The trio joined proud purveyors of marijuana energy drinks, handmade color-changing coffee mugs, and raw organic hemp rolling papers — not to mention the more urban, less crunchy beats than Competitions past by Bayonics, Manicato, and Mystic Roots — in a celebration of gourmand greens. Set in Terra’s be-succulented patio and indoor space, the Competition was a happy, if slow moving refutation of the fact that pot heads can’t party.

Lesson of the day? There is life post-Prop 19. Even while plagued with last-minute venue kerfuffle and copyright blowback from the OG cannabis cuppers, High Times, the Cannabis Competition hit it big with SF indian summer weather to die for and an enthusiastic crowd. “It was an extremely successful event in terms of people having fun,” said Kevin Reed, CEO of the Green Cross, the pot delivery service that sponsored the event. 

“I think that [the venue change] probably did keep a lot of people home – anything that has to do with the police department will do that – but it did get us some mentions in the press,” Reed continued. He said that a few vendors also backed out at last minute for fear of conflict with the law. 

But the trepidation of the competition suited Lacey (real name: Courtney, she didn’t want her surname in the press) just fine. Laced Cakes has been around since 2007, but lack of consistency with her inventory – “you know how that happens,” she smiles – led to Lacey losing her regular selling gig at the Green Door, a SoMa dispensary. 

Six days before the Competition, the buyer at the Green Door mentioned there was an empty vendor booth still available – would Laced Cakes like an expo debut? Lacey sprung into action and baked up some product, even learning a recipe for caramel that looked like a success from where I was standing and admiring her cakes. Her other offerings? Zucchini bread, vegan butter, take and bake cookies with their own little tubs of frosting – all “medicated,” all preciously packaged and ready for action. 

Which was kind of a shame, because by the time I ran across her booth, I was in no shape to eat any more weed. In fact, by the end of the eight hours of Cannabis Comp, it was fair to say that not many were – particularly the judges of the Patient’s Choice contest itself. I spoke with one judge, who paid $250 for the privilege of weighing in on the Bay’s best buds. The Green Cross mails these brave arbiters 43 strains of weed (a gram of each), 17 kinds of weed edibles, and eight weed concentrates. 

Ahem, a mere 10 days before the competition. Clear your schedule! Reed says some patients – you have to have your medical marijuana card to participate – hosted tasting parties with their similarly-carded friends to help share the burden of the position. 

I got a chance to check out the tiny microscopes included in the judge’s package of fun (the Green Cross hands them out to all its patients who place orders with them). Equipped with a button to turn regular or black light on your bud of choice, the ‘scope revealed a tiny new land of purples and greens and complex crystal formations. The whole thing looked a lot like some dendrite-heavy sea creature. An pungent anemone, maybe. Or maybe I was just stoned.  

Makes you think differently about marijuana – the intent, surely, of a peaceful party packed with pot. Maybe the rest of the state’s not ready for legalizing the dro, but it would seem that for San Francisco, a lot of the victory would be a symbolic one. Symbols, man.

Ampey!

In 2008, Adia Tamar Whitaker took a trip to Africa, where she encountered ampey, a Ghanian children’s dance for which you need to be on your toes in more ways than one. It became the inspiration for Ampey!, in which she explores complexities surrounding identity, family, and home. For Whitaker, that “return” trip had been become a voyage of discovery — though not in the way she anticipated. Presented as a work in progress last year, one could sense Ampey!’s artistic potential; it already included a powerful percussive “sitting dance.” Perhaps the best aspect of the two-year Performing Diaspora Project is its offer to artists like Whitaker to keep working on what needs to be done. Masaki Batoh

Incorporating elements of Krautrock, folk, free jazz, and all manner of indigenous instrumentation, enigmatic Japanese psych collective Ghost are the heirs to such earlier cosmic emissaries as fellow countrymen the Taj Mahal Travelers. Founder and core player Masaki Batoh takes a similarly eclectic approach in his non-Ghost releases, whether turning out a chugging acoustic cover of Can’s “Yoo Doo Right” or mournful dirges, as on his recent collaborative albums with Espers’ Helena Espvall. Sankai Juku

Butoh is perhaps one of the most enigmatic dance forms. Emerging in the late 1950s in opposition to the Westernization of Japan, butoh often explores the more grotesque side of human nature. Unlike other dance forms with a syllabus of movements, butoh may be completely conceptual, hyper-slow, playful, scary, or none of the above. It defies definition. Audiences can begin to wrap their minds around butoh as Sankai Juku, the legendary Japanese butoh company, tours to San Francisco to present Hibiki: Resonance from Far Away, a piece said to plumb poetic beauty. Meditative and hypnotic in its simplicity, this award-winning work is a signature of butoh. (Wiederholt)

Known to much prefer holing up in the studio in his home base of Oslo, Norway, than performing live, this is a rare opportunity to catch a set from one of the more interesting electronic music producers around. Lindstrøm first made a name for himself as a remix artist, reworking tracks from the likes of LCD Soundsystem, Roxy Music, Franz Ferdinand, and the Boredoms. His solo albums are full of frosty disco beats, heavy synthesizers, classic funk influences and enough of an adventurous streak to appeal to more than just the dance floor crowd. (Landon Moblad)

“A Journeyman’s Papers”

Rare is the gallery show at which the owner of said gallery steps out from the wings and shows his or her own work. Risks! No one wants to be seen as the next megalomaniac Thomas Kincaid, drunkenly careening into the heavily curtained schlock-nests of Midwestern housewives, right? No fear of that kind of showboating here. Rob Delamater, co-owner of dapper cognoscenti-magnet Lost Art Salon, creates voluptuously genteel, generous-spirited pieces that fit right in with his gallery’s excellent collection of rare vintage modern works. Block-printed portraits of the wanton Bloomsbury group, evocative and crepuscular figure studies, and, perhaps most intriguing, softly primitive compositions evoking the California coastline painted on vintage book covers are the gorgeous, midcentury-type whistle stops on Delamater’s artistic journey. George Clinton and Parliament Funkadelic are going to be at Yoshi’s next week. That’s cool. But instead of waiting to enjoy what’s sure to be a great reminiscing on where funk’s been, why not check where it’s going? Dãm-Funk (pronounced “Dame Funk”) lays down a DJ set at Som Bar. A DIY DJ, producer, and recording artist, Dãm-Funk uses the same playbook as Ariel Pink, digging deep into genres and musical styles that were left by the wayside to create distinct sounds. While I can’t guarantee that he’ll break out the Animal Collective (so many records to choose from), word is that he’ll bust out the keytar. (Prendiville)

Wow, I just found the frikkin’ treasure trove! Probably the coolest-sounding upcoming event is led by “Mr. Science,” a.k.a. Chris Giorni, founder of Tree Frog Treks, and starts with checking out his extensive stash of amphibians and reptiles. After bonding with uncharacteristic mini-fauna, grab a slice of pizza to sustain your explorer spirit onward toward the hidden ponds, sacred groves, and endless discoveries of western Golden Gate Park. Specializing in impossibly fast blast beats and meticulously researched Egyptological lyrics, Nile has carved out a niche as one of the scene’s most revered death metal acts. The South Carolina quartet hews closely to the genre’s traditions, playing intricate, epic compositions that lean heavily on tremolo picking and sheer speed. Replicating such extreme chops live is no mean feat, but previous appearances by the band have been flawless and incendiary, particularly when they launch into epic closer “Unas Slayer of the Gods.” Whether you’re there for the tales of bloodthirsty pharaohs or just excited to bask in the copious beats-per-minute, Nile will take no prisoners. For punk-tinged indie rockers Thermals, consistency is the name of the game. Never straying too far from its bare-bones, guitar, bass, and drums format, the Portland, Ore.-based band has now released five albums of punchy Buzzcocks-esque rock ‘n’ roll. Its newest, Personal Life, was produced by Death Cab for Cutie’s Chris Walla and includes a nice mix of slower, more drawn-out tracks and infectious, pound-on-your-steering-wheel bursts of adrenaline, such as lead single “I Don’t Believe You.” (Moblad)

When it comes to sardines, you have to think outside the earthquake shelter. On the flavor-o-meter, the tinned food of last resort (served on tarps with Saltines and stale water) bears no resemblance to its wild, fresh self. Even a humble sardine doesn’t deserve to be jammed in like a sardine, oil slicked, and left to age in the farthest reaches of the cupboard.

As several San Francisco eateries are ably proving, sardines, when treated with respect, are a tasty addition to the dining table. And healthy. And sustainable (they’re on the Monterey Bay Aquarium’s Super Green list!) Everyone from Andrew Weil to the Italian grandmother we all wish we had proclaim the virtues of the pungent silver herring. And with good reason: its tiny, 25-calorie body is packed with essential fatty acids, iron, protein, and calcium.

