Appetite: WhiskyFest 2010 highlights, part one

WhiskyFest turns into Whisky Week with many of the world’s great master distillers and brand ambassadors in town from the reaches of Scotland and Kentucky for a tasting event of nearly 300 whiskies. I had the privilege of meeting with seven different distillers – some met with me over coffee or lunch, others at intimate gatherings. Impressed by the wide range of approaches, styles and personalities, I could easily write an article about each one and their respective distilleries. I will share highlights, this time with Scotch master, Richard Paterson, from a Charbay whiskey dinner, and tastes from the event. Part two will be conversations with bourbon and rye distillers.

10/8 LUNCH WITH RICHARD PATERSONRichard Paterson, known as “the nose” for his impeccable nose and taste, has been Whyte & Mackay’s master blender for decades. He’s one of the world’s leading scotch experts, author of the book Goodness Nose (which I savored as “homework” all through Whisky Week). To be part of one his seminars (such as at WhiskyFest Friday night), is to be bombarded with dates, history, uproarious expertise, irreverence, drama, laughter. When one lucky member of the class samples Dalmore Sirius (which has sold at up to $60,000 a bottle!), Paterson sets off a mini-rocket filled with confetti. Fireworks. Revelation. Kind of like tasting it myself…

I had the privilege of an intimate three hour lunch over food and the Dalmore line with Paterson at Wayfare Tavern. We covered the range from 12 year to King Alexander III scotches (which I first had at Whiskies of the World). The chocolate, marzipan, tropical fruit of King Alexander III remains a Dalmore highlight for me. It’s the only single malt in the world finished in six different woods (Port, Bordeaux Cabernet Sauvignon, Marsala, Madeira, Matusalem sherry, small batch Knob Creek bourbon barrels). Dalmore’s Gran Reserva stood out more the second and third time I sampled it with spiced marmalade, crushed almonds, and sherry notes from the 60% Oloroso sherry casks it’s aged in.

Get Richard started on wood and he says, “The wood is, as far as I’m concerned, the be all, end all.” With a devotion to fine sherry casks (like Gonzales Byass), a key source of Dalmore’s elegant taste profile, they also use a generous amount of American white oak, bourbon casks from Heaven Hill and Jim Beam, which enriches the profile further.

A favorite, which I would happily sip on its own, isn’t bottled: the unaged distillate or, whisky base. It’s amazing how much you can tell of a spirit’s quality by its foundation. I was pleasantly assaulted with an array of tastes from spice and earth to lemongrass in the clear, strong distillate. I finished every drop.

Certainly a pinnacle is reached with the Sirius. The rare opportunity to sample highly aged spirits just a handful times (like two 1800s cognacs in New Orleans or Highland Park’s 40 and 42 year scotches) has opened doors of flavor I could not dream up – this scotch transported me to regions beyond. There are only 12 bottles of Sirius in existence, a ’51 vintage with a blend of Dalmore scotches from 1868, 1878, 1926, 1939. History courses through each drop, while Paterson’s expert blending skills are illuminated here. Rich chocolate earth gives way to licorice and a bonfire smokiness. I count myself lucky.

To drink with Paterson is to learn how to properly nose a glass, how to hold whisky in your mouth for maximum taste (from many seconds, up to 2-3 minutes). One learns how the dreaded phylloxera aphid (which wreaks havoc on vines) inadvertently aided whisky’s growth by making dominant cognac in short supply, creating demand for other drink (read chapter seven in Paterson’s book). But he doesn’t just talk aphids, he brings visuals: big, plastic bugs to illustrate whisky’s unexpected “friend”.

Quirky and colorful, whisky comes to life through Paterson’s interpretation. Intelligent and challenging though the whisky world can be, Paterson retains the intellect but makes it approachable, fun. A Paterson course in whisky education should be mandatory for all would-be and already-avid drinkers.

TASTES – As usual, VIP hour is the time for the rare, the old, the latest, though it was more packed than ever with a mad rush waiting at the door at opening time.  This meant less opportunity to chat with distillers and hear about what you were tasting. A lot can happen in a year and the number of whiskies I’ve had since the last WhiskyFest meant this year was a lot of re-tasting and confirming favorites. Of the whiskies I had not tried, there weren’t a slew of stand-outs.

One that jumped out was a special unlisted, under-the-table pour of George T. Stagg bourbon. Toasty, charred oak warms, rounded out by a raisin-vanilla sweetness. Out of many over-hyped whiskies in the 20-40 year range during VIP hour, Bowmore’s 25 year stood out with a robust profile of salty brine and baked pear sweetness. Glenfarclas 40 year made a statement with tobacco, elegant tannins, orange. But it was many of my usual favorites that remained at the top, including Highland Park’s 30 year, Pappy Van Winkle’s 20 and 23 year bourbons, Parker’s Heritage 27 year bourbon, and Charbay’s incomparable Release II 1999 Pilsner whiskey. It was good to see Wes and Lincoln Henderson (of Woodford Reserve fame) with their new, port barrel-finished Angel’s Envy bourbon – I sampled an early version from Wes way back in December. Also on the non-whisky tip, I was happy as ever to sip a couple Germain-Robin beauties, including their complex Varietal Grappa, and oaky Coast Road Reserve brandy.

10/6 CHARBAY SPIRITED DINNERWith a magnificent sunset from atop the Marriott’s View Lounge as our backdrop, Marko and Jenni Karakasevic of Charbay hold an intimate spirited dinner annually. With plenty of time to hang out with the Karakasevics and meet fervent food and drink lovers at the two tables, the highlight was, of course, drinking Charbay’s incomparable spirits. Starting off with refreshing Green Tea Aperitif paired with Kumamoto oysters on the half shell, we then moved to one of the stand-out white whiskeys in existence: Doubled & Twisted Light Whiskey.

We moved on to what qualifies as one of the best things I ever tasted in my life (now, and every time I taste it): Release II of Charbay Whiskey. This was the best food match of the night, paired with slow-smoked Berkshire Farms Pork Belly and a mini-tamale in Lagunitas chili mole. Surprise whiskey barrel tastings followed: the Release II, but aged 12 years instead of the 6 years of the current release. At a higher proof, it’s superb, complex, rich.

A Meyer Lemon Vodka  ice intermezzo was a refreshing palate cleanser over basil ice, imbuing tart lemon with almost absinthe-like notes. Dessert was paired with their Black Walnut liqueur. As with most Charbay spirits, it’s a stunning standard-setter in its genre.

Portland’s Macro BrewFest cheers the chug

“Are you noting the hints of coriander in your Rolling Rock?” my buddy wants to know. On a late summer afternoon, the couples and regulars scattered around us throughout a southeast Portland, Oregon neighborhood dive are taking a break from the microbrews their city is known for. For them, it was all about the tall cans. And for a damn good reason – the proud beginning of what may well be the world’s first Macro BrewFest, which went down this past weekend.

Not that Glen Wallace, owner of festival host O’Malley’s Saloon and Grill, isn’t into fancy suds. Wallace, who moved to Portland from his native Boston nine years ago, came up with the idea while at one of Beervana’s (as Portland, site of a national record 30 in-city craft breweries, has been colloquially termed) many micro brew fests. 

