Getting into a pickle: Canning beans and beets at La Cocina

I’m a sucker for pickled things, probably because I grew up in a house where my dad always had a pot of kimchee fermenting on the counter or a bottle of homemade pineapple vinegar, getting perfectly bubbly on top of the fridge. Preserving food also feels very nostalgic for the times when our great-grandparents would can the summer’s bounty so we could eat peaches and tomatoes through the winter. So you can imagine how excited I was to take my dad with me to La Cocina for a pickling party with Emiliana Puyane of Jarred SF Brine, to brush up on our fermentation implementation.

There were three pickles on the to-do list for the evening: garlic-and-dill pickled green beans, oven-roasted golden beets and shallots, and the one that I was most excited to try (and still am — we have to wait a week or more before we can pop the lids), cinnamon-and-thyme pickled peaches. Emiliana led us through the process, from the sanitation of the jars to making a perfectly-balanced brine. There was a lot of peeling, chopping, and de-stemming to be done. Everyone helped, including my dad, who helped blanch peaches over a steaming pot.

After two hours we jarred our creations and indulged in the most delicious Nepalese dinner, prepared by Bini’s Kitchen. Crazy-good rice, wonderful eggplant, everything made with spices that Bini herself mixes, a homemade touch which yielded bright and fresh flavor in her dishes.

I’d also just like to say how much I love La Cocina. I’ve been to a couple of their cooking classes and they are such great events, bringing together a lovely group of people for a night of cooking. La Cocina’s director Caleb Zigas always gives the warmest welcome. As an entrepreneur myself, I know how much work goes into starting a business, and I think it’s wonderful that La Cocina gives blossoming chefs the tools, space and skills they need to get their business up and running. The festival always sports a great bill of performers, all of which you can enjoy while having a relaxing a picnic on the grass, watching the sunset fall over the Golden Gate Bridge. Laksa and lemongrass: a tasty Malaysian cooking class

Azalina was all smiles. Originally from Malaysia, this spunky chef is now part of the incubator cooking program at La Cocina. He taught a Malaysian street food cooking class this week, which Sam Love and I felt very lucky to be a part of. We visited Malaysia a few years ago and fell in love with the wonderful street food that filled each and every corner with exotic smells. As soon as we entered the kitchen at La Cocina, those smells came right at us — garlic, ginger, chilies, and lemongrass ready to be chopped and roasted and blended into our evening meal.

We spent a large part of the class learning how to make fresh wheat noodles to put in laksa soup, dyed a beautiful orange color with turmeric. Everyone got a turn at rolling and slicing the noodles into thin strips, which were then placed into little mounds that looked like upside-down bird nests. Malaysian food is influenced by Chinese and Indian cooking, while still keeping its own distinctive cooking techniques using caramelized shrimp in palm sugar and garnishing the soup with deep fried tempeh. If you didn’t get a chance to make it to the class, Azalina sells her Malay food products at Bi-Rite (like her amazing coconut jam, which we got to try, drizzled atop fried banana fritters) and she’s also whipping up Malaysian street food every Friday night at Fort Mason for Off the Grid.

Live Shots: Making truffles with Neo Cocoa at La Cocina

“Ganache is proof that God loves us,” exclaimed a student with pink and purple hair, as Neo Cocoa founder Christine Doerr rapidly whisked a bowl of melted chocolate and poured it into a metal frame for cooling. We all stood around a huge table at La Cocina, learning how to make Doerr’s award-winning chocolate delights, essentially the soft and rich insides of a classic truffle without the hard outer shell. After a quick demo, it was time to get to work ourselves, rolling the chocolate in our hands to form balls and then dusting them in all variety of coatings, from fennel powder to cacao nibs.

Doerr, who originally started in the entrepreneur incubator program at La Cocina in 2008, now has her very own professional kitchen in Belmont and has been named one of the top ten chocolatiers in North America. No doubt today’s class was excited to learn chocolatey secrets from such an expert in the world of sweets.

At the end of the night, we all came away with a little box of chocolate heaven, perhaps to share with that special someone for Valentine’s Day. Even if you weren’t at the class, you can pick up a wonderful assortment of Neo Cocoa for your honey at many stores in San Francisco, including Bi-Rite Market and Canyon Market (and even Whole Foods).

