GOLDEN CLIPPERS "I’m all about spreading my message," local mane maestro Joe Hamer gushes breathlessly over the phone from his car en route to his Petaluma flagship salon. "And my message is beautiful, shiny, healthy hair."

Hamer’s just flown in from teasing celebs’ tresses at the Golden Globe Awards, as part of the beauty team in Showtime’s red carpet perk-up pit stop for volume-compromised VIPs — a freebie fluff tent for the rapidly flattening fab. "I know you want those names," he intones tantalizingly. (Teased: Lance Bass, Mimi Rogers, CSI ‘s Eva la Rue, Masi Oka from Heroes, Ugly Betty ‘s Ana Ortiz, Justine Bateman, Sunny Mabrey, many from Weeds).

Hamer and his crew had been specifically flown down to primp Globes dos after dazzling ’em with scissor wizardry at the 2006 Emmys. (Dazzled: Eva Longoria, Marcia Cross, Blythe Danner, Lisa Edelstein from House, various American Idol finalists). "Showtime and everyone loved my work and wanted me back," the Bay-born chop chief effuses. "That affirmation was so wonderful — I was thrilled. It’s been a whirlwind!"

We here at the Guardian aren’t exactly starfuckers. (Well, no more than maybe 10 minutes a day — hello, Britney’s latest ex! Mrrow!) And from a progressive standpoint, the Globes aren’t really our bag — the only "surge" likely to be protested there would be the one bursting forth from Beyoncé Knowles’s neckline. But when we heard about Hamer’s slingshot to the tonsorial top — watch your ponytail, José Eber — we simply had to know more. It’s the kind of "local locksmith picks through LA poufs" scoop that allows our queeniest staff writer an ample go at tabloid torch-singing.

After 26 years of weaving and bobbing to the bangs of the Bay bristle biz, Hamer’s having his day on the dilettante dais, but he’s been at the forefront of the frizz fight for a while. Besides his successful Joe Hamer Salon in Petaluma, he’s established the Joe Hamer Academy at San Francisco’s Hairplay salon, which spreads his shiny, healthy message to rookie coiffeurs. ("My goal is to help as many hairdressers as possible," says the evan-gel-ical Hamer.) The look he currently favors? It’s " ’80s but natural; romantic yet lazy. Half-layered looks with a little drop-down."

Hamer’s also traveled the world spreading the gospel of Greyl — Leonor Greyl, that is, the hair care product company he represents as global artistic director. "I’ve traveled everywhere — Asia, Europe, Australia — bringing style advice and stunning beauty with me."

From global to Globesit’s quite a trajectory. But Hamer — a "weekend cowboy" who resides with a gaggle of goats, hens, and horses on his family’s 300-acre Petaluma ranch — also tears up about little things that make a big difference. "The celebrities were so warm and friendly … but the real joy was working on Holly McBlair from the Make a Wish Foundation, whose wish was to get the whole Golden Globes red carpet treatment. Taking a child like that in my hands and transforming her was something that means so much to me. She looked fabulous, and the stars treated her like royalty."

About those stars … was there any whiff of backstage Globes scandal? Did, say, Lance Bass bend over to fix his loafers, causing the crowd to gasp, "Oh, that’s what the fuss is all about"? Did anything happen?

Ever the professional, Hamer sighs and replies, "Of course! Beautiful hair happened." (Marke B.)

Follow that bird

With so many duos still adhering to the muddied-guitar-and-drums style years after the White Stripes broke, it’s refreshing to see local twosome the Finches reaching back to an earlier, folksier model wherein melody and songwriting win out over bombast and swagger.

"We actually tried to have our friend Justin play drums at the practice space with us once, and none of us really knew what we wanted at that point," guitarist-vocalist Aaron Morgan muses over tea at a noisy café a few blocks west of the UC Berkeley campus. "And it was Justin himself who told us, ‘You know, you guys don’t really need a drummer.’ "

When the boy-girl duo of Morgan and vocalist-guitarist Carolyn Pennypacker Riggs perform, their plain-harmony vocals and soft-spoken stage patter make it a little difficult not to think of A Mighty Wind, but the earnestness is clearly paying off. I’ve seen the group play several times over the last year, and it’s hard to miss all the kids drifting by the merch table to pick up the group’s self-released EP, Six Songs, an endearing batch of tunes topped with a tender Pennypacker Riggs print showing a girl with a finch, riding off into a dreamscape of mountains and night.

That merch table will be a little busier soon with the release of the Finches’ debut, Human Like a House. The full-length feels very much like a natural growth from Six Songs, and while fans will certainly be pleased to hear more of a good thing, there are subtle surprises here too. For starters, the Pennypacker Riggs album art that so catches the eye has expanded to an accompanying book, How I Was Carried Away.

"I like to conflate the visual and the aural," she explains. "They’re kind of the same stories."

For now the duo seem grateful for the support they’ve received on their own merits and are thrilled that they’ve been added to the Revolver Distribution and the Dulc-I-Tone label rosters. "I think the word will spread about them to people who really get it," Matt Lammikins at Revolver says, "and that’s how they have gotten a weird following all over the country [the world, really] that has no rhyme or reason, and my friends still don’t know who they are…. It’s just good honest songwriting." The confidence all this has inspired shows on Human Like a House, especially in Pennypacker Riggs’s increasingly varied singing range. There are several songs here — "Last Favor" and the title track — that elaborate on the Six Songs formula: song-pirouettes in which melodies circle one another, matching up with Pennypacker Riggs’s forlorn lyrics. This balancing tends to work best when the tunes are kept short. In "June Carter Cash," for example, we get a clear-eyed snapshot of love and loss in a few rounds of the stately chord progression. The song is about the way we express our own feelings and experiences in other people’s voices and music. Hence the heartbreaking lyric "June Carter and John have flown / Now I’m ready to let you let me go."

"My favorite songs were the last we wrote," Pennypacker Riggs confesses. It shows: "Step Outside" is ebullient, the sound of the Finches falling in love, singing, "When we stop / It feels as though / We’re rolling backwards" over descending chords. Elsewhere the band leavens its duets with drums, pedal steel, and cello. The last is provided by Vetiver’s Alissa Anderson on the shimmering "Two Ghosts," a song in which Anderson’s drones seem to reel in Pennypacker Riggs’s and Morgan’s conversing guitar lines like something caught at sea.

Guest shots aside, Human Like a House is a homespun affair. The pedal steel is provided by Morgan’s father, David, who also engineered much of the recording in the family’s San Diego garage. "My dad’s just beginning to learn how to engineer recordings," Morgan explains. "This was his learning experience, which, I have to say, I think he did a nice job on." Indeed, the guitars sound a little brighter than on Six Songs, the harmonies delivered with a newfound warmth and clarity. Finishing touches were added in Pennypacker Riggs’s family garage in El Cerrito, with the vocalist’s mother contributing a recorder overdub before the duo closed the book on Human Like a House.

These production choices seem appropriate given the ground the duo treads on this album. "Owning a home [in the Bay Area] is pretty much a fantasy, a domestic fantasy," Pennypacker Riggs says when I ask her about recurrent images of homemaking. "I love this area, but I won’t be able to afford to stay here forever, which bums me out."

It’s a rootlessness all too familiar to many of us and one that Pennypacker Riggs rubs up against on Human Like a House. The album’s centerpiece, "The House under the Hill," crescendos with a chorus fleshed out with vocals by Morgan’s parents in a swelling show of support. But then, moments later, it’s just the guitars and Pennypacker Riggs’s voice again: "Alone I am nameless / And fearless and faceless." Bob Dylan might ask her, "How does it feel?" but by the end of Human Like a House, we have a pretty good idea. *

One doesn’t feel far from the dark, stylized universe of classic film noir in Tosca, a long, obliquely angled bar in North Beach. It is where I am to meet Eddie Muller, the man behind San Francisco’s Noir City festival and corresponding Film Noir Foundation, a self-described "writer and cultural archaeologist" with several spry volumes of film history to his credit — alluring, fanatic titles such as Dark City: The Lost World of Film Noir, Dark City Dames, and Grindhouse: The Forbidden World of "Adults Only" Cinema.