“Me and my buddy were sitting there with our little plastic cups and our beer nickels,” Wallace, an affable chap, tells us as we drink to his new festival’s health at one of O’Malley’s streetside picnic tables, the Southeast Foster Road traffic whizzing by a few feet from our bench seats. The two friends were reflecting on the bum hand that cheap beers are dealt in a town that often prizes hops over national ad campaigns. “The macro and domestic beers really seem to get shunned a little bit,” Wallace says, whose own draft pulls are evenly split between local stars like Eugene’s Ninkasi Brewery, and old school pulls of Coors and Pabst Blue Ribbon. “And I tend to think in contrarian terms.”

Credit to this oppositional nature his next move: Wallace placed an order for an obscene amount of 16 different kinds of suds, the beers that we all drink, but aren’t necessarily stomping at the bit to stand up for. I take a break from sampling wares so that he can proudly escorts me into his walk-in refrigerator, which at the three day festival’s start was piled with cases of Coors Banquet, Steel Reserve, Olympia, Old German, and Natural Ice. “We were going to stock Iron City too, but they had a canning problem in Pennsylvania or something like that,” he reflects.

To truly give the much maligned macrobrew it’s due, Wallace went big with the concept: a bluegrass night, a comedy night that with the help of a stand-up connected staffer attracted sign-ups from 34 amateur yucksters. He sold “beer passes” for five bucks, which got you four tall cans of the Americana elixir of your choice, and in this manner got rid of 800 beers in three days – a big event for a small dive bar. To get people invested in the concept he offered a bonus feature: ballots to vote on O’Malley’s new house beer. His “dark horse” favorite, the white and red cans of Rainier, took home top honors from his discerning patrons, which he seemed to be happy about. “I’ve had a few long nights with Rainier,” he told me.

And such was the world’s first Macro BrewFest – which, judging from the way Wallace was talking, may not be the world’s last. He’s looking into trademarking the event’s name. After all, he says, people are beginning to return to their old standbys in these economic hard times. Miller High Life will always be there for its fans, an important fact in a Beervana where unemployment is currently standing at 10.2%. Chug!

BEST EFA DOSE ON TOAST

When it comes to sardines, you have to think outside the earthquake shelter. On the flavor-ometer, the tinned food of last resort (served on tarps in the shelter with Saltines and stale water) bears no resemblance to its freshly grilled or roasted self. Not only are the little silver herrings tasty, they pack a megadose of essential fatty acids, the stuff nutritionists keep nagging us to eat more of. But no one needs to tell this to the Italian-inspired chefs who created the sardine sandwich at Barbacco Eno Trattoria, the more casual relation of Perbacco in the Financial District. Unlike restaurants that play it safe with sardines by smothering them in mayonnaise and lemon juice, Barbacco tops its sardines with seared calamari. Not most people’s first choice, perhaps, but the two get along swimmingly, especially when served on an Acme torpedo roll and slathered with arugula and “roasted tomatoe condimento.”

BEST HOLE IN ONE

When people start trash-talking donuts, it’s hard not to imagine a life in which the person was weaned on Hostess or Entenmann’s and maybe stepped up to Dunkin’ or Krispy Kreme on special occasions. In other words, we’re talking a lifetime of mass production, where the only donuts these people have encountered spent their nasty, brutish, and short lives being callously blended in giant vats and stuffed into huge ovens, untouched — nay, unkneaded! — by human hands. Not so at Dynamo Donuts & Coffee, the small, open-air stand in the Mission that is diligently working to give donuts a good name. Each day the artisanal bakery makes seven to 10 types of donuts, all by hand. Standouts include the maple-glazed bacon apple, spiced chocolate, and lemon Sichuan filled with lemon curd and Dynamo’s incomparable “dredge.”

BEST FOWL TO TABLE

Which came first: the chickens or the eggs? At Stable Cafe, what probably came first was a commitment to fresh, local, sustainable food, which led to its farm in Santa Rosa, which led to its chickens, which led to its eggs, which led to its egg and cheese breakfast sandwich, which is a savory, molten marvel of scrambled egg and cheddar on thick, toasted Acme bread. But this light, airy Mission District cafe, beautifully renovated by architect Malcolm Davis in one of SF’s original carriage houses, brings that kind of integrity to everything it does. Its credo seems to be, do a small number of things well (know thy chickens; bake thy own muffins) — and adhere it does. And if you want to pay homage to the laying lovelies who created your eggs, Stable has their photos on the wall.

BEST CZECHVARS WITH A TWIST OF BOHEMIA

For a city with such a strong bohemian reputation, San Francisco has surprisingly few spaces that capture some of the flavor of the actual place. Yes, Virginia, there really is a Bohemia — and its capital is Prague. (One prefers the emphatic German spelling: PRAG. No lazy French vowels trailing behind, doing nothing!) And, speaking of nothing, nothing says Prague quite like a mug of the beer known to the Czechs as Budvar but to us, we of the North American market — perhaps because of a potential conflict with Budweiser — as Czechvar. A splendid place to enjoy said beer, whatever its name, is at the aptly named Café Prague. The feel inside is wonderfully Mitteleuropean, while the calorie-rich food emphasizes such basics as starch, meat, and fat. You probably won’t leave hungry, or sober.

BEST CULINARY MULTIPLE PERSONALITY

Don’t be deceived; Red Crawfish isn’t some kind of Red Lobster knockoff. The name is (we guess) a sly joke, and the restaurant does offer crawfish. But neither the jokey name nor the serving of crawfish is what makes the restaurant special. No, the reason you’ll remember Red Crawfish is because of its split personality. And although in human beings, split personalities are generally problem personalities, it’s different — and better — with restaurants (in this case, all Jeckyll and no Hyde). By day, Red Crawfish is an ordinary-looking Tenderloin restaurant that lays out an agreeable east Asian menu. But when the sun goes down, the place morphs smoothly into a Cajun spot whose gumbo is superb. Good gumbo doesn’t exactly grow on trees in these parts, so for this dish alone, let us all give thanks to Red Crawfish, whichever one it may be.

BEST MEXICAN LESSON

If Mexican cooking is underrated in this country, part of the reason must be that we’ve been exposed to fast-food chain tacos and, even in our very own Mission District, overexposed to the burrito — which isn’t even authentically Mexican. God save the burrito anyway; it gives a lot of bang for the buck, and that’s important in these shriveled times for starving students and plenty of others. But there’s a real education to be had as well in the foods of Mexico, and a good place to audit the class is Nopalito, an offshoot of the highly regarded Nopa. The care taken about ingredients matches that of the nearby mothership, and the menu ranges nimbly across regional specialties, many of which are unfamiliar. The carnitas are recognizable, but they are also spectacular. It will be as if you’ve never had them before.

BEST PUPUSAS AND GOOOAAAALLL!!!S

Football and food take on more global connotations at Balompié, and that’s just bueno. The restaurant is well-hung with huge flat-screen televisions showing soccer matches from around the world, and the food is splendidly Salvadorian at a modest cost. This means lots of pupusas and pasteles, along with exotica like pacaya (pickled date palm blossoms), and — to rinse down all this bounty — the Salvadorian beer Regia, which comes in bottles that resemble howitzer munitions. But the best thing about Balompié is that at its heart it’s a sports bar. Men like to watch sports on big TVs while drinking beer, and it doesn’t matter whether they’re speaking Spanish, drinking Regia, or pulling for Costa Rica, pupusas in hand.

