DINE Ragazza is the younger sorella of Sharon Ardiana’s Gialina in Glen Park and, as is so often the case with siblings, the two restaurants do and do not resemble each other. Much of the differences are traceable to the respective neighborhoods. Glen Park (where we find Gialina) has in recent years become an annex of city’s baby belt, whose big, shiny buckle is just over the hill in Noe Valley. Kids like pizza, and Gialina has fine pizza, along with a selection of pastas, a roast or two, and a selection of contorni. Eating at Gialina is a little like waiting to check in for a flight on Southwest Airlines: the environment is lively, lighthearted, and swarming with small children. (Shouldn’t shrieking children be flown on their own airline, perhaps Screaming Babies Airways, with a big screaming baby head painted on the tail of every plane. But if they want to eat at Gialina, okay.)

Ragazza, by contrast, brings haute pizza culture to a vortex of the Haights (lower and upper) and NoPa that so far shows few signs of turning into kiddieland. The restaurant opened recently in a space that’s worn quite a few masks over the past decade; 10 years ago, it was a bistro called Metro Café, then became a fine Nepalese restaurant called Metro Kathmandu, reverted briefly to Metro Café, and now this.

There is nothing distinctive about the mid-block, storefront setting. The glowing red paint scheme of the Kathmandu era has been dialed back to milder earth tones. Otherwise, the look of the restaurant is little different. (In this aesthetic continuity, too, Ragazza differs from its older sibling, whose neglected space was heavily made over before its opening in early 2007.)

Ragazza’s menu is somewhat less pizza-pie-centric than Gialina’s. The new place offers a number of antipasti choices and small plates, along with several roasted items. (Gialina offers one antipasto and one roast.) You could make do very nicely here without having a pizza at all. But the bulk of the clientele seems to understand Ragazza to be a pizzeria at heart, and so the pies emerge from the kitchen in a steady stream, with at least one seeming to turn up on virtually every table. It’s like watching a quarterback spread the ball around to eight different receivers.

Although Ragazza doesn’t offer Gialina’s fabled chili-bomb pizza, the aptly named atomica, it does have a spicy pie of its own, the moto, fired with Calabrian chilis. (These have an aromatic fume all their own and haven’t really been given their due.) The amatriciana pizza ($16), festooned with a sunny-side-up egg, also offered a noticeable nasal kick. And even the pies that aren’t armed with chili heat tend to be bracingly fragrant — a potato version ($15), for instance, topped with red onion and gorgonzola cheese and liberally laced with thyme. No hint of starch overload here, despite the potentially smothering presence of the spud.

Herbal perfumes, along with chili heat, are a recurrent theme. We were particularly aware of the oregano breath wafting from a crock of corona beans ($6) simmered with oven-roasted tomatoes. Oregano is the quintessential pizza smell, but I’d never come across corona beans before and, from their pale chubbiness, would have guessed them to be cannellini or flageolet. They’d been cooked just right and still offered nominal tooth resistance before yielding an interior creaminess.

Purely creamy, on the other hand, was the soft polenta ($9). Polenta can be bland, and it is sometimes enlivened by sautéed mushrooms and gorgonzola — and given Ragazza’s obvious gusto for big flavors, I wouldn’t have been surprised to find those players here. Instead the boost came from a medallion of tomato mascarpone cream, freighted with basil and set atop the polenta like a rosette.

The real test of any restaurant’s food is whether it can hold your attention even if, say, Mark Zuckerberg is sitting at the next table, making moony eyes with a comely ragazza. Was that really Mark Zuckerberg at the next table, an actual person as opposed to the character in the movie The Social Network and the subject of far too much quacking in the key of same from The New York Times’ waddling line of op-ed ducks? We weren’t sure. Zuckerberg is said to live in the wilds of the Peninsula, sleeping on a mattress on the floor of some faceless apartment, just as Jerry Brown did during his first go-round as governor. Yet there he was — maybe — in Ragazza, having come for the girl and stayed for the (pizza) pie. He didn’t friend us, alas, alack. *

Hello vegetarians. I’m checking in for quick sec – are we braving the snarky Tofurky asides and dietary litigation with the extended fam well this year? I hopes. 

The holidays can be a trickily-navigated time for the meatless maverick – but they also present a sweet opportunity to show your loved ones that this whole rejection of the agro-business line can be both heart and belly-warming. Call it culinary evangelism if you must. Read on for some gems from the newest crop of vegan and vegetarian cookbooks that’ll have everyone at the table giving thanks.

 

Cranberry–cashew biryani 

From Isa Chandra Moskowitz’s Appetite For Reduction (Da Capo, 336 pages, $19.95)

Moskowitz is royalty in the vegan punk cupcake world, and her knack for the realm of savory snacks seems to have hit a nerve with her last popular release, Veganomicon. Appetite For Reduction (set for release Dec. 7) follows the same straight-forward format, this time focusing on vegan foods that are exceptionally good for the old waist line for all you double-time health nuts. This Indian-inflected rice dish will be the perfect substantial side to impress on your parents that you’ve learned to cook, suddenly, somehow. Throwing your own pilgrim party? Moskowitz’s excellent food blog, Post Punk Kitchen has a mega-recipe for vegan Thanksgiving in an hour. AN HOUR. Rock. For the purpose of this biriyani, by the way, cashew pieces equals roughly chopped nuts. 

Serves 4 

1 teaspoon vegetable oil

1 teaspoon cumin seeds

1 teaspoon mustard seeds

3 cloves garlic, minced

1 cup small-diced carrots

1 cup brown jasmine or basmati rice

1 teaspoon garam masala

1/4 teaspoon turmeric

1/4 teaspoon red pepper flakes

1/2 teaspoon salt

2-1/2 cups water

1 tablespoon tomato paste

1/4 cup dried cranberries

1/4 cup roasted cashew pieces

1/2 cup frozen peas

chopped fresh cilantro, for garnish (optional)

Preheat a 2-quart pot over medium heat. Pour the oil into the pot and mix in the cumin and mustard seeds. Cover the pot and let the seeds pop for about a minute, or until the popping slows down, mixing once. If the seeds don’t pop, turn up the heat a bit until they do.

Add the garlic and sauté for about a minute. Add the carrots, rice, garam masala, turmeric, red pepper flakes, and salt, and stir constantly for about a minute. Add the water and tomato paste. Cover and bring to a boil. Once boiling, lower the heat as low as it will go and cook, covered, for about 40 minutes.

After 40 minutes the water should be mostly absorbed. Stir in the cranberries, cashews, and peas. Cook for another 15 minutes or so, until the water is completely absorbed. Fluff the rice with a fork and serve topped with the cilantro, if using.

 

Shepard’s pie with chard-lentil filling and onion gravy

From Kim O’Donnel’s The Meat Lover’s Meatless Cookbook (Da Capo, 264 pages, $16.95)

A pie plate of power – even if the stuffing’s got pork and the carrots came into an unholy alliance with chicken stock, this shepard’s pie will be at the ready to guide you into fields of fullness at your family’s table. O’Donnel, a one-time writer for the Washington Post, has put together a satisfying bunch of recipes in this book, which empowers the reader to make cruelty-free concotions that mimic even the most traditional of comfort foods. The recipe bellow has got a lot going on, stove-top acreage requirement wise – O’Donnel recommends starting the lentils first, then working on the gravy while they simmer.

Serves 6

Wine-braised lentils

1 tablespoon vegetable oil

1/2 cup onion, diced

1/4 cup carrot, peeled and diced

1 sprig fresh thyme, or

1/2 teaspoon dried

1/2 cup dried brown or green lentils, rinsed (the smaller French lentilles du Puy, with a more refined texture, are my preference, but they’re not always available. Use what you can find in your local market.)

2 tablespoons red wine you enjoy drinking

3/4 to 1 cup water

1/4 to 1/2 teaspoon salt

In a small saucepan, heat the oil over medium heat and add the onion, carrot, and thyme. Cook for about 5 minutes, until slightly softened. Add the lentils and stir to coat. Add the red wine (if using) and bring to a lively simmer. The wine will reduce a bit. Add 3/4 cup of thewater, return to a lively simmer, then lower the heat, cover and cook until fork tender, about 40 minutes. Check and add a little extra water if need be, to keep the lentils from drying out completely. Stir in ¼ teaspoon of the salt, taste, and add the remaining salt, if needed.

Makes 11/2 cups. If you love these lentils, amounts may be doubled for a big pot that will keep for days and pair up seamlessly with your favorite grain.

 

Onion gravy

3 tablespoons butter

2 cups onions, sliced thinly into half-moons

1 or 2 sprigs fresh thyme

1 tablespoon balsamic vinegar

2 cups water

1 tablespoon cornstarch dissolved in 1 tablespoon water

1/2 teaspoon salt

Pinch of sugar

1 teaspoon soy sauce

In a deep skillet, melt the butter over medium heat and add the onions and thyme. With tongs, toss to coat the onions with the butter and cook over medium-low heat, until softened, reduced, and jamlike, about 25 minutes.

Add the balsamic vinegar, stir, and cook for an additional 5 minutes.