"There seems to be an almost Freudian attachment to water. The empty noir streets are almost always glistening with fresh evening rain … even in Los Angeles," writer-director Paul Schrader writes in his seminal essay "Notes on Film Noir." Now, as the afternoon darkens, the Columbus Avenue strip is dry, but the Lusty Lady’s neon glows while I wait for the bar to open. Noir’s trademark deep focus would lend itself well to the space inside, filled with the stale smoke of yesterday’s cigarettes and deep red and mahogany: it’s a romantic kind of place, a remembrance of things past. One of the many dizzying plot twists in Jacques Tourneur’s 1947 Out of the Past — perhaps the most knotty and melancholy of the noirs, a preeminent example of the genus — has Robert Mitchum’s heavy chasing after a double-cross in a North Beach bar. I think about this as Muller strides in with an easy gait. We settle in to talk, and the jukebox turns to smoky jazz: "Mood music," he says and then laughs.

Setting the mood is something Muller is exceedingly good at. The first time I met him was at the press conference for last year’s Noir City, staged at the York Hotel’s appropriately named Empire Plush Room — deep red, again, with little flutes of champagne. The nightclub decor of last year’s festival may have been sucked up by the cavernous dimensions of the Palace of Fine Arts, but the attempt to establish a kind of interstitial lobby space was a nice gesture, especially since these films are, if nothing else, about atmosphere.

After two years away, this coming installment of Noir City, the fifth, will be held at the Castro Theatre. Muller’s decision to return to the Castro — made difficult by the theater’s firing of programmer and chief Noir City collaborator Anita Monga — speaks to the emphasis he places on the moviegoing experience, as well as his deep respect for Bay Area audiences. "We struggle to get 200 people to the theater in LA," Muller muses before adding excitedly, "I mean, we get five times that many people out here. The studios can’t believe it…. I always have to be careful when I talk about the numbers." He laughs. "You want it to be great, but you don’t want it to be so great that they’re thinking, ‘Wait a second, why are we giving these guys a break on these old films?’ "

It’s no wonder that studios take note of Muller’s successes. Hollywood’s big players trot out old movies on DVD not so much from altruistic preservation impulses as from an urge to fatten the bottom line, the sense that there’s an extra buck to be made from some old holdings. The studios have a long history of neglecting their archives, but when hundreds of people come out and pay their money for Raw Deal (a tough little 1948 Anthony Mann picture opening this year’s festival), heads turn.

Muller is modest when discussing some of the DVD sets he has helped spark, but this propriety does nothing to disguise his missionary zeal. When he describes a preservation victory, such as an upcoming John Garfield DVD set, he beams. But as he mulls over decaying prints, his countenance turns worried. (Though gussied-up imprints like the Criterion Collection give the sense that the classics are safe, the films they release represent only a small fraction of what’s in the vaults.) Muller details his maneuverings for Joan Crawford films ("She is the force behind these films…. She is the auteur as much as John Waters is an auteur") and how he ended up trading 1952’s This Woman Is Dangerous for 1950’s The Damned Don’t Cry for this year’s fest. The urgency in his voice is from more than just trying to score an outrageous Crawford vehicle. "In these last five or six years," he says, "I’ve learned the possibility is very real that American culture can just decay and slip away."

Muller’s experience runs deep enough that it’s easy to forget Noir City is such a babe. A spree through three venues in five years (the festival has also run at the Balboa Theater) has a way of making a festival grow up fast, though the major renovation to Noir City has taken place behind the scenes. Formed in the autumn of 2005, the Film Noir Foundation was originally conceived of as a means to land the best available prints of rare films, something very much on Muller’s mind after his experience booking Edgar G. Ulmer’s gonzo 1945 B-movie Detour for the second Noir City.

"What I came to realize was that there are prints that are circuutf8g prints and there are prints that are archival prints," Muller says. "When we had [Detour ‘s] Ann Savage as a guest that second year, the only print in circulation of Detour was junk. I knew that the Cinémathèque Française had a print that was good, but they would never ship it to the Castro [a for-profit theater]. So that’s where the San Francisco Film Society stepped in, and they said they’d book it for us…. Altruism wasn’t my initial motivation for doing this. It was about getting the good prints."

In the time since, the Film Noir Foundation has blossomed into a vital preservation group. "It achieved a life of its own," Muller explains, "because it became a viable way to create an entity that presents a united front to the studios to show that there was a reason and a value in saving these films. In the case of The Window [a 1949 film that anticipates Hitchcock’s Rear Window] and Nobody Lives Forever [from 1946, a taut con man picture with a typically strong John Garfield performance], we’ve done the restoration and put them back in circulation, and they show at other festivals, and the film carries the Film Noir Foundation logo. It’s a way of saying [to the studios], ‘Look, if we do this, you’re going to get more bookings out of the film.’ We’re almost like a lobbying group for film noir."

For every victory like those films’ restoration — or, for that matter, bringing celebrity writers such as Denis Lehane and James Ellroy on to the foundation’s board — there are many grueling and perhaps futile battles. The foundation, for example, has located the elements and "contacted the people we need to contact," Muller says, to restore 1951’s The Prowler, an edgy feature about a sociopathic cop. The film might be a key noir, but the Film Noir Foundation hasn’t been able to fund the process (which Muller quotes at $40,000). The ultimate trick would be to get the studios to realize the potential and take on these costs themselves, and that is happening but not necessarily fast enough to keep many prints from disappearing. "Even films by major filmmakers," Muller adds. "There are Billy Wilder ones that are questionable…. [1942’s] The Major and the Minor — is anyone preserving that film?"

Muller relishes talking shop about forgotten films (this year 12 of 20 films in the Noir City program guide are marked, in red type, "RARITY!!! Never on VHS or DVD!" with one, 1949’s Abandoned, emphasized as being "RARE AS THEY COME!!!"). But it’s important to note that his programming is also deeply inclusive. Noir, like any singular, involved body of work, has its cult, but Muller’s aims are broad enough to keep the festival from feeling too much like a Trekkie convention. More important to him than his specific love of noir is his audience’s moviegoing experience.

"This is something that Anita really taught me," Muller explains. "When I was first programming, I’d try to load the program with all these rare, obscure things, and she said, ‘No, what you have to understand is that you appeal to people who get it, but they want to bring their friends and say, ‘You gotta see this! " He continues, "She was absolutely right. Show the traditional thing but book it with something obscure. Right out of the gate … [Noir City] showed The Lady from Shanghai with [the 1950 Ann Sheridan vehicle] Woman on the Run, and Woman on the Run was the rarest of the rare. No one had seen that. We filled the Castro that night, and people went nuts for that film, and that’s still the greatest moment we’ve had doing the festival."

Given Noir City’s emphasis on the big-screen experience, it might be surprising to learn that Muller himself first experienced many of the classic film noirs on late-night television. "I saw Detour for the first time at 3 a.m. on Movies ‘ Til Dawn," he reminisces. "You’re hallucinating these films. It’s great…. To have that be your first experience of Ann Savage: 3 a.m. when you’re 14 years old. You’re, like, ‘Who is this woman? ‘ "

It didn’t take long for Muller to graduate to the burgeoning rep scene in ’70s San Francisco, an era he reflects on in an aching piece ("Noir City, Our City") for Julie Lindow and R.A. McBride’s upcoming essay and photo collection about San Francisco’s dwindling movie theaters, Left in the Dark. "Theaters, as much as movies themselves, were landmarks of my early life," his contribution begins. "Films offered wishes and warnings about the life I could lead, the person I could be, but it was the movie houses that guided me through the streets and neighborhoods of San Francisco, introducing me to every nook and cranny of my 49-square-mile hometown."

It was noir that gave shape to Muller’s passion, and he’s hardly alone in this. I’ve often thought that the way the classic femme fatale seduces her doomed prey is the onscreen equivalent of the way films draw in — and obsess — their audiences. A great many movies are stylish and smart to the point of irresistibility; how many times has the promise of hard shadows and unrepentant fatalism at the theater won out over a sunny afternoon in the real world?

Famous for being vaguely defined as a species — as with folk music or modernism, there are common landmarks, but everyone seems to have their own criteria — the dark crime dramas of the ’40s were first christened film noir by French critics when the films flooded Paris en masse following the close of World War II. This was 1946 and, as it turns out, only the beginning. The grittiest, most whacked-out instances of noir, startling films such as D.O.A. and Gun Crazy (both released in 1950), Pickup on South Street (1953), and Kiss Me Deadly (1955), arrived as Americans wrestled postwar demons and Hollywood entered an identity crisis that hinged on both Communism and television.

Most experts close noir’s door at the end of the ’50s, classifying related films following 1958’s Touch of Evil as neonoir (e.g., Chinatown, Mullholland Drive). A college professor of mine considered noir less a genre than a virus: a stylish, fatalistic streak infecting normal melodramas, gangster pictures, and even westerns and comedies. This jibes with the different ways noir announces itself: sometimes in the overall tone of a film, other times in a single character or lighting setup. Definitions aside, one emergent truth is a high benchmark of quality for films under the rubric. This film species has survived the decades better than most, especially those born of Hollywood. Schrader put it this way: "Picked at random, a film noir is likely to be a better-made film than a randomly selected silent comedy, musical, western, and so on."