BEST CREPE ME UP BEFORE YOU GO-GO

What do we miss most about Paris in the spring? The hip-hop boys with their gold chains and exposed biceps, the gamine girls in strappy heels, the constant elusive threat of rain, the crowds at Paris-Plages, laden with beer bottles, acoustic guitars, and joie de vivre. But above all, we can’t help reminiscing about those street crepes, fresh off the griddle, just the ticket for staving off those inopportune late-night hunger pangs, and great for soaking up any excess vin ordinaire in the bargain. Hooray! The 11th Street corridor’s Crepes A Go Go serves up the best street crepes this far side of the Maginot line. Starting at just $2.50, each crepe is made to order, and filled to oozing point with a decidedly Californian array of savory or sweet options. Open until 4 a.m. on weekends, with complimentary French hip-hop and comfy street-side sofa seating in the bargain. Take that, bacon-wrapped hotdog cart.

BEST SCONES WITH A SIDE OF ASIMOV

Do you remember when the venerable coffee shop was a place people gathered to hang out instead of network? Where gamers would shuffle their Magic decks, writers would swap paragraphs, readers would sit quietly for hours with a good book and a pot of tea, and caffeine-fueled college kids would cram like the dickens? Welcome to Borderlands Café, the newest darling of the Valencia Street corridor. An offshoot of the classic Borderlands Books sci-fi bookstore, it’s already attracted quite a cross-section of trend-spotting caffiends and café nostalgists who just want to converse without being shushed by perfectly-coiffed app-oholics. And with a huge selection of magazines, comfy chairs, and scrumptious cheddar cheese and onion scones, Borderlands has a lot to offer even the solo café dweller. Except for Wi-Fi, which is actually our favorite perk of the place.

BEST MOUTHWATERING MAYAN

It’s not situated in a chic location, unless you’re looking for snazzy new rims or a car wash. But Poc Chuc is well worth a trip down a less-bustling stretch of 16th Street for its unique Spanish-Mayan fusion cuisine. Open for lunch and dinner five days a week, the small, unadorned restaurant offers an array of dishes that inject an ancient, mouthwatering twist into standard Latin American fare. (Think plenty of smoked turkey, grilled tomatoes, pickled onions, and, of course, maize in several iterations.) A platillo Maya appetizer platter combines some of its tastiest, bite-sized creations, with plenty to share among a group — but no fighting over the pork empanadas or turkey salbutes! Main dishes include the signature Poc Chuc — grilled citrus-marinated pork topped with grilled tomatoes — and a reliable daily specials menu. Go for the mole!

BEST GOOEY MAGIC (NO ELVES REQUIRED)

If you don’t like cookies, feel free to skip ahead. But if you were born with taste buds and an appreciation for delicious gooeyness, you’d do well to hit up Anthony’s Cookies. There is indeed an Anthony — likely you’ll see the man himself when you stumble into his Valencia Street shop, lured by the prospect of fresh, hot, calories-be-damned treats. And if Anthony looks like the happiest guy on planet Earth, he probably is — he bakes cookies for a living, after all — using only natural ingredients. Who’s magical now, Keebler Elves? Flavors include the usual suspects, plus variations on chocolate chip (semisweet, with walnut, using white chocolate … ) done to soft-meets-crisp perfection, plus inspired creations like cookies and cream and whole wheat oatmeal.

BEST XXX

Sink happily into the dark brown booths at Baker and Banker for a memorable Cal cuisine dinner — sweet corn bisque with a plump lobster hush puppy, maybe, or sausage-stuffed quail in a coffee-molasses glaze. Husband and wife chef duo Jeff Banker and Lori Baker get it right with each dish. But you could visit for dessert alone with Lori’s ever-changing wonderland of a dessert menu. In fall, dessert might be pumpkin cobbler, steaming hot with a crunchy top and cooled with candied pumpkin seed ice cream. In summer, a cherry tarte tatin accented by salted caramel and amaretti rules. Awesomely, the Baker and Banker’s XXX triple-dark chocolate layer cake is a constant. This orgiastic slice stands tall with a bottom layer of dark, dense flourless chocolate. Not to be outdone, the middle is a tangy chocolate cheesecake, while the top finally gives you a density break with traditional chocolate cake. One of the more satisfying threesomes in town.

BEST FRESH KASHI PAN

Sandbox Bakery is a pocket-sized cafe in Bernal Heights serving Ritual Roasters and De La Paz coffee with classic pastries like Valhrona chocolate croissants or orange currant scones. But it doesn’t end there. Owner and pastry chef Mutsumi Takehara’s background ranges from Slanted Door to La Farine, and her creations span a world of taste. Sandbox’s Japanese sweet bread, or kashi pan, is a lightly sweet brioche filled with the likes of melon or yuzu marmalade with sage. Or, in its savory form, it comes challah-like with negi-miso, curry or red bean paste filling. Daily special sandwiches often express a fusion of cuisines: Thai chicken croque-monsieur; an apple, smoked gouda, and rosemary spread over fresh baguette, or a teriyaki chicken rice burger with sticky rice as bun. A Zen-like experience with Parisian spirit.

BEST HOT HAKKA

Not familiar with Hakka cuisine, the regional cooking style of Southeast China that’s got food bloggers in a hot lather? It’s time you became acquainted. Head to the Outer Richmond and get schooled at Hakka Restaurant. Hakka looks like any other nearby Chinese joint, but there’s a legitimate pride in the service and an uncommon freshness to the food. Dishes include salt-baked chicken, fried strips of pumpkin coated in salted egg, crisp Chinese broccoli sautéed in rice wine, and ngiong tew foo, or stuffed tofu cubes. Kiu nyuk, a beloved Hakka dish, has two known versions, the more common served here: fatty pork belly layered over preserved mustard greens and mushrooms in a dark and complexly herbal sugar-soy sauce. The appropriately named Coffee Bar offers a double whammy of appeal: it occupies an impeccably cool industrial-looking space for laptop workaholics and serves some truly eye-opening coffee. Mr. Espresso coffee beans provide the kick in bracing espressos and cappuccinos; an ultra-expensive, ultra-shiny Clover machine dispenses perfect single cups. Unlike chain-like offerings of watered-down, cloyingly sweet mochas and “specialty” coffees, the additional drink menu items here are crafted with punch. Vietnamese or Havana coffees (conveniently hot or iced for those variable summer days) are sure things. But our taste buds go up in flames for Coffee Bar’s El Diablo. A devilishly smooth mix of espresso, chipotle-infused milk, and Guittard chocolate, the robust brew marries a hint of cocoa sweetness to subtle heat. Yes, we’re probably going to hell for worshipping El Diablo. But at least we’ll be awake for it.