Add the water and bring to a lively simmer. Reduce by half, about 15 minutes. Stir in the cornstarch mixture and cook for an additional 5 minutes; the gravy will continue to reduce. Stir in the salt and sugar, and taste. Finish off with the soy sauce.

Turn off the heat, cover, and gently reheat at a simmer, just before serving with pie.

Makes approximately 11/2 cups

 

Shepard’s pie

1 cup wine-braised lentils

11/2 cups onion gravy 

2 pounds medium-size potatoes

(4 to 5 potatoes; my favorites are Yukon Gold or Yellow Finn), washed, trimmed/peeled as needed, and cut into quarters

2 teaspoons salt

3 cloves garlic, peeled but left whole

5 tablespoons olive oil

Ground black pepper

3 to 4 cups chard (from 1 bunch), washed, stemmed, and chopped finely into “ribbons”

1 clove garlic, chopped roughly

1/4 teaspoon freshly grated nutmeg

1/4 cup grated Parmigiano-Reggiano cheese

Grease a 9-inch pie plate.

Fill a medium-size saucepan with 4 cups of water, and add the potatoes and salt. The water should just barely cover the potatoes. This is important.

Cover and bring to a boil. Add the whole garlic. Return the lid and cook until fork tender, about 30 minutes.

Preheat the oven to 350°F.

With a slotted spoon or skimmer, transfer the potatoes and garlic to a large mixing bowl and mash with a hand masher. Stir in the reserved cooking liquid as necessary to moisten the potatoes. Add 3 tablespoons of the olive oil and stir in vigorously with a wooden spoon. Taste for salt, pepper, and texture and season and stir accordingly; mashed potatoes should be smooth and well seasoned.

In a large skillet, heat the remaining olive oil over medium heat and cook the chard with the chopped garlic, until wilted, 3 to 5 minutes, regularly tossing with tongs to cook evenly. Stir in the nutmeg and season with more salt to taste, if needed. Transfer to a medium-size bowl.

Portion out 1 cup of the lentils (the rest is cook’s treat) and stir into the chard until well combined.

Assemble the pie: Transfer the chard mixture to the greased pie plate. Top with the mashed potatoes, and with a rubber spatula,

smooth the mash so that it’s evenly distributed and completely covers the surface. Top off with grated Parmigiano-Reggiano.

Place the dish in the oven and heat through, 20 to 25 minutes. During the final 2 minutes of cooking, set the oven to the broil setting to brown the cheesy-mashed top.

Remove from the oven, slice into wedges, and eat hot with a ladleful of onion gravy.

 

 

Butternut squash and vanilla bean risotto

From Jenn Shagrin’s Veganize This! (Da Capo, 256 pages, $19)

True to its name, Veganize This! takes on the challenge of de-meatifying things that you never knew could be made animal-free (sea bass and beef ragu, anyone?) Sadly, this means it relies a lot on processed meat substitutes, but the end result of all the Mimicreme and soy products does tend to be delicious. The book includes an entire chapter on surviving the holidays, veganism intact — from whence sprang this recipe. Originally seen on Giada De Laurentiis’ Italian cooking show, this risotto is raring to go for Turkey Day. You gotta check out the book’s Jewish treats, too: vegan matzo ball soup and kugel! 

Serves 6

4 cups vegan vegetable broth

1 large vanilla bean

12 ounces butternut squash, peeled and cubed

3 tablespoons vegan margarine

3⁄4 cup onion, chopped finely

11⁄2 cups arborio rice

1⁄2 cup dry white wine

1⁄2 cup nut cheese (any flavor), grated finely, or 1⁄4 cup vegan parmesan blend plus 1⁄4 cup vegan mozzarella, grated finely

1⁄2 teaspoon salt

Cracked white peppercorns

2 tablespoons chives, chopped finely (for garnish)

Warm the vegetable broth in a saucepan over medium-high heat. Split the vanilla bean in half lengthwise, scrape out the seeds, and add, along with the empty bean pod, to the broth.

Bring to a simmer, then lower the heat to low. Add the squash to the simmering broth, and cook until desired tenderness, about 10 minutes. Remove the squash with a slotted spoon and set aside. Lower the heat to low and cover the pot.

While the broth is covered and simmering, take a large, heavy saucepan and melt 2 tablespoons of the margarine over medium heat. Add the onion and sauté until tender, about 3 minutes. Add the rice and stir well with the margarine.

Add the wine and simmer until it has almost completely evaporated, about 3 minutes. Add 1⁄2 cup of the simmering broth and stir until almost completely absorbed, about 2 minutes. Continue cooking the rice, adding the broth 1⁄2 cup at a time, stirring constantly. Allow each addition of the broth to absorb before adding the next, until the rice is tender but still firm to the bite and the mixture is creamy, about 20 minutes total.

Discard the vanilla bean pod. Turn off the heat. Gently stir in the butternut squash, cheese, the remaining tablespoon of margarine, and the salt.

Transfer the risotto to a serving bowl and sprinkle with chives. Serve!

 

What I remember of my interview with Yard Dogs Road Show

“I brought my costume, it’s in this bag. Well except for the pants.” The song and dance man of the Bay’s vaudevillian acid bordello, Broadway Freddie (aka Miguel Strong, or Michael if you’re trying to get technical about it) is already seated at a corner table at the Right Spot Cafe when I arrive to chat about Yard Dog Road Show‘s first headlining show in San Francisco in years (The Independent, Sat/20). 

Broadway-Miguel is wearing a striped tie, suit jacket, and dapper fedora, which by Yard Dogs Road Show standards seems vaguely pedestrian. But then he stands up. Electric blue, leopard print, so-skinny-they’re-emaciated jeans. “Miley Cyrus,” he confides, tossing his shoulder length blonde locks.

It is fitting that Broadway be a theater of the absurd. He is one of the original three progenitors (in addition to founder-manager-hype man Eddy Joe Cotton, who also wrote the heart-stoppingly wanderlustful memoir Hobo, and filmmaker Fletcher Fledujon) of the theatrically absurd touring troupe with which he makes his livelihood. He is artfully decorative in speech — as befits a man who has spent the last eight years of his life in pursuit of a vision received en route to one of Ken Kesey’s acid tests. 

I can’t say he gives me too many tangibles to work with during the course of our conversation, which is fine, because he has given me some lovely images to share in the article. The Yard Dogs Road Show milieu he finds “beyond English or current events, a landscape of dreams.” Also, it is “a sequined and glittered ceremony, a joyous one.” Fledujon, Cotton, and Strong met “organically destined to be in the same constellation of stars.” Broadway himself is “an electron,” a good show is when “the wind goes through you – you’re not doing it, it’s doing you.”

“Would you like a drink?” I ask him. “Oh, well I’m supposed to be” were finger quotes involved here? “On the wagon. But yes, I’ll have one. What are you drinking – a beer? Yes, I’ll have one of those.”

Things that we do manage to establish: the members of Yard Dogs Road Show – all “fifteen or sixteen” of them, travel together in a vintage Greyhound bus, in which none of them have their own beds save Kid Casbah, this because he is “the golden leopard, untouchable.” They are good house guests. One of their pinnacle moments as a troupe was a performance in an old opera house in Braga, Portugal — a performance that took place under an omnibus of a chandelier on a tour that took them to quite a few grand opera houses, the one in Braga being the grandest.

Its upcoming shows – the first time the group has had its own night in the Bay in two years — is for friends and family, in the looser sense of those words. New material will be debuted, this new material involving a carousel of prancing, bejeweled pony girls that Broadway and I conclude will resemble “peeking inside a Faberge egg,” a rocket man, and the Queen of Pineapple Island. We would be remiss if we did not mention that the talents of Scotty the Blue Bunny, aerialist Abigail Munn, DJ Shawna, and belly dance impresario Zoey Jakes, will be making their appearances over the two-night run.

At this point, beers have been had. We are touching on the art of the interview. Broadway says the back and forth is a skill he cherishes, and that his last two talks with a journalist were conducted from his bathtub and shower, respectively. “Do you know what would make this a truly great interview?” Broadway leans across our table, holding my gaze. “If we got absolutely wasted! The bartender can finish asking us the questions.” 

I mention I enjoy Bulleit bourbon and it is liberally applied to our conversation. At this point we must rely on my trusty notebook for the gems that were imparted.

I think Broadway then banged out a few impromptu tunes on The Right Spot’s piano, we drank more whiskey, shenanigans, and we called it a night.

More concrete information is to be had from the Yard Dogs Road Show website itself. For instance, after a bit of digging one can turn up a rider that states that the group requires eight vegetarian and seven omnivorous meals from show venues that do catering, tortilla chips and spicy salsa “of the health food store variety” if not. Three bottles of red wine and 24 bottles of “Stella beer or comparable” either way. To me, this says a conscious approach to health in solid foods, followed by a healthy disregard for matters of the liver. 

Here’s how the “great” (it really was) interview ended: Broadway and I mutually supporting each other outside the cafe, a freak November monsoon raging around us. “So. Did we cover everything?” he wonders. “I think we did a good job,” I slur at him before giving my final regards to Broadway and tripping away in the rain. I still believe it to be the case.

