Maximum Consumption: the Turntable Kitchen interview

I’d venture a guess that no one in this town knows the frosting tipped appeal of hand-mixing music and food more than the couple behind Turntable Kitchen. What started one year ago as a simple (yet highly aesthetically pleasing) website mashing up recipes and records, has grown into a celebrated multi-headed creative output machine, with food+music news, event sponsoring, giveaways, and the newly added physical pairings boxes – on top of the drool-inducing/stunning posts.

Last week I caught up with the duo to find out, among other queries, what ingredient you simply must have on hand – and the records every collection should include:

San Francisco Bay Guardian: For people who have never heard of Turntable Kitchen, can you give a brief rundown on how the concept came together?
Matthew Hickey: Turntable Kitchen is a website combining food and music. We do that by pairing recipes Kasey creates in the kitchen with some of my favorite albums. I try to find albums that share the same characteristics as her recipes, pairing them together the way a sommelier would pair wine with food. The idea to start the site was Kasey’s, but we were pairing food and music in our own foggy Inner Sunset apartment long before we launched the site. I’ve always been obsessive about music and Kasey loves to cook. Part of our evening ritual involved her explaining the recipe we were going to make and me then hitting my record collection to find an album to compliment our meal.
SFBG: What is it about food and music that goes so well together?
MH: For us, a good meal is about more than just consuming food. It is about creating an experience that pleases all of your senses. We believe that the soundtrack to that meal is a hugely important element of that experience. In fact, a recent study published in the British Journal of Psychology demonstrated that when people consume wine while listening to music they perceived the wine to share the same characteristics as the music. The result is something that Kasey and I instinctively felt to be true whether drinking wine or enjoying a good meal.
SFBG: How did you come up with the Pairings Box idea?
MH: We liked the idea of sending goodies to our readers in the mail, but we weren’t sure what form that would take. Whatever we did, we wanted it to stay true to the theme of our site. Speaking to the music specific elements: they just made sense for me. I love vinyl records and have an ever-growing record collection. With the ease of digital distribution, though, some of my favorite new music isn’t yet available on vinyl. So the singles we release feature music that I wanted for my collection, but which didn’t already exist on vinyl. I’ve been making mixtapes for my friends for as long as I can remember, so the digital mixtape we include gives me yet another opportunity to share music I love with our supporters.
Kasey Fleisher: I have always thought that a big barrier to cooking for many people is having a pantry. A lot of times, a recipe calls for a lot of expensive and/or hard to find ingredients and when you don’t cook often, it’s hard to think, “why not give this a try?” The concept of giving people three recipes and one to two premium dried ingredients gives them that nudge to experiment (and a reason to invite a few friends over to share the experience.). As for the sustainability of the Pairings Box, we think there’s still room to expand, but no matter what, we want to keep it limited. So far, we’ve sold out of every month’s box.
SFBG: What’s in the November pairings box and when does it go out? Is it sold out yet?
MH: The November Pairings Box had a harvest theme. We featured three new, original recipes; a hand-numbered, limited-edition (250 copies) 7″ vinyl single featuring Evenings (a.k.a. Virginia-based Nathan Broaddus); an exclusive digital mixtape; and our premium ingredient for the month was a French Grey Sea Salt and French Lavender blend.And, yes, we’re all sold out.
SFBG: December pairings box orders can start coming in Nov. 15, correct?
MH: Yes, we’ll start accepting new subscriptions for the December Pairings Box on November 15. We have a sign-up form on the site where you can enter your email and we’ll drop you an email to notify you of when we’re ready to start taking payments.
KF: We’ll have additional boxes available for the holidays.
SFBG: On the site, what have been the most popular pairing(s) so far?
KF: Some of the most (recent) popular pairings have been our Multi-Grain Pumpkin Donuts, paired with St. Vincent and Creamy White Grits with Chanterelle Mushrooms paired with Iron & Wine.
SFBG: What are your own personal favorite pairing(s)?
MH: One of my recent favorite pairings has been Kasey’s Fig, Mint and Honey Galette, paired with Brazilian artist Jorge Ben.
KF: One of my favorite pairings was our Wild Mushroom and Crescenza Pizza, paired with Revolving Birds. Matt loves mushrooms and pizza, and we’re both really into good
cheese…I could totally see myself cozied up on rainy day making this pizza and listening to Revolving Birds…what could be better?
SFBG: What’s the most important ingredient to keep in your cupboard?
KF: That is a tough question! But I’d probably have to say salt.
SFBG: What’s the most important album to keep in your record collection?
MH: That is a tough one. If you are going to listen to it by yourself then you’d want your favorite album – whatever that may be. If you want versatile music that sounds great and
can be played on any occasion, I highly recommend owning a few Motown records. I don’t think I’ve ever met anyone – young or old – who hates The Four Tops, The Jackson 5, The Supremes, Al Green, etc.
SFBG: You both have day jobs, correct? How feasible is it for you to cook together every night?
MH: Yes, we both have day jobs that can be relatively time consuming. Nonetheless, I’d say we normally find time to cook together at least five days a week or more. No matter how tough my day was at work, when I come home and start a record, open a bottle of wine and start cooking in the kitchen with Kasey, I feel great.
KF: I agree…Even though I like my day job, there’s nothing more that I love than making something with my hands after sitting in front of a computer. It’s a nice break until I
have to get back on the computer to work and/or blog/edit pictures, etc.
SFBG: On an off cooking night, what’s your favorite restaurant in the Bay Area?
MH: I have many favorite restaurants, but a few favorites are: Koo, NOPA, and Aziza.
KF: I would add Outerlands, Delfina Pizzeria, Lavash, and Contigo to this list.
SFBG: What are your future goals for Turntable Kitchen?
KF: Our goal is to continue producing great content, expand the food and music experiences that we’re offering offline, and grow our audience organically. In our opinion, food and music are some of the best things in life, and we think we’re making the two more fun and accessible to a broader range of people.
 