Trek to a mellow stretch of Clement Street and enter the “five-star dive” environs of Tee Off Bar & Grill. You might assume it’s all right for a beer and little else — but you’d be wrong. The place is comfortably worn, sure. But regulars and staff soon feel like old friends, often sharing one of their spare Bronx Bombers (fiery BBQ chicken wings) or beer-battered mushrooms. The next surprise comes when you exit the dim interior to a sunny back patio with picnic tables and random paraphernalia from popular pirate parties (ask your bartender). A chalkboard reveals weekend specials. Wait! Is that a $20 kangaroo burger? After you’ve balked at the price, you can’t pass up this adventurous challenge, especially when the burger is plumped up with fried onions and kiwi relish. Make sure you call ahead, since Tee Off only serves it on occasional weekends and until supplies run out. If the roo’s already hopped, other worthy eats like ostrich burgers or Paul’s Crafty mac ‘n’ cheese, a four-cheese blend with pancetta blessed by Guy Fieri himself, will satisfy.

When the rustic-chic Marlowe first opened, it offered a seemingly straightforward menu of bistro staples like steak frites and cheesy cauliflower gratin that seemed anticlimactic. But chef Jennifer Puccio’s faith in the classics and elegant marshaling of simple ingredients soon paid off: raves began to roll in — especially for the jaw-widening burger loaded with caramelized onions, horseradish aioli, and bacon. But the burger isn’t the only star on the lunch menu. Diving into Marlowe’s deviled egg sandwich is not settling for second best. Simple in presentation, it’s one of the finest egg sandwiches out there, an open-faced beauty with a layer of crisp, meaty bacon, aged provolone, pickled chilis, and horseradish aioli on the side (perfect for accompanying fries). Order addictive brussels sprout chips and let the office know you won’t be back for a while. The only proper way to wrap up such a heartwarming lunch is to take a nap.

One expects to shell out a pretty penny to partake of gourmet cooking techniques like sous-vide, or vacuum-packed slow cooking. But Berkeley’s eVe defies such expectations with a palate-tickling, surprisingly filling two-course prix fixe menu for $25 that includes several sous-vide items. The set menu offerings change often (additional items are steadfastly priced at $11 each), but husband-and-wife chef team Christopher and Veronica Laramie always keep it lively, highlighting the tastes of Veronica’s native Peru. Grilled squid ink risotto gets a tart kick from candied kumquats and yuzu. Diver scallops are brightened by lime leaf, edamame, mint, and delicate salmon roe. A sizable piece of fatty-licious pork belly pairs with a warm watermelon radish, chive flower, and a paper-thin slice of candied Buddha’s hand. Dessert might be goat brie sweetened with apricot, red wine, and a welcome contrast of shallots and flax seeds. In other words, world-class gastronomie d’avant-garde priced to appeal to ramen-weary students.

It is with humor and reverence that one dines at Three Papayas, a pop-up Sunday brunch from 12 p.m.-4 p.m. at Doc’s Clock bar. Mismatched Michael Jackson placemats abound, and Bibles and porn-laced comic books act as menu-holders. Creative chef Ta-Wei Lin emphasizes fresh and funky Vietnamese and Thai flavors. His menu of four or five changing items per week (everything is $8) might include pan-fried rabbit, Filipino sisig, chicken or vegan Vietnamese crepes, or viet banh canh with clams and coconut sauce. If it’s available, hop on the unusual Bunny Chao, a hollowed-out loaf of bread — filling piled neatly on the side — overflowing with green lentils, veggies, and cardamom pods. Chef Lin garnishes with seasonal fruits like figs, passion fruit, and, of course, papayas, making his plates fun to behold, but even better to eat. In the lovably grungy Doc’s setting, pair your food with a peppery bloody mary, and join your fellow dive-tastic brunchers in a round of hallelujahs.

Morning at Brenda’s French Soul Food: where to start? Grillades and grits or crawfish beignets? Fried shrimp po’boy or sloppy Josephine? Eggs and andouille? Oui, Oui! This wee spot on Polk Street — open for breakfast, brunch, and lunch — is a showcase of the strikingly huge flavors of New Orleans-style French and Creole cuisines. The portions are big, the atmosphere strikes a note between quaint and cosmopolitan, and wonderfully named Filipino-Creole chef (and New Orleans native) Brenda Buenviaje keeps the flavor flowing. The only drawback, besides having to brave the tiny curbside riots to get in, is having to choose among the many dreamy menu items on offer. In the brick-walled space accented with sparkly chandeliers, black and red couches, and white piano, Diedrich shakes and stirs from a reasonably-sized menu of 18 rotating cocktails. He doesn’t just craft the classics, though there are plenty of those. Diedrich also creates inventive new drinks — often featuring marmalade — like the sparkling Hitachino Sour with bourbon, orange marmalade, lemon, sugar, and orange bitters, topped with Hitachino White beer. His experience lies in some of the country’s greatest bars from East to West. You simply will not find a menu that covers more enticing and bewildering acreage — at least 10 massive pages illustrated with a complex grid system that showcases a dazzling plethora of Asian desserts. Two you might want to sample: crystal rolls (clear rice paper sachets of sweet sugary goo and fresh mangos and strawberries) or a selection from the extensive jelly drink section of the menu. Any eatery can slap some pulled pork and pickles on a panini and call it a Cuban sandwich. But true Cuban food connoisseurs venture to Market Street’s upper climes to dig in at the tiny Chan Chan Café Cubano, a cute café by day that at night becomes a paradise of traditional dishes prepared with a gourmet touch. Entrees like ropa vieja and pollo en hoya are spectacular, but you may just pack them up to go after feasting your way through the well-priced tapas menu, which includes scrumptious croquetas, hongos, and camarones criollos. Plus, hello, a couple pitchers of sangria. With true Cuban flair — when the electricity goes out, as it sometimes does, a rewarding fever of culinary improvisation descends — and a laidback, handsome staff (yes, you may have to wait a bit for your order to come out of the one-stove kitchen, but you’ll have plenty to look at), Chan Chan is indeed one of those “hidden gems.”

Best cioppino? Them’s fightin’ words in San Francisco, where the thick, rich seafood stew originated. But we’re serious. As certified fish freaks always eager for a fix of this blues-obliviating local delicacy, we’ve tried our fair share. And we can safely say that the home-style cioppino at Sotto Mare is the best. The key — besides the incredible tang of the smoky tomato broth and flawlessly fresh crab and fish chunks, scallops, mussels, and shrimp loaded within — is the atmosphere. Run by beloved, no-nonsense North Beach legend Gigi Fiorucci (don’t squeeze that lemon wedge over your superbly grilled sand dabs or he’ll reprimand you), Sotto Mare has a true family feel, a bustling business of diverse diners, and a haphazard décor that recalls San Francisco’s ramshackle maritime past. When that steaming cioppino tureen, more than enough for two, is placed on the table by the gregarious waitstaff, you feel a delicious connection to SF history.

Never mind the ubiquitous fancy food carts or “third wave” coffee shops springing up in back alley garages — wieners were everywhere this past year. The explosion of gourmet and not-so-gourmet hot dog stands, joints, and full-on restaurants worked to balance all the epicurean exotica with some down-home comfort for those who were raised in a broke-down Chevy on televised baseball and McDonald’s apple pies. All were worthy, but one in particular consistently heated our buns: Showdogs. This “emporium of sausages” keeps it classy with a spotless, tin-tiled interior and organic ingredients like wild boar and merguez, while still appealing to the everyday eater with a sporty sense of humor — we’re suckers for the 49er, an all-beef Schwartz dog with housemade mustard, arugula, and, gasp, real sauerkraut. Add some barbecue fries and a Trumer Pils, and this hearty barker wins best in show.