While Californians were held captive waiting for Gov. Arnold Schwarzenegger and the Legislature to agree on spending cuts and adopt a budget, state officials were throwing hundreds of millions of dollars down the drain and compounding California’s water crisis.

Water officials have wasted more than $10 billion and 35 years in extended delays in their failed attempt to carry out their legal mandates to protect the waters of the state and restore the San Francisco Bay-Delta Estuary. The result: water quality in the estuary is rapidly declining; fisheries are in crisis; and the proposed solution, an $11 billion bond act set for the ballot in 2012, will only make things worse.

The primary source of the water-quality crisis is a toxic mix of salt and chemicals discharged from lands irrigated by subsidized water delivered by the federal Central Valley Project to contractors farming on the arid west side of the San Joaquin Valley.

The salt comes from several sources. Irrigation water — particularly from the delta, where the water is somewhat brackish — contains salt. There also is salt and traces of much more toxic selenium in the soil. Industrial fertilizers add more dangerous chemicals to the mix. And since crops grown in the Central Valley don’t absorb much salt and the constant flushing with irrigation water leaches the selenium out of the soil, a nasty stew starts to build up.

This U.S. Geological Survey map shows a plan by federal and state regulators to divert toxic water more directly into the Sacramento Delta. All these diversion plans ignore the fact that poorly drained land isn’t suitable for farming.

If the irrigation water isn’t drained off, the salt buildup in the groundwater renders the land unusable to farming. In essence, farmers have been dumping the runoff water — laden with salt and selenium, along with mercury and boron — into the San Joaquin River, which carries it back into the delta and the bay.

All this is being done as the government declares its intent to save the San Francisco Bay-Delta Estuary.

How much salt are we talking about? According to a 2006 U.S. Geological Survey report, it amounts to about 17 railroad cars a day, each capable of carrying 100 tons of salt, as well as selenium and mercury. That’s 3.4 million pounds of salt a day being dumped in the lower San Joaquin River.

Of course, the river is a freshwater habitat, so all that salt damages plant and fish life.

Some experts say that part of the toxic stew is ultimately flushed out to sea, and the rest perhaps enters the aquatic food chain or at least degrades cleaner delta water.

As far back as the 1998, the state Water Board staff reported that salt loads in the valley were doubling every five years. Toxic salt-loading is not only taking its toll on the river and Bay-Delta Estuary, it’s draining the state treasury since myriad publicly funded programs for drainage, water quality improvement, fisheries restoration, and others continue to be financed with borrowed money from the deficit-ridden General Fund.

The water quality problem was identified as a potential crisis in the 1950s and has contributed to the pollution of a significant length of the 330-mile San Joaquin River. According to the U.S. Environmental Protection Agency, 215.4 miles of the river are on the list of waterways so polluted they’re unfit to swim in. And some species of fish from the river aren’t safe to eat.

On a 1999 EPA map, the valley is the single largest “more serious water quality problem — high vulnerability” area in the nation.

Water officials, drainers, and the major environmental groups forged a deal in 1995 to permit the toxic drainage to continue until October 2010, at which time the discharges were to end. But that hasn’t happened; the water boards have approved a new target date for compliance (2019) and sanctioned continued dumping of toxic drainage. The train wreck in the making will be allowed to continue dumping and pumping toxic salts every day into the waters of the state for the rest of this decade.

The tons of toxics salts being discharged into the waters of the state are only the tip of the iceberg. An unfathomable amount of toxic salts are also being stored in the soil underground, contaminating groundwater basins throughout the valley.

State and federal officials have put a lot of faith in a federal Bureau of Reclamation project known as the Grasslands Bypass, which is designed to send contaminated agricultural water through a part of the old San Luis Drain (that once led to the contamination of the Kesterson Wildlife Refuge) into a San Joaquin tributary known as Mud Slough.

The Grasslands Bypass Project, begun in 1995, is operated by the Department of the Interior’s Bureau of Reclamation. It reroutes subsurface agricultural drainage water around wetlands on its way eastward to the San Joaquin River.

Originally the agricultural runoff traveled through Salt Slough (a San Joaquin River tributary), which passed through wetlands on the way to the river. The Grasslands Bypass Project uses the San Luis Drain to reroute that runoff around approximately 100,000 acres of land between Firebaugh and Los Banos and into Mud Slough (another tributary of the San Joaquin River).

Carolee Krieger, president of the California Water Impact Network (C-WIN), says the Grasslands Bypass Project misses the point. The best solution, she said, is to stop farming altogether on the poorly-draining western valley along the San Joaquin River.

The project protects the wetlands but hurts the river itself. Dennis Lemly, research professor of biology at Wake Forest University in Winston/Salem, N.C., confirmed in December 2009 that the continuation of the Grasslands Bypass Project will cause a 50 percent mortality among juvenile Chinook salmon and Central Valley Steelhead in the San Joaquin River. Furthermore, the state water board lists both the Carquinez Strait and Suisun Bay, both downstream from the San Joaquin River, as “impaired” for their excessive selenium content.

At best, the bypass project can only slightly mitigate the damage. The only real way to resolve the discharge of the tons of toxic salts is to stop irrigating land that has known drainage problems.

In the early 1980s, the discharge of the toxic salts into the now-closed Kesterson National Wildlife Refuge, located in the San Joaquin Valley, was the site of one of the worst government-induced wildlife crises in American history. Several studies have since been conducted and numerous Band-Aid-type fixes have been implemented, costing taxpayers hundreds of millions of dollars. So far officials have failed to identify a viable cost-effective solution to the toxic agricultural drainage crisis and estimate a pilot program will cost at least $2 billion.

Meanwhile, the Legislative Analyst reported in 2008 that the state and federal government have spent $5 billion on projects to improve the Delta.

This is one of the ways your tax dollars fund the destruction of the San Francisco Bay-Delta ecosystem.

In 2009, the last year of the so-called great California drought, a strange thing happened: Sacramento Valley growers produced a near record amount of rice, and down south, the Metropolitan Water District of Southern California (Met), the largest urban water supplier in the nation, experienced record-breaking water sales. All this despite repeated mainstream media accounts in 2009 of an economy-wrecking dust bowl water shortage.

According to the U.S. Department of Agriculture, the California rice harvest in 2009 was up 9 percent from the previous year and approached the record crop of 2004.

Rice consumes a great deal of water for its dollar value and produces little net income. According to a report by the University of California, Davis, the minimum amount of water required to grow a crop of rice is about 42 inches per acre. Unavoidable losses can add to this amount — so that the amount of water consumed (or evaporated) can be as much as 100 inches per acre, depending on the soil. That appears to be enough water to drown the tallest person on earth.

The California Rice Commission, a trade group representing 2,500 rice farmers, estimates that rice uses 2.2 million acre-feet of irrigation water yearly, about 2.6 percent of the state’s total water supply. According to records obtained from Met, that’s equal to the annual average water it supplied to all of its 19 million customers.

UC Davis data from 2008 show that California exported 52 percent of its rice production, much of it to Japan. For every pound of rice exported, about 250 gallons of embedded water used in growing and processing that rice leaves along with it, according to “Water Footprints of Nations,” a 2004 UNESCO study. (The report spawned the Web site www.waterfootprint.com.)

The rice harvest should be of great consolation to the chairman of the California State Water Resources Control Board, Charles Hoppin, who is also a rice grower, vice-chairman of the Rice Growers Cooperative, and immediate past chairman of the California Rice Industry Association. Chairman Hoppin, in a March 2010 speech in Yuma, Ariz., complained that the regulatory community, including much of his staff, doesn’t know or understand the issues facing agriculture and “doesn’t give a rat’s ass.”

According to the Environmental Working Group, rice subsidies in California totaled $2.4 billion from 1995-2009. In that period, the single largest recipient of subsidies was the Farmers’ Rice Cooperative of Sacramento, California, totaling more than $146 million.

Farm recipients of USDA subsidies in California totaled $9.1 billion from 1995-2009.According to EWG, “Washington paid out a quarter of a trillion dollars in federal farm subsidies between 1995 and 2009. But to characterize the programs as either a big government bailout or another form of welfare would be manifestly unfair — to bailouts and welfare.” Then there’s hay — another water-gulping product that’s getting exported, with much of it going to Japan.

Writer Melinda Burns, in a June 10, 2009 story on Miller-McCune.com, notes: “In the Imperial Valley of California, a region drier than part of the Sahara Desert, farmers have found a lucrative market abroad for a crop they grow with Colorado River water: They export bales of hay to land-poor Japan. Since the mid-1980s, this arid border region of California has been supplying hay and feed for Japan’s dairy cows and black-haired cattle, the kind that get daily massages, are fed beer, and produce the most tender Kobe beef.”

She quotes Patrick Woodall, research director at Food and Water Watch, an international consumer advocacy group with headquarters in Washington, D.C.: “There is a kind of insanity about this,” Woodall said. “Exporting water in the form of crops is giving water away from thirsty communities and infringing on their ability to deal with water scarcity.”

SF local artist’s purpose within reach

“I wanted to teach people, tell them how to do it. I always dream about taking back the city through art.” Reynaldo Cayetano Jr. is showing me his photographic prints in a Lower Haight coffee shop. He’s explaining to me how a guy who grew up in San Francisco came to be on the brink of his third art show in San Francisco (Purpose: Beyond Reach, coming up on Sat/20 at Rancho Parnassus).