Schrader follows this with the observation that "film noir seemed to bring out the best in everyone: directors, cameramen, screenwriters, actors." In other words, film noirs are creditable examples of what the esteemed critic André Bazin referred to as the "genius of the system," that strange mix of artistry, economics, and streamlined collaboration that helped to define the studio era. It’s a point not lost on Muller. "There are business factors as well as artistic factors that are brought to bear," he says. "You can’t look at one without the other." During our conversation an implicit criticism of auteurism (the mode of movie critique that is interested in films in terms of their directors) begins to emerge.

Muller has his favorite directors, of course, but he’s more interested in untangling a film’s production history — the messy business of sorting out who did what — than in pontificating about why one director’s style is better than another’s. (Indeed, auteurist debates often have the quality of those childhood arguments over whether Superman would beat Batman in a fight.) There are, of course, those directors who really did shape their own work, exerting an unusual degree of control, but far more typical is someone like Robert Wise, a by-assignment director who turned in salty noirs such as 1947’s Born to Kill and 1949’s The Set-Up (a superior boxing picture that runs circles around Raging Bull ) in addition to better-known schlock like The Sound of Music.

Considering the fact that so many of noir’s characters are fallen (the forgotten man and the spurned woman), it seems all too appropriate that the achievements of many of the form’s major contributors remain unsung. To take a sterling example, cinematographer John Alton is as responsible for the noir look as any director, doing for the city landscape what John Ford did for the open West. "We always have a John Alton night [at Noir City]," Muller says. "The guy is the uncredited director of some of those pictures…. Every director’s best film is with John Alton." Accordingly, this year’s Noir City will double-feature a pair of Alton-shot films, Joseph Lewis’s top-notch late noir The Big Combo (1955) and a new 35mm print of The Spiritualist (1948).

With Noir City showing additional programs spotlighting other little-known noir luminaries such as screenwriter William Bowers (1951’s Cry Danger and 1949’s Abandoned ) and actor Charles McGraw (1949’s The Threat and 1951’s Roadblock), as well as beefcake-era Burt Lancaster (1948’s I Walk Alone and, from the same year and costarring Joan Fontaine, Kiss the Blood off My Hands), it’s clear that Muller’s emphasis on a broadened sense of film production isn’t an abstract philosophy. It’s about recognizing real people and contributions, something crystallized by the fest’s guest appearances. Actress Marsha Hunt (Raw Deal) and actor Richard Erdman (Cry Danger) will appear this year, and past festivals have featured actors Farley Granger, Sean Penn, Coleen Grey (Nightmare Alley), and, of course, Detour‘s amazing Savage.

"The greatest thing to me about having done these festivals with the original people is that it gives audiences a view of noir that is very blue-collar, on the ground," Muller muses. "They never attached the name ‘film noir’ to it, but [it’s important] to talk with the actresses and to hear firsthand what they thought they were doing, and to get the writers’ point of view, which was by and large more politicized … much more so than the directors or the producers, who are a riot because they always say, ‘We shot it that way because we didn’t have a cent.’ "

When I ask Muller how the old-school talent responds to all this attention decades after the fact, he says plainly, "I can tell you in Ann’s case, it was the greatest night of her life. I mean, she has not stopped talking about it since. In some cases, it’s almost overwhelming." Such events are increasingly a challenge to put together; 60 years outside noir’s prime, it’s not getting any easier to find the genre’s original contributors. Robert Altman, who directed one of the first key neonoirs (1976’s The Long Goodbye), died the day before my meeting with Muller. If he’s gone, one wonders, how many of the original lot can be left?

The talent, of course, isn’t the only thing disappearing. DVDs are a wonderful auxiliary format for digesting cinema, but in the case of studio films from the classical era, it seems silly to contend that something isn’t lost without the full theatrical experience. A couple of weeks ago I went to the Castro to see Casablanca, a classical classic, not an extraordinary one like, say, Citizen Kane. I’d seen the film several times but never on a screen like the Castro’s. The moments when I felt its size most acutely were the most intimate ones: those interminable close-ups on Ingrid Bergman that so revel in the star’s introspective glamour. One cannot really grasp what these close-ups were designed to do without experiencing them on this scale. Everything comes into sharper relief in the theater: the close-ups are more wrenching, the dialogue funnier, the fantasy more complete.

Toward the end of his "Noir City, Our City" essay, Muller reflects on programming Noir City: "We tried to connect the audience, in a sort of cinematic séance, with 1940s era filmmakers and filmgoers," he writes. "San Francisco theaters appropriate to such a concept comprised a short list: the Castro and Balboa were the only ones still standing with even a trace of the old-style panache that once was commonplace." According to Muller, we ought to count ourselves lucky for those two. "It doesn’t really happen anyplace else," he says, referring to the electricity of a capacity crowd at the Castro. "New York has nothing like this. The best they can do is the Film Forum…. The Film Forum fills a need, but New York does not have a venue like the Castro. It does not have audiences like this, honestly."

And so, in the end, it’s about sitting alone together in the dark. Noir films possess the dream logic and stylization that make the theater necessary and, as an added bonus, a cynical sting that disintegrates any of the sloppy moralism or cheesy gentility that might otherwise taint our experience of classical Hollywood cinema (Schrader again: they are "an uneasy, exhilarating combination of realism and expressionism"). The work Muller does with Noir City strives toward many ends, but its most important function is also its most basic — strange and seductive, the films of Noir City often remind us why we fell for the movies in the first place. *

A Tale of two malls

Whether euphemism is entirely a separate language or just a dialect, we need translational efforts to understand what is really being said in its slippery idiom. When foreign ministers tell the media they have enjoyed "frank and cordial discussions," we peek behind the fluttering veil of words to see that they bitterly argued and threatened each other. And when we read hosannas in the San Francisco Chronicle to the city’s burgeoning "service industry" — mentioned in that paper’s recent piece about our present and delightful "golden age" — we should understand that we are reading largely about the business of tourism. We might not yet be the Monaco of the Pacific Coast — a huge, gleaming apparatus whose principal function is to relieve visitors of their money; a bizarro ATM that sucks in cash rather than giving it out — but we are well on our way.

In this connection, we are blessed by the fact that tourists must eat and can be charged for the privilege. Restaurants are becoming our casinos. Not long ago, on a holiday weekend afternoon, I found myself swimming through seas of people in the basement of Westfield San Francisco Centre, the great new mall in the midst of the city. The basement is where many of the food establishments are, and I was en route to a rendezvous at the Out the Door, second offspring of the now world-famous Slanted Door. (The first OtD is in the Ferry Building, along with the mother ship.) If I had squinted slightly, I could easily have convinced myself that I was in the international terminal of some busy airport closed because of bad weather, leaving thousands of stranded travelers nothing better to do than shuffle through shops peddling chichi stuff and eat at fancified restaurants that seem more alike the more they struggle to seem different from one another. (Any casino in Las Vegas answers to this description, incidentally, and so do Honolulu’s Waikiki district and much of Palm Springs.)

As the name implies, Out the Door is set up to offer takeout, and the restaurant offers a small but appealing array of Southeast Asian grocery staples, such as cellophane packages of rice noodles and bottles of fish sauce, at reasonable prices. But there is also a huge dining room whose far wall — a checkerboard of flat glass rectangles in various shades of cream, beige, and brown — looks like a giant version of that sensor panel Mr. Spock was forever scanning on the old starship Enterprise. One difference: Spock’s panels blinked; Out the Door’s panels don’t. Maybe they will someday.

Befitting the restaurant’s pedigree, the food is prepared to a high standard, with immaculate ingredients, although the dishes themselves are modest in origin: a simple steamed bun ($3), say, the size of a baseball and stuffed with minced chicken, shiitake mushrooms, and surprisingly muted ginger. A bit more lively are the Vietnamese-style sandwiches on perfectly tender baguettes, among them a Saigon roast-pork number ($8) whose juicy, five spice–scented meat is enhanced with sprigs of cilantro, and a braised-meatball edition ($8), which includes coarse-ground pork of the sort you often see floating in bowls of pho.

Out the Door doesn’t call its beef noodle soup ($9.50) pho, incidentally, but that doesn’t dim its luster: it’s the one truly exceptional dish we came across, with a golden broth of almost espressolike density and smoothness. If, as a friend said, the measure of pho is the broth, then Out the Door’s pho measures up.