We want the airwaves: KFJC’s birthday party

At 8 p.m. on Oct. 20, 1959, the first words spoken on local college radio station KFJC came pumping through the air waves. It was station manager Bob Ballou, operating from a broom closet at the old Foothill Junior College campus in Mountain View. In the decades that followed, the station has grown known for its eclectic show lineup and in-house concerts: Noothgrush, Exhumed, and Foxtails Brigade, among so many others.

With KUSF ripped off the air earlier this year (an aside: Save KUSF), the debate about local college radio has, if nothing else, continued. It’s part of a far bigger issue – where do people learn about new music and how do they listen? For those who tuned in to this type of programming as students, or those who live nearby and still click the dial as post-grads or never-grads, the gaping gap is felt. KFJC DJs have stood by KUSF throughout the protests and legal discussions, clearly aware of the brevity of the situation.

KFJC, 89.7 FM, which is operated as a teaching lab for the fine arts and communications department of Foothill College in Los Altos Hills, is thankfully still pumping – this year celebrating its 52nd anniversary. In honor of the milestone, there will be an open house Saturday, Oct. 22. Meaning: you can peek your nose around a living, breathing college station.  (It’s just south of San Francisco).

The station also is on the verge of possibly receiving CMJ’s most adventurous station College Radio Award – results are in this Thursday. On the eve of these events, I got the rundown on the news and events from KFJC DJ and volunteer Jennifer Waits and KFJC Publicity Director (and DJ) Leticia Domingo.

San Francisco Bay Guardian: What will take place during KFJC’s open house?
Jennifer Waits: Listeners will get an opportunity to meet KFJC DJs and tour KFJC’s studios at Foothill College. It’s also during our annual fundraiser, so they will be able to pick up some KFJC goodies in exchange for donations to the station.
SFBG: How has the station grown in the past year?
JW: A big project this year was the installation of new shelving at the station. KFJC has tens of thousands of pieces of music, from vinyl to CD to cassette tape, and we’ve been bursting at the seams. The new high density shelves helped give us some breathing room so that we can continue to add music to our library at the current pace. We also traveled to Milwaukee this summer in order to broadcast live from the Utech Records Festival.
SFBG: Why do you feel KFJC is up for CMJ’s most adventurous station award?
JW: During my tenure at KFJC, I’ve always felt like the station has been an innovator. Not only is KFJC’s airsound unique – with music ranging from experimental to country to soundtracks to metal to electronic – but the station has also been a pioneer in international live remote broadcasts. KFJC’s first international broadcast was from Brixton, England in 1996 and since that time we’ve traveled to New Zealand (2000) and Japan (2008) in order to present live music performances to our listeners. The 2008 live broadcast from Japan also featured a live four-camera video stream, so that listeners from around the world could both see and hear the musicians on stage.
SFBG: To what do you attribute KFJC’s longevity?
Leticia Domingo: Obviously our listeners have kept us alive for so long. They are our staff, the hands that feed us. They’ve allowed us to indulge our creativity and breathe life into the ho hum/indie/college radio scenes.
SFBG: What’s your take on the current state of college radio?
JW: I’m saddened by the loss of some of our peers from the terrestrial dial, particularly KUSF in San Francisco. But at the same time, we’re lucky in the San Francisco Bay Area to have a number of thriving college radio stations on the dial. Personally, I’ve become even more connected with people from other stations this year and am happy to see the college radio community strengthening.
LD: Unfortunately and fortunately we are at crossroads. People don’t need DJs and college stations to turn them on to music or shows anymore. However at KFJC we are still very fortunate to be able to continue to discover new sounds and keep the saw sharpened. Without preemptive action, radio broadcasting is going to phase out like broadcast TV signals. And for college radio stations, we are at the mercy of the colleges.