Is it weird that this trajectory needs explaining? Common sense says that growing up in a world-class art city would give you a leg up on an career amidst darkrooms and gallery openings. But that’s not the case in cities, really. Local kids get the boot for all kinds of reasons in today’s 21st century – especially creative types who aren’t ready to divest their days to the rat race necessary to stay and live in our great urban spaces.

Maybe to look for real, SF-grown artists you have to see beyond the standard downtown gallery scene. Cayetano’s art shows take place at non-traditional venues – the most recent of which was Bayanihan Community Center on Sixth Street, in the neighborhood that Cayetano grew up. The 23 year old populates the shows half with friends he grew up with and half simpatico souls he meets around the city (full disclosure: my boyfriend falls into this category for the upcoming Sat/20 show). 

Cayetano (Rey to friends) says he’s always been “a spectator of art.” He began sketching as a teen, copying his older brothers who liked to draw. “But soon I was getting better than they were,” he tells me, smiling over coffee and a pastry at the round table we’re sitting at with fellow Inks of Truth artist, photographer Chris Beale (whose shots illustrate this article). 

We’re passing around the portfolio of the two men, who met in a City College photojournalism class and bonded over being the only ones working with film in a digital world (“making it, like, twice as hard on ourselves,” they tell me, clearly relishing the challenge). Cayetano’s folder of prints shows street scenes from his recent trip to the Phillipines — a journey he’s made only twice since his father, mother, two brother, and he moved to California in 1993.

I turn the page and there is a black and white closeup of his uncle’s knotted hands, then photos from his life in SF: friends, protesters at immigration rallies, corners and streets he’s walked for years. Beale, a long time SF resident originally hailing from Baltimore, has crisply developed shots of Rey in his own book, a dissenter giving the finger to City Hall’s golden cupola, an image of the two’s friend – and emcee who’ll be playing his new album at Saturday’s event – Patience the Virtuous, gazing into the MUNI bus yards. 

Rey started curating his group shows — which display the work of a loosely bound collective called Inks of Truth — to fight ignorance in the SF community. Ignorance of pedestrians, that is. Spurred by a good friend’s death on the Alemany and San Jose S-curve (the young woman for whose 21st birthday present the camera he shoots with was intended), he brought together creative acquaintances for an event that “was supposed to be an art show, but leaned towards awareness.”

Photos from that show and Rey’s second depict a crowd of young people enjoying themselves amidst the physical evidence of their collective creativity, at one point clearing the floor for some b-boys to get in on the show and tell. It’s hardly the scene you see at many wine and cheese receptions that mark the debut of an artist’s work at other places around the city.

The events’ orchestration were big moves for a guy that has trouble seeing himself as a professional artist. “As soon as I call myself that, it comes with… I don’t want to say baggage, but it implies a lot of knowledge,” Rey tells me. “At first I thought that I shouldn’t have a show because I’m not a photographer, but then I thought no – that’s why I should do it.” When I ask him whether he sees a lot of the peers he grew up with in the Sixth Street neighborhood getting in on the SF art scene, he’s hesitant to make sweeping statements. “I feel like it’s lagging, but it’s not to the point where it’s hopeless.”

Perhaps this lag is what gives Cayetano the motivation for his inclusive shows. Saturday’s will feature works by sixteen artists in a variety of mediums. Cayetano is hungry to give others the adrenaline rush and fufillment that comes from finally, seeing one’s work on the wall. 

But it’s not always easy. In the midst of his own worry over producing events without professional guidance, Rey’s dealing with the varying levels of commitment of artists showing their beloved creative mindsprings for the first time. But overall, the process is one he seems to take inspiration in. “It’s great to give them that kind of anxiety, it’s a good stress. If you’re not stressing in the process, it’s not explosive,” he reasons.

In addition to bringing a taste of artistic involvement to the talented around him, the upcoming Purpose: Beyond Reach show at the Sixth Street cafe has another, even more salient community connection. It’s a food drive for Martin de Porres House of Hospitality, a place that Beale says is the soup kitchen of choice for many of the homeless people he’s spoken with. 

Cayetano elected Martin de Porres as the beneficee for its relatively small capacity. After speaking with representatives from larger shelters like Glide, he discovered “even if you raise a lot of cans, for a big shelter it will be gone within a meal.” Art show attendees are expected to load down their backpacks for entrance: those over the age of 21 are expected to donate at least five cans of food. 

For Cayetano, it was important that his third show reflect the entirety of the community where he was raised.  “It’s a testament of growing up on Sixth Street. The people out on the street now are the same ones that were there when I was growing up.” All the better to reflect the real community of San Francisco — if not that, then what are we painting for?

DINE The current pizza vogue reminds us that pizza is always in vogue. Pizza is timeless; have you ever met anyone, or even heard of anyone, who doesn’t like it? Yet the welter of new and ballyhooed pizzerias, in all their worthiness, can sometimes make us overlook the older, time-tested spots like Cathy and Sal Alioto’s Paradise Pizza and Pasta at the edge of West Portal.

Paradise has been “family owned and operated since 1989,” according to the menu card, and that’s a lot of restaurant years. (Restaurant years are even briefer and more brutal than dog years, which is saying something.) The restaurant also claims to offer the “best crust in the city.” This is a complex matter in which personal taste inevitably figures, as we shall see.

But first, the setting. It’s clean and modernish, with a semi-exhibition kitchen and bright green tabletops illuminated by a small spotlight in the ceiling — a mercy for those of us who were born before, oh, let’s say 1989, and now have difficulty reading menus by the dim light in so many of our more au courant restaurants. The interior design does contain one oddity, and that is the large fish composed of pizza pans mounted above the kitchen. It looks like some sort of Christian symbol while implying that the restaurant is some sort of seafood house, which it isn’t.

Which isn’t to say there aren’t glimpses of seafood on the menu. There are, including sautéed shrimp, fettuccine with shrimp, and shrimp on a pizza. Ahi even turns up occasionally, in tissue-thin flaps, almost like prosciutto — on a plate of bruschetta ($10.95) in the company of caramelized onions and juicy, late-season tomatoes.

The pizza crusts strike a nice balance between anorexic (in vogue at the moment) and foccacia-puffy, which I have always found to be bloating as well as flaccid when soggy. Paradise’s crusts are thin and crisp enough to hold a firm point (with good chewiness) while flashing some well-blistered puff along the edges.

As for toppings: they come pre-bundled for your convenience, under a variety of alluring names (all containing the word “paradise”), or you can put together your own consortium, starting from $10.95 and rising in increments from $1 to $1.50 per extra topping, depending on the size of the pizza. The ingredients, although not exotic, are fresh and vivid, the Italian sausage in particular, which skillfully balances the assertiveness of its two principal players, garlic and fennel seed.

The triumph of the pizza over the calzone in this country is something of a mystery to me. Does it have to do with the comparative ease of cutting up a pizza into slices for sharing, whereas a calzone is usually too big to be a finger or hand food? Paradise’s calzoni (all $12.95) are splendid to look at, each a sizable mezzaluna bulging with tasty goodies and with a subtle sheen, like that of a good (if blistered) brioche, on the outside. The salsiccia edition, filled with crumbled Italian sausage, chopped mushrooms, and mozzarella and ricotta cheeses, would pretty easily be enough for two people, especially if preceded by a starter course of some kind.

One such course we weren’t impressed with was a cream of artichoke soup ($4). The soup was certainly creamy — indeed, it seemed to be nothing but creamy, as though the kitchen had poured a carton of half and half into a pan and gently heated it. We did detect a faint hint of lemon in all that unorganized richness, but of the headlining ingredient … bupkes.

Paradise does a lively takeout business, which — as at every other such place I’ve ever been to — does slow the sit-down service. The servers themselves are attentive, knowledgeable, and prompt, but because the kitchen is busy baking pizzas for an unseen host as well as for the people sitting at tables, there can be a bit of a wait. But the beers and wines are moderately priced by city standards, and the crowd is spectation-worthy, a true neighborhood potpourri ranging from greatest-generation couples out for a simple dinner to packs of high school boys in their Giants regalia — black and orange, so reminiscent of Halloween. Halloween has just passed, but, like pizza, it never goes out of vogue in our town.

CHEAP EATS Where were you when the Giants won?

I was eating Buffalo wings at NY Buffalo Wings with the Maze and Kayday, and when it was over we decided to spill into the streets.

What a great city our city was! This was the way that I was feeling, that San Francisco was the best place on Earth and had the best pitching. All that remained was to set a police car on fire.

“That’s what they do in Philadelphia,” Kayday explained.

Yeah, but we’re not Philadelphia, or Texas, are we? No, we are not. Besides better pitching we have district elections, the view from Dolores Park, and bike lanes. We have Buffalo wings, Philly cheese steak, Texas barbecue, Chicago pizza and Buster Posey. We have players with pretty hair, dyed beards, and cool names.