There are dressier, less street-carty choices available, among them grilled prawns over vermicelli ($10.50), elegant but a bit underpowered despite the strong presence of fresh mint, and barbecued pork spareribs ($10.50), beautifully tender under their honey-hoisin glaze. If these are higher-rent possibilities than sandwiches and steamed buns, they are nonetheless honest and sturdy. Still, the sense of being in ritz-land is pervasive. Bloomingdale’s bags everywhere. Diagnosis: affluenza.

Out the back door of Westfield and just a block or so along Mission Street is another mall, less heralded — the Mint Mall — and within its gritty confines a restaurant, New Filipinas, that is one of the very few Filipino restaurants in the city or indeed the metropolitan area. The setting has a run-down, 1970s look, poured concrete and ceramic tiles stained by time, and if you squint your eyes you might think you were at the foot of some faceless high-rise in Manila or Taipei. The restaurant itself is about as modest as it gets: a glass counter for ordering, a clutter of tables and chairs. The feeling is (as a mean birthday card once put it) "You’ve seen better days, but not many."

The food, prepared and served by chef-owner Tess Tuala-Diaz, has the unprepossessing look of an Army hash line: a steam-tray selection of chunked mystery meats stewing in various sauces of varying shades of brown. (A particularly chocolaty-looking tray held, we were told, pork in blood sauce.) There are adobos of pork and chicken, spare ribs, beef with broccoli, a beef and cabbage soup. For $4.90 you get your pick of one, plus a heap of white rice, while $6.50 buys you two picks, plus rice.

An advantage of bleak settings is that, if the food happens to be good, you will not be distracted from noticing it. And New Filipinas’ food is surprisingly good, its flavors deep and direct, its meats slow-cooked to a peak of moist tenderness. It is peasant food, adjusted to a greater fleshiness to reflect the biases and possibilities of this rich, flesh-addicted country. But vegetarians, I will speak frankly and cordially to you: Look elsewhere! Go east, to Westfield, even. *

Star style at Hollywood’s big awards ceremonies tends to swing between old-world Hollywood glam and finely tuned ‘au naturale’. At last year’s Golden Globes the look was fresh, lightly tousled locks complemented by barely-there makeup. Screen sirens, such as Charize Theron, as well as television stars like Felicity Huffman, sported loose and breezy curls. This year the pendulum didn’t quite come full swing back to glam’s sculpted tresses, however there was a definite departure from free-flowing curls.

Do you ever get the feeling you’ve been cheated? Not to misinterpret the question asked by a sneering Johnny Lydon of a San Francisco crowd as his band was self-destructing onstage at the now-defunct Winterland Ballroom almost 30 years ago, but seriously, folks, life seems unfair sometimes. In other words, here’s a sensible afterthought for your musical mind: there are simply too many damn bands at our fingertips, and sometimes we’re only lucky enough to encounter a handful of the really good ones. You might find yourself uttering regrets like "Fuck! I missed them play at that dingy hole-in-the-wall last year," and unfortunately you now have to settle for the mega-rock-star treatment as the same group works its charms on an enraptured crowd arena-style. So the story goes — rock ‘n’ roll can be a bitch.

The Curtains’ Chris Cohen is more optimistic, however.

"I try to let chance determine what I get to hear now because there’s so much music to choose from," the vocalist and guitarist of the Oakland trio confesses over coffee at Atlas Cafe in the Mission District. And though Cohen is reluctant to put his finger on any particular band that might get his musical juices pumping, he does divulge that most of the combos he encounters nowadays are his friends’ groups or supporting ensembles on tour.

"I really like when you don’t have any prior knowledge of the band, because then you can go at it with an open mind," he adds.

Such was my experience with Cohen’s project. My first exposure to the Curtains was on a chilly November night last year when I roamed over to Oakland to catch Mount Eerie’s performance at a packed 21 Grand. With no particular expectations, I leaned against a wall and watched the threesome set up their instruments. But as the band greeted the crowd with chiming keyboards and palm-muted guitar strums, my semi-inebriated attention was held and then kicked into deep interest.

Onstage, Cohen — along with guitarist-percussionist-vocalist Nedelle Torrisi and keyboardist-percussionist-vocalist Annie Lewandowski — exchanged smiles and jammed on quiet, twee pop–imbued ditties. The band’s lighthearted enthusiasm mirrored Beat Happening, while their cheerful harmonies and bubblegum-savvy melodies channeled the Softies and the Vaselines. The mood was buoyant and comfortable as the members sat in place and toyed with electric guitars, a single drum, and a wood block on one song after another.

CALAMITY TAMED


The aural beauty that floats from stereo speakers on the Curtains’ fourth album, Calamity (Asthmatic Kitty), tells a different story. Performed and recorded almost entirely by Cohen during December 2005, the album is drenched with sunny, ’60s-style psych pop and art rock experimentalism. Calamity at times evokes Smile-era Brian Wilson and early T. Rex with songs such as "Green Water" and "Invisible String," while treading into cozier-sounding territory on the opener, "Go Lucky." As intimate piano strides and acoustic guitar glide forth, Cohen’s Neil Young–ish chirp complements the melody: "Go, go, go you lucky one / You, you, you stop anywhere that someone sets you down / No, no, no spots anywhere / You, you, you will just spin me around."

But to Cohen, the Curtains aren’t trapped in a musical time warp. It’s all about what’s accessible to him at the moment.

"For that album I made a conscious decision to make something that wasn’t too fancy as far as the sound goes," he explains. "I wanted to use the sounds that were most easily available to me, which are guitar, bass, and my dad’s piano."

"I wanted it to sound very warm and personal," Cohen continues. "However, the sound of it wasn’t something so much that I had in mind but the effect that I wanted it to have on people, which was to be uplifting and make the listener feel happy. The music I value the most is the kind that takes me out of my life and makes me feel hopeful."

NEW STAGES


Since 2000, Cohen has had the Curtains in his crosshairs. Cofounded by Cohen and Trevor Shimizu, the group went through a couple of incarnations, occasionally including Andrew Maxwell, Satomi Matsuzaki, and Greg Saunier. After releasing three full-lengths, Cohen put the Curtains on hiatus in 2003 so he could join Matsuzaki and Saunier in Deerhoof. After several albums with that band, Cohen left last year to focus on his own projects.

"The Curtains before was something we would do in really brief spurts," Cohen says. "We would have a show, do a tour, and then rehearse for two weeks. I didn’t want to do it like that anymore. I wanted to make it a regular thing."

According to Deerhoof drummer and ex-Curtains member Saunier, Cohen had recorded 99 percent of Calamity before he revealed that he wanted to leave Deerhoof. "We listened to it in the car on tour, and I was stunned. It was like a garden of ideas and melodies — no two alike — everything asymmetrical and ravishingly beautiful," Saunier writes in an e-mail. "Every night I’d go to sleep fantasizing about how great the next Deerhoof record was going to be with all these hits on there. Then Chris shattered my dreams. But it’s OK, the Curtains deserve an album this beautiful in their catalog…. The Curtains are like the Jean-Luc Godard of the SF music scene, everything is so human and exposed, which, of course, takes way more nerve than any hipster’s posturing. The Curtains know no rule book for how you write songs — they write their own rule book from the spasms of the imagination. They have my undying admiration."

Cohen admits that while recording the album, he wasn’t sure whether to stamp the Curtains’ name on it, because his approach to the recording was so different from his past endeavors.

"Everything with the Curtains has always been done out of necessity," he says, going on to explain that he only had a limited amount of time to work on the music, so he played all the instruments himself.

Though Calamity includes guest vocals by Torrisi and Yasi Perera as well as musical contributions from Half-Handed Cloud leader and Sufjan Stevens chum John Ringhofer, Cohen had to rethink the album in terms of its live re-creation. "When I was making it, I wasn’t thinking of anybody else performing the music, which has made it difficult to now perform it as a band," he says. "I didn’t think anyone else would be interested, and then Nedelle was, like, ‘I want to play in a band again. Can I play in your band?’ "

After Torrisi and Lewandowski joined the Curtains, Cohen says he became "excited about playing new music again in a band with new people."

"Something that’s been really fun now is that everybody has been singing and working on harmonies," Cohen says, "and that’s something no other version of the band has done." The band doesn’t have a big repertoire, he adds, so the trio keep throwing out the songs that don’t work.

Cohen also admits that the idea of even having vocals in his band is relatively new. "I really wasn’t interested in vocals for a long time. I felt like I just wanted to make music that was really abstract, and I just didn’t have anything I wanted to sing about."