BEST PLACE TO HORK DOWN HALF A BIRD

“I just ate half a chicken.” That declaration is written on a Post-it stuck to a cubicle at the Guardian offices. The sticky piece of pastel paper has since been signed by other people besides the original chicken lover. What can you say? Unless you’re the staunchest vegetarian, sometimes you just get the urge to eat half a chicken. Thai BarBQ in Potrero Hill was ideal for such moments, but it’s flown the coop. Luckily, Baby Blues BBQ is here to satisfy those extra-intense and voracious aviary cravings. The restaurant’s Marion County slow-smoked yard bird is served with a tangy barbeque sauce, but be sure to ask for the special Sassy Molassy molasses sauce. Add in corn bread and a choice of two fixins (sautéed okra, mac ‘n’ cheese and corn on the cob are some of the best options) and at a grand total of $15, you’ve got a deal only a fool would cluck-cluck at.

We all know about chicken soup for the soul, how about delicious soup for the skin? Because its pork bone broth contains collagen and calcium, tonkotsu ramen has a rep as the genuinely edible version of a spa facial. There are some delicious tonkotsu ramens in Vancouver and San Francisco, but they’re all matched and even superceded by the subtle one at Asuka Ramen, which manages to be rich and light within a single spoon-size sip. Ramen establishments have popped up all over the city in the last year or two, but Asuka steers clear of trendy trappings and delivers the low-priced goods. Tantanmen is Asuka’s go-to dish, but if you don’t confuse greasy strong flavor with deliciousness, its pork-and-egg laden tonkotsu is the type for you.

BEST LOBSTER ROLLIN’

Whatever queasy misgivings you may harbor about the phrase “mobile seafood shack” will instantly be dispelled once you’ve palmed (or tried to palm) a hefty Maine lobster roll from Sam’s Chowdermobile. We were turned on to this tender, brimming-over prize when one of our East Coast-native amigos texted “lobster roll = real deal” from Golden Gate Park, where you can find the edible aquarium on wheels most weekends. So we tried one for ourselves, and yep. Great lobster rolls at a reasonable price are surprisingly hard to come by ’round these Left Coast parts — we’re crabby that way. Luckily Sam’s, the mobile unit of Half Moon Bay resto Sam’s Chowder House delivers the goods. (The roll proper is enough to feed two — order a single-serving “shortie” if you want one all to yourself.) Prep yourself for crustacean heaven with a bowl of Sam’s New England chowder and a side of Old Bay fries for a true Eastern experience.

Appetite: NYC Food Cheat Sheet, part two

During my latest visit to my beloved New York, I spent eight days gleefully eating my way around the city, as I have done in countless trips past. I am continually asked for NY recommends as many of us in the Bay Area are either East Coast transplants, do business in both cities, or are savvy frequent travelers. Check out my Perfect Spot newsletter-archives for much more NY food and drink, but now I bring you part two. (Check out part one here.) A mini-list of great eats in varying categories:

GREEK SEAFOOD in QUEENS
Taverna Kyclades – You won’t regret trekking to Astoria, Queens, for an unforgettable Greek seafood feast at Taverna Kyclades. The humble, convivial space feels like a casual seafood/fish house, which in fact, it is, serving family-style platters of Greek food. House bread arrives piping hot, addictive with olive oil or one of their house dips, like yogurt-garlic-cucumber ($5.50). Peasant salad ($7.50 small; $10.95 large) is plenty large, even as a small. Plump, red tomatoes, heaping amounts of onions and olives, and a big slab of  fresh feta cheese… a beautiful salad. Mythos beer washed down grilled sardines ($14.95) and lemon potatoes, tasting vividly lemony but with an almost unnatural yellow hue. Filet of sole stuffed with crab meat (19.75) was the one ok dish: old school, not the freshest crab, reminding me of the 1950’s style of seafood entrees you find at SF’s Tadich Grill. The piece de resistance is grilled octopus ($11.95), a succulent spread of plump invertebrates, envigorated by a squeeze of lemon. Opa!

CHEAP, AUTHENTIC LOBSTER ROLLS
Luke’s Lobster Shack – In the heart of the East Village you’ll find Luke’s Lobster Shack, a humble hole-in-the-wall with a couple stools, take-out Maine seafood and a second location on the Upper East Side. Operating on principles of sustainability and New England authenticity, the prices are “cheap” for NY and for lobster rolls: get a whole Lobster Roll for $14 or an ideal “snack size” for $8. Loaded with buttery lobster from Maine and a light coating of mayo, it may not be my beloved (and the ultimate seafood stop) Pearl’s in the Village, but it’s a tasty steal. For an extra $2, get the roll with Maine Root Soda, Miss Vickie’s chips and a pickle.

SCANDINAVIAN FEAST
Aquavit Bistro – Aquavit, the restaurant through which chef Marcus Samuelsson left a mark on modern Scandinavian cooking, has become one of the great Scandinavian restaurants, a cuisine not easy to find in the US. I adore the region’s focus on fresh fish, salmon, caviar, herring and, of course, the namesake spirit, aquavit. Looking for deals, I dined in the spare, upscale IKEA bistro, versus the more stuffy, pricey dining room. Quality does not suffer in the bistro, while service is gracious and well-orchestrated. I ordered a $17 flight of three (or $7 each) of the house-infused aquavits, though narrowing down flavors was problematic, as all three were all lovely, from a crisp cucumber, hot mango-lime-chili, to my favorite: horseradish. Each dish delights and portions are generous. Gravlax is heaping slices of bright, cured salmon in hovmastar (a mustard/white vinegar based sauce) with dill and lemon. I equally fell for matjes herring: thin slices of herring with finely diced yellow beets, red onions and sour cream. Swedish meatballs were the best I’ve ever had, redolent with cinnamon and gentle spicing in the meat, piled next to whipped potato puree, pickled cucumbers, sweet lingonberries, and addictive cream sauce. This is a New York favorite and I’m more than a little sad not to have a place like it here in SF.

Anticuchos and picarones spice up Festival de Comida Peruana

Anywhere you go in the world, people like to eat. This weekend there were a lot of people in the Civic Center doing just that, but they were all eating Peruvian food.

There were abuelitas slurping down huge bowls of steaming soup, and kids chowing down on anticuchos (grilled meat on a stick) and piping hot picarones (Peruvian doughnuts made with pumpkin and sweet potatoes). Beyond the large amounts of food and huge lines, there was also live entertainment to enjoy, including salsa music and traditional Peruvian dancing. Being the first annual Festival de Comida Peruana, it was impressive to see such a large and enthusiastic turn out. It seemed like everyone had a great time, and no one, I suspect, left with an empty stomach. Buen provecho!

MCing – The Freeze

The Freeze is a stage show like no other.  Six performers will take the crowd on a non-stop, hip-hop improv ride, spinning cues from the audience into instantaneous lyrics and fully realized musical numbers. An MC, a vocalist, and a live band make for an evening of live, kick-ass theater.  Founded by Freestyle Love Supreme’s Anthony Veneziale and the talents of Daveed Diggs (The Getback), Andrew Bancroft (aka Jelly Donut of Killing My Lobster), and Olive Mitra on bass, Mike “Agent” Smith on guitar, and Brian Rodvien on drums.  In simple terms, it’s the Wu Tang Clan meets Who’s Line is it Anyway in a live improvised rap concert.