Let’s face it, the good people of Sardinia didn’t get their beautiful skin and convivial personalities from eating schweinebraten on spätzle. They’re all high on EFAs. Sardine EFAs.

PESCE

Pesce was one of the first and finest restaurants to introduce San Franciscans to the joys of sardine cuisine. The casual Russian Hill restaurant offers small plates of fish, pasta, and vegetables (and please, can we call it cicchetti, as they do, instead of “Italian tapas”?) patterned on the cooking of Venice. Pesce serves its sardines (all from Monterey Bay) simply — grilled, on a bed of mixed greens and pickled vegetables with a wedge of lemon. The result is tart, briny, and clean. If you’re still on the fence about sardines, Pesce is the place that will convert you to a bona fide a-fishyanado.

RAGAZZA

In Provence, shmear means aoli. They put it on meat; they put it on vegetables; they put it on fries; they put it on fish. Heck, they probably put it on ice cream. At Ragazza, the new relative of Glen Park’s Gialina Pizzeria on Divis, the chefs splat a huge dollop of it on its sardines. Apart from the aoli, Ragazza takes an Italianesque approach, stuffing them with an earthy mixture of breadcrumbs, olive oil, garlic, oregano, and onion and baking them in the restaurant’s gas-fired Wood Stone oven. There’s locavore, 100-mile radius locavore, and there’s ultra-loca, five-mile radius locavore. While most of the city’s sardine-serving restaurants get their sardines from Monterey Bay, Nopa gets its from our very own San Francisco Bay. This is great news because our local sardines nearly went extinct in the 1950s. And — sardine cognoscenti consider the Pacific sardine as flavorful as those on the Sardinian coast (take that, overpriced cans from Norway). Speaking of flavorful, Nopa serves the little San Franciscans baked in its wood-fire oven with fingerling potatoes and frisee. The only thing missing is an order of flatbread, a gems salad, wine, and the burnt honey crème brulee.

BARBACCO ENO TRATTORIA

You have to give Barbacco credit. Unlike most of the restaurants that have rediscovered the sardine, Barbacco doesn’t seem to be operating on the principle that sardines are an after-5 p.m.-only food. Although not exactly in the let’s-have-herrings-for-breakfast! camp, Barbacco at least believes that noon is a perfectly reasonable time to start the jonesing. The bustling, suits-heavy Financial District eatery is the creator of what may be the city’s only sardine sandwich (if this isn’t true, we’d like to know). Barbacco also breaks the don’t-get-too-weird-with-sardines taboo, pairing its sardines with a hefty piece of seared calamari. Not most people’s first choicem perhaps, but the two get along swimmingly, especially when served on an Acme torpedo roll and slathered with arugula and Barbacco’s housemade “roasted tomatoe condimento.”

When you don’t want others dictating what you can and can’t have on your sardines, duck into Ferry Plaza Seafood. This celebrated purveyor of all things aquatic sells wild, locally caught sardines (and by this we mean our our SF as well as Monterey bay) when available. “We love sardines,” said one salty staffer. “Especially the local ones. They just glisten.” They recommend bringing out the glisten by brushing with olive oil, salt, and pepper; grilling a few minutes on each side; and dressing with lemon. Chevron spends big to fool voters

Bay Area-based oil giant Chevron is spending millions of dollars to influence this election and protect its financial interests, most notably by being the top contributor to the Prop. 26 campaign, which would make it almost impossible for Californians to impose fees that would help pay for environmental and public health programs.

Chevron, which reported a $5.4 billion record profit in the second quarter of this year, has given $3.75 million to the Yes on 26 campaign, according to campaign spending watchdog Maplight.org, beating the California Chamber of Commerce’s $3.5 million. Other big contributors include the American Beverage Association ($2 million) and Phillip Morris tobacco company ($1.75 million). The Yes on 26 campaign has raised about $16 million compared to the opposition raising less than $5 million from groups representing teachers, environmentalists and social justice advocates.

Prop. 26 would require a two-thirds super majority for the enactment of fees by the California Legislature or by the voters in cities, counties, or special districts, which has proven almost impossible to attain in the face of aggressive corporate-funded opposition campaigns. Such a high electoral bar would cripple the state’s ability to make big polluters and global warmers like Chevron – or the makers on alcohol or tobacco products – pay for their societal impacts.

But that payout isn’t even Chevron’s most audacious move of this election season. As the Bay Citizen reports, Chevron is almost spending $1 million on independent expenditures in support of their favored City Council candidates in Richmond, a city where Chevron has a big polluting oil refinery, in the hopes of buying a more friendly political environment.

Richmond officials have in recent years tried to get Chevron to mitigate its environmental impacts to the cash-strapped city and to pay a bit more in taxes, but Chevron responded with a lawsuit seeking a $26 million rebate on the property taxes that it paid to the city in past years, including 2007, when the company posted record profits of $18.7 billion.

Creative forces unite against Prop. 23

Proposition 23, bankrolled by out-of-state oil interests, threatens to reverse California’s environmental progress by suspending its landmark climate change legislation,  Assembly Bill 32. Titled the Global Warming Solutions Act, AB32 would place enforceable limits on major polluters and spur the creation of green businesses. But if voters approve Prop. 23, progress on transitioning to clean energy could be stalled for decades. The Guardian published in-depth coverage of Prop. 23 in the Oct. 13 issue.

A broad coalition of big green organizations, green-business associations, and others has formed to oppose Prop. 23 — but some of the most inspiring efforts have emerged from a coalition of environmental-justice advocates who are tapping their own creative genius to get the message out.

Hip hop artists Braelan B and Gammaray of the Los Angeles-based Beatrock Music label spearheaded the creation of a No on Prop 23 song, in collaboration with Otayo Dubb and T-Know (both of CounterParts with Braelan B and Gammaray), and artists Nomi of Power Struggle, Somos One of BRWN BFLO, and Damn Pete of Think Tank. Braelan B told the Guardian that the artists were inspired by the efforts of Communities United Against Prop 23 — a coalition of environmental-justice organizations that is highlighting the impact the ballot measure would have on communities of color — as well as a voter-mobilization effort called the Clean Energy Tour, and the California Students Sustainability Coalition (CSSC), which is seeking online pledges for “no” votes against Prop. 23. Also known as Braelan Murray, he also serves as communications director at the Greenlining Institute, which is part of Communities United.

“We’re trying to use music as a catalyst,” he explained. “The youth vote and the of-color vote are really the swing votes.” To launch the music project, he said, “I just sort of got on the phone and said, California’s under attack, and I really want to send a strong message.” The idea caught on, and the YouTube video featuring the song already has more than 1,000 hits.

Meanwhile, Green for All has released a YouTube video about Prop. 23 set to the tune of the Beastie Boys’ “Sabotage,” featuring some rather hilarious oily cowboys smoking cigars and clutching fistfuls of money. Check it out:

Appetite: Del Maguey and the glories of mezcal

There’s mezcal and there’s Del Maguey. You may have heard me talk about Del Maguey mezcals and the line’s founder, Ron Cooper, in the past. A session with the gentle yet passionate Ron (like his mezcal seminar at 2010 Tales of the Cocktail) is an experience you’re not likely to soon forget. Even the way he describes fermentation stays with you: “wild creatures eating sugar, farting carbon dioxide, pissing alcohol!”

I’m leaving for Mexico next week, so sipping Del Maguey was getting me in the south of the border mood — even though I’m going to Tequila vs. Oaxaca, where most mezcal is produced. For the unfamiliar, mezcal is a spirit made from the heart (piña) of the maguey, an agave plant native to Mexico. Piñas are roasted underground, giving mezcal its distinctive smoky properties. Mezcal is the peaty scotch of tequila, which by definition is a mezcal made specifically from blue agave in Tequila, Mexico.

One thing I learned in Ron’s seminar is that traditionally, mezcal was rarely oak-aged for any length of time — more aged mezcals are being produced purely to gain in competing markets. Similar to tequila, mezcal styles include joven (literally “young,” and in this case referring to a silver liquor); blanco (white), which must be bottled within 2 months; reposado (rested), which ages 2-12 months in oak; anejo (mellow), aged a minimum of 1 year in oak; and the rare Pechuga (chicken breast), which can be triple-distilled with everything from fruits, nuts, white rice, to, yes, chicken.

Mezcal is usually drunk neat and you’ll find many in the Del Maguey line available by the shot at Nopalito. Places like Oakland’s Tamarindo Antojeria, with their new tequila bar, Miel, serve cocktails like the Mezcalito – ($12) with Del Maguey’s Creme de Mezcal, fresh orange and volcanic salt rim.