MUSIC “There are people like us who decide we no longer want to deal with what is fed to us through commercial forces,” says infamous hardcore singer Mike Apocalypse, “We strive to create new things — if I couldn’t create new music, I would fall apart in a month’s time.”

It’s wretchedly hot on a Sunday afternoon at Mission bar Laszlo when Apocalypse, 37, makes the above statement while ordering a shot and a Red Stripe. Over the course of two-and-a-half hours, he orders many more shots and beers, and excitedly bumps into a cadre of fellow music-maker friends.

With a broad grin, his sea-green eyes widen as he recalls the early 90s origins of Gehenna, his longstanding hardcore-black metal band. He folds his tattooed fingers (one reads “83%” in ode to Gehenna’s first song) over a beer with a mention of the upcoming chopped and screwed Gehenna mixtape.

In addition to his role as Gehenna’s singer, Apocalypse is also a respected local DJ. He beams while giving me the rundown on his daily routine: recording music at home in the Excelsior District every morning, DJing at Laszlo, Showdown, or Argus Lounge every late night; recently spinning disparate tracks by the likes of Infest, Stone Roses, and Nipsey Hussle.

This, his openness and agreeable demeanor, are in direct contrast with his fabled persona. Mind you, he’s only a legend in the underground, in small pockets of cities like San Diego, Orange, Calif., and Reno, but within certain crowds, the rumors are alive. If you’ve heard of him — and chances are, you haven’t — than you’ve heard the drama.

The rumor mill: Apocalypse stabbed a guy at a punk show. He punched someone in the face at a record store. He contributed to another musician losing his mind. And so becomes a legend. There have been outsized rumors and half-truths, tattooed cupped hands whispering circles around Apocalypse, also known as Mike Cheese or DJ Apocalypse, for decades.

“You know more of the rumors than I do, and you know more of the falsehoods than I do,” he says. Without addressing any specific incidents he lays it out: “The rumors also come from people who have attacked me physically and they thought they could fuck me up. Fact is, I don’t bullshit. If you think you’re going to fuck me up, unfortunately, I’m pretty good at handling my hands, I’ve got some good fist game because I grew up in Detroit.”

That last part is unquestionably true, he lived in Detroit until age 14, when he moved to San Diego alone. By age 17, he was straight-edge and on a cheeseburger diet (hence the name “Cheese”). He met fellow musicians through the hardcore scene and formed Gehenna. With its pummeling drum beats, black metal riffs, droning breakdowns, and Apocalypse’s tortured, growling vocals, it brought something new to the 1993 hardcore table.

“I brought in some of the more metal elements, Mickey [Rhodes Featherstone] brought in 70s proto-punk and DC [Grave] brought in the really fucking heavy stuff and the straight thrash — we were able to incorporate all the things we liked into one sound.”

Through 17 years, the band has self-released seven-inches, splits, and a few full length LPs — most recently, 2011’s re-issue of Land Of Sodom II/Upon The Gravehill — and moved from San Diego to Phoenix to Orange to Reno. Apocalypse, far from straight edge, settled into San Francisco in 2008, but since the other members are spread elsewhere, Gehenna only plays SF once a year. “San Francisco, is one of the greatest cities in the United States. This is the most open-minded city I’ve ever been in.”

He seems pleased with his current lot in life; it might be the alcohol or recreational drugs talking, but he’s truly inspirational in his takes on art, music, life. Truth to those whispered rumors or not, legend or not, Apocalypse is a man of convictions.