But Cohen’s vision seems to have changed with the addition of Torrisi and Lewandowski. In essence, the Curtains are starting over from scratch and fashioning Calamity‘s catchy pop into their own.

"To me, the Curtains has always been a pop band," Cohen explains. "I want it to be music that anyone can understand and enjoy. It fits into the limited amount of time that pop music seems to inhabit people’s lives." *

Hawthorne Lane remains at the top of the city’s restaurant heap after more than a decade. Bridget Batson’s modern California cuisine is first-rate, the ambience a perfection of understated elegance, and the service knowledgeable, friendly, and smooth. Julie’s Supper Club and Lounge II preserves the name of a longtime SoMa institution while bringing a new fusion menu to the table. Koh Samui and the Monkey joins a high-value Thai menu with a spare, hip SoMa warehouse look. The sweet-hot food tends more toward the former than the latter but is excellent nonetheless. Roy’s Restaurant promises "Hawaiian fusion" cuisine, but while there are island touches (macadamia nuts turn up in various guises), the place seems right at home on Mission Street. The cooking, once noted for a certain overwroughtness, has become elegantly restrained, and a three-course $35 prix fixe dinner is one of the better deals of its kind around town. Salt House offers a nice Ludwig Mies van der Rohe-tours-a-19th-century-factory look and utterly up-to-date California pub food, an entertaining hodgepodge that ranges from a crock of house-picked vegetables to panko-crusted mackerel to an oozingly moist chocolate Bundt cake, still warm from the oven, plus interesting proprietary-blend wines. NOB HILL/RUSSIAN HILL

Ah Lin offers Mandarin-style Chinese cooking in an easy-to-take storefront setting on Cathedral Hill. The dishes are well behaved and tasty, with only an occasional flare-up of chile heat. East Coast West Delicatessen doesn’t look like a New York deli (too much space, air, light), but the huge, fattily satisfying Reubens, platters of meat loaf, black-and-white cookies, and all the other standards compare commendably to their East Coast cousins. La Folie could be a neighborhood spot or a destination or both, but either way or both ways it is sensational: an exercise in haute cuisine leavened with a West Coast sense of informality and playfulness. *Bodega Bistro has a certain colonial formality — much of the menu is given in French — and it does attract a tony expat crowd. Hayes Street Grill started more than a quarter century ago as an emulation of the city’s old seafood houses, and now it’s an institution itself. The menu’s smash hits include coins of lavash-wrapped beef (a kind of Middle Eastern beef Wellington), an enslavingly good shrimp casserole, and a coil of baklava with lavender honey. Eureka Restaurant and Lounge combines, in the old Neon Chicken space, a classic Castro sensibility (mirrors everywhere, fancy sparkling water) with a stylish all-American menu that reflects Boulevard and Chenery Park bloodlines. *Firefly remains an exemplar of the neighborhood restaurant in San Francisco: it is homey and classy, hip and friendly, serving an American menu — deftly inflected with ethnic and vegetarian touches — that’s the match of any in the city. Toast welcomes families with little children — pancakes from dawn to dusk! — as well as monied young adults, who tend to gather for weekend brunch. Caffe d’Melanio is the place to go if you want your pound of coffee beans roasted while you enjoy an Argentine-Italian dinner of pasta, milanesa, and chimichurri sauce. Dosa serves dosas, the south Indian crepes, along with a wealth of other, and generally quite spicy, dishes from the south of the subcontinent. Front Porch mixes a cheerfully homey setting (with a front porch of sorts), a hipster crowd, and a Caribbean-inflected comfort menu into a distinctive urban cocktail. As a fellow traveler of the Luddites, I am obliged to treat the phrase "digital arts" — as in the Letterman Digital Arts Center, in the Presidio — with some skepticism. Of course I have a cell phone and a computer, a pair of digital apparatuses, and I do regard them as essential to life as we know it — as essential tools. Tools are servants, and although they are not devoid of value, their value is in their usefulness. Whatever value art has, it isn’t usefulness.

"Digital arts" might be considered an oxymoron in some quarters. The classic example of an oxymoron — Herb Caen’s phrase was "self-canceling phrase" — is "military intelligence." On the slightly more ornate side, we now have "Operation Iraqi Freedom." Interestingly, the word oxymoron includes the word moron. As for digital arts: I have an impression of busy-bee activity in the Pixar–Toy Story school, the use of computers to make more vivid monsters or car crashes or intergalactic Armageddon or other of those visual splendors from which, with the atrophy of plot and character, so much of contemporary cinema is constructed.

But … I might as well be trying to rescue the word hopefully, and that would be a waste of time, especially since there is, in one of the LDA buildings, a brand-new and fabulous restaurant and wine bar, Pres a Vi, that cries out to be described. The restaurant occupies a long, L-shaped space on the ground level of Building D (an unfortunate designation more appropriate to a prison). Part of Pres a Vi’s ceiling consists of wine-barrel ribs, giving one the sense of looking up at a segment of the world’s longest reinforced straw, while its eastern wall consists almost entirely of window glass. Through the dinnertime panes glows the pink specter of the Palace of Fine Arts, afloat on evening’s ink as if in a dream, and proof that not all great views in this city must involve bay or bridge.

Chef Kelly Degala’s menu is "global" and is oriented toward smaller plates, and the question presented is whether this diversity is polymathic or dilettantish. I incline toward the first view, since almost all the dishes are rendered with style and verve. But you can order yourself into incoherence, no question, and the little plates from around the world can start piling up as if at some buffet at an Intercontinental hotel: ravioli here, lumpia there, a hit of Thai papaya salad, some potatoes roasted Spanish-style.

If Degala is a culinary globalist, his heart is clearly in the Pacific. He has spent a lot of time in Hawaii, and his cooking reflects the islands’ mix of tropical and Asian influences. He is also attentive to Filipino cuisine, which doesn’t get much attention in the Bay Area despite a large Filipino population. His lumpia ($10 for four bite-size pieces) are exemplary: rolled cilantro crepes (somewhere between taquitos and flautas in size, and not much cilantro flavor, in case you are passionate either way) filled with rock shrimp and served with a spicy peanut dressing. He also offers a version of another Filipino dish, prawn adobo ($12), with the peeled shrimp braised in a slightly sweet soy-vinegar bath and presented on a pad of electrifyingly tasty fried jasmine rice.

Europhiles will not starve. A set of ravioli ($12), like sand dollars, are filled with duck meat and goat cheese before being gently inundated with an earthy (and gorgeously smooth with a smoothness only butter can provide) wild-mushroom sauce. The kitchen had run out of croquettes on one visit, so we jumped to plan B: jo-jos ($6), a good-size bowl of Kennebec potato wedges roasted with shreds of Serrano ham and topped with romesco, which looked like melted Velveeta (for a potato-nachos effect) and carried a slightly-too-harsh charge of smoked paprika.

Degala even manages a nod in the direction of California whimsy. How about a club sandwich ($13) on brioche, with Dungeness crab salad instead of roast turkey? (And plenty of crisp bacon!) If it’s not quite as fancy as Postrio’s lobster version, it’s at least as good. In a similar vein, there’s an ahi tuna melt ($8), the cooked fish here mashed up with red bell pepper dice and bits of cornichon into a kind of salad.

A few of the dishes seem to hold dual citizenship. An example: lobster bisque ($4), rich and creamy, spiked with brandy, topped with crème fraîche and minced chives, and served in a tall shot glass, like a miniature cappuccino. French? New Englander? Excellent, certainly. No aura of vague cosmopolitanism, on the other hand, surrounds the duck buns ($12). Here we have a classic Chinese treat: shreds of poultry, slow-cooked to moist tenderness, set between halves of little steamed buns, like tiny duck burgers. Versions of this dish aren’t hard to find on menus around town, but Degala’s duck, moist and rich and with unmistakable five-spice breath, is superlative.

Although the restaurant opened shortly after Thanksgiving, service is already at a high level, with bread and water flowing liberally and the staff knowledgeable about specials and shortages. Timing from the kitchen can be a little erratic, though, and this matters more than it might at some other place because dinners tend to be improvised arabesques rather than the more usual first course–main course–dessert ballet. You can never be quite sure which dish will show up next, but that’s not such a high price to pay when it could be coming from any place in the world. *

CHEAP EATS Sockywonk came back from Florida completely bald and we sat in the waiting room at the Kaiser lab, looking at pictures. In fluorescent lights, in the hospital hum, in the stony glare of disease … here was Florida, her Florida friends, her Florida sister, sunshine and tank tops, big smiles, water. Here was Sockywonk sitting in the haircut chair clowning for the camera, yanking fistfuls of hair right out of her scalp, waiting for the shave.