I’ve had the privilege of tasting most Del Maguey mezcals, each one a revelation. Here’s a few recommendations (available locally at Cask and K&L Wine Merchants):

Chichicapa, ($69.99) –  After multiple tastings, this may be my favorite for all-around balance. It marries the best elements of smooth smokiness with citrus. Despite a surprisingly light nose, there’s spice, chocolate, even mint on the finish. It reminds me of a fine coffee mole: succulent, spiced, earthy.

Crema de Mezcal ($39.99) – One of the more affordable in the line, this single village mezcal is made from unfermented agave syrup collected during roasting and exhibits a smoky, earthy sweetness with creamy texture. Works as a great introduction to mezcal for the uninitiated.

Mezcal Vida ($38.99) – Newer in the line, the Vida is another fine intro to mezcal: a pure, straightforward expression. Produced according to 400-year tradition with nothing but the agave heart and water, it’s bright with notes of fruit and sweet grass.

Tobala ($119.99) – Tobalá is a sophisticated level of mezcal, taking around eight Tobala piñas (hearts) to equal one piña from the most common maguey plants. Though fruity on the nose, the taste is elemental… smoke intermingles with tropical fruits and dusty cinnamon, with a long, smooth finish.

Minero ($69.99) – From the tiny village of Santa Catarina Minas, this mezcal is double-distilled, giving it greater smoothness with a floral essence tasting of warm honey and fig.

Santo Domingo Albarradas ($69.99) – Citrus and roasted pear combine with wood for a clean, dry mouth feel.

San Luis del Rio ($79.99) – Spice, fruit and ubiquitous smoke hit you on the nose, but there’s mineral citrus and volcanic earth inherent in this recent release produced two hours south of Oaxaca.

Pechuga ($200.00) – Pechuga starts with a double-distilled Minero base, to which 25 pounds of wild mountain apples, plums, red plantain bananas, pineapples, almonds and a few pounds of uncooked white rice are added to each 75 liters of mezcal for distillation round three. Though there is no taste of chicken, a whole chicken breast (minus the skin) has its excess oil removed while cleaned in water, then is hung over the still for a day while spirituous vapors condense into a clear liquid that drips from the bird into the mezcal. With intense citrus on the nose, this fruity spirit evokes earth but is a bright counterpart to the smoky, rocky soil of other mezcals. All that fruit imparts a robust fall glow by way of a gentle spring.

Bar Agricole

DINE At the risk of sounding like a grossly premature exit poll, I am willing to say that Bar Agricole, which opened mid-August on a rather grimy block of 11th Street, is already, and easily, the best restaurant on that block. Not that the bar (pardon my punnery) is set all that high. You might very well think that Butter, across the street, doesn’t represent serious competition. You might, if you have a long memory, remember Undici (later Eleven), a lofty, 1990s place across the street that might have been worthy of being mentioned in the same breath as Bar Agricole — but was also deafening. Bar Agricole is supremely worthy and not deafening.

The sonic detail deserves mention for several reasons, one of which is that the restaurant looks like it should be deafening. Once you gain the dining room (after a trek up a woody incline, past a semi-secluded open-air terrace), you find yourself in a onetime plumbing-supply shop remade in the sleek Euro-modern style that you might find in one of the more happening neighborhoods of Stockholm. Interior vistas consist of wood, plate glass, and seating that doesn’t look ergonomic. Noise is almost always the companion of these chic design elements.

But Bar Agricole’s tables are spaced widely enough to let the restaurant breathe, and, for a rustic-enviro touch, the long bar is made from wood recycled from an Ohio farm, if my eavesdropping ears heard the story right. The madding crowd is never far away, yet the sound is muted just enough not to become the center of attention. It’s like watching a big pot of simmering stock coming to a boil it never quite reaches. This kind of ambience management is a subtle but real triumph.

Agricole — as Francophiles might know — refers not only to agriculture but to a type of rum favored by the French. The chief impresario of the place, Thad Vogler, is a cocktail man, and the cocktail list is impressive. But you’d have a hard time finding any mixed drink to top the white, or unaged (“blanche”) armagnac, which, like my beloved grappa, is as clear as water but fruitier, more melodious, less openly fiery. Like agricole rum, it finds its way into a number of cocktails, but it’s splendid when taken straight.

Chef Brandon Jew’s cooking is also melodious and goes down easy. The theme is California eclectic, with, like a corniche, a fair number of tight twists and turns. The chopped liver on toast ($8), for instance, was warmed all the way through, which lent the dish an appealing melted-fused quality. Tomatoes with bottarga ($14) revealed itself to be a colorful salad of heirloom fruit with a heavy (and unannounced) scattering of shell beans. For seasoning, there were flecks of bottarga (salt-cured fish ovaries, a Mediterranean delicacy).

The kitchen’s eye for color is sharp. A plate of picalilli ($6), or pickled vegetables, was dominated by luminous yellow cauliflower florets and nearly as luminous quarters of red beet. Other players: halved baby carrots, long beans, skinny green peppers flushed with red as if by dawn, and whole okra pods. Altogether it looked like something Cézanne might like to paint, if he didn’t gobble it down first, which was what we did.

No menu is truly complete without at least one flop. At Bar Agricole, this would be the beguilingly named sardine roll mops ($6), which consisted of a large piece of fish wrapped pig-in-a-blanket-style around a pickle spear the color of radiator fluid, then laid on a board of flatbread and doused with crème fraîche. The overall effect was supposed to be, I guess, a variation on a Sunday-morning shmear, but the flatbread was uncooperative and difficult to eat and the fish-pickle pairing wasn’t much better, despite the cream’s attempts at reconciliation. If a dysfunctional family were turned into food, it might seem something like this.

On the other hand, we loved the tanginess of the olive-oil poached tuna ($14) mingled with fennel-root shavings and cilantro. And the corn pudding ($16) — like an eggy polenta, topped with corn kernels, okra halves, whole padrón peppers, and served in an earthenware crock — was original and sublime, while being at least plausibly vegetarian-friendly.

If you like lemon verbena cream, you’ll want dessert. A puffy cloud of it semi-salved the dryness of the blueberry shortcake ($8) — tons of blueberries, though — while another puff appeared, uncredited, with the wondrously glazed peach-pluot upside-down cake. If you had to bet the farm on one of these, you’d be wise to choose the latter.

Big Oil’s false choice

Tapping into voters’ economic insecurities at a time of record high unemployment rates, out-of-state oil interests say addressing global warming will cost California more jobs. But a broad coalition that includes environmentalists and top business groups argue that just the opposite is true, saying the economy will suffer if we suddenly kill the incentives now driving the clean energy industry, one business sector that actually grew during the recession.

Proposition 23 would indefinitely suspend Assembly Bill 32, California’s Global Warming Solutions Act. Texas oil companies are bankrolling the initiative, spending millions of dollars to convince voters that they must choose between saving jobs and saving the environment. Since jobs are more important right now, they argue, the environment will have to wait.

But the other side — which includes groups such as the Chamber of Commerce, whose top priority is always job creation — is promoting the compelling idea that the path to economic recovery lies in rising to the challenge of climate change. They argue that addressing global warming now isn’t just about avoiding more out-of-control wildfires, diminishing crop yields, prolonged intense droughts, coastal flooding, and other calamities that climate scientists say global warming will bring to California. It’s also about creating jobs now and trying to lower California’s 12.4 percent unemployment rate, the third highest nationwide.

The push to defeat Prop. 23 has brought together prominent business people, public-health advocates like the American Lung Association, big green organizations such as the Sierra Club, and environmental-justice advocates who are pushing for green jobs as a way to fend off poverty and tackle air quality problems in disadvantaged neighborhoods. If the coalition of unlikely allies is successful, Big Oil’s comfortable lock on the energy market could be thrown off balance by California’s emerging green economy.

“Ultimately, we think it’s going to be a David vs. Goliath battle, because they have very deep pockets,” said No on 23 campaign spokesperson Steve Maviglio. “The proponents are playing to the fears of those most affected by the economy.”

When voters decide on this one, it will signify a choice to proceed down one of two paths at an important crossroads. A global climate summit in Copenhagen late last year failed to produce an effective response to climate change. A push for a federal cap-and-trade system to combat global warming yielded similarly disappointing results. AB32 presents a third chance to set a new standard, and a precedent, for curbing greenhouse gas emissions. But if Prop. 23 passes, environmentalists will have struck out.

A report issued in July by the National Academy of Sciences lays bare the far-reaching implications of policy decisions around climate change. “Emissions reductions choices made today matter in determining impacts experienced not just over the next few decades,” the report notes, “but in coming centuries and millennia.”

 

CLOSE RACE

In 2006, Gov. Arnold Schwarzenegger signed AB32, mandating a statewide reduction of greenhouse gases to 1990 levels by the year 2020. The law is slated to go into full effect in January 2012, when a cap-and-trade system will make it more costly and burdensome for major polluters to continue burning high quantities of fossil fuels, among other strategies.