A new twist on the tequila worm at Don Bugito dinner at Headlands Center for the Arts

Nestled near the ocean in the wilds of the Marin Headlands sits Headlands Center for the Arts, an artists’ haven in a reclaimed military barracks that is inspiring just to be in, as it must be for its artists in residence. Known for the culinary care and special event meals they host in their warm, open kitchen and dining room, I was intrigued to check it out. So what better excuse than for a five-course insect and mezcal dinner?

You heard right. Don Bugito, a new La Cocina business that premiered at SF Street Food Festival this August (which I wrote about here), hosted this unique meal.

Paired with Mexican juices, a take on the Michelada (a beer and spice-based imbibement), and the Mission’s De La Paz Coffee, the drink highlight was San Honesto Mezcal, a bright, grassy, gently smoky mezcal that is not yet available in the US but should be by early next year.

Having eaten mealworms and wax moth larvae with Don Bugito before, I was hoping for even further challenges at this meal. As an intro to bugs, the textures and tastes of the five insects served were inoffensive (yes, even to those who fear bugs), even tasty, proving the points made in a pre-dinner educational session: eating insects is nutritional, ecological and sustainable. One could see this becoming a micro movement in urban centers such as ours, just as beekeeping and urban farming have become.

Don Bugito owner, Monica Martinez, says, “Our goal is not to introduce insects as a novelty, but as something that will last.” I’d say with the palatable insect-tinged dinner we experienced, she is introducing an approachable, realistic way to eat insects.

The Headlands Center’s next dining event is December 7, a speakeasy-style, small plates dinner with cocktails from the incomparable Bon Vivants.

In a steering committee meeting for the Dolores Park Rehabilitation Project on August 4, San Francisco Recreation and Park Department (RPD) officials stunned the committee with a proposal to bring in more food trucks. The move came just two days after a ballot measure that would have banned more such leases in city parks was removed from the fall ballot.

The proposal included putting in a “cement pad,” with electrical and water hookups, where food trucks would park and sell their fare. It was just the latest in a series of controversial attempts to monetize park resources to raise funds for RPD (see “Parks Inc.,” July 12). But the steering committee reeled at the idea, worried it would permanently harm the image of Dolores Park.

“It was a surprise. It really hadn’t come up before,” said Rachel Herbert of Dolores Park Café, a steering committee member. Many of the neighbors don’t like the idea of commercializing the park because there’s no infrastructure to support it, she said.

“It personally made me question if the steering committee meetings are really just a way for Rec & Park to say, ‘We reached out to the community,'” said Herbert. The rehabilitation project is in its early stages of design and development, with a predicted completion date of April 2014.

There’s already one semi-permanent food truck in the park — the La Cocina-incubated, generator-powered Chaac-Mool truck — which is parked in the main park entrance. “We felt it would be irresponsible to ignore discussing a place for more food trucks in the new design,” said Jake Gilchrist, the park rehabilitation project manager.

“There were a lot of members in the room that didn’t want this to happen,” said steering committee member Robert Brust of the nonprofit Dolores Park Works. Brust said the argument over the proposal lasted all of five minutes before landscape architect Steve Cancian, employed by RPD to facilitate the meetings, “took it off the table.”

But it doesn’t look like they’re willing to give it up, said Brust. “The fight over the ‘commercialization’ of the park is at a stalemate right now,” he said. “Rec & Park has always sold stuff—they’re just trying to capitalize on it a little more now.”

Despite the steering committee’s obvious and immediate discontent with the idea to create a cemented, permanent space for food trucks, RPD officials say they are continuing to include the idea in community discussions. But they say they are open to suggestions.

“At the end of the day, it’s the community’s park,” RPD spokesperson Connie Chan told us. “We understand that whatever vision that we have, it needs to be with the community.”

The meeting came just two days after members of the Board of Supervisors killed a previously approved ballot measure that had been written by the group Take Back Our Parks, which had been severely criticized by RPD, Mayor Ed Lee, and supporters of the department’s privatization efforts. John Rizzo, a member of that group, expects RPD to move ahead with the proposal for Dolores Park.

“They never change something because of public opposition,” Rizzo said. “It’s the same stamp they use all over the city. They come up with these plans to make money and then they unveil the plans to the public.”

Rizzo suggested that the public contact San Francisco supervisors and the mayor to be heard regarding the privatization of parks, because “the [Recreation and Park] Commission is deaf ears.” Either way, Herbert said, significant changes are in store for Dolores Park, including the possibility of putting in a 14-foot paved road for vehicles. “I just really was kind of sad when I left that meeting. I don’t know if anyone’s really going to be able to make a difference. It seems like we’re in danger of it being built,” she said. “It’s not gonna be our sweet little Dolores Park anymore.”