The last two things she did with her hair, when she had it, and knew she only had it for a couple more weeks, was she cut it into a Mohawk and then bleached it blond. Nowadays she wears a Davy Crockett hat with a tail, some kind of animal, and you know that I love her for this.

She took the hat off and showed me. There were lingering patches of black stubble, random and Rorschach. I put my hand there. It was warm and bristly.

I made a wish.

Once when I used to shave my head and people, including me, always wanted to touch it, I told a coworker while she was rubbing my snow dome that she could make a wish and she did and got pregnant. This was 20 years ago, more or less, in another time zone, and I can’t remember the mother’s or the father’s name, but I imagine the child of that wish, now more or less an adult, tracking me down and appearing at my door one day with a basket of fruit or a cheese tray.

"Hi!"

It had been cloudy and drizzly but mild all morning, and when we came out of Kaiser it was brilliantly sunny and freezing. "What do you really really want to eat?" I said. "More than anything in the world right now, for lunch."

"Soup," said Sockywonk. "Japanese."

It’s not like her to be decisive and I was thrilled. Soup, in particular Japanese style, is one of my favorite things in the world. On our way to my car she stepped in one of my least favorite things. I found an old copy of the Guardian in the back of the truck, opened it to Cheap Eats, and laid it out on the passenger floor.

In Japantown Center, sucking down edamame outside of Suzu because there weren’t any open tables inside, we looked at more pictures while waiting for our noodles. One of Sockywonk’s Florida girlfriends is pushing 60, and looks like she’s 35. There’s a big house, a deck, a river. Sockywonk says something about maybe moving back there.

"Would you do it?"

She doesn’t know. She’s been living in a rent-controlled apartment here for 15, 20 years. Has a lot of cool and beautiful San Francisco friends too. Some of whom, if not all of whom, are bigger than her and will chain her to a parking meter, if that’s what it comes to.

And here was our soup, finally, and oh-sweet-Jesus I have a new favorite restaurant! Not only do they have karaage ramen, which is fried chicken noodle soup, and not only are the noodles homemade and perfect, but the fried chicken comes in a separate bowl on the side so that, for slow eaters like me, you don’t wind up eating sog-monster mush.

I chopsticked a crispy chunk of chicken, dipped and dunked it into the dark, salty broth, and came up with an unexpected spot of ginger hanging on somewhere, a stowaway. Biting into it was like sex, if I remember correctly. Sex, not soup; the soup I remember perfectly, almost tearfully. The most succulent, deliciousest thing you can even imagine.

Fried chicken soup. Sockywonk had a combination plate, tempura over rice, and udon soup. Oh, and we also had shrimp dumplings and they were pretty good too. But how can someone who’s 60 look 35?

Chemo conks you on the head and makes you move a little slow.

Fried chicken does the same thing to me, so I had no trouble keeping step with Sockywonk on our way up the stairs to the restrooms, which of course are gender specific: one for this kind, one for that. But in this case I didn’t mind, ’cause we got to pee in harmony and wash our hands in harmony and look together into the mirror, thinking about Florida. *

REVIEW There is something about "The Sculpture of Ruth Asawa: Contours in the Air," the de Young Museum’s current retrospective of Ruth Asawa’s work, that initially feels a bit like a natural history museum display. The darkened space, punctuated with spotlights, showcases Asawa’s floating woven wire forms, which look like giant representations of diatoms or plankton. The shadows this installation creates are an important factor, illustrating the concepts the artist considered during their making: positive and negative space, organic growth, and continuous line. One of the first pieces greeting visitors at the entrance resembles a hanging column of ballooning onion and bell shapes. It’s made of woven aluminum and brass wire, and Asawa describes it as a test to see how large a sculpture she could create in crocheted metal wire without it collapsing from its own weight.

A nearby glass case displays sketchbook pages from her formative art-school years. On one page a sentence stands out boldly: "DRAW AIR WITH NOTHING." The lacy forms of industrial metal wire are paralleled by the pen-and-ink drawings on the walls, some of which Asawa calls "meanderings." They’re images formed in an intuitive yet mathematically exponential process — not unlike the route her lifelong career of object making and art activism has taken.

Born in Norwalk, Calif., in 1929 and raised on her parents’ vegetable farm, Asawa was one of thousands of Japanese Americans interned during World War II. At the Santa Anita racetrack camp, she had her first formal lessons in art, taught by several Walt Disney studio animators who were also interned. After the war she attended Black Mountain College in North Carolina, where she studied with legendary artists and thinkers including Josef Albers and Buckminster Fuller. There she met the man who would become her husband and father to her six children, architect Albert Lanier.

After college Asawa studied in Toluca, Mexico, where she learned to crochet baskets. She pushed this traditional craft into the realm of fine art during the 1950s. Her work was chosen to represent the United States in the 1955 São Paolo Biennial, and soon after the Whitney Museum of American Art acquired her work for its collection. However, in the Bay Area, where she has lived since the ’50s, Asawa has remained relatively unknown.

THIS IS THE MODERN WORLD


At the de Young the viewer traipses past Asawa’s complex, bundled copper-wire tumbleweed puffs; wiry snowflake configurations; spongy Möbius strips; plump, electroplated copper, cactilike works; and graphically bold, obsessive-compulsive-esque lithographs and drawings. Some of these date to the late ’90s, but nonetheless, we are really wandering in a realm of late-modernist works. So by today’s postmodernist and post-postmodernist values, Asawa’s pieces don’t readily leap into a contemporary critical arena. They are, for the most part, graceful and avoid the taint of macramé kitsch, although a subtle whiff of hippie-era flavoring does hover over the exhibition. Yet before one judges her art by today’s standards, let’s look at why she merits a retrospective.

This is not Asawa’s first overview: the Oakland Museum of California held one in 2002. One dramatic mandala sculpture on display — Wintermass, from the late ’60s — is similar to the bronze gracing the front entrance to the Oakland Museum. And this isn’t the only Asawa piece available for free viewing in the Bay Area — she is far more ubiquitous than many locals realize. Over the days following my visit to the de Young exhibition, I stumbled upon several of her public works — many of which in no way resemble the art chosen for the show. Rather, they seem to be created by an almost evil twin. Asawa’s public objects generally tend to land in a goofier, now quaint public-art aesthetic. The list includes that tourist mecca mermaid fountain at Ghirardelli Square, the sea lion statue (generally hidden under climbing children) at Pier 39, the whimsical San Francisco landscape fountain outside the Grand Hyatt San Francisco at Union Square, the pair of occasionally functioning giant origami fountains in Japantown — and the steel origami doughnut fountain (titled Aurora) near the Gap’s Embarcadero headquarters. She also helped with the design of Children’s Fairyland in Oakland and more recently a San Jose memorial dedicated to the Japanese American internment.

MAKING LOVE


Asawa was a public sculptor to be reckoned with during city upgrades in the 1970s and ’80s. She was also the force who created the revolutionary Alvarado School summer art workshops in the early ’70s. She spearheaded the creation of San Francisco’s School of the Arts High School and actively served on both state and city art boards. This exhibit includes photo documentation by Asawa’s close chum Imogen Cunningham of her early work and bohemianlike family life. Asawa saw little difference between making art and teaching it to children, which could easily make her one of the godmothers of the social practice genre. The format in which Asawa chose to display her objects early on could also make her something of a forebear of installation artists.

In a period in which homespun crafts and the DIY joys of creation — think ReadyMade magazine — are so prevalent, an appreciation of Ruth Asawa is a timely thing. Captured in the wonderfully dated 1978 documentary by Robert Snyder that’s screening at the exhibition, Asawa declares that "a line can go anywhere" and talks of the importance of being like a bulb planted in soil: she should always be growing while here on earth. Much like that enormous New England mushroom discovered expanding for miles underneath the soil, Asawa planted herself here and flourished quietly, germinating an idealistic sense of the importance of art in the community — something I hope never grows out of style. *

Funny business

The world has rushed headlong and with questionable taste into 2007. Whatever else that implies, it wouldn’t be funny if not for SF Sketchfest. The annual comedy showcase, which sails in buoyantly every January, grows fresher by the year, despite being nearly as old as this increasingly passé century.

Admittedly, the Bay Area has several admirable places to go for comedy — evergreen locales like Cobb’s, newer nooks like the Dark Room, and a couple yearly improv festivals, for example. But since its inception in 2002, SF Sketchfest has not only made room for more, it’s featured unique programming that only gets savvier.