The law helps alternative energy companies and creates incentives for large and small businesses to green their operations. Prop. 23, deceptively titled the “California Jobs Initiative,” would suspend AB32 until the state’s unemployment rate drops to 5.5 percent for four consecutive quarters. A decade could pass before such a market condition is in place — in the past 40 years, it’s occurred just three times.

Speaking at the Commonwealth Club in Santa Clara in September, Schwarzenegger blasted Texas-based oil companies Tesoro Corporation and Valero Energy Corporation, which have contributed a combined $5.6 million to the Prop. 23 campaign, for trying to deceive California voters. “They are creating a shell argument that this is about saving jobs,” Schwarzenegger said. “Does anybody really believe that these companies, out of the goodness of their black oil hearts, are spending millions and millions of dollars to protect jobs? It’s not about jobs at all, ladies and gentlemen. It is about their ability to pollute and thus protect their profits.”

Prop. 23 has been unpopular even among many traditional right-wing and business interests. Oil giants Chevron and BP have remained neutral on it. Republican gubernatorial candidate Meg Whitman also renounced it, but straddled the fence by vowing to suspend AB32 for a year anyway.

According to a breakdown of campaign spending issued by opponents, oil interests contributed 97 percent of the funding for Prop. 23, while out-of-state interests were responsible for 89 percent. Kansas-based Koch Industries, run by billionaire siblings David and Charles Koch, dropped $1 million into the effort. The Koch brothers have been singled out as the financial backbone of the Tea Party.

Yet despite bipartisan opposition in Sacramento, polls suggest Prop. 23 could be a close race. A recent Los Angeles Times poll showed a dead heat among California voters, with 40 percent in favor, 38 percent opposed, and about one-fifth of likely voters undecided. The television commercials advocating Yes on 23 drive home a simple yet misleading message: “Save jobs. Stop the energy tax.” A spokesperson from the Yes on 23 campaign did not return the Guardian’s calls seeking comment.

Ironically, jobs are also the cornerstone of the No on 23 campaign’s arguments. “We have very heavy hitters who see this as a job killer,” Maviglio said. The campaign is highlighting the fact that the only economic area that has experienced growth amid the recession is green tech.

Democratic gubernatorial candidate Jerry Brown referenced green jobs as a bright hope for economic recovery in a televised debate against Whitman, and the prospect of green job creation as a way to alleviate poverty is clearly articulated in The Green Collar Economy, a widely influential book by Green for All founder Van Jones. Green for All has joined the Greenlining Institute and a host of 80 organizations statewide in a united front against Prop. 23, called Communities United Against Prop. 23, which is part of the larger opposition campaign dubbed Communities United Against the Dirty Energy Prop.

Low-income communities and communities of color will be disproportionately affected if Prop. 23 wins, said Orson Aguilar, executive director of the Greenlining Institute. “The communities we represent are feeling a double impact,” Aguilar noted. “They’re suffering from pollution,” since power plants and polluting industries tend to be sited in low-income communities, “and they’re suffering from unemployment and the economic crisis. There definitely is a double-whammy.”

 

LOCAL MOMENTUM

At a recent green business symposium hosted by Urban Solutions, a nonprofit that aids small businesses and seeks to create job opportunities in low-income communities, a Castro District merchant explained her decision to enter green-business certification process. “I’m dedicated to going green because, No. 1, it’s the right thing to do,” said Elaine Jennings, who runs Small Potatoes Catering & Events. “No. 2, it’s the right thing to do. And No. 3, it’s the right thing to do.”

But the moderator of the panel, a business reporter, wasn’t as interested in the moral rationale — instead, she followed up by asking whether going green was a wise financial move. Anthony Tsai, green business program manager at Urban Solutions, made the case that it is. Water bills have gone up 40 percent since 2000, Tsai said. Electricity costs have gone up 60 percent and waste disposal fees have increased 250 percent. By conserving energy and water and reducing waste, small businesses can save money during tough economic times.

Aguilar sees energy-efficiency building retrofits as an opportunity to create jobs for disadvantaged populations. In order to comply with the climate regulations under AB32, energy-efficiency retrofits would have to be completed to hit conservation targets. “We have thousands, if not millions, of buildings in California that need to be retrofitted,” he said. “A lot of people who are out of work are in the construction industry. Latinos and African Americans were hit hard when construction fell.” With energy retrofits and solar-panel installations on the agenda, AB32 could be good news for electricians, too, Aguilar said.

There are signs that AB32 is already giving green business a lift. A manufacturer of electric delivery trucks, for example, relocated from Mexico to California’s Central Valley late last year. A wind-energy company recently relocated to San Diego from Spain. The solar industry is growing faster in California, particularly in the Bay Area, than anywhere else nationwide. And in the past five years, roughly $9 billion in venture capital investment has gone into clean tech industries, with more going to California than any other state.

“Prop. 23 would essentially pull the rug out from under this explosive growth, which we’re experiencing during a recession,” Maviglio noted.

Jeanine Cotter, CEO of Luminalt, an independently owned San Francisco solar and installation company, is active in the campaign to defeat Prop. 23. “There is an entire ecosystem that feeds off of good policy,” Cotter said. If Prop. 23 passes, “we will lose the spark that we have and we will go backward.”

Despite the economic downturn, Luminalt experienced its best year in 2009 in the six-year history of the company, and if AB32 goes into effect in 2012 as planned, the demand for new solar installations will only grow. But with less than a month to go before the election, Cotter said she was alarmed by the lack of awareness about Prop. 23, even among environmentalists.

“We were at West Coast Green with No on 23 literature,” she said, referencing a widely attended green-business conference, “and I was shocked at how many people didn’t know what it is.”

 

RISKING IT

Small business owners and conscience-driven activists aren’t the only ones touting this theory of a new energy economy. The San Francisco Chamber of Commerce, a fiscally conservative business association that is often at odds with environmentalists and progressives, is actively campaigning against Prop. 23 — and it’s not out of any sense of moral duty.

If Prop. 23 succeeds, explained Chamber spokesperson Rob Black, it will scare off the venture capitalists. “For them, water’s like money,” he explained. “It will flow to the easiest place to invest.” Regulation like AB32 guarantees a return on investment for climate-friendly technology, he added. But if that regulatory structure is thrown into question, investors may flee overseas because investing would be too risky. “If we walk away from clean tech, the next Microsoft will be a Chinese company,” Black said.

Donnie Fowler, a political consultant who has worked for Al Gore and other top Democrats, is a senior adviser to the Clean Economy Network and a leader in the effort to defeat Prop. 23. Oil companies “went to Washington and spent hundreds of millions” lobbying against climate change regulations, Fowler pointed out. “Now they’ve opened up a second front. If California goes backward, all of those senators and Congressional representatives will say, ‘No way … I’m surely not taking a political risk. If they went backward, there’s no reason we should go forward.'”

Fowler said that for environmentalists, voting No on 23 could be seen as an affirmation of statewide efforts to address climate change in a meaningful way. “This is a real opportunity,” he said, “for Californians to stand up and say we’ve had enough. We are going to take a stand — right now.”

Appetite: 3 recent food books pique our palates

These three books (one factual journey, one memoir, one cookbook) have two things in common: they’re all new this year and centered around food.

TWAIN’S FEAST by Andrew Beahrs — Andrew Beahrs, an East Bay local, displays his affection for the great Mark Twain in this thoroughly researched book. Twain’s Feast explores the history of foods Twain waxed eloquent about that are either gone entirely or slowly making their way back into the American landscape.  Experiencing food and coffee in his European travels “as tasteless as paper”, Twain found American cooking of his time “generous”, “genuine”, “real”. Of course, the prairie hens he grew up with, fresh possum and raccoon, New Orleans’ sheep-head and croakers, and the “heaven on the half shell” of San Francisco’s own oysters and mussels, are largely extinct or rare nowadays.

The book is, yes, a poignant ode to the pre-mass-produced, homogenized, dangerously grown American “food” we now know. It’s also a hopeful challenge to the reader, worded gently in the epilogue: “… choices about what we eat help to determine which American landscapes survive and thrive.”

There are many worthy stories here, both for the Twain aficionado and food historian. What I came away with, besides a reminder to support the craftswomen and men making food and growing animals with care (which we’re heavily blessed with in the Bay Area), was Twain’s insataible passion for robust flavor, a hunger to drink life to the dregs. I relate to the way he eats… and heartily writes about it.

As Beahrs says, “… Twain’s love for a dish was inseparable from his love of life.” Amen.

HUNGRY TOWN by Tom Fitzmorris — Make no bones about it, I have a mad love affair with New Orleans, a city you hear me go on about often enough. Naturally, I ate up (no pun intended) Tom Fitzmorris‘ new Hungry Town, a leading Nola restaurant reviewer both in print and on the radio for decades.