I don’t really follow baseball anymore. Baseball lost me a few years ago. Oh, I still appreciate good pitching when I see it. And a sacrifice bunt — which is not after all “hit,” but “laid down” — is still my favorite Thing in the whole wide world of sports. Executed properly — which is to say, poetically (see Aubrey Huff, top of the seventh, Game 5) — the sacrifice bunt makes me all buttery inside, and crispy outside, like the fried yucca at Limon Rotisserie.

I will never get tired of it. In fact, thanks to the tingly feeling I still have for power hitter Huff’s li’l push-n-puff between the mound and first base, I might just become a baseball fan again. Fuck Edgar Renteria. Fuck the sweet and sour punch of Lincecum-Wilson. They all might have won the game, according to sports sections, but — even before his thong-related antics at the parade — Aubrey Huff had won my heart. And which, in the long run, is really more important?

Oh, yeah … I guess you’re right: probably for sure the game, now that you mention it. This is why you’re not supposed to answer rhetorical questions.

But why am I writing about a week-old baseball game in the food section instead of dates and shit? Don’t answer that!

I want to. Because, like a lot of other wahoos hanging out of SUVs and minivans or dancing in intersections, on boats, or flying through the air, I was and still am beside myself with pride and joy for the city I live in and the people I live in it with.

Kayday was right. It was almost our civic duty to set things on fire. I wish I’d thought of this beforehand, but I’ve never been in a city that won the World Series before. As a result, I didn’t have matches or a lighter and that’s why I was at the corner of 18th and Mission streets rubbing two sticks together when the party started.

The Maze, who had come straight from the airport to wings and still had his luggage in tow and isn’t much of a baseball fan (lapsed or otherwise) and was tired, went home.

Kayday had her iPhone out and was taking pictures or making movies.

And I, like everyone else who has ever rubbed two sticks together, eventually gave up and started looking around for something to tip over, or at least kick.

All mayhem-related kidding aside, I love how everyone loved each other and seemed to want to hug or at least high five me. As someone who errs on the side of eye contact, who tends to smile and/or say hello and isn’t always (or even often) requited in this, I was like a kid on a choo-choo train.

I’d never felt anything like it.

So I stayed out late, in some cases dodging glass bottles, because I guess I wanted one more hug. One more high five. One more woohoo, ain’t we great.

Yeah, we are.

But I forgot to tell you about dim sum. Last week, and now, nearly, again. There’s this one out on the avenues, in the Richmond, that claims to be “the Very First Chinese Restaurant on Clement.” I don’t care about that. I barely care how good the dim sum was, which was, for the record, pretty good. What I do care about: $1.95 per plate, weekdays.

Slough Feg’s Mike Scalzi talks metal, philosophy

(For a review of Slough Feg’s latest, The Animal Spirits, go here. Read on for an interview with the band’s guitarist-singer, Mike Scalzi.)

San Francisco Bay Guardian: I noticed a clear theological theme running through the album. Was that – the Reformation – an area of historical interest to you? I’m interested in that choice, of a less exciting historical topic than maybe a more violent event…

Mike Scalzi: It’s not as metal, certainly. But in another way, Martin Luther was very metal, in that he was dedicated. Though he was Christian, in his dedication and his rebellion, he was metal. I was reading about all that stuff in an anthology of Western cultures. It was very general – I had to teach it. I’m a teacher. I started teaching Philosophy of Religion a year ago for the first time, and I’m not really that into teaching it, because its not my area of expertise, but I kinda had to.

[Writing music] helps me, actually. If I can write a song about it, it becomes more ingrained in my everyday thought. It becomes more second nature to say “oh, the 95 Theses!” It’s not just as a teaching aid, though. When it comes to Renaissance Christian theologians, he’s the most metal one. He’s out in the world. He’s out doing stuff, being a revolutionary. And a lot of his views are funny, a lot of the things he said were really funny and really extreme.

SFBG: Less metal for being ultimately successful, though. A lot of those so-called heretics were metal in the sense that they died for their principles, or were burnt at the stake or what have you.

MS: But he was the most badass one! Obviously, I don’t agree with him – he was a fundamentalist and all that, and he brought on fundamentalism in a way, I guess. But at least he said that trying to believe that the Bible is literal fact by reason alone is preposterous. That’s why he thought you had to exercise faith – because it’s preposterous. Everything in the Old Testament is preposterous, but you have to believe in it, purely to test your faith.

After seven records, you have to think of new things. I don’t want to repeat myself.

SFBG: What was the rubric for the lyrics that were included in the liner notes?

MS: Oh, those are the lyrics to “Trick the Vicar”

SFBG: Oh, so it’s just the one song?

MS: That was my decision. I’m sick of like…I’ve done that on every record and…

SFBG: People parse your lyrics?

MS: Oh, I don’t care about that. They come up with all sorts of weird interpretations, as if I really care that much. “Oh this means this and that means that. This is the deep meaning in this.” There’s no deep meaning in this shit! At least not that I know about! But at this point, trying to find things to say is a challenge.

With “Trick the Vicar,” I thought the lyrics to that would be important because it’s all one big pun. There’s obviously no deeper meaning, other than just being entertaining. It’s like something from a Benny Hill skit or something. So on the inside of the CD, I had all the puns – I came up with all those puns in the same month. They’re really silly, obviously.

SFBG: Well I did mean to confirm whether or not “boister” was a word.

MS: Good, good! No, its not. But when I say “There’s a boister that goes on in the cloister”…

SFBG: …from context it’s pretty clear.

MS: Yeah. It’s just a bunch of silliness, but it works for the song. I like silliness, and that’s one of the things that’s missing from a lot of metal: a good sense of humor. Metal used to have a sense of humor, in the 70s and 80s.

SFBG: That’s something that I was meaning to ask you about, if there’s a way to account for that sudden lack of humor. You have this form of music that has this potential to be taken seriously, but also the potential to be looked at with a sense of humor, or with an understanding of its many tongue-in-cheek aspects. It seems like a lot of its biggest fans, a lot of the people with the kind of familiarity with it that would enable them to see the humor, are the people least able to see it.

MS: Well, there are a lot of stupid people. You go to a metal show and you run into a lot of morons. Around here, you don’t have as many.

SFBG: I think it’s sort of like a dumbbell shaped-graph. On the one end, it attracts a lot of stupid people, but on the other end, it attracts a lot of people who are discerning and smart.

MS: I think, basically, they’re going to laugh at you one way or another. Being a metal guy, especially when you’re old, or older, or from the last generation of metal, they’re going to laugh at you. You make the choice of whether they’re going to laugh at you or with you. And I choose to laugh with them!

Also, metal, or indeed all rock and roll, is inherently funny. It is! People used to know that!

SFBG: Or inherently fun. That’s what a lot of people seem to lose sight of.

MS: Metal is inherently funny. No matter what! It’s funny. That’s one of the best things about it! It’s ridiculous, and it’s great because it’s ridiculous. People realized that way back. Black Sabbath, maybe not Led Zeppelin — they never had much of a sense of humor – Deep Purple, Judas Priest. The New Wave of British Heavy Metal. Early glam metal – Twisted Sister, Quiet Riot – they all had a sense of humor. Van Halen! Give me a break…that band was all humor until Sammy Hagar came, and it lost its sense of humor, and it started to suck.

The way that these things incorporated humor resembled vaudeville. That was David Lee Roth’s whole thing. Humor is part of entertainment. The most serious, heavy band, Black Sabbath, was also the most funny, because they realized – they were a British band with a British sense of humor.

SFBG: It’s interesting that you mention that. Do you think the trans-Atlantic shift had anything to do with that loss of humor?

MS: No, because Van Halen is the funniest. Maybe they’re not metal. Manowar! I don’t know if you want to open that can of worms. There’s a lot of evidence that they started out as a joke. They started out tongue-in-cheek and got serious as they went along. They know they’re funny; they may not want to acknowledge it, but they are.

SFBG: And the humor is bound up in the fact that everyone knows there is a joke, but no one will actually admit it. You can listen to it and pretend that you’re taking it seriously.

MS: It’s true of hardcore too. It used to be funny, now its all [imitates hardcore singing]. It’s lost its humor – some of it hasn’t, but most of it has. That’s one of my problems with a lot of the metal in this country, or in Germany too – people take it too seriously.

It’s the same thing with entertainment. I’m accused of being too traditionalist and narrow, but I’m bored by anything else. The way that entertainment used to be, in my opinion, was better. Period. It just used to be better. And now, it lacks.

I guess the question you’re asking is “why?” I don’t know why. I think it’s something about the world and the way people see entertainment. It has a much wider scope than it used to. People are much more involved in it as fans, and take it seriously as a statement, which is great, but maybe some of the actual enjoyment of it – from the performance standpoint and the artists’ standpoint – has been diminished by the fact that people hold it too close to their heart. The fragility of their egos and their identity are wrapped up in it in a way that causes problems.

SFBG: Like many discussions about the evolution and history of metal, I blame Nirvana. They taught people, or people took away from them this idea that if a band was trying to entertain you, that was somehow false.

MS: Well, that happened way before Nirvana, but that’s when it hit mainstream.

SFBG: There’s that line in Smells Like Teen Spirit: “Here we are now/Entertain us.”