Alas, we have no year-round Big Gay Ice Cream Truck like they do in the Big Apple. But, as SFist alerted us today (via Haighteration), our own beloved zany-zygote Three Twins Creamery has gone all light in its scoopers for Pride weekend, Fri-Sun offering such lavender lickers as “Rainbow/Gay Sherbet, Pink Triangle (‘a fruity chocolate base with pink chocolate triangles’), Pride Vanilla, Hot Cookie (‘with cookies from the Castro’s favorite cookie shop’), Don’t Ask Don’t Tell (‘vanilla ice cream with blueberry dessert from military rations mixed in’), Rice Milk Harvey Milk and Cookies, and Salted Nuts.” Plus, well, lavender.

Feliz cumple, Tamale lady!

Jack Daniels and I were hanging out late last week at the 500 Club when in she came. No one was particularly hungry, but when the Tamale Lady’s there, the Tamale Lady’s there, so we ate. And along with my cheese and rajas ‘male, she passed me a flier. “Virginia, it’s your birthday next week?” It was, and to celebrate, her traditional fiesta/documentary is going down at Zeitgeist Mon/21.

Writing about the Tamale Lady is frustrating, because what angle, exactly, are you going to take? She makes delicious tamales? Well obviously. She is nice to punks, and hooligans? Anyone who has ever taken a bench at Zeitgeist can tell you that. I went ahead and enlisted her documentarian, Cecil B. Feeder, to help make this blog post interesting.

“I love her tamales, I always have.” Great, thanks Cecil. Actually, he did have a theory as to her continued late night allure. “I think she’s human enough to know that it doesn’t matter what people think of you – it’s what you think of yourself.” And if what you think of yourself is drunk and hungry, well than you’ve found your savior in Virginia “Tamale Lady” Ramos.

Feeder will be screening his 2004 film on Virginia’s life, “Our Lady of Tamale,” on the patio wall of the Zeit at Monday festivities – the same place he debuted the movie six years ago, on the night that big wooden “Tamale Lady” plaque was first erected near the front door inside the Zeitgeist bar. Where’d that thing come from, anyway?

According to Ramos, the plaque was made for a SOMarts benefit for a man with cancer many years ago that she catered. After the party, she took it home, but when she showed up for her film debut/birthday party, she found the sign hanging near Zietgeist’s formidable selection of draft beers and famously surly bartenders. “I said ‘who brought my board in here!’ ” Ramos told me. Turns out, her kids had put it up there to honor her. “I’m telling you, I don’t know why they bring it out here!”

She kind of wanted it back. But to be honest, it looked nice up there, and Ramos concluded that the man for whom the original benefit had been thrown (who has since passed away), had engineered its placement in spirit. “I realized he wants to keep it over there, because he wants people to know my name,” she says. A tamale lady’s work, she realized, is never done.

A word about Mr. Feeder’s involvement – after seeing his flick Meter Maid Me Massacre (introduced on his Youtube as “ “The Gone with the Wind” of kung fu zombie movies”), Ramos approached him about making a documentary of her life. What exactly drew Ramos to Feeder’s vision of parking ticket revenge? Has Ramos had issues of her own from past times improperly parking her tamale wagon?

Well, we’re not really sure. “I always thought she was ambitious, you know?” Feeder told me over the phone. “At the time, I had just started making films. I thought about it and I said, ‘you know what Virginia, I don’t think we can make a straight documentary – but we can make a rockumentary!’ ”


And a rockumentary was made.

Our Lady of Tamale is comprised of scenes from the life of Virginia, backed by over 50 songs composed by local musicians especially for the occasion. They debuted it at the Zeit in honor of her 50th birthday party – a tradition that continues on Monday, with another screening of the film, some additional Feeder shorts, and a performance by his band.

Oh, and there will be free booze, according to Feeder. “Speakeasy and Zeitgeist are donating beer, four kegs flowing until they’re gone!” Some of the proceeds from the night (should those kegs be tapped), will go to Feeder’s plane ticket to Bolivia, where he’s in the midst of filming a documentary about an Engineers Without Borders project in progress.

PIZZA THAT FEELS LIKE HOME Roberta’s, in the Bushwick area, has the spirit of both Brooklyn and classic Neopolitan-style pizza, the likes of which we see almost to the point of overkill here in SF. At Roberta’s, every aspect of the place dares you not to be crazy about it: a sketchy, off-the-beaten path location in Brooklyn reveals a warm dining room with wood-fired pizza oven and rustic, eclectic decor. Eat at picnic tables indoors or head out back to the tiki bar (alas, no cocktails, but wine and quality beers on draft, like NY’s Ommegang), where there are more picnic tables, thatched roofs, smoking area off to one side, expansive garden and nursery growing herbs you’ll find in your meal. The menu offers charcuterie, cheeses, sweetbreads, cuttle fish, tripe and killer, blistered pizzas, like Millennium Falco, with tomato, Parmigiano, pork sausage, garlic, onions, bread crumbs and basil. You’ll feel like you never left SF.

OLD SCHOOL NY BAGEL EXPERIENCE Russ & Daughters, a fourth generation, family-owned, Lower East Side deli has been around for over a century… and is quintessential New York. With amicably crusty staff, this pristine shop is efficiently doles out Bagel & Lox, the salmon cut fresh before you. Put it on an “everything” bagel with horseradish cream cheese and you have perfection. There’s a wide array of joys here, such as pickled herring, caviar, and a lovely whitefish salad.

CHEAP, DELICIOUS AREPAS Caracas Arepa Bar is a cheap, utterly satisfying NY meal: Venezuelan homemade arepas stuffed with all kinds of goodness. The tiny, charming East Village spot became so popular, there’s a to-go side and now a Brooklyn location. Everything is under $7.50 and waits are long unless you arrive early, but you can order Camburada (banana cinnamon milkshake) and Guasacaca & Chips (Venezuelan-style guacamole with plaintain and sweet potato chips) while you wait outside. I love the La de Pernil Arepa stuffed with tender pork shoulder, tomato and spicy mango sauce.

BURRITT ROOM If I could imagine a dream “speakeasy,” it would be one tucked away from the masses (maybe in the second floor of a hotel), rich with atmosphere (brick walls, chandeliers, a piano, black and red accents on velvet stools, couches, pillows), a reasonably-sized menu (say, 18 rotating cocktails?) of classics and inventive new drinks, classic jazz floating softly from the speakers, and a complete lack of pretension or “sceney” obnoxiousness. Enter Burritt Room, which quietly opened upstairs in the Crescent Hotel in the shadow of the Stockton Tunnel.

The master bartender behind Burritt is Kevin Diedrich, whose experience ranges from East (PDT and Clover Club) to West (Clock Bar and Bourbon & Branch). He sets the welcoming tone, devoid of snobbery, appealing to cocktail aficionados and those who want a classy, mellow place to sip a beer alike. There’s other fine bartenders on board here, like Kelli Bratvold (Bourbon & Branch, Rickhouse). You might want to ask for Bratvold and Diedrich’s off-menu creation, Black Rose, an unusual mix of Bols Genever and Junipero Gin with Creme de Yvette, rose water, blackberry simple syrup, splash of Maraschino liqueur and a rose/pepper tincture.