He knows the city’s food scene intimately: its history, key players, essential recipes (included in the book), and the post-Katrina struggle that has brought the culinary magic of the ultimate Southern city back to even greater heights (and more restaurants) than before the storm. His post-Katrina assessments are honest insights into just how torn apart families and businesses were, including his own. But he unabashedly claims: “Food Saves New Orleans”.

I value his commitment to Creole and Cajun as the “default” styles of cooking in New Orleans, essential to the city’s future. He states: “The genius of New Orleans cooking is not that we cook better than anyone else. It’s that nobody in the world cooks our local specialties – except when they consciously imitate us (usually badly, I’ve found). The day that our food fails to be flagrantly distinctive… is the day we become Anywhere, USA. That’s also the day I’m leaving town.”

THE SUNSET COOKBOOK — Cooks take note: 10/19 is the release date of the massive, 1000+ recipe tome that is the latest edition of the Sunset Cookbook. It’s a fine one. Not only are the clean, bright photos dangerous to peruse on an empty stomach, but the book manages to be both approachable and widely comprehensive, with sections on every aspect of a meal you can think of from bread to cocktails to preserves and pickles.

Sunset magazine‘s food editor, Margo True, is also the book’s editor and she maintains a cohesive standard of ‘farmers-market-fresh’ ingredients with regional Western foods. Yes, Sunset magazine is based in the Bay Area, so California ethos displays prominently with international influences married to a rich range of produce. But the styles of cooking cover the world, showcasing food of the West as what it truly is: global.

Many recipes tempt me here, including this snack and shake:

Avocado Fries
SERVES 6 | TIME 30 minutes

Canola oil for frying
1⁄4 cup flour
1⁄4 tsp. kosher salt, plus more to taste
2 eggs, beaten to blend
11⁄4 cups panko (Japanese-style bread crumbs)
2 firm-ripe medium Hass avocados, pitted, peeled, sliced into 1⁄2-in. wedges

1. Preheat oven to 200°. In a medium saucepan, heat 11⁄2 in. oil until it registers 375° on a deep-fry thermometer.

2. Meanwhile, mix flour with salt in a shallow plate. Put eggs and panko in separate shallow plates. Dip avocado wedges in flour, shaking off excess. Dip in egg, then panko to coat. Set on two plates in a single layer.

3. Fry a quarter of the avocado wedges at a time until deep golden, 30 to 60 seconds. Transfer wedges to a plate lined with paper towels. Keep warm in oven while cooking remainder. Sprinkle with salt to taste.

California Date Shake
One of the great foods of the Sunshine State, the date shake is exactly what you want to be slurping while visiting baking-hot date country near Palm Springs. Our favorite shake is the one at Shields Date Gardens, in Indio. Shields uses its own date “crystals”—dehydrated Deglet Noor and Blonde dates (the latter is one of its signature varieties). You can order these online or substitute fresh, as we’ve done here. This shake is sensational with a shot of rum stirred in.

Makes 1 shake (11⁄3 cups) | TIME 10 minutes

4 pitted Medjool dates (about 3 oz.), coarsely chopped
1⁄4 cup very cold milk
11⁄4 cups high-quality vanilla ice cream

In a blender, blend dates and milk until smooth and super-frothy. Add ice cream and pulse a few times, until just blended.

Whitman’s global warming positions leave her stand unclear

Gubernatorial candidate Meg Whitman is playing both sides of the fence on the issue of global warming, belatedly opposing Prop. 23 – the measure that would suspend AB 32, California’s long-term plan for reducing greenhouse gas emissions and promoting clean technology – but promising to delay implementation of AB 32 for a year anyway.

Yet the California Air Resources Board, the department tasked with drafting the regulations for the bill, isn’t even scheduled to finish drafting all the rules for the measure until Jan 1, 2011, and those rules wouldn’t go into effect for another year anyway. So it appears that Whitman’s stand is simply pandering to those who don’t see global warming as a pressing problem, in the process leaving uncertainty about how she would handle the issue if elected.

Still, her stance worries a swath of businesses that were hoping to cash in on a renewable-friendly economy. “There are already 500,000 Clifornian’s working in the clean energy sector and around 160,000 of them are in construction and manufacturing,” Donnie Fowler, senior advisor at the Clean Economy Network, told us.

Fowler is part of a campaign to promote the growth of the renewable economy. However, their pressing task is raising awareness of the potentially damaging effects if Prop 23 is passed. The measure would suspend the regulations within AB32 indefinitely and require, potentially, a citizen’s initiative to overturn it. The other option would be to wait until the unemployment rate drops below 5.5 percent for four consecutive quarters – a rare occurrence – at which point the suspension would automatically be lifted.

The LA Times released a poll last week that has Prop 23 winning by a slight margin, with 40 percent in favor of the initiative and 38 percent opposed. The proposition’s current success is largely a result of large donations from Texas based oil companies Tesoro Corp and Valero Energy Corp. and multibillionaire libertarian brothers David and Charles Koch.

Much of the opposition to AB32, however, has arisen from the anti-tax fervor sweeping the country – which Whitman has played on. Before she started making her rhetorical sojourn to the middle, coming out against Prop. 23 just last month, she told the San Jose Mercury that I probably would today, I need to think about that,” when asked whether she would veto AB32. Well, she thought about it and has since maintained that she would only suspend the bill long enough to assess what impact it would have on California jobs. Yet, the phrase job killer remains on her website.

Derek Walker, Director of the California Climate Initiative, thinks she is probably smart enough to understand what kind of impact suspending AB32 would have on renewable energy businesses currently operating in California.

But, if she is elected, will she have the political will to renege on her promised moratorium? And what would her position be if Prop 23 is passed?  Would renewable energy companies be left high and dry? Would she come to their aid?

“It would be very uncertain in the absence of AB32. However, the overwhelming support would almost require a plan to keep California’s clean energy economy growing,” Walker said.

PROP. 19

LEGALIZE MARIJUANA

YES, YES, YES

The most surprising thing about Prop. 19 is how it has divided those who say they support the legalization of marijuana. Critics within the cannabis community say decriminalization should occur at the federal level or with uniform statewide standards rather that letting cities and counties set their own regulations, as the measure does. Sure, fully legalizing marijuana on a large scale and regulating its use like tobacco and alcohol would be better — but that’s just not going to happen anytime soon. As we learned with the legalization of marijuana for medical uses through Prop. 215 in 1996, there are still regional differences in the acceptance of marijuana, so cities and counties should be allowed to treat its use differently based on local values. Maybe San Francisco wants full-blown Amsterdam-style hash bars while Fresno would prefer far more limited distribution options — and that’s fine.

Other opponents from within marijuana movement are simply worried about losing market share or triggering federal scrutiny of a system that seems to be working well for many. But those are selfish reasons to oppose the long-overdue next step in legalizing adult use of cannabis, a step we need to take even if there is some uncertainty about what comes next. By continuing with prohibition Californians and their demand for pot are empowering the Mexican drug cartels and their violence and political corruption; perpetuating a drug war mentality that is ruining lives, wasting resources, and corrupting police agencies that share in the take from drug-related property seizures; and depriving state and local governments of tax revenue from the California’s number one cash crop.

Bottom line: if there are small problems with this measure, they can be corrected with state legislation that Assemblymember Tom Ammiano has already pledged to carry and that Prop. 19 explicitly allows. But this is the moment and the measure we need to seize to continue making progress in our approach to marijuana in California. Vote yes on Prop. 19.

 

PROP. 20

CONGRESSIONAL DISTRICT REAPPORTIONMENT

NO

Prop. 20 seeks to transfer the power to draw congressional districts from elected officials to the 14-member California Citizens Redistricting Commission, the state agency created in 2008 to draw boundary lines for California state legislative districts and Board of Equalization districts.

Supporters argue that Prop. 20, (which is backed by Charles Munger Jr., the heir to an investment fortune) would create more competitive elections and holds politicians accountable. And indeed, there’s been some funky gerrymandering going on the the state for decades.

But the commission is hardly a fair body — it has the same number of Republicans as Democrats in a state where there are far more Democrats than Republicans. And most states still draw lines the old-fashioned way, so Prop. 20 could give the GOP an advantage in a Democratic state. States like Texas and Florida, notorious for pro-Republican gerrymandering, aren’t planning to change how they do their districts.

That’s why former state Assemblymember John Laird (D-Santa Cruz), who lost his recent bid for the State Senate thanks to gerrymandering and an August special election, calls Prop. 20 “the unilateral disarmament of California.”

It could also create a political mess in San Francisco, Laird said. “An independent commission could end up dividing the city north/south, not east/west. Or it could throw Sen. Mark Leno and Leland Yee into the same district.” Vote no.