Food cart captures: Snaps from the Street Food Festival

We still had five blocks to walk, but we could already smell the medley of exotic flavors wafting up the street. Sam Love and I were headed to the third annual SF Street Food Festival, which took over blocks and blocks of Folsom Street this past Saturday, bringing together street food vendors from La Cocina, San Francisco, and even a few from across the country to share edible wares with local foodies.

Signs lined the street, warning us to “pace yourself.” This was no joke. It was hard to decide where to start, but we chose to stick with the stars of the event: the entrepreneurial women of La Cocina. When we finally picked a vendor line to wait in, some of were snaking half way down the block.

We started with some tamales from Alicia’s Tamales Los Mayas. They were creamy and delicate, and as Alicia put it with a huge smile on her face, “stuffed with love.” We could have eaten a whole suitcase full of those babies. Yum!

Then we moved on to a more tactile eating experience, stopping at Eji’s Ethiopian Gourmet for some spongy injera topped with lentils and cabbage. Using the bread as utensil, we scooped the perfectly spiced veggies up, letting them drip satisfyingly down our chins.

After a pit stop for some agua fresca, we made one more beeline to Los Cilantos, to grab an elote (how had I never had one of these before!), which is roasted corn on the cob, smothered in mayo and parmesan cheese. So good. So good!

I have no idea how many zillions of people showed up for the festival on Saturday, but I do know that everyone at the stands was working their butts off to make sure no one went home hungry.

 

Sweet streets: Gelatin dessert art at this weekend’s Street Food Festival

As the foodie masses descend on the Mission for Sat/20’s Street Food Festival, they’ll be met with a diverse representation of what San Francisco eats. In this corner, fancy brick and mortar spots: Slanted Door, 15 Romolo, and Rye are but a few representatives of the eateries that are taking grills and spatulas into the fresh air this weekend. But for sheer culinary comeliness, the big guys have a serious contender when it comes to Sweets Collection arty gelatin creations. 

Graduates of the La Cocina street food incubator program will total a solid 50 percent of the 60 vendors in attendance at the festival. The varying styles of food preparation are meant to express the breadth of eats in San Francisco, but also to reinforce the fact that the huarache you buy at your local farmer’s market has the culinary chops to stand up against many places that take Visa.

According to the website, in a perfect world the festival would “get rid of all the white tents, and just do it block party style, but that’s not so cool with the Health Department, so you will have to imagine it with us.”

Rosa Rodriguez would surely be invited if the fest turned into a block party. She lives in the Mission, and has been creating her Sweets Collection intricate gelatin creations, in which graceful flowers bloom in edible gel, for a year now. We mentioned certain circumstances under which her treats might prove particularly awesome in the paper today, and here’s more on Rodriguez from an email interview we conducted with her last week. (You can also check out food writer Virginia Miller’s adventuresome picks for the fest here.)

SFBG: Tell us a little about yourself. How did you start Sweets Collection?

RR: My name is Rosa Rodriguez, I have two children, one is 15 years old and named Dayra, and Hasam is eight years old, we are from Durango, Mexico. I’m a single mother. When we are not doing artistic desserts, my children go to school and I take English classes and work on my business. I became unemployed in 2009, and in 2010 I had the idea of starting my own business to cover household expenses and share the art of my greatest passions.

 

SFBG: Can you tell us a little about gelatin art?

RR: Arte floral en gelatina has become a centerpiece of Mexican culture. Evening parties in Cancun often have intricate gelatin dessert flowers served in glass, personalized gelatin desserts are in demand at corporate events in Mexico, and no birthday is complete without fun gelatin designs on the cake.  

 

SFBG: Most of your work I’ve seen is of flowers. Do you do any other kinds of designs?

RR: I am fascinated by flowers, but do figures, characters or any design. You can get your favorite hobby, movie, or fantasy adventure in a gelatin dessert.

 

SFBG: What are you bringing to the Street Food Festival this weekend?

RR: Sweets Collection will participate by offering fanciful jello shots at two bars that will be located on Folsom and 23rd streets. But we also have a booth on that intersection, selling designs that the entire family can enjoy. Last year was my first year, like me, many people were impressed by the art to gelatin and I hope that this year more people came by our Booth , to know and taste the art you can eat.