"Each year we like to add new elements," cofounder David Owen says, "new acts, new venues, new styles of comedy, new workshops and interactive events." Audiences, meanwhile, have responded with enthusiasm. Houses are packed, and the lineup is almost always impressive. To run down the roster of SF Sketchfest 2007 is to press nose to glass and ogle the comedy candy on display: Upright Citizens Brigade’s Matt Besser, Ian Roberts, and Matt Walsh; MadTV ‘s Andrew Daly; Mr. Show ‘s David Cross and Bob Odenkirk (albeit in separate acts); Naked Babies (with Rob Corddry of Daily Show fame); a tribute to Paul Reubens (that’s Paul "Pee-wee Herman" Reubens, of course); and much more.

Although Owen says the plan was always to grow SF Sketchfest into something bigger and better, he and colleagues Janet Varney and Cole Stratton originally conceived of the project in narrower, rather pragmatic terms — namely, as a means of getting their own act, the comedy troupe Totally False People, an extended run on a downtown stage.

"We frankly couldn’t afford to rent a theater on our own," he says. "So we teamed up with five other Bay Area groups — and we called it SF Sketchfest." Six years later, Owen looks back on this modest scheme with some justifiable awe. "When we were first putting it together, I don’t think we ever dreamed it would be where it is today."

There was plenty of magic even in that more low-key first year. But SF Sketchfest almost immediately reached out to national acts, which have seemed only too willing to oblige. The program has since blossomed into a sweet-smelling potpourri of wit from around the country while staying true to its original impetus by giving ample room to local groups such as Kasper Hauser, Killing My Lobster, and deeply strange soloist extraordinaire Will Franken.

If casting their net nationally while maintaining the fest’s original commitment to local acts takes considerable work ("Every year it’s a bit of a jigsaw puzzle," Stratton says, "only we don’t have a picture to work off of"), Sketchfest’s directors have, to their credit, repeatedly struck a fine balance, producing a formidable mix of major headliners and more up-and-coming comedians. "It gives audiences a chance to see groups they love with potentially the next big thing, and it gives the performers enthusiastic, packed houses," Stratton says, explaining the strategy. "We probably put together 50 calendars before we can put a lock on things, but it always comes together beautifully."

"We’re so particular about what we program every year," Varney says. "There isn’t a show in the calendar that we’re not incredibly excited about." Still, Varney cites among the festival’s particular strengths this year its "more interactive side," including workshops in comedy screenwriting (with The Baxter ‘s writer-director-star Michael Showalter), sketch writing (with San Francisco’s Kasper Hauser), and an improv master class (with Upright Citizens Brigade’s Matt Walsh). "These are seriously respected people offering their expertise," she says. Moreover, she promises with understandable confidence, "The workshops are going to be tremendously fun."

Then there’s TV-style audience participation. "Some of the performers from the ‘Comedy Death-Ray’ show [David Cross, Maria Bamford, and Paul F. Tompkins] will be doing their version of the old ’70s game show Match Game. Jimmy Pardo hosts the show, and it’s a really fun, relaxed environment where the audience gets to both participate and to see the comedians think on their feet," Varney says.

"And of course," she adds, "we’re really excited to honor Paul Reubens at this year’s SF Sketchfest Tribute." The event — which in years past has saluted the likes of Amy Sedaris (2004), Dana Carvey (2005), and Cross and Odenkirk (2006) — includes an audience Q&A with Reubens after he has a sit-down conversation with journalist Ben Fong-Torres.

Closing night builds to a crescendo of sorts with a program of music and comedy, featuring Kids in the Hall veteran Bruce McCulloch (2005’s hilarious opener, back for more with accompanist Craig Northey) and two returning Los Angeles acts, the fine duo Hard ‘N Phirm and comedy rapper Dragon Boy Suede.

"Sketch is very strong right now," Stratton notes. "I think sites like YouTube are ushering in a new wave of sketch groups. High-quality cameras and editing equipment are readily available, so a lot of funny things are being produced and immediately snatched up online." It’s had a feedback effect on the comedy circuit. "A lot of groups mix their filmed stuff with live performance and tour festivals with it, a trend we’ve noticed increasing in the last few years. With festivals popping up in Chicago, Portland, Seattle, New York, Los Angeles, Toronto, and Vancouver, sketch is in high demand." *

Although the holiday orgy of gift giving includes the giving of many pointless gifts, I was pleased to score yet more coffee-brewing equipment: a matched set of implements from Vietnam, like little tin cups with filter bottoms. I have a large and unwieldy collection of French presses, stove-top mokas, drip pots, pump-driven espresso machines, grinders manual and electric — but I didn’t have these things, had never heard of them, and did not think I was missing anything until I tasted the coffee they produced.

The cups are something of a cross between percolators, mokas, and drip devices: ground coffee is placed between a layer of filters at the bottom, the cup is placed over the destination vessel, and boiling water is poured in at the top. The water slowly drips through the layer of coffee to whatever you’ve set underneath, and while this can take several minutes, that interval gives a fairly long steep and produces an intense but smooth brew.

The charm factor is raised, at least in Vietnam, by the brewing of the coffee into a small pool of condensed milk, which is (as we bakers of cream pies know) sweetened. I no longer keep cans of the stuff around, but I did discover that a few ounces of scalded milk mixed with a teaspoon or two of sugar produces a pleasantly creamy sweetening.

More important is the use of Vietnamese coffee. We were given, with our cups, a packet of Nam Nguyen brand coffee, coarsely pre-ground and looking quite ordinary. Then we brewed it and found ourselves bewitched by a distinctly chocolately bouquet. The presence of chicory was suspected (as in New Orleans–style coffee), so I ground some Trader Joe’s decaf espresso roast and brewed it in a Vietnamese cup to make sure the brewing method wasn’t somehow producing a miracle. It wasn’t, though the coffee was quite good.

The resemblance of Vietnamese to New Orleans–style coffee isn’t surprising, given the long French tutelage in both places. Chicory root has been used for centuries to stretch coffee supplies and mask staleness, and because it contains no caffeine, its blending with coffee probably helps reduce the nerve-jangling effects of the latter. There is also some evidence that it has a tonic effect on the liver — an encouraging factoid to keep in mind if you seek a coffee to help lift any fog remaining from New Year’s Eve.

Let’s face it: half the kick of discovering a little-known noodler or late-night four-tracker lies in the shock of the unknown. Jaded ears perk up at the sound of some never-was untouched by time, history, or, hell, pop itself — after all, musical obscuros like High Speed and the Afflicted Man, one of Wooden Shjips guitarist Ripley Johnson’s favorites, were far from popular.

Wooden Shjips itself — give or take that copycat culture–jamming "j" — might have easily slipped past notice. I first heard their 2005 three-song 10-inch, Shrinking Moon for You, by chance when Holy Mountain honcho John Whitson spun the disc at Hemlock Tavern — the ears pricked up to a dusty, droning cluster of fuzz, the hips jiggled along with those sleigh bells until the second guitar shrieked to the foreground. Hark, the groovy in extremis, raw ’60s-style teenage-riot drama of the Velvets or Spaceman 3. I was told it was a single by a local band that was giving away its searing psych stomp to anyone who e-mailed for a copy. I seem to remember dutifully firing off a message later. No response.

No wonder — Johnson ran through the original 300-copy pressing of Shrinking Moon after raves from music sites and blogs such as Dusted and Siltblog and the random high-five by Byron Coley in Wire. The next Wooden Shjips recording, the 2006 7-inch "Dance, California"/"Clouds over Earthquake," garnered further positivity, completely spoiling Johnson’s original plan of a worldwide free musical giveaway — a goodwill crusade of vinyl shareware, if you will, that embraced its own mystery.

"It became a little tricky once people started writing about it, like on blogs and stuff," Johnson said last week, chilling on a chilly SF evening with bassist Dusty Jermier in Eagle Tavern’s beer garden. "Then record stores wanted to carry it, but if it’s free, you can’t really sell it to them, and they wouldn’t take it for free."

Most artists should be so unlucky. But Johnson explained, "It was important to be consistent. Since no one knew the band, there was no way to sell them, so the initial idea was to just give them away, and if I couldn’t give them away, I actually had a plan to leave them on bus seats and in libraries. It didn’t work out that I had to do that.

"I mean, the one thing I didn’t want to end up with was a box of records that just sat in my closet, because I’ve been there before."