 

PROP. 21

VEHICLE LICENSE FEE FOR PARKS

YES

Part of the reason California is in the fiscal crisis it is now facing — underfunding schools, slashing services, and considering selling off state parks — is because Gov. Arnold Schwarzenegger ran for office on a pandering pledge to deeply cut the vehicle license fee, costing the state tens of billions of dollars since then. It was the opposite of what this state should have been doing if it was serious about addressing global warming and other environmental imperatives, not to mention encouraging car drivers to come closer to paying for their full societal impacts, which study after study shows they don’t now do. This measure doesn’t fully correct that mistake, but it’s a start.

Prop. 21 would charge an $18 annual fee on vehicle license registrations and reserve at least half of the $500 million it would generate for state park maintenance and wildlife conservation programs. As an added incentive, the measure would also give cars free entrance to the state parks, a $50 million perk. Of the remaining $450 million, $200 million could be used to back-fill state general fund revenue now going to these functions, which means most of this money would go to parks and wildlife.

We’d rather see funds derived from private car use go to mass transit and other alternatives to the automobile, but we’re not going to quibble with the details on this one. California desperately needs the money, and it’s time for drivers to start giving back some of the money they shouldn’t have been given in the first place.

 

PROP. 22

LOCAL REDEVELOPMENT FUNDS

NO

This one sounds good, on the surface: Prop. 22 would prevent the state from taking money from city redevelopment agencies to balance the budget in Sacramento. But it’s not so simple: Sometimes it actually makes sense to use redevelopment money to fund, say, education — and only the state can do that. Besides, this particular bill only protects cities, not counties — so San Francisco will take even more of a hit in tough times. Vote no.

 

PROP. 23

SUSPENDING AIR POLLUTION CONTROL LAWS

NO, NO, NO

Think of Prop. 23 as a band of right-wing extremists orchestrating a sneak attack on the one hope this country has for removing its head from the tarball-sticky sand and actually doing something, for real this time, about global warming. Assembly Bill 32, California’s Global Warming Solutions Act, imposes enforceable limits on greenhouse gas emissions by 2012 — and now, Big Oil is drilling deep into its pockets in an effort to blow up those limits.

Funded by Texas oil companies Tesoro Corporation and Valero Energy Corporation in conjunction with the Koch brothers, billionaires who have been called the financial backbone of the Tea Party, Prop. 23 would reverse a hard-fought victory by suspending AB32 until unemployment drops to 5.5 percent for four consecutive quarters — not likely to happen anytime soon. In truly sleazy fashion, proponents have dubbed Prop. 23 the “California jobs initiative.”

The environmental arguments for rejecting Prop. 23 are obvious, but this time there’s a twist — even the business community doesn’t like it. Take it from Rob Black of the San Francisco Chamber of Commerce, which is actively opposing Prop. 23. “There is a fear that clean energy policy is a communist plot,” Black explained. “We actually think it’s a good capitalist strategy.” To most business leaders, AB32 is like the goose that laid the golden egg — it encourages investment in green technology, which is probably California’s best future economic hope. Vote no on 23.

 

PROP. 24

BUSINESS TAXES

YES

Prop. 24 repeals some special-interest tax breaks that the Legislature had to accept as part of the latest budget deal. In essence, it restores about $1.7 billion worth of taxes on corporations, particularly larger ones that hide income among various affiliates. Vote yes.

 

PROP. 25

SIMPLE MAJORITY BUDGET PASSAGE

YES, YES, YES

Prop. 25 would be a step toward ending the budget madness that defines California politics every year. It would allow the state Legislature to pass a budget and budget-related legislation can be passed with a simple majority vote.

It’s not a full solution — a two-thirds vote would still be required to pass taxes. But at least it would allow the majority party to approve a blueprint for state spending and help end the gridlock caused by a small number of Republicans. Vote yes.

 

PROP. 26

TWO-THIRDS VOTE FOR FEES

NO, NO, NO.

Prop. 26 would require a two-thirds supermajority vote in the Legislature and at the ballot box in local communities to pass fees, levies, charges and tax revenue allocations that under existing rules can be enacted by a simple majority vote

It’s supported by the Chamber of Commerce, Chevron, Occidental Petroleum, the Wine Institute, and Aera Energy.

Opponents argue that Prop. 26 should be called the “Polluter Protection Act” because it would make it harder to impose fees on corporations that cause environmental or public health problems. For example, it would be harder to impose so-called “pollution fees” on corporations that discharge toxics into the air or water. It would also make it nearly impossible for San Francisco to impose revenue measures like the Alcohol Fee sponsored by Sup. John Avalos. It’s another in a long line of attempts at the state level to block local government from raising money. Vote no.

 

PROP. 27

ELIMINATING REDISTRICTING COMMISSION

YES

We opposed the 2008 ballot measure creating the redistricting commission, arguing that, while allowing the state Legislature to draw its own seats is a problem, the solution would make things worse. The panel isn’t at all representative of the state (it has an equal number of Republicans and Democrats) and could be insensitive to the political demographics of California cities (it makes sense, for example, to have Senate and Assembly lines in San Francisco divide the city into east and west sides because that’s how the politics of the city tend to break).

This measure abolishes that panel and would allow the Legislature to draw new lines for both state and federal offices after the 2010 census. We don’t love having the Legislature handle that task — but we like the existing, unaccountable, unrepresentative agency even less. Vote yes.

Appetite: Dinner and cocktails with a view

Wednesday  through Saturday nights there’s a ready-made date if you want romance without having to think too hard. At $80 a person, it’s a package deal between Luce Restaurant (which I’ve written about more than once) in the Intercontinental Hotel and Top of the Mark. Choose the order – three course dinner or cocktails first – with a cab ride included to the second location.

I’ve always loved the old world class (not to mention in-the-thick-of-it San Francisco views) of Top of the Mark and live jazz with dancing, but cover charges and mediocre cocktails priced in the mid-teens make it unrealistic too often. With this package, the cost of a drink, cover charge and the cab ride alone would make up half of the $80 and that’s not counting three courses and sparkling wine at Luce.

On one of our mild September nights, I took in an offer to try the package  with The Renaissance Man – we opted for dinner first. It started with a glass of champagne (we added in a Rustic Grappa Flight – $14, see Imbiber for more on grappa at Luce/Bar 888) and an amuse bouche of Chicken Confit with diced Granny Smith apples and vanilla cream. The chicken was tender with a crispy confit layer. Contrasted by sweet, creamy accents, I almost wished it was my main course.

Chef Dominique Crenn, who’s cooking earned Luce a Michelin star and is getting ready to launch her Atelier Crenn restaurant this winter, could have crafted a throwaway prix fixe menu, yet it does not feel so except for a basic salad with nothing but vinaigrette as a first course option. Instead, I chose Chilled Corn Soup with mussels and a speck chip on top. Redolent of Summer with fresh corn sweetness, it is refreshing and generously portioned.

Though there was a Vegetarian Risotto, The Renaissance Man and I stuck with fish and meat. I had “Poisson du Jour” (catch of the day): Seared Branzino with Black Mission figs, corn, trumpet mushrooms and Bloomdale spinach. He had Niman Ranch Flat Iron Steak cooked medium-rare, with romano beans, baby carrots, potatoes, drizzled with beef consumme. Again, good-sized portions, from three juicy cuts of steak to the crispy, buttery Branzino.

While there were two dessert options in the prix fixe (Chocolate Custard with cocoa crumbs & Pear Williams or Earl Grey Tea Panna Cotta with lemon zest and shortbread), we opted for two desserts on the regular menu. The first, called “Peaches”, resembled a wild, mossy garden with pistachio sponge cake growing over pistachio sorbet, crispy sesame and white peach mousse. Subtle and Spring-like, it looks like a fairyland dessert, even if flavors aren’t overwhelming. More exciting flavor-wise is “Chocolate”, which, despite the straightforward name has a lot going on: chocolate ganache, dehydrated chocolate and cacao nib sorbet are covered in a crumbled, Oreo-reminiscent chocolate ‘soil’, with dots of passion fruit puree, basil oil and micro mint contrasting with dark, earthy goodness. One of the more creative desserts I’ve had in awhile.

We then took our ride up the hill to Top of the Mark, mentioned we had the dinner with a view package (to be exempt from the usual cover charge), then enjoyed the cheesy fun of cocktails like a Grasshopper and other sweeter-than-I-normally-prefer choices (one cocktail each is included), while we spent the rest of the night swing dancing to the live band surrounded by a sea of San Francisco lights.

The Governator: Fighting oil villains or making life easier for them?

Today’s San Francisco Chronicle contains an opinion piece by David Horsey commending Gov. Arnold Schwarzenegger, a Republican, for taking Texas oil companies Tesoro and Valero to task for attempting to subvert California’s landmark global warming legislation, AB 32.