“[Gehenna] is not making money, we’re not going to ever sign with a major label, we’re never going to do anything that’s outside of our realm of control. It’s always been about control.”

As this year’s annual LaborFest draws to an end, and the organized labor movement is facing an uncertain future as exemplified by the recent Republican victory in Wisconsin regarding collective bargaining, and the disappointing conclusion to the Mott’s strike of 2010, it does the socialist spirit good to soothe the savage breast with music created with an ulterior motive. Political convictions as entertainment have had their misses, but it’s the hits we remember more, whether “learned by heart,” or not.

Though probably best known for the unrepentantly dark murder ballad “Mack the Knife,” Bertolt Brecht collaborator Kurt Weill was a staunch socialist firmly on the side of the underdog. The two pioneered theatrical works about and for the working class, and critical of “business as usual,” in life as well as in theatre. Under the direction of Allan Crossman and Harriet Page-March, the Weill Project, explored a set of seafaring songs from familiar Brecht/Weill musicals like “The Threepenny Opera” to more obscure tunes such as “Youkali: Tango Habanera,” which made an orchestral appearance in a mostly forgotten Weill side-project called “Marie Galante.”

“Marie,” sung in French by soprano Sibel Demirmen, was one of the evening’s most striking offerings. Another was mezzo-soprano Meghan Dibble’s rendition of “Pirate Jenny,” a song which exemplifies the divide between the working classes and their careless capitalist oppressors. Two other vocalists, Harriet March Page and Justin March rounded out the vocal mix, ably accompanied by Martha Cooper on piano and John Bilotta on accordion. Presented as part of Stage Werx Theatre’s <www.stagewerx.org> new music series, Underground Sound, the Weill Project set the bar high for shows to come, and is an ensemble to watch out for.

A staunch socialist closer to home, one Woody Guthrie, came to life in the hands of Will Kaufman whose solo performance “Woody Guthrie: Hard Times and Hard Travellin’” (as well as his book, Woody Guthrie: American Radical) followed the dusty road of Guthrie’s political awakening through music.

A mean finger-picker, Kaufman played not just Guthrie tunes such as “I Ain’t Got No Home” and “So Long, It’s Been Good to Know You” as he described Woody’s visits to the migrant camps and the extra-legal liberties taken by the LAPD and a slew of union-busting vigilantes, but also songs that inspired him towards reaction. Songs like Joe Hill’s “The Preacher and the Slave,” Agnes Cunningham’s “How Can You Keep Movin’ (Unless You Migrate Too),” and Irving Berlin’s “God Bless America” — a song that galled Guthrie so much he wrote an angry counterpoint “God Blessed America,” which became his best known song, sans the political verses, as “This Land is Your Land.”

Kaufman, an American living in England, was inspired to tackle Woody Guthrie as a subject back in 2006 during a time when “George Bush and Dick Cheney were speaking for America,” in an attempt to connect with and portray an all-American voice closer to his own point of view. I can’t speak to whether or not he’s got the British convinced, but in San Francisco, his sentiments were welcome.

Roll in the punky grime of Wax Idols

It’s purple and bloodied, scuffed and raw from a blind leap and yet if you dig your finger in deep enough, there’s a soft spot back and to the left. The Oakland-based quartet Wax Idols— playing Sun/26 at Thee Parkside — puts on a badass punk front, but those shiny hooks expose just enough emotion to keep things from scabbing. Wax Idols are super-gritty and always promise to play their noisy garage punk loud and hard. The band is fronted by Hether Fortune who’s got a firecracker reputation and a long list of local music projects, including Blasted Canyons and previously, Hunx and his Punx. She’s joined by Keven Tecon on the drums, Jennifer Mundy on the guitar and vox, and Amy Rosenoff on bass, and although the band is dominated by ladies, it keeps an angsty, andro-sound. 

Fortune told 7×7 that the band’s name was inspired by the lyrics “flesh-colored Christs that glow in the dark” from Bob Dylan’s “It’s Alright Ma (I’m Only Bleeding)”, which isn’t creepy at all, right? A quick scroll through the band’s blog and it’s obvious this stellar mix of freak-show inspiration is constantly being collected, analyzed, and hopefully churned into some new music. Think bones, lots of nude ladies in strange public arrangements, bizarre music icons, and all kinds of other awesome dream material; puts some physical creep into the layered emotions. More please!