 

SFBG: What does it taste like?

RR: This artistic dessert is made with passion. They’re handcrafted and they taste how they look… delicious.

HERBWISE There will be things at this weekend’s Street Food Festival that you will want to eat. Oh yes, very much so. And damn if there won’t be things that you will want to look at — and then eat.

One of these things will be Rosa Rodriguez’ Sweets Collection gelatin desserts: small, sweet cups in which three dimensional flowers bloom, taunting you to stick a spoon in them. I will take them over designer cupcakes any day.

Rodriguez, who now lives in the Mission with her two daughters, is from the Mexican state of Durango. There, large gelatin molds traditionally bloom at birthdays, baby showers, and wedding parties; red roses and yellow zinnias made of condensed milk curling prettily around the faces of happy couples and beaming little girls. When I asked her via email about her San Francisco customers’ most common reaction to her wares, she said it is uncertainty. “They ask if they can eat the flower, or if it’s plastic.”

A La Cocina street food incubator program graduate, Rodriguez will be in the heart of the Mission this Saturday, along with the rest of the sweet and savory offerings of the Street Food Festival’s 60-some vendors. She’ll be selling “fanciful jellos shots” at the festival’s bars on 23rd and Folsom streets, and her more family-friendly concoctions at a stand of her own on the same intersection.

Saturday will entail a lot of eating, and a lot of gawking at fanciful jello shots, and for these reasons alone the day will go very well if you are really, really stoned.

But ingesting marijuana before the Street Food Festival is a delicate matter. After all, the third year of the event will be the biggest yet, its girth spanning eight blocks of Folsom Street, plus parts of 23rd, 25th, the Cesar Chavez Elementary School parking lot, and the Parque de los Niños Unidos.

In past years, massive crowds have marred the day for many an avid snacker — the lines, my friend, the lines. This year La Cocina is hopeful that the vast expansion of the event will stem the tide — but nonetheless it would not do to have agoraphobia derail you just as you are reaching the front of the line at the Kasa booth.

Luckily, there are plenty of San Francisco souls that geek out tailor-making THC regimens for situations like these. I placed a call to one such place humans like this congregate: the San Francisco Patient and Resource Center, winningly acronym-ed SPARC. It just received our Best of the Bay reader’s poll award for Best Cannabis Club and it’s well known for having an extensive selection of in-house strains. It seemed like a fine place to start out.

Nick Smilgys, who has served as the club’s marketing director for over a year now, had two words for me: blackberry kush. Then he had some more. The kush — which he says is traditionally cultivated in Pakistan and India, but happens to be one of SPARC’s signature strains — is a deep-green indica that’ll make you hungry as hell, ready to take on all those Indian burritos and handmade huaraches.

Smilgys says the blackberry buds create “good well being” in their ingester, and result in a nice body high. Of course, he cautions, medicines will have differing effects on different patients.

But if you’re not careful with the blackberry, it could keep you from your improbably edible jello flowers. (Smilgys employed the term “couch lock” to describe a potential blackberry kush effect.) If you’re prone to getting paranoid, he counsels medical marijuana patients to look for a sativa-indica hybrid that tilts to the indica side of things for a more tranquil, crowd-ready high.

Appetite: A mouthwatering preview of the SF Street Food Festival

La Cocina‘s SF Street Food Festival keeps getting bigger each year. Gearing up for this Saturday’s (8/20) third annual street food extravaganza, prepare for a takeover of numerous Mission blocks (free admission, with food for purchase under $8). This year there was an early sneak peek for media and select guests. There will be much to love at this year’s festival. Many food truck and street food favorites return, plus Ferry Plaza stars like Namu. Just a few stand-outs the new-to-this-year front:

Wax moth larvae tacos from Don Bugito – These pretty, little tacos are laden with crispy larvae, garlic, pasilla chiles, and pickled onions. Some popped them in their mouths without realizing what they were, others turned away once they heard… but to taste them is to be converted. No need to fear bugs in the hands of owner, Monica Martinez. Plus, it’s a great conversation starter.

City bid to bring vendors into Dolores Parks causes an uproar

Officials with the SF Recreation and Parks Department are attempting to quell the mounting frustrations of some Mission District merchants and residents who feel that the city shouldn’t allow private companies to operate in a public park, as the department is seeking to do. Even those who don’t necessarily have a problem with inviting more commerce into Dolores Park say the process should have been more open and transparent.