MS: I don’t know if I have much to say about that. At the time, I didn’t like it. I heard their first album, before they were really popular, and I didn’t like it then. I was playing shows in San Francisco at the time, and I knew that I was not down with what was happening as a result of them. “Don’t try.” “Don’t give a shit.” “Nevermind.” “Be a loser.” I mean, sure, I thought that when I was a teenager. That’s the 14-year-old mentality: “everything sucks, so fuck it, man.” By the time you’re in your twenties you’ve grown out of that, you try to do something, unless you end up like Kurt Cobain, and you just fade off into negative, negative, everything sucks, and then die. [Sarcastically.] That’s great! That’s my hero! [Chuckles ruefully.] What the fuck is that?

SFBG: So, part and parcel of the conversation we’ve been having is the fact that you’re a very opinionated guy…

MS: So you’ve read my blog posts. There’s a new one today! I was just reading the comments.

SFBG: I did read them. I can only imagine what kind of comments you’re going to get on the most recent one. I was wondering if there’s something you can identify about metal that helps it attract opinionated people. Or, to reverse the chicken and the egg, if there’s something about being into metal that makes people opinionated?

MS: Well, I don’t think people get into metal for some other reason, and then get opinionated once they’re into metal. Unless you want to get into the fact that most metal is so bad now that you can get into it and say “oh god I’m so opinionated because there’s so much garbage out there. That’s true of a lot of kinds of music though.

It attracts opinionated people because it is extreme music. It attracts people who are into a certain kind of mentality. It happens from such an early age! I can’t analyze it. I got into metal, like a lot of people, when I was pretty young, and that was a long time ago! I don’t remember exactly. I don’t have immediate access to that feeling first being attracted to it. To me, its something that happened so far back that its like…

SFBG: …it’s like asking “why do you like mac ‘n’ cheese?”

MS: Exactly. And I have more access to what’s happened since then. But I don’t feel like I’m actively opinionated. People take things in, and they call them like they hear them. To me, things assault my sense, not the other way around. Nobody remembers being born into the world of music or food or anything and going “Hmm, I’m going to investigate this thing!” It’s more you hear something and you’re passed into this impression that you have. And some things, you get an impression and you go “Argh, that sucks! That really bothers me!” So my opinions, like those of most people who are opinionated, come from being stimulated by something in a positive or negative way. I would say I call it like I hear it.

I never thought of myself as opinionated until I moved here. People said that if I moved to San Francisco there would be all this great music. They said, “People out there are very enlightened.” And then I got here – 20 years ago – and I thought, “Everybody here’s not really that enlightened. There’s a lot of stupid bullshit going on out here.”

SFBG: Switching tacks completely, I’m curious about your master’s degree in philosophy. I read a little bit in another interview about what you teach, but I’m curious about what you focused on in your studies.

MS: I ended up studying Descartes for my thesis. I was interested in Descartes as a graduate student because his method was very simple and intuitive, and the whole point of it was a do-it-yourself type thing, rather than getting involved in this long academic tradition. Obviously, like anyone else, he comes from an academic tradition, but his point in Meditations [on First Philosophy] was to say “let’s erase everything that happened beforehand in philosophy and science and start on your own, with what you can know by yourself.”

I just found Descartes pretty easy to understand. I was able to maneuver in that ontology. I started taking seminars on Descartes, and I subsequently got interested in German idealism, like Kant and Schopenhauer, and like every metalhead, I was interested in Nietzsche.

In a master’s degree, you end up focusing on major guys because they have these comprehensive exams that test your knowledge of Plato, Descartes, Hume, etc. I stuck to a lot of that, because I knew I would have to take an exam on it.

SFBG: That Kantian or Cartesian originalist thinking – wiping the slate clean, starting with the Categorical Imperative, or something like that…

MS: …well, Kant is much more in the tradition, he’s not trying to wipe the slate clean. He’s just trying to be revolutionary.

SFBG: I’ll admit I’m only tenuously familiar with Kant, but I remember his ethics being founded on a sort “first principle” that ignores cultural baggage and so forth.

MS: Well, that’s what people say, but his point is to come up with something that is not dependent on circumstance in any way at all. Something that’s not empirical, that’s totally dependent on reason. Just like Descartes’ “I think, therefore I am,” in a way.

It’s something that you try to universalize by saying “what if everybody did this?” [Motions toward cookie on the table.] What if I were to steal this cookie? What if everybody did that? If it produces a contradiction – if its unreasonable for everybody to do something – you have to decide if it would be possible. Not if it would be right or wrong.

In order to establish a standard of right and wrong, you have to decide if it’s reasonable – could everyone do it. Suppose I don’t keep a promise – I say I’m going to show up here at 11, and I don’t. If I don’t do that, and I don’t keep my promise, what happens? It undermines the principle of the promise in the first place. If I don’t keep a promise, whatever, no big deal. What if nobody keeps promises. Could everybody do what I did? If no one keeps promises, there wouldn’t be promises in the first place.

SFBG: There’d be no point.

MS: You couldn’t make promises, because there’d be no such thing.

SFBG: Like if everyone stole, there would be no point in having property.

MS: If there were no property, you couldn’t steal. If there were no taking anybody’s word for anything, you couldn’t make a promise. It undermines its own possibility. It’s a contradiction that makes the act itself impossible. If its irrational to that extent, to the point where it makes the act itself a contradiction, then, according to Kant, its not morally permissible. That’s a little bit of a long answer.

SFBG: I’m going to attempt a sort of interviewer Triple Lutz here. Is Descartes’ idea of discarding what has come before, or Kant’s idea of ignoring circumstance to come up with principle…

MS: …Rational principle…

SFBG: …purely rational principle. Can that be applied to your creative process? In the sense that…

MS: No. [Laughs.] I wish I could say that it could. That’d be a brilliant piece of journalism. But as much as I’d love to be able to say that there’s some heavy metal calculus that I use in order to write by sheer principles of reason…no. At least, not for me. It’d be cool if there was some guy, some alchemist songwriter guy who was trying to find the principle of guitar or whatever.

SFBG: You could sort of take a stab at the categorical imperative of metal though, being like Maiden, Priest, and Sabbath, and not being affected by sort of the whims of circumstance.

MS: That’s the problem I’m encountering though. I don’t want to say that everything’s all based on the past. I don’t want to be a heavy metal anachronism. That’s what I’m getting in a lot of these responses to my Invisible Oranges articles. Again, to be philosophical about it, I get this confusion of cause and consequence. A lot of people say to me: “you don’t like death metal because you haven’t explored it.”

I try to keep the analysis somewhat objective, about why I don’t like the cookie monster vocals, the guitar sounds that are very brittle, and the drums that are triggered – clickety, clackety, clickety doesn’t sound “brutal.” It sounds like some bullshit to me.

People say, “You haven’t explored it enough. You haven’t heard the good stuff. You haven’t gone to the lengths that it takes to appreciate it.”

SFBG: If it’s good, it shouldn’t take any “lengths.”

MS: It’s confusing the cause with the consequence. It’s not that I don’t like extreme metal because I haven’t listened to enough of it. I haven’t listened to enough of it because I don’t like it. People think that I’ve come up with some sort of rigid heavy metal calculus and say “I like Priest, I like Maiden, I like Sabbath, Saint Vitus, whatever, some underground stuff too. These are the criteria of what I will listen to.”

It’s not like that! I grew up with the evolution of the whole thing, listening to it happen, and I heard things, and I said “I don’t like that! That’s crap! That sounds like someone who doesn’t care about what they’re doing.” It just sounds like shit to me, for whatever reason. And I heard more and more of it, and I chose not to investigate it.

SFBG: Getting back to philosophy just briefly, I saw in another interview that you described your music as having a Machiavellian aspect. I understand a Nietzschian aspect, but how does Machiavelli come into it?

MS: I was probably joking! I’m not sure. I was just being macho, talking about taking over the world. It’s a very vague characterization of Machiavelli, who I don’t really know shit about anyway.

SFBG: I was struck by the William Blake references in one of your old songs, “Tiger! Tiger!” Blake has always struck me as very metal.

MS: The reason that I put that stuff in there is not because of William Blake. It’s because of Alfred Bester, who quoted him.

SFBG: I noticed that you mentioned that author a lot in other interviews.

MS: A lot of sci-fi fans haven’t read him! This is insane to me. When people read The Stars My Destination – the original title of which was Tiger! Tiger! – they say “that’s the greatest fiction book I’ve ever read.” I was not a sci-fi or fantasy reader until I was 26, and someone got me that book. It was completely a fluke. I got it and I was like, “Ehh, I don’t really like science fiction books,” and then I finished it and said, “This is the best book I’ve ever read in my life.” Only on the basis of that did I get into science fiction.

SFBG: It’s tempting to ask you questions about Slough Feg’s distinctive sound, but seeing where my fellow interviewers have gone before, I was wary. It seems like we journalists want to get you to say “Oh, I choose to write songs with major chords because of this reason which is easy to print,” and your response is to say, “Look, this just my creative process; it’s how it sounds good to me.”