Pull up to the bar or get cozy on a red couch with a layered Evening Shade: cognac, Grand Marnier, lemon, orgeat, peach bitters. I’m impressed with the seemingly light (but it sneaks up on you), refreshing Hitachino Sour: bourbon, orange marmalade, lemon, sugar, orange bitters, topped with Hitachino White beer. A Champagne Julep comes beautifully frosty in a proper julep cup, bourbon intriguingly switched out for sparkling wine and cognac. I will always prefer a traditional julep, but this is a pleasing change of pace.

A spirituous, boozy Kentucky Stinger has a hefty hunk of Kold Draft ice allowing the punch of rye and cognac to stay strong, the drink accented with Amaro, dashes of Angostura and chocolate bitters, and a creme de menthe rinse apparent on the minty finish. End an evening here with the awesome Smoked Peach (scotch, sherry, lemon, muddled peaches) and just try not to fall in love with this place.

COMSTOCK SALOON Comstock Saloon is truly a beautiful space in a 1907 building on the Barbary Coast trail restored to the glories of its past with antique mahogany bar, Victorian furniture, wood-burning stove (faux, though it may be), upright piano and the bar’s original spittoon. Jeff Hollinger (author of The Art of the Bar) and Jonny Raglin both came from Absinthe, bringing a mastery of cocktail classics to their own bar. Here you’ll find straight-up classics, the kind found in pages of The Savoy Cocktail Book or Charles H. Baker’s Gentleman’s Companion, the latter displayed (first edition) in glassed-in shelves lining the wall, along with other historical cocktail memorabilia… a mini-Museum of the American Cocktail, if you will.

Beside making perfected Sazeracs and South Side cocktails, they’ve honed other lesser-known classics, like a Hop Toad, with Jamaican rum, apricot brandy, lime and bitters. Though Comstock, like Burritt, is an ideal place for lingering on plush Victorian couches, or in wood booths, it is also much more than bar. It’s a restaurant with full menu, offering lunch and dinner, from Chef Carlo Espinas, formerly of Piccino Cafe. At first glance, a Beef Shank with Bone Marrow Pot Pie may look like a store-bought pot pie, but just sink your fork into flaky crust with a meaty, heartwarming interior and you’ll taste the love. I also adore tender Potted Pork with a side of country ham, mustard, veggies and warm bread to spread it on.

No Filipino pastry craving is bigger than Bread Basket

Should you be struck with a sharp desire for refined carbohydrates in a culturally authentic form while you whip down the Mission Street hill to Daly City, slow down, park that gas guzzling machine, and curb your wheels. You’re going to Bread Basket.

But not to linger. No, BB’s linoleum-glass-metal décor does not inspire a loitering perusal of their traditional Filipino bake stuffs. Though the woman behind the counter is a benevolent deity, generous and tolerant of your gringo tendency to stare gape mouthed at her wares, repeating the treats’ names softly. “Bakery” here does not signify Wi-fi. Or, for that matter, chairs.

It signifies baking, which they do quite a lot of here. Bread Basket has two other store, one in San Diego and another in SoCal, (all places with some of the largest Filipino communities in our fair land — Daly City alone is home to 32,000) and at all of them, the pandesal is the hype item. For those of us with little Filipino and/or Spanish linguistic wisdom, pandesal are the Filipino rolls that go well made into a sandwich, as a accompaniment to your caffiene, or perhaps stuffed into your mouth from their condensated bag on your way back to your (wheels curbed!) car. As with most bakeries, an early morning trip will serve you well in your quest for fresh specimens.

Sweet tooths will find sliced apple, blueberry, chocolate and banana breads, cupcakes, flan, and custard tarts, as well as the more traditionally Filipino offerings of buko pies (buko being Tagalog for “young coconut”), hopia (chewy biscuits filled with mung bean paste or pork), and bibingka (a dense cake made of rice flour).

And of course, the ube treats. Ube is a purple yam that imparts a color rarely seen outside of breakfast cereals to whatsover foodstuff you fancy. At Bread Basket, you can buy ube twist pastries, or if you really have had it up to here with that nutritional value thing, head straight for the pastillas de ube. The pastillas de ube are fantastically violet, sugar sprinkled pillows that taste like nothing more distinctive than a delicious tube of frosting. Made by the lovely woman who just handed you a plastic box-tray of them for $2.30. Just wonderful.

But that larger question, I think, remains. Why, when faced with a bakery full of freshly baked breads, does one immediately gravitate towards the bright purple nuggets? Can we attribute it to Sunday morning cartoons, or is a subconscious yen to challenge our dietary tracts?

Appetite: Persian Pub Grub paired beer and wine with Iranian bar food

It’s joy when our city’s food and drink greats team up to form something unique. Such was Zaré at Flytrap‘s three nights of Persian Pub Grub, as envisioned by Zare’s chef/owner, Hoss Zaré, and Monk’s Kettle‘s Sayre Piotrkowski and Ryan Corbett.

The exuberant, hospitable Hoss created a menu lovingly melding traditional elements of his home country of Iran with creative expressions. Though Hoss admits that “Pub Grub doesn’t really exist in Iran” (nor would the alcohol pairings), he dreams up a Persian dinner as it might look in a modern, hypothetical Iranian Gastropub. Each course was happily far from typical, and most were downright heartwarming. My two favorites ended up being Caspian Seafood Stew, a smoky, saffron-heavy broth (enhanced by black garlic aioli and sour, pickled grapes) loaded with plump calamari, octopus, mussels and smoked sturgeon with a dollop of caviar. The other? A brilliant take on traditional Ghormeh Sabzi, an Iranian herb stew and national dish, one Hoss says would win your sweetheart’s affection if you perfect in Iran. This Persian Chili was redolent of herbs, paprika, harissa, and a spicy, crumbled lamb sausage mixed with organic kidney beans. I could not get enough.

Certified Cicerone, Piotrkowski, and his equally passionate-about-beer co-worker, Corbett, paired a stellar list of beers with Hoss’ food, facing off directly with wine pairings from Zare’s Wine Director, Mario Nocifera. At two convivial communal tables, we debated which paired best with any given course. I can honestly say there were no afterthoughts on either side. The final score? In my book, it’s two for two.

My two favorite wines were the impressively elegant, layered acidity of Niepoort Codega‘s 2006 “Tiara” white from Branco, Portugal, and an earthy, dark berry/pepper, mineral, but balanced, 2008 Borsao Garnacha, “Tres Picos”, from Campo de Borja, Spain (quite a value at $14.99 a bottle at K&L).

On the beer front, though I was delighted to see Hitachino’s “XH” and Midas Touch for dessert, I was blown away by grapefruit brightness in Stone Brewing Co.’s dark, bitter Sublimely Self-Righteous, and the Belgian-style, caramel-y but bone dry Goose Island “Pere Jacques.”

Hoss has hosted other special Persian dinners and I hope will throw plenty more. Check their website’s event page for future dinners. Or go for dinner or lunch to sample Hoss’ heartwarming cooking paired with Reza Esmali‘s Middle Eastern-influenced cocktail menu (there’s a classic cocktail list, too) or Nocifera’s wine list. Monk’s Kettle is thankfully always ready to pour one of these fine or other equally exciting, and often, rare, beers.