Titled “The Governator battles villains with ‘black oil hearts,’” the piece casts Schwarzenegger as an environmental superhero facing off against a band of greedy cowboys. Tesoro and Valero have sunk millions into Proposition 23, the deceptively titled “California Jobs Initiative,” which would suspend implementation of the greenhouse-gas reduction law until unemployment drops to 5.5 percent for four consecutive quarters. Prospects are dim for such a market condition anytime soon.

“It is electrifying to hear a Republican politician expose the big corporations that relentlessly subvert public policy and the national interest,” Horsey notes. “Arnold Schwarzenegger might be leaving office with a mixed record of accomplishment, but when it comes to challenging these modern-day bandits of industry, he could be the boldest action hero we’ve got.”

Schwarzenegger deserves credit for taking a stand against oil-industry giants on this particular issue, but he’s no environmental action hero. On Sept. 30, The Governator vetoed legislation that would have improved the state’s capability to respond to oil spills.

AB 234, authored by Assembly Member Jared Huffman, would have required large vessels to deploy oil containment booms prior to fuel transfers. The Dubai Star oil spill occurred during a fuel transfer, and the precautionary measure could have lessened the impact.

Additionally, the bill would have increased existing oil fees to bolster funding for the state’s oil spill prevention and response efforts. And it would have required the State Lands Commission to report on safeguards for offshore oil drilling and response plans in the event of the failure of an oil rig’s blowout preventer. The BP oil spill demonstrated how dire the consequences can be if such a failure occurs.

“With his veto of AB 234, Governor Schwarzenegger failed miserably when it came to protecting California’s environment, public health, seabirds, and our coastal waters from oil spills,” said Marcie Keever, Oceans & Vessels Campaign Director at Friends of the Earth, which sponsored the bill along with Pacific Environment.  “Assembly Member Huffman and the Legislature worked extremely hard this year to craft AB 234 to protect the people and resources of the state of California — and with a few strokes of his pen the Governor struck a significant blow to public health and our environment.”

Schwarzenegger may have publicly reprimanded the Texas oil cowboys for bankrolling Prop. 23, but he’s no Captain Planet.

Brown or Whitman? No contest

Sidebar to The pummeling of SF Labor

Jerry Brown or Meg Whitman? Barbara Boxer or Carly Fiorina? For labor voters, the choice should be obvious.

All too often, we’re faced with choosing between the lesser of two political evils, but not this time. Democrat Jerry Brown has proven throughout his long political career to be one of the best friends labor has ever had, and shows no sign that he’d be anything else if returned to the governorship in November.

I particularly recall the great political skill Brown demonstrated in convincing the State Legislature to enact what is still the only law outside Hawaii guaranteeing farm workers the collective bargaining rights granted most non-agricultural workers in the 1930s.

It’s impossible to imagine Brown’s Republican challenger having the will or the skill to do something like that. Whitman’s position on labor is precisely the opposite of Brown. She has made union bashing, and especially the bashing of public employee unions, a major theme of her campaign.

On the national level, Democratic Senator Boxer has long been a solid labor supporter and surely merits re-election in November. Like Brown, she’s in a contest against a mediocre Republican candidate, but one with many, many bucks to spend on her campaign.

Some of the nine initiatives on the state ballot would be good for labor, some not so good.  Prop. 25 is easily the best of the bunch for labor and just about everybody else. It would require a simple majority vote of the Legislature to adopt the annual state budget rather than the current requirement of a two-thirds majority.  The great difficulty of lining up two-thirds support has often resulted in legislative stalemates that have forced some state operations to be cut back or even temporarily shut down for days, sometimes weeks. No money, as they say, no service.

Prop. 23 is bad news. The measure, backed by Big Oil and other major polluters,  would suspend the state air pollution laws that limit  omission of greenhouse gases known to cause global warming until statewide unemployment drops to 5.5 percent or lower for one year, which – surprise! –  is not about  to happen. Not for a long time, anyway.

Corporate greedheads could lose big, however, with passage of Prop. 24. It would repeal $1.7 billion in tax breaks granted big corporations during last year’s budget negotiations, or “backroom budget deals,” in the impolite but quite accurate words of the California Federation of Teachers (CFT).

The CFT, an AFL-CIO affiliate, and the rival California Teachers Association  (CTA), an affiliate of the National Education Association, are both campaigning for the excellent Democratic candidate for State Superintendent of Public Instruction, Assemblyman and former State Sen. Tom Torlakson of Antioch.

They stress Torlakson’s experience as a longtime high school science teacher and part-time community college teacher and his commitment to increasing badly needed funding for the state’s schools, as shown by the bills he authored that have provided more than $3 billion in school aid.

Appetite: 3 twists on the Caprese salad

The purity and simplicity of a caprese salad, or insalata caprese as it is known in Campania, Italy, where it originated, is hard to outdo. Silky buffalo mozzarella, red tomatoes and fresh basil are drizzled with olive oil and salt. When I eat a quality caprese, I am immediately transported to Italia, eating lunch alongside glimmering water, maybe the canals of Venice or the expanse of Lake Como, the juice of the tomatoes dripping down my chin and a glass of Sangiovese in hand. That this experience could be improved upon is doubtful, but what of variations in a caprese’s perfection? A few local San Francisco restaurants have taken its key elements of tomatoes and mozzarella and created something unexpected… 

ROCKETFISH’S FARMERS TOMATO SALAD — Rocketfish, Potrero Hill’s newest sushi lounge, also deals in Japanese small plates. In this izakaya spirit, the kitchen serves what seems to be a simple farmers tomato salad ($7). Caprese elements create the base: heirloom tomatoes and buffalo mozzarella. But it takes on a whole new dimension sprinkled with honey balsamic and ume salt, then given a bit of crisp with caramelized fennel crumbled over the top. It works so well, it almost outshines the sushi. 

JARDINIERE’S HEIRLOOM TOMATO SALAD — Pop into Jardiniere‘s bar or sit down for a meal and start with its heirloom tomato salad ($16). You’ve seen all this before: plump, gorgeous heirloom tomatoes over arugula with croutons for crunch. But wait: interspersed in the arugula are Padron peppers and Castelvetrano olives. Sweet tomatoes, salty olives, and piquant peppers hint of a marriage between Italy and Spain, one officiated by California. The combo feels so natural, you’ll wonder why you don’t see it more often. 

BAR CRUDO’S LOBSTER SALAD — A recent visit to the ever brilliant crudo haven of Bar Crudo yielded salad loaded with chunks of lobster and creamy burrata (the pinnacle of mozzarella… with cream) topped with mache leaves. While some nights they make it with gold and chiogga beets ($17), my last visit entailed a load of plump tomatoes with the lobster and burrata ($18), again elevating the basics of a caprese to luxury salad level.

DINE If no good deed goes unpunished, then it must follow, by some inexorable law, that no rule goes unbroken — not even my cherished guidance that oft-flipped restaurant spaces in this city tend to end up as Japanese places. Sometimes spaces go in another direction — like toward the Asian subcontinent. Early in the year, Curry Boyzz opened on a second-floor space, across 18th Street from DeLano’s Market, that for a number of years had been the home of Côte Sud, a credible French restaurant, and before that a Cuban spot.

The space is one of the more appealing in the area, in large part because of a glassed-in terrace that gives an expansive view over the street scene. Côte Sud made some tasty Parisian-style hay from this terrace while meaningfully contributing toward an elevation of culinary standards in the Castro.

But the times, they are a’ changin,’ and by the look of it, not for the better. People are more sensitive about bang-for-buck ratios than they were just three or four years ago, and hardly any culinary tradition gives you more bang for the buck than the south Asian (or, as the menu card puts it, “Indian-Pak”). In this important respect, Curry Boyzz (a sibling of Curry Stop in the Barbary Coast) doesn’t disappoint, although they might have spelled it “Bois” if they were interested in upping the twink, or at least the twink-involved, traffic.

You know you are in downmarket-land when you order at a counter and carry a number to your table. At Curry Boyzz you are further on your own scaring up utensils and napkins from bins near the entrance to the terrace. But — a thoughtful touch — there’s also a refrigerator filled with carafes of water, a flourish that puts this crucial matter right in your hands.

The menu includes many Indian staples, ably prepared, along with some unexpected items. Several involve karela, or bitter melon. It turned up cooked, with various meats, and also on its own ($5.99), rather pretty striped green strips in a stew with ginger, garlic, and onions. “Bitter” is a word that has no good connotation in America, where palatal pleasures tend to revolve around an infantile sweet tooth. But bitterness is one of the basic tastes, and is therefore essential. When moderated and modulated, as here, by strong counter-presences, it becomes something rich, deep, and satisfying.