Wax Idols will be joined by the grungy, ’90s-rock of San Francisoc’s Lilac, the surfy sounds of The Wrong Words, and Paperhead, a psych-pop trio from Nashville.

We’re now into the post-James endgame, and as I predicted, things have gone way downhill. Frankly, none of the three finalists deserves to win. At this point, the whole thing is a sham. But we soldier on, slogging through a two-hour special featuring Steven in some sort of tight gold pants and Beyonce’s new music video. Beyonce also gets cameo shot hugging each contestant. (I could live with that. Beyonce’s way hotter than J-Lo. Just is. Just saying.)


On to the action, such as it was. Three songs apiece — the contestant picks one, Jimmy picks one and the judges pick one. Scotty goes with “Amazed.” Easy song for him, nothing to it. Lauren does Faith Hill; whatever. She looked like Glynda the Good Witch of the North in a light blue dress.


But Haley — man, Led Zeppelin on Idol? A tough song, too. And she actually pulled it off. And her dad played guitar, and the guy can play. Hit of the night.


Jimmy’s picks? Meah. All easy, all right in the lumberyard. I kinda liked Haley doing Fleetwood Mac, but what’s up with the artificial breeze blowing on her face? (Oh, right — “Rhiannon” has a line about “taken by the wind.” So they have to have wind. Along with, once again, artificial smoke on the ground. This is a huge enterprise with hundreds of millions of dollars involved; is that the best production these folks can do?


The judges asked Scotty to do “She Believes in Me,” and they all loved it, but I cringed when he tried to hit the notes in the chorus. Not his thing. Sounded like Bob Dylan on roofies. Lauren? “I Hope You Dance?” Sure, she can sing like a 16-year-old at a high school graduation, and she’s got some talent, but a national stage? Nope.


Haley. Alanis Morissette. Nice choice for her, good job, she’s actually peaking at the right moment.


It’s odd — Haley got rejected the first time she tried out, was in the bottom three a couple of times — and now is the only contestant who might even a little tiny bit be worthy of the title. I’ve never particularly liked her, but she’s at least showing up in the final days.


Viv and Michael think Lauren makes the final. I think it’s Haley and Scotty. Scotty’s the only guy left, he’s cute, he’s country (although that’s all he is), he loves Jesus … America’s not sending him home.


And I hate to say it, but I’ll be glad when this is over and I can get back to watching the Giants games on Wednesday night.   

Nick Waterhouse and the Tarots: New music for old souls

Nick Waterhouse knows what he likes, and as the old adage goes: “If it ain’t broke don’t fix it.” Recording entirely in analog on vintage equipment — including an original Muscle Shoals mixer — and performing with beautiful tube amps and old guitars, his attention to detail and historical accuracy pays off. The result is a classic R&B sound that at times is gritty and raw and at others smooth and viscous as warm molasses.

He is a sharp-dressed man, that Waterhouse, adorned in suits and ties, with an angel face framed by horn-rimmed glasses. I imagine he gets constant cliché comparisons to Buddy Holly, but when he and his new group, the Tarots, stepped out on stage for a sold-out show at the Knockout last Saturday, April 30, my first impression of him was of one of those characters in a Daniel Clowes Eightball comic who collects old jazz and soul records — on vinyl. He probably listens to NPR on a Bakelite radio, I thought, albeit a bit snarkily in retrospect. My apologies, Nick.

The vinyl-collecting part is not far from the truth, it turns out. A DJ and regular at any of the many soul parties in San Francisco, like The Make-Out Room’s Lost and Found or the O.G. 1964 at the Edinbugh Castle, Waterhouse clearly knows his stuff, and it should come as no surprise that his uber-knowlege and ear for sound should translate so nicely to his live sets — the music sounds authentic, yet somehow fresh and not dated — backed by a horn-driven band and three beautiful “divas” (that a little bit of Googling identified as The Naturelles) who belt it better than any cheeseball of the same self-declaration ever could.

His debut release, the 45 rpm “Some Place”  — performed and recorded with the Turn-Keys, which includes the legendary Ira Raibon on sax — is currently available from Waterhouse’s own Pres Records. You can catch him tonight, Wed/5, performing with his new lineup for live sets, the Tarots, at the Asterisk Magazine anniversary party (see events listings).