“I like pushcarts,” said Rachel Herbert, owner of Dolores Park Café. “I think they add flavor to San Francisco.” But Herbert is also allowing opponents of the department’s request for proposals (RFP) to set up shop in her store and gather signatures for a petition to “stop the commercialization of Dolores Park.” Herbert, who lives in the neighborhood, said she is helping the effort because “It’s about the process and Rec and Park not really thinking things through and doing whatever they want.”

Mike McConnell, the man behind the petition, holds a similar viewpoint. “I don’t feel that it was adequate outreach before this.” They’re not alone. McConnell currently has petitions in three stores – including his own store, Fayes Video – each with around 100 signatures, along with 700 online petition signatures.

While the controversy is recent, the RFP for the permits was issued in September last year. The proposal stated: “Before entering into permit agreement for the operation of a pushcart in any neighborhood park, the Department will conduct a community outreach process to determine the appropriateness of such a use in the park.”

It’s unclear how much outreach there was beyond a request for applicants posted in the July 31 issue of the San Francisco Chronicle. However, according to Mission Local, department spokesman Elton Pon sent them an email stating that the department mailed out “an announcement of the opportunity to more than 1,000 potential applicants.”

Regina Dick-Endrizzi, director of the SF Office of Small Business, said much of the demand for the permits has come from small time vendors. “Part of this has been an organic growing up of the vendors themselves,” Dick-Endrizzi said. “The mobile food folks have been coming and working and urging us to open up more space.”

Dick-Endrizzi helped vet the applicants in the panel that included members of department and the Mayor’s Office of Economic Development. “I can attest as being part of the committee that they were very careful in making their decision,” she said.

However one recipient of the permits, Oakland-based Blue Bottle Coffee, has received criticisms that it isn’t local enough – city policies encourage contracting with San Francisco small businesses. Blue Bottle is also backed by venture capital firm Kohlberg Ventures.

Its founder recently issued a public letter explaining his position: “I had assumed that since there were published articles in The Chronicle, the Examiner, and the SF Weekly in November of 2009, and January 2010, that the community around Dolores Park was well informed. So it pained me to hear that many of our (hopefully) future neighbors were upset that more outreach had not been done.”

This isn’t the first time a vendor has been allowed to operate in city parks. Nor are they the first merchant with questionable local status. Last August RPD commission voted 6-1 to replace long-time Stow Lake vendor with an out of state suitor. The Chronicle reported “the corporation, which has owned and operated the 1940s-era boathouse for 67 years, couldn’t compete with New Mexico-based Ortega Family Enterprises, which pledged to complete $233,000 worth of improvements to the well-worn building and buy a brand-new fleet of boats.”

Dolores has become a haven for unlicensed vendors selling items such as beer, hot dogs, ice cream, and even pot-laced brownies and truffles. What will become of them? “You pay thousands and thousands for your trailer and for permits and this guy comes around with his little cart and is selling coffee for 50 cents less, what are you going to do? You’re going to call the fucking cops and say get this scumbag out of here,” said local impresario Chicken John.

Dolores Park has traditionally been regarded with a kind of laissez faire attitude by many San Francisco residents. On a warm day it’s not uncommon to see hundreds of chic to cheap layabouts basking on its hills, beer and bowl in hand, without worry in mind. And many-a-cop has seen them too, but rarely do they intervene – and all was well. Maybe that’s another reason why there has been such uproar over the proposed introduction of pushcarts into the park.

Since the uproar, both Blue Bottle Coffee and the other potential vendor nonprofit Cocina have been put in limbo. La Cocina’s executive director, Caleb Zigas, told Mission Local that “he had expected to roll into the park this week and is disappointed by the delay. In the past four months he’s poured $28,000 in grant money into La Cocina’s food trailer, which is now sitting in storage.”

But how long will the pushcarts (they’re actually trailers powered by generators) gather dust in a garage? “For most types of appeals there is a 15-day window after the permit was issued,” said Cynthia Goldstein, executive director of the SF Board of Appeals. However it isn’t a concrete rule. “On rare instances the board will extend the window when there is evidence that the city did something wrong.” In addition, according to Goldstein, there is usually a 15-20 day window between when an appeal is filled and when it is reviewed by the Board. In short, the dilemma may not be quashed by the meeting this evening that the department is holding on the controversy.