Another dish I couldn’t recall having seen before was lamb cholay ($7.99), knuckles of meat cooked with chickpeas — but maybe that was just because my spice eye tends to be drawn toward lamb vindaloo. The cholay edition was well-behaved in the chili-heat department; its most obvious characteristic, in fact, was the presence of so many bones to be navigated around.

Tikka masala so often means chicken tikka masala, chunks of boneless meat simmered in a creamy curry sauce, but fish ($9.99) works just as well. We liked the big pieces, almost like whole filets instead of the more typical chicken chunks. And we loved the palak paneer ($5.99), the classic dish of spinach and chunks of white cheese, for its mysterious, transporting spice breath. Did I catch a whiff of some extra cardamom in there?

The ancillary items were also reliable. Pappadum (99 cents) were crisp and glistening with a sheen of oil. (Not all sheens of oil are undesirable.) Naan, on the other hand, weren’t glistening; they had the dry, slightly chapped faces of pita bread. Luckily, naan need not be moist and oily to succeed. Indeed, since naan chunks tend to get used to mop up sauce, a bit of dryness and absorbency is preferable, as with bath towels.

We were a little surprised to find the keema naan ($2.99), a flatbread disk stuffed with what the menu card called “ground meat” — shades of freshman-year mystery meat! but the faint gaminess suggested lamb — to be nearly as dry as its unstuffed sibling. No matter: it was good for sopping, and we had plenty to sop.

Considering that the terrace is glassed-in, we found the presence of bugs — tiny bugs, smaller than gnats — to be both ironic and irritating. But maybe even the bugs (or do I mean bugzz?) have found this cold and gloomy summer (the chilliest in nearly 40 years, say the TV weather boffins) to be tough going, and, like us, find themselves seeking shelter inside.

Appetite: Wine Country’s new hot spots

SPOONBAR, Healdsburg – I could write a piece on the cocktails alone at brand new Spoonbar in the h2hotel off of Healdsburg’s town square. You’ve already heard me mention Scott Beattie over the years, who is truly one of our country’s great bartenders. His cocktail menu at Spoonbar is a revelation.

Yes, you’ll get waylaid by the initial cocktail list, but don’t let that stop you from asking for the additional one. It’s a glory of new creations, featuring edible flowers and the herbal, produce-driven beauties Beattie has perfected since his Cyrus days. But there’s the added bonus of classics done with a Beattie sensibility. I get giddy at the site of three versions each of Old-Fashioneds, Negronis, Manhattans, and Sazeracs, the holy foursome of cocktails. I sampled five, each exquisite. It feels right seeing Beattie behind the bar again.

I chose the Tempus Fugit Negroni ($8.50). How could I not? Made with Ransom‘s impeccable Old Tom Gin, Dolin Rouge Vermouth, orange zest and Tempus Fugit’s brilliant Gran Classico Bitter, it’s a musky, full revelation. As I mentioned in my last Appetite, I’m beginning to see a whole new possibility when it comes to Negronis, thanks to Gran Classico and bartenders willing to experiment with it.

On the classics front, Beattie’s Dark ‘n Stormy trumps all others. There’s a lovely Appleton Reserve version for $7.50 (or pitcher for five at $37.50). I’ll put my money on the version with Ron Zacapa Solera 23 (a rum I’ve long been a fan of already) for $9/$45. With fresh lime juice and Angostura bitters, Beattie adds drops of essential oil of ginger for a more pure, round taste. Locally grown sunflower leaves are a vivid garnish.

Going the creative Beattie route is equally thrilling. John Chapman ($10.5) is a taste of fall. When you take St. George Whiskey and Pear Eau de Vie, then mix it with lemon, apple, ginger and a Thai coconut foam, you get magic. Ditto, on the other side of the spectrum, for the Summery taste of  Siddartha ($9.5). I normally wouldn’t choose a vodka drink, but this one utilizes Hangar One Buddha’s Hand Citron with Beefeater Gin, St. Germain Elderflower, lemon, Thai coconut milk and lemon verbena. It’s silky, seductively bright and garden fresh.

But the joys at Spoonbar are many as the food and wine list are likewise robust, the space open and airy (playful with hints of mid-century modern), the price point a nice mid-range. In early opening weeks, this has automatically become my # 1 Healdsburg spot for drink or food (since I can only afford Cyrus for a special occasion), and one of my tops in all of Wine Country.

Where to start? There’s wines on tap, a trend I am happy to see growing from an environmental and casual accessibility standpoint. Let wine director Ross Hallett, choose and you’ll likely get a nice range of local and international wines. With dinner, he paired a dry 2000 Villa Claudia Gattinara and a full  ‘05 Savuto Odoardi that yielded spice notes when paired with the Spoonbar Burger. For dessert, he poured thoughtful choices like Rare Wine Co.’s New York Malmsey Special Reserve Madeira, rich with earthy, coffee notes, and Ratafia de Bourgogne, a sweet but balanced liqueur.

The food? With Moroccan and Mediterranean influences, Chef Rudy Mihal’s menu shines as fine bar food with cocktails or as multi-course dinner. Appetizers offer all kinds of goodness, like addictive little Fried Smelt Fish ($8) dipped in a caper aioli. Or how about skewers of plump, grilled Calamari ($12) in a preserved lemon vinaigrette? You’ll find me equally hyped over imported Burrata ($13), creamy heaven in a pool of fine olive oil with meltingly soft brioche and a finely diced beet tartare.

On the entree front, the lamb/beef mix is right in the Spoonbar Burger ($15), albeit small, on a house-sesame bun with a mini-bucket of fries. Kudos for a restrained but permeating burger topping of sweet tomato confit, cucumber chutney and spiced yogurt.

Though I am easily bored with chicken, their signature Moorish-style Brick Chicken ($24) is rife with flavor from herbs and spices, tender over grilled lemon couscous. Definitely a highlight.

Restaurant Manager, Darren Abel, runs a relaxed, festive restaurant that truly is the whole package. I’ll be plotting my next chance to get to Spoonbar when up that way – at the very least for cocktails and apps. If only this place was in the city…

MORIMOTO NAPA, Napa – Despite the celebrity chef status of the one and only Masaharu Morimoto (yes, I love the original Iron Chef), and the high price tag, the brand new Morimoto Napa restaurant is an experience and a welcome addition to Wine Country.

The space is huge, with a sea of greys enlivened by bright, yellow chairs. There’s patio waterfront seating and an ultra-cool touch of grape vines dramatically running the wall over the bar and in the lobby, as if to say, “Morimoto is now in Wine Country.”

As for the food, it adds up fast, but thankfully there’s beyond-the-norm presentations lending excitement to the expensive meal. Like me, you may have eaten a thousand tartares, but you haven’t had one quite like this: Toro Tartare ($25) comes on a little wood tray you scrape with a mini paddle, then dip in nori paste, wasabi, sour cream, chives, or a house dashi soy, smoky with a hint of bonito. Finish with a bright palate cleanser of Japanese plum.

Green Fig Tempura ($16) is a playful change of pace on the tempura front, but the real clincher is a creamy peanut butter foie gras sauce underneath, dotted with pomegranate reduction. Again, as a big beef tartare fan, I’ve had many a version. This one stands out. Beef Tartare ($18) Morimoto-style comes with asparagus flan hiding an egg in the center. As you slice through it, it oozes over the beef, asparagus slivers, lotus chips and teriyaki sauce. Morimoto Bone Marrow ($16) is an intriguing version: one giant bone loaded with gloppy, warm marrow, perked up with caramelized onions, teriyaki and spices on top.

Entrees continued in this creative vein, though Whole Roasted Lobster “Espice” ($35) had its flaws. It’s a generous portion but the lobster meat is lost in too much garam masala spice, coriander, peppercorn, and cayenne, even though that was what sold me on the dish initially. It was over-spiced but the saving grace was a divine, whipped lemon creme fraiche, contrasting the blackened spice aspect with airy tart.

Duck Duck Goose ($36) was my preferred entree – essentially duck in four parts, from a bowl of duck confit fried rice with frozen foie gras shavings topped with duck egg, to duck soup, duck confit leg, and slices of duck meat with gooseberries. Tofu Cheesecake ($12) in coffee maple syrup with maple ice cream is a signature dish for Morimoto, but though I liked the light texture of the tofu cheesecake, it was overwhelmed by thick maple syrup. A Raspberry Wasabi Sorbet was a better finish for me, hitting strong on both key ingredients.

Morimoto sat at the table next to us with friends, surveying the expansion of his growing restaurant empire. The GM stopped by our table to see how things were going and mentioned that Morimoto loved it so much here he was staying for a couple months. Even when the novelty of his first West Coast venture wears off (he’s opening in LA next – http://eater.com/archives/2010/07/23/morimoto-hits-la.php), my initial visit, merely a week after opening, suggests that this restaurant will long remain one of downtown Napa’s destinations.