MS: Well, something that sounds good to me vocally sounds good because it’s catchy. If I remember it. I don’t always tape everything that I do. So, why do I remember it? That’s a whole question. Maybe I remember it because it sounds a little bit unique, maybe for some other reason.

SFBG: I think the music stands out to people, whether on record or live, because it makes melodic choices that almost seem like a deliberate subversion of the conventions of metal, like all those major chords. But I’m assuming that wasn’t a choice to subvert. That there wasn’t a point at which you were like, “Heavy metal is in minor keys – I’m going to do it a different way.”

MS: Well maybe there was! Again, it wasn’t a conscious choice. I don’t write Slough Feg songs according to music theory. I don’t say, “Now we’re going to do a song like this; now we’re going to do a song with these chords, or with this type of vocals.” If you do that, it ends up sounding overly stiff and deliberate.

But having said that, that’s not to say that there isn’t some kind of overall approach. When I do write stuff, what do I edit out? What do I keep? Stuff that reaches a certain criteria after the fact. Not when I come up with riffs, or vocals – that just happens. But what do I choose to keep? I don’t think about it consciously – it’s second nature to me now, so its hard to say – but basically, at one point, I wanted to write things that imitated Maiden, Sabbath, Thin Lizzy, Alice Cooper, Saint Vitus, Black Flag, and all that.

It became second nature to say “I want to pick up where Maiden left off,” but not to use major chords. The first “Irish-sounding” song I ever did was called “The Red Branch,” and I was sitting around in my living room, in a place I lived in years and years ago, I was sitting in my living room with an acoustic guitar, just joking around, singing to somebody as a joke, and I thought, “That’s a cool chord change!”

I keep a lot of things that other people would throw away, that they’d be scared to put on a record because it’s too silly-sounding. I say to myself “this is actually something that someone else wouldn’t do, and have the nerve to take seriously.” I think a lot of people are embarrassed to play Slough Feg-type songs. They were 20 years ago, at least. And now we’ve developed the sound to the point that it’s sort of obnoxious. People are like “what the hell man! This guy is willing to do this?!”

That’s what happened in San Francisco in the mid-nineties, playing this music. People would be like “God, you’re willing to get up onstage and play that? That sounds like nursery-rhyme music with metal instruments. It’s major. You’re singing like you’re in a 50s musical!”

Those are the kind of influences that I incorporate, maybe because it was something people weren’t willing to do, and so it sounded fresh to people.

SFBG: That sort of discomfort you describe is interesting, because you have this whole other offshoot of metal that’s built on discomfort. Black metal is based around saying “which chords can I play that will make people uncomfortable, that are the most dissonant.” You’ve come up with an incredibly unique way to do the same thing. You challenge people’s expectations, you make them uncomfortable, you take them out of their comfort zone, but instead of being really really heavy, or really fast, or really dissonant, or really down-tuned, you just have your own personal approach: to write chord changes that are, you know, silly.

MS: Or just really, really, traditional. Not that I intended that. But this is good, I think we hit the nail on the head in sense. When I started developing the sound, in the early nineties, a lot of it was a reaction. I didn’t write these looney tunes in 1989. I wrote them when I got here, and I started playing some shows, and I noticed that all the bands were drab, and all the bands played sort of one-dimensional speed metal. And I was totally nonplussed by it.

What I was writing was a reaction. I was saying “what can be done at this point?” Punk rock and speed metal and grindcore are just an extension of the same dirge – being obnoxious by being a dirge.

SFBG: And it’s an arms race, right? You can only go so fast. And then the next band that comes along has to go faster than that.

MS: And also it’s the attitude that’s so passe after a while. Spitting blood and whatever. I wanted touch on what people inevitably heard – kid’s music, or what your parents were playing – and pose the question: “are you willing to admit that this is enjoyable to you?” Slough Feg songs that do sound like they’re from a 50’s musical. Are you able to admit that this is catchy to you? That’s the punk rock maneuver, that I was able to think of it in those terms. And that’s what set us apart. But in a totally different way, in a way that goes back to like, “This is inherently enjoyable. Are you willing to partake in it, or are you too cool for it?”

SFBG: And it’s diametrically opposed to black metal. Black metal is “I will alienate you by doing something that is not enjoyable.” Your approach is “I will alienate you by doing something that is too enjoyable.”

MS: After the fact, that’s how we can analyze it. I think that’s a proper way to look at it. My songs do assault the listener, and people say “I can’t get it out of my head!” Because it’s written in very simple way – they’re really not that hard to write, but it’s a kind of songwriting that people aren’t willing to do.

Someone said to me in the 80’s, when I liked Venom a lot – they’re a very silly, vaudevillian form of Satanic metal – “Why do you like this? Anybody can do that. Anybody can play Venom songs.” And I said “yeah, that’s true. But nobody is willing to. That’s what makes it special.”

“The Neighborhood”

Audyssey, an L.A.-based audio laboratory, must have a thing for San Francisco. First it marketed its iPhone docking station as the South of Market, and now it’s calibrating the music scene by launching a monthly music showcase at 111 Minna: “Multiple genres. Local talent. Marnie Stern

Kill Rock Stars artist Marnie Stern brings her whirlwind brand of finger-tap guitar shredding to Oakland. With influences ranging from math-rock godfathers Don Cabellero to punk and classic-rock staples, Stern and her band create quite the interesting racket. Equally impressive as Stern herself is her drummer, Zach Hill (of Hella), who matches her yelping vocal style and hyperactive arena rock solos with a frenetic creativity all his own. Stern’s new self-titled album brings the “noise for the sake of noise” level down just a tad and offers a more melodic and direct approach to her songwriting. (Landon Moblad)

It goes without saying that we live in a pretty diverse city, but since February 2009 photographer Julie Michelle has been capturing the people and stories that make SF great in her “I Live Here: SF” portrait series. The end result includes more than 170 images of SF residents, complete with their personal stories and accounts of their connection to this lovely, crazy, and exciting city of ours. Her subjects cut across races, classes, ages, and neighborhoods; you might just be surprised by the SF microcelebrities who pop up in them. “Shared Space 4”

This is the fourth “Shared Space” season for Todd Eckert and Nol Simonse, two dancers who couldn’t be more different from each other. Yet as choreographers they find common ground. At least for this season, they are both diving into the past for their world premieres. The intricate meters of a medieval poetic form and the music of J.S. Bach inspired Eckert’s new Sinfonia. Continuing his interest in Greek mythology, Simonse is reaching even farther back. Demeter, the goddess of harvest and generosity, became the springboard for Greater Than. With Dancer for Hire, however, he hits a painful, up-to-date note: how to keep dancing in these parlous times. (Rita Felciano)

Ray Manzarek and Roy Rogers

A recent project bringing together two luminaries of the 1960s and ’70s California rock ’n’ roll scene, the collaboration between legendary Doors keyboardist Ray Manzarek and blues guitarist par excellence Roy Rogers has produced an eclectic exploration of musical styles, including reimaginings of Doors classics, along with other blues and jazz tracks. Tonight’s show is being billed as “An Evening of Rock ’n’ Roll Tales and Music” since the duo promise to share stories about their long and fruitful careers between songs — fans won’t want to miss this rare opportunity to hear them straight from the still-rocking source. AXIS Dance Company and inkBoat

Known for its mix of disabled and able-bodied dancers, AXIS Dance Company has joined forces with Shinichi Iova-Koga and his company inkBoat to create ODD, a piece inspired by the work of Norwegian painter Odd Nerdrum. With cellist Joan Jeanrenaud performing a live original composition, ODD delves into themes found in Nerdrum’s paintings, including loneliness, fear, sexuality, and degradation. Iova-Koga’s choreography is mesmerizing to say the least and exactly how he will fuse two companies, a musician, and an artist’s work into an evening show is the source of much anticipation. San Francisco Symphony Día de los Muertos family concert

One hundred years ago as the Mexican Revolution kicked into high gear, could Emiliano Zapatista or Pancho Villa have anticipated the havoc that has their country in a stranglehold today? We hear so much about the Mexican drug wars (and bankroll them on the weekend) that it’s easy to forget our southerly neighbor’s beauty and culture. This makes it a particularly salient year for the symphony’s annual celebration of Chicano heritage, underwritten by an homage to the centennial celebration of the Revolution. Papel picado, sugar skulls, and steaming cups of Mexican chocolate precede the musical program, which itself features kid-friendly works from accomplished Latino composers. (Caitlin Donohue)

Arts and Literacy in Children’s Education (ALICE) is a grassroots organization composed of artists from multiple genres committed to bringing arts education to economically disadvantaged schools. Born out of a project encouraging children to learn their oral histories is Burning Libraries: Stories from the New Ellis Island, a new piece by ALICE Presents, the professional performing arm of ALICE. Encapsulating 30 stories from people in minority and immigrant communities, this theatrical piece fuses dance, music, video, puppetry, and aerial arts to explore what it truly means to be American. If you are counting live performances, this is program three of this year’s WestWave Dance Festival. If you like your dance on screen as well as on stage, this is program four, since officially Nov. 7’s “Dance on Film Nite” is program three. Enough bean counting. It’s good to see that Monday night dance has caught on. Audiences apparently appreciate not having to squeeze all their dance fixes into the weekend. Of course, it helps to program stuff people want to see; tonight’s event is a good mix of well-, fairly-well, and little-known choreographers: Lisa Townsend, Brittany Brown Ceres, Erika Tsimbrovsky, Robert Dekkers, and Andrew Skeels. With a name like the Pains of Being Pure at Heart, you’d be justified in taking these guys for some sappy, Bright Eyes wannabes. Luckily, this isn’t the case. Based out of New York City (who isn’t these days?), the band makes lovely little indie-pop tunes that couple boy-girl harmonies with Jesus and Mary Chain-style distortion. Check out the absolutely infectious track “Young Adult Friction” from the 2009 self-titled album for a taste. (Moblad)