The extension would bode well for any NIMBYs since Cocina’s and Blue Bottle’s permits were granted on April 15, 2010 and Sept 2, 2010, respectively.

RecPark was expecting a 12 percent cut on the pushcart profits and hoped to net around $70,000 annually. The pushcarts are just one of the many revenue generating ideas that are currently floating around. RecPark – under its new department head, Phil Ginsburg, who was previously chief of staff to Mayor Gavin Newsom – recently created a partnerships and revenue generating division with the purpose of capitalizing on many of the cities assets.

At the Jan 21, 2010 Recreation and Parks Commission meeting, pushcarts were discussed as a way to ostensibly keep city employees from getting laid off. Other ideas that were tossed out included hosting a production of Peter Pan, renting out parking places for car shares, and an adopt-a-park program; an adopt-a-gardener program was even suggested. The city was broke and was searching for a way to close huge General Fund deficits.

The idea of pushcarts was discussed again at the Feb 18 meeting. Nick Kinsey from the property division of RecPark, told the commission, “We received 18 responses to the RFP and we actually brought six of them in for interviews. As part of the interviews we met with the respondents, we evaluated their qualifications, evaluated their operation plans – in terms of where they wanted to be in each of the parks, in each of the proposed parks, how that would interact with residents and other park users use of the park space and if there would be any conflict there.”

Kinsey continued, “We’re also accepting application on a rolling basis right now. So if anyone is watching and interested in submitting an application for pushcarts, we are accepting pushcarts. Some of our location are maxed out we wouldn’t accept anyone else. But we have plenty of other park spaces where we think this is an appropriate use.”

Appetite: 2 delicious food events on the horizon

8/21 LA COCINA SF STREET FOOD FESTIVAL: Everyone who was there last year recalls the nightmare that was the SF Street Food Festival: three hour waits for a bite, only to find much of it gone by the time you reached the front of the line. I went at the 11am start time last year, yet still only got to try two vendors in two hours. At least I was able to hang out in the cocktail and beer garden awhile, as I heard that, too, was an impossible wait before long.

The organizers of the event are intent on making it different this year. Only time will tell, but the physical space is seven times larger, with four times as many vendors. I have long been a fan of La Cocina as a community treasure, and there are some new people behind the scenes this year who have a good track record with organizing large events. I’m hopeful… but you’ll still find me there at 11am, just in case.

Yes, beer, wine and spirits gardens have returned. You know I’m looking forward to cocktails by bartenders from Rye, The Alembic, and Beretta. There’s an eating contest hosted by none other than Pepto-Bismol (oh, the irony!) How about a scavenger hunt and silent auction? Or an after party at Cocomo with live salsa, dancing and street food? La Cocina will host the first annual San Francisco Street Food Conference on August 22-23 following the festival, with panelists discussing the political, economic, and social impact of street food vending.

At the festival, expect 40 food vendors and restaurants, plenty of drink and a celebration of all things street food in SF. Whether you’re eating street food treats from stellar restaurants like Aziza, Nombe or Flour+Water, from actual street carts and trucks like Curry Up Now or Kung Fu Tacos, or La Cocina greats such as Kika’s and El Huarache Loco, you should not leave hungry.

8/27-29 EAT REAL FESTIVAL IN JACK LONDON SQUARE: I also attended Oakland’s three-day Eat Real Festival last year and, being in a much bigger space with more vendors, it was considerably easier to navigate than the SF Street Food Festival. In fact, I tried well over a 15 vendors last year, finding many exciting eats and drinks from SF and East Bay purveyors. About five hours into Saturday, the heat and lines became unbearable, but I got in five great hours of eating first, with no body-to-body crowds.

Eat Real Fest focuses on sustainably produced products and regional food producers and farmers. With 80 street food trucks and carts comes a limitless amount of eating possibilities. There’s also an Urban Homesteading Zone highlighting DIY food acts like canning and preserving, cheesemaking, animal husbandry, and vertical gardening – with contests, in case you want to enter your own wares. Try fermentation tasting stations with kombucha, wine, handcrafted beer, iced teas and lemonades. There’s an outdoor short film fest, a literary portion of the festival with Bay Area writers talking food, and an entertainment stage with music, sure, but also pizza tossing, noodle pulling and a Flying Knives butchery contest.