Tasty bytes at the Guerilla Dining Collective

“You’re experiencing a dish crawl in a single room,” chirped the beguiling CEO of Battledish, Tracy Lee. Lee’s Interweb gig entails cataloguing SF dish-by-dish for the pleasure of adventurous food obsessed individuals, a Sisyphean task she says has her organizing the city’s restaurants’ specialties down to taste. To highlight this spirit of culinary safari, Battledish was taking part in and helping to organizing a dinner assembled by graffEats of some of the finest underground food purveyors in the Bay last night to create eight courses of delicately prepared plates, each paired with glasses of Phelps Creek, Oregon wines hitherto unreleased on the Californian market.

In attendance was Canvas Underground, Radio Africa Kitchen, guys and gals into the “anti-restaurant,” community noshes with friends you never met yet. Most of the chefs are used to preparing meals for 25 meant to be consumed sitting on the ground of a stranger’s living room. But tonight the whole, safari embarking lot of us are sitting at three long tables in the middle of a drafty Dogpatch warehouse.

A kitchen space smaller than what I have in my apartment (that’s small!) somehow accommodates the marinating and tossing of the three culinary enterprises, who are pumping out more food than you woulda thunk possible, really. I guess they’re used to less than ideal cooking facilities; Canvas Underground has even been known to whip up spreads for their doting fans in a grassy field.

Lee addresses what is clearly a source of consternation in her office. “You know, salty, sweet, crunchy, bitter. There’s really not that many bitter dishes out there.” I am not surprised by this. I nod energetically to keep her talking through her vast knowledge of restaurants, both known and new. Besides her sits a smart phone, an equally intelligent looking video camera, and an SLR, which she rotates through in a steady bid to capture the moment for tomorrow’s web surfers.

Flips are brandished right and left to catch the crowd’s reaction to the lavender cumin roasted duck, and Tracy’s occasional flash bulb generates a gentle frisson of technology that belies the gluttony we are gracefully acquiesing to.

Ever since Paper magazine came out with its social networking issue, I’ve been feeling vastly, isolatingly, computer illiterate. (And don’t trip, I realize the irony of writing this on the blog I regularly contribute to.) But really, last night amidst the foodies, techies, and foodie-techies, I needed the reassurance that at the advanced age of 25 I could still be integrated into this brave new world of point-click, point-click, eat.

Should I be tweeting this? What taste category does the green melon gazpacho poured over ceviche of prawn, fennel, and vanilla fall into? Can I perhaps slip mention of the saffron almond cake with the roasted loquat and cinnamon crème fraiche into a html coded round up of the city’s best pop-up pastries?

There’s also a resplendent honey and cheese plate, and an Alaskan halibut kitfo – a word they must have used on the menu because it is more elegant than the one I’d have opted for; halibut poke loaf. We need more loafs these days.

But as the folksy tunes of The Shants swept through the high celinged warehouse-cum-drunk tank (four glasses of good wine go far, even when you’re eating your wieght to accompany it), I relaxed and let go of my Luddite, anti-tech mental ramblings. Sites like Battledish are just making more ways to connect for people that want it like that.

Amiably gripping their wine glasses in the pleasant fog between dessert courses, Tracy and my free spirited dinner companion debate the merits of Internet dating versus leaving love to that ever elusive “fate” thing. “It’s all about maximizing serendipity,” Tracy sagely intones before once again she is gone in a whirl of gastronomic experimentation. A fine philosophy for the information age, indeed.

 

The coffee shop-dollar store king of Divco

One questions the need for another coffeehouse on Divisadero – seems like every time I turn around there’s another corner store churning out lattes and biscotti. But clearly I lack the vision of Haile Taddesse, owner of the 99¢ Divis Variety Discount at Divisadero and McAllister. “I am a coffee addicted person,” the Eritrean business owner tells me. “I grew up in a coffee country.” And no offense to the other establishments on his street, but he thought their coffee was mediocre. So, sick of trekking “ten blocks, or a mile even,” to find Philz or Blue Bottle, he decided to expand his business empire with a cafe next door to his dollar store.

Which makes for an interesting blend of customers. The DivCo (Division Corridor) neighborhood demographics are changing rapidly these days. Older restaurants and barbershops are ceding their storefronts to trendy new restaurants and coffee shops. Hell, some people (we won’t go into who those people are, we don’t particularly jibe with them) have even made up a name, NoPa, for the stretch, eschewing the working class implications of Western Addition.

So it’s nice to see a long time business owner successfully adapting to the winds of change. This morning when I visited, business was rolling at the five year old 99¢ Divis. A group of immigrant men chatted with Taddesse about politics (“I like Reagan and Clinton. Reagan was respected abroad. Americans, they don’t care about that.”). On the other side of the door that leads to Oasis Cafe, a cheerful barista made sandwiches and coffee for young people, and a few individuals working on their laptops.

And true to his word, Tadesse’s got some damn good coffee. Ten different kinds of beans sit behind the counter, and drinks are made on a cup by cup basis. “Most coffees around here are deceptive,” he told me. “You don’t see them make it. I am trying to make everything fresh for the neighborhood.” I tried the Divisadero blend, which I was told was the darkest of the blends that day. It gave me a rich jolt that I must admit is hard to come by at other spots down DivCo.

Seating is ample and comfortable; banquettes and deep, overstuffed leather armchairs. There’s a large mural of an oasis on the back wall, painted free of charge by a fellow cafe owner who just wanted to contribute something to Tadesse, who turns in 16 plus hours a day at his mini commercial empire. Already, an extensive menu of milkshakes, fresh juices, omelettes, and sandwiches are available — but the owner sees all this as merely the beginning for the cafe. He has plans for an Ethiopian food menu, soups, outside seating for his customers.

Business at the cafe, located on less frequented stretch of Divisadero blocks from both the Mt. Zion Hospital lunch crowds and the hot Lower Haight blocks, has already exceeded Tadesse’s expectations. Which flies in the face of the advice from the friends who wieghed in when he first concieved of Oasis.

“They said not to waste my money, that it was a bad location,” he tells me as another customer unloads an armful of cheap toiletries at the dollar store counter. “But it’s not up to the competition. It’s up to you, and your product. I said ‘don’t worry, I’ll show you.’ ”

Appetite: Sneak peak at Comstock Saloon

Bartenders extraordinaire, Jeff Hollinger (also author of The Art of the Bar) and Jonny Raglin of Absinthe, debut Comstock Saloon, scheduled for a May 20 opening date.

This long-anticipated bar is in the former SF Brewing Company on Columbus, a 1907 building on the Barbary Coast trail with a Barbary Coast past honored in the restoration of mahogany bar, Victorian furniture, turn-of-the-century saloon look and menu (Beef Shank with Bone Marrow Pot Pie, anyone?) from Chef Carlo Espinas, formerly of Piccino Cafe. Cocktails ($8-12) are the classics, the kind found in pages of The Savoy Cocktail Book or Charles H. Baker’s Gentleman’s Companion, and all-time greats like a Negroni or Sazerac (two of my favorites).