Kurt Vile and the Violators and Soft Pack

If sneering “I hope I die before I get old” epitomized a generation, what’s the significance of Matt Lamkin singing “I know I’m gonna die before I see my prime” on Letterman? Rock ’n’ roll is now collecting Social Security and emerging acts are hoping for a YouTube apotheosis. Musical appreciation amounts to identifying a band’s influences and then immediately writing them off. With the driving beat of Lamkin’s L.A.-based Soft Pack or the writing-from-the-bottom-of-a-well style of Philadelphia’s Kurt Vile and the Violators, this would be a disservice. The sounds familiar, but moves forward, and as Vile reminds, “I’ve got a freeway mind, let go of my head.” (Prendiville)

Malia Cohen, her campaign staff and enthusiastic supporters gathered at Poquito’s on Third street anxiously awaiting election results. “It feels good to be the underdog,” said a grinning Cohen.


In a crowded district 10 field Cohen says, “she is the most prepared to work with all of the district’s people, district 10 is not monolithic it is not simply an African American community.”


“I am going to go where the people are and speak with people in their places of comfort they have ideas, creditable policy ideas. The people know how to solve our problems.”


 When asked what the district’s most pressing problem is, Cohen said: “it is an issue she saw highlighted on the campaign trail. We had a campaign BBQ up on third street and it really showed how profound the need is. We have to be addressing  food issues better in our community.” Cohen placed an importance on attracting new business including tourism to the district. “I see some real gems in district 10 and we need to  help polish those gems.”

Another Monkey

DINE The restaurant formerly known as Conduit was so strikingly designed inside that when, earlier this year, it morphed into a Thai spot, another of those with “monkey” in the name — Another Monkey — I winced, and only in part because the word “monkey” makes me think of ol’ Dubya, now in exile in the Dallas suburb of Elba. The indecorous neon beer sign glowing in the front window seemed to be a particularly glum portent. It said: come in and slam a few! And eat pad Thai with your fingers while you watch ESPN.

As fate would have it, Another Monkey does offer pad Thai, and the flat-panel television mounted over the bar probably does show ESPN on occasion, but otherwise, the ruin I inferred from the infernal neon sign is nowhere to be seen. The restaurant’s high-style interior is intact, while the food is electrifying. The only physical change I noticed in the space was the screening-off of what had been an exhibition kitchen at the rear of the dining room; the counter and stools are still there, but the view now consists of a long eyeful of frosted glass instead of a tableau of busy chefs.

Conduit had been, in its brief heyday, a scene reminiscent of the early days of Foreign Cinema — limousines double-parked on the street and swarms of hipster-geeks in various shades of black jamming the doorway — so Another Monkey’s more relaxed state is easier to live with. When a place becomes over-popular, everything is put at risk, from the quality of the food and service to the ambience itself. Another Monkey shows no signs of becoming a Conduit-style scene, but it is distinctive and gracious enough to draw a steady crowd. It has a neighborly feel, yet for those farther afield it’s worth seeking out, both for its distinctive setting and the sharpness of its cooking.

Chef Aom Phanthong’s menu is, like a bar stool (!), sturdily balanced on three legs: familiar standards, innovative dishes, and items for hard-core (or, in menu-speak, “experienced”) connoisseurs of Thai cuisine. In this last category we find the dip-relishes, whose odors and flavors are “very strong,” according to the menu card’s minatory phrasing. Suspicious people might flee in the direction of the pad Thai, or the excellent fish cakes ($7.50 for four) with an enlivening sweet-sour sauce on the side, along with threads of red and green cabbage.

In the alternative, they might turn toward the mix-and-match department. You can get tom yum shrimp ($9.95), served in little heaps atop crisped triangles of flour tortilla. The menu calls this “nacho style,” and it was quite good, though the frying left the tortillas with an oily aroma, and why flour tortillas instead of the tastier (and healthier, not to mention more authentic) kind made from masa?

The appeal of duck has long eluded me. Like goose, it resembles (for me) slightly gamier, richer chicken — the chicken, interestingly, being native to Southeast Asia. So subbing duck for chicken in a red curry ($15) wasn’t a complete Californication, and maybe, in its exponential richness (rich meat amplified by rich sauce) it wasn’t California at all. The portion size turned out to be just right, though, and with a pineapple slice for a subfloor and some fresh basil over the top, the dish’s richness remained under control.

Richness also briefly threatened the northern Thai hung le curry of pork belly ($13), mostly because of the nature of the meat. Our exquisitely polite server asked if we would be comfortable with “visible fat.” As an American, I have lived most of my life amid visible fat, so this prospect did not deter. And the dish itself turned out to be marvelous, a kind of gingery stew served in a handsome little pot, the meat stringy but tender and a scattering of fresh peanuts for textural counterpoint.

Another Monkey maintains an extensive wine list, which on the one hand is a reassuring line of continuity from Conduit and on the other is paradoxical. Thailand is not wine country, and Thai cuisine (like Indian and Mexican cuisine, to name two other large examples) didn’t evolve with wine. But wine geeks must love a challenge, because the carefully bound list is presented with almost biblical reverence. Beer is still preferable, in my view, but not the almost undrinkably bitter Duvel, the only Belgian beer I’ve ever had that I didn’t like. That’s not the beer proclaimed by the window sign, by the way.

CHEAP EATS Kayday came here from Seattle. She tenor guitars my band and, being the opposite of a Luddite, helps me think about the future in terms of publishing, recording, and having things. Her car isn’t just red. It’s a Honda Fit. What else: she looks cute in a raincoat, which is important if you come from Seattle.

It was raining so hard in the Mission, we decided to go to the Outer Sunset to eat. A “double down,” she called it. I call it fighting water with water.

In spite of her rain gear couture, Kayday does not like precipitation. Every time it rains two days in a row, I get nervous she’s going to move to Baja and I’m going to have to find a new tenor guitar player with a red Fit.

“How you holding out?” I asked her in the car, on our way to food.

“I think I reached my lifetime rain quota while I was in Seattle,” she said. “But I don’t know what to do. I don’t want to move to Arizona.”

“Nor am I suggesting that you should,” I said. “It’s just that Tucson is not, in my opinion, all that half-bad of a city.”

She told me about the botched Biosphere 2 experiment conducted near there in the early 1990s, and I started to cry because I thought about how the people living in that bubble for two years were not likely to have had access to really good dim sum, let alone Dim Sum.

Then again, a lot of people, including most of my very own relatives, live in Ohio and, as such, don’t even know what dim sum is.

Anyway, the place we were aiming for was somewhere Kayday had heard and heard about, and had tried several times to go there, but: closed. So this time she called first and they said, “Open! Until 2:30!”

We arrived at 1:30, many hours late for brunch, on a rainy rainy Sunday, and they were closed — not closed because they were closed, but closed because the wait for a table was longer than an hour.

At least I got to sneak a look at their food, which did look pretty good and fluffy, and the atmosphere, which was so nice and wooden and cozy, I almost passed out. Does anyone know the name of this place? I can’t remember, and anyway it wasn’t where we ate.

We decided to cross the park to go to Shanghai Dumpling Something on Balboa Street, but then, 1/32 of the way there, I realized that Kingdom of Dumpling was on the Sunset side of the park, and therefore closer.

Did I mention how hungry I was? Pretty damn.

I still keep chicken farmerly hours, see, whereas Kayday is of course a rock ‘n’ roller, so her brunch is my late lunch.

And wouldn’t you know it, there was a line out the door of Kingdom of, too. We stood in it for a little too long, because there was only one group ahead of us, and the smells and warmth coming out the doorway were just too good to leave.

Then I poked my head inside, realized it was a tiny, tiny place, that four of the dozen or so tables had just gotten their menus, and that no one else looked even close to finished, and still — it looked and smelled so good, and the warmth in there was so warm compared to the rain and wind on the sidewalk — we waited a couple minutes longer before Kayday pulled me away to T-28 down on the corner.

We ordered mackerel fried rice, chicken steak noodle soup, green onion pancakes, and (my favorite name ever for a thing) Pork Chop Porky Bun.

What a rip! It was just a regular old bun, only with a pork chop in it. Like a Vietnamese sandwich only without all the fun stuff, and even the pork chop was thin and dry.

There are 10 of these Macau-style “porky buns” listed, including peanut butter, Spam, and spicy sardine. Not for me.

The soup was boring. I never thought I’d see the day when a Chinese meal was saved by fried rice and green onion pancakes. Well, this was that day.