Uproot: Notes from the underground food scene

Recently Kitchen Table Talks, a monthly series of discussions on the US food system, invited a panel of SF entrepreneurs from the emerging underground food scene for a QA, hoping to answer big questions like what’s driving the trend and whether or not it has a future. As Iso Rabins from forageSF, Leif Hedendal, a veteran chef of secret suppers, Lucera Muñoz Arrellano, the owner of a bacon-wrapped hot dog cart in the Mission, shared their stories, I got a sense that no one had an overarching theory about the recent surge of popular interest. But it’s clear a lot of passionate people are firmly committed to redefining our food culture whether the man likes it or not.

Rabins originally began forageSF as a way to educate people about wild food with guided foraging tours that served to recontextualize nature as not an abstraction but an integrated environment to which we are inherently bound; it can even feed us. As he saw more and more people’s interest in preparing food grow and their resources dwindle, forageSF evolve to include the Underground Market, a venue for foragers and other uncertified producers to sell their goods. He’s had a few run-ins with the health department, but since he’s now operating under the quasi-legal status of a club he said he pretty much plans on running the market till forced to shut down.

In the long term, though, Rabins doesn’t have much interest in “legitimizing” the market considering enough certified farmers markets already exist, and to him, adjusting to the regulations would circumscribe the innovative spirit of the project. But he does see it developing into more of a launching pad for those wanting to make the switch over to the mainstream.

Hedendal, after working in brick-and-mortar food establishments, became disillusioned with what he described as kitchen culture — the demanding schedule and strict hierarchy that disconnected workers from the community, and thus, one of the main pleasures of cooking. He’s also critical of the “cheating” that many restaurants resort to in order to still be considered sustainable and not go broke. After getting out of the professional world almost a decade ago, he’s been involved with various food projects and secret dinners that sought to uphold the values of community, affordability, and creativity — it’s a pretty long and impressive resume. As of right now, he’s cooking for Dinner Discussions, which brings together food and socially-engaged artists. But for all his negative experiences working in restaurants, Hedendal’s ultimate goal is to open one that satisfies his values of true sustainability and community—maybe impossible now but who knows what will be eventually possible with the changing tides in our food and economic culture.

Lucero Muñoz Arrellano, though, kept the conversation grounded in the practical reality for a lot of those who informally vend on the streets. When asked why she began selling the popular Mexican hot dogs, she answered, assisted by a translator, that her biggest reason was to find a way to support her children, bringing it home that for many in this recession, underground food is a means to surviving in a shrinking job market that’s squeezing out the marginalized—especially those who might lack formal education or English language skills.

I don’t want to sell her short, though; her experiences and trials as an informal street vendor have given her a goal other than just subsisting. With her recent acceptance into the incubator program at La Cocina, a nonprofit geared towards nurturing low-income food entrepreneurs, Arrellano has been inspired to convince others to legalize their businesses. She’s intimately familiar with the hurdles that are almost impossible to navigate—like the bureaucratese of the necessary documentation that frustrates many non-English speakers or those who have limited education. And she also knows the risks that informal vendors suffer. At a minimum, the $250 citation fee can wipe out more than a day’s worth of work, not to mention the threat of having the cart confiscated and losing what may be their only livelihood. Some work in fear of arrest and deportation. A very big risk indeed.

In some ways the talk was illuminating and in other ways it confirmed ideas I deeply support. I suspect, given the wide-arching participation in decentralizing the mainstream food industry, the underground scene is not solely about hipster novelty-seeking. (Though, let’s not lie, that does play a significant part.) It also reflects the growing public re-evaluation of dysfunctional socioeconomic systems and support for those who are redefining how and what we eat.

2/13-14 – The Melting Pot – Valentine’s fondue feast
The Melting Pot chain may not be your first thought for Valentine’s Day, but if you’re in Marin or the idea of a relaxed fondue feast (cozy in these Winter months) in a unique setting is appealing, here’s an idea (discounts for groups of 7 or more friends): head to Larkspur’s Melting Pot in an 1891 brick kiln, forced to close for economic reasons in 1915, empty for over 70 years until restored in 1989. Some people go their entire lives buying replacement 20-packs of tube socks from Costco, socks whose suspicious blend of elastic, petroleum products, and God-knows-what signals to wearers and viewers alike: Warm, shwarm! When you wander through its labyrinth of plywood, bicycle tires, and window panes only to stumble upon an intricately carved and perfectly preserved fireplace mantle which, according to a handwritten note taped to it, is “circa 1900.” This is the kind of thing that happens at Building Resources, an open air, DIY-er’s dream on the outskirts of Dogpatch, which just happens to be the city’s only source for recycled building and landscape materials. Maybe you’ll come here looking for something simple: a light fixture, a doorknob, a few pieces of tile. You’ll find all that. You’ll also find things you never knew you coveted, like a beautiful (and dirt cheap) claw-foot bathtub that makes you long to redo your own bathroom, even though you don’t own tools and know nothing about plumbing. It’s impossible not to be impressed with the selection at Collage, the tiny jewel-box of a shop perched atop Potrero Hill. The home décor store and gallery specializes in typography and signage, refurbished clocks and cameras, clothing, unique furniture, and all kinds of objects reinvented and repurposed to fit in a hip, happy home. But what we like best is owner Delisa Sage’s commitment to supporting the local community and economy. Not only does she host workshops on the art of fine-art collage, she carries a gorgeous selection of jewelry made exclusively by local woman artists. Whether you’re looking for knit necklaces, Scrabble pieces, typewriter keys, or an antiqued kitchen island, you’ll find ’em here. And every dollar you spend supports San Francisco, going toward a sandwich at Hazel’s, or a cup of joe at Farley’s, or an artist’s SoMa warehouse rent. Maybe capitalism can work.

There’s something grandmothers seem to understand that the Forever 21, H&M, Gap generation (not to mention the hippies in between) often miss: the value of elegant, tailored, designer classics that last a lifetime. Plus, thanks to living through the Great Depression, they know a good bargain. Luckily, White Rose got grandma’s memo. This tiny, jam-packed West Portal shop is dedicated to classy, timeless, well-made style, from boiled wool-<\d>embroidered black coats to Dolce handbags. Though the shelves (stacked with sweaters) and racks (overhung with black pants) may resemble those in a consignment or thrift store, White Rose is stocked full of new fashions collected from international travels, catalog sales, or American fabricators. In fact, it’s all part of the plan of the owner — who is reputed to have been a fashion model in the ’50s — to bring elegant chemises, tailored blouses, and dresses for all sizes and ages to the masses. The real price? You must have the patience to sort through the remarkable inventory.

BEST BOUTIQUE FOR BUNHEADS

It seems you can get yoga pants or Lycra leotards just about anywhere these days (hello, American Apparel). But elastic waists and spaghetti straps alone do not make for good sportswear. SF Dancewear knows that having clothes and footwear designed specifically for your craft — whether ballroom dance, gymnastics, theater, contact improv, or one of the good old standards like tap, jazz, or ballet — makes all the difference. This is why they’ve been selling everything from Capezio tap shoes to performance bras since 1975. The shop is lovely. We weren’t sure it could get any better — or weirder — than Paxton Gate, that Mission District palace of science, nature, and dead things. But then the owner, whose first trade was landscape architecture, opened up Paxton Gate Curiosities for Kids down the street, and lo and behold, ever more awesomeness was achieved. Keeping the original store’s naturalist vibe but leaving behind some of its adults-only potential creepiness, this shop focuses on educational toys, vintage games, art supplies, and an eclectic selection of books sure to delight the twisted child in all of us. San Francisco sure does love its trunk shows: all those funky people hawking their one-of-a-kind wares at one-of-a-kind prices. The only problem? Shows happen intermittently (though with increasing frequency in the pre-<\d>Burning Man frenzy). Lucky for us, Miranda Caroligne — the goddess who makes magic with fabric scraps and a surger — co-founded Trunk, an eclectic indie designer showcase with a permanent address. The Lower Haight shop not only features creative dresses, hoodies, jewelry, and menswear by a number of artists, but also functions as an official California Cooperative Corporation, managed and run by all its 23 members. Skate culture has come a long way since its early surfer punk days. Now what used to be its own subculture encompasses a whole spectrum of subs, including dreadheaded, jah-lovin’, reggae pumpin’ riders. And Culture Skate is just the store for those who lean more toward Bob Marley than Jello Biafra. The Rasta-colored Mission shop features bamboo skate boards, hemp clothing, glass pipes, a whole slew of products by companies such as Creation and Satori, and vinyl records spanning genres like ska, reggaeton, dub, and, of course, good old reggae. Stop by to catch a glimpse of local pros — such as Ron Allen, Matt Pailes, and Karl Watson.