But it is fun for the treasure-trawling music collector geeking out on the thrill of discovery, which Johnson can relate to. "I think the other big inspiration was from private press records from the ’60s and ’70s — people who’d make their own record, maybe 100 copies, and it would be forgotten, and then 30 years later people would discover it and decide it was the greatest record they’d ever heard," he said, citing High Speed and George Brigman on San Francisco’s Anopheles Records as inspirations. "Just press the record, make music — why wait? Why do you need a label? Why do you need people to like you to make a record? You can just make it, and if people don’t like it, maybe they’ll like it in 20 years."

Instead, "there was a lot of going down to the post office every day and mailing out records, which is really fun to a certain degree," he continued. "It’s cool to be contacted by people all over the world." They’d PayPal him shipping and extra money to coax him to send his single as far afield as New Zealand, Japan, and Lebanon. All of which has led to a forthcoming full-length for Holy Mountain, singles for Sub Pop and France’s Pollymaggoo imprint, and shows at South by Southwest — after Wooden Shjips play their first show at Cafe du Nord on Jan. 15.

"We’re actually having goals thrust upon us," said Johnson, a Wallingford, Conn., native who works as a systems administrator at CNET. "We’re sort of drowning in goals at this point — a lot of offers to put out records, show offers."

It’s a radical change from Johnson’s last, late ’90s band, Botulism. "We would pretty much clear rooms," he recalled. The first "iteration" of Wooden Shjips, which began a few years ago, consisted of nonmusicians. Johnson wanted bandmates who would bring the willingness to learn but leave the ego at home. "Musicians are a pain in the ass," said the grinning guitarist, who confesses he did want to "dictate a little bit." Unfortunately, nonmusicians also didn’t often come with the dedication. "In fact, in the first version our drummer quit because we started talking about playing shows," Johnson added, chuckling.

Making music — white label or no — continues to be the focus: Johnson, Jermier, "nonmusician" keyboardist Nash Whalen, and drummer Omar Ahsanuddin have already begun recording on a creaky eight-track reel-to-reel in the SoMa practice space they share with the Fucking Champs. And perhaps Johnson will find use for the box of Botulism singles he has in his closet, selling them as Wooden Shjips juvenilia. "I’d rather just revert to the old plan and put them on bus seats or in the library," he said with a smile, "and see if people discover them on their own." *

Starr: The Contemplations of a Dominator

In a moment when Bay Area hip-hop is synonymous with hyphy in most people’s minds, it’s radio-shock savvy of Kirby Dominant to throw down a solo effort that follows no trends while his Niggaz and White Girlz project with Chris Sinister continues to generate word of mouth. Though its cover art features the same fuchsia hues of Niggaz and White Girlz — according to the man himself, fuchsia is the current signature color of the Rapitalism label — there is no denying that Starr: The Contemplations of a Dominator finds its creator on what he’s described as "some Jack Pollock shit," throwing different ideas and sounds at your head and seeing what sticks.

The first thing that does is the leadoff track, "Shenanigans," on which Dominator taps into an Irish atmosphere derived from time spent in Saskatchewan — but make no mistake, the guitar riff–driven result is no Leprechaun in the Hood pure silliness, and he steps far outside any record collection you’d find in a house of pain. Tapping into various space scientist and chemist cadences (much like Kool Keith in Dr. Octagon mode) to formulate what he deems musical style number 1,576,384,979, Dominant mocks faux producers with no range and knowledge, informing them that "Gil Evans would stab your ass with a toothbrush."

From there he journeys through the warm soul of the title track, lowering a voice that can be as mischievous as early Q-Tip in order to target MCs with no vocabulary whose rhymes are "fermentin’ like orange juice in prison." Going "solo like a nigga at the rodeo," he moves through "Come Outside" to a rock jam coda and then pays tribute to homegirl Joni Mitchell during "The Power of Stephen Padmore’s Shirt." On "So Right" he even gets so loose mentally that he turns instrumental, collaborating with Roy Hargrove to create a trumpet-inflected epic. In the near future Dominant plans to spread the new wave thuggin’ gospel further with Bloody Tuxedos, and he’s even venturing into classical music with Ensemble Mik Nawooj. Starr proves his wild wordplay can comfortably occupy and redesign any space between those wildly different zones.

Nurturing the drive

Sheri Wetherby was working at a casino in Tahoe when she decided to become a computer programmer. So she left Tahoe and came to the Bay Area to study. A few years later, she had a job at Microsoft.

Wetherby had hardly a lick of programming background before she got her MA in computer science at Mills College. Her undergraduate degree was in German and French. She’d taken some graduate courses at the University of New Hampshire, including a computer science course that inspired her to envision a second career in the field. But how, she wondered, could she find a program that would allow her to master computers, coming from a liberal arts background?

A friend told her about New Horizons, a reentry program at Mills that teaches computer programming to students with nontechnical backgrounds. "I found the small classes and individual attention helped me get a grounding" in computer science, she says, "before moving on to more advanced topics."

The New Horizons program is specially designed for grad students who don’t have an undergraduate degree in computer science. It consists of two undergraduate-level computer science classes per semester for students who also hold down jobs and family responsibilities. Students can choose to finish the New Horizons program with a certificate but most go on to pursue a master’s degree from the Interdisciplinary Computer Science program at Mills. The ICS program aims to build bridges between computer science and computer users and offers graduate coursework as well as a master’s thesis track.

Some New Horizons students find computer science too difficult or different than they expected, "but the majority are successful and happy," Mills computer science associate professor Ellen Spertus says. She recommends students with no CS experience try taking some community college courses in the subject first — to see if their eyes are bigger than their stomachs, in programming terms.

At a community college, students can take the prerequisite math and CS classes at a fraction of the cost before going to Mills, says Constance Conner, an instructor in the Computer Science Department at City College of San Francisco who studied in the ICS program at Mills. Community college "is also a good place to start if a student is not 100 percent sure" about a CS degree, she says. Then, if students’ appetites are still whet, the Mills program will guide them along a new career path.

CRISIS OF CONFIDENCE


Computer science is seen by many hopefuls as a lucrative but daunting field. In the public’s mind successful programmers are young, mostly male wizards who almost cosmically penetrate thickets of computer languages and database engineering to manifest unfathomable products. Spertus finds that many students going into her program suffer from low self-esteem — especially female students. She says they’ll be earning A’s in the program’s classes but will be convinced they’re not doing well and somehow "don’t belong." Her teaching style, simultaneously rigorous and nurturing, helps change their opinion, she hopes.

Introductory CS classes at most universities "act like weeder courses," scaring away all but the most confident students, Spertus says. Typically, up to half the students fail or drop out of introductory CS classes at other institutions. Spertus says this phenomenon hits women hardest because they may have less computer experience as well as less confidence.

Also, some students apologize for not having undergrad degrees in CS. Spertus always tells them computer scientists with a narrow focus are "a dime a dozen." But people like them, who know CS along with another field, are unique.

RIGHTING THE BALANCE


Erica Rios has been an activist since she was a teenager but became frustrated that activists were still using the same methods of organizing Martin Luther King Jr. employed back in the ’60s. She had a political science degree and a minor in Chicano studies from UC Davis. As a labor activist for small community nonprofits, she had to teach herself to use computers because nobody else knew how. She saw how technology was changing her native San Jose. She wanted to learn "how tech could be used to engage people in the issues that impact them but they don’t necessarily have a direct voice on."

Though Mills is a women’s undergrad college, it accepts male graduate students. Men typically make up roughly a third of the participants in the ICS program, but the majority-female environment creates a unique classroom culture. The different gender balance was helpful to Rios because she had a nine-month-old child when she started the program. She felt more comfortable bringing her daughter to her Java class than she would have in a male-dominated classroom — and less apt to fall behind on coursework.

The few men enrolled during Rios’s time brought a balance to the learning environment, she believes, while showing her that she need not feel uncomfortable as a woman in the computer science field. "There were two other men in class with me and about seven going through the whole program," says Barton Friedland, one of the men who just completed the ICS program. For him, it felt very different to study "with a preponderance of women, but that’s something you can learn from."

Friedland took some classes at Stanford before going to Mills. "There seemed to be this attitude where if you asked questions in class, people looked at you funny." If students admitted they didn’t know something, they would lose status, and they were supposed to figure out things on your own. Despite Stanford’s reputation as one of the top schools in the country, Friedland found Mills’s curriculum more thorough.

The smaller class sizes at Mills were also helpful, Rios says. At UC Davis the average class size is 300 in lower-level courses and 75 to 100 in upper-level classes; a class size of 12 to 15 students is more conducive to learning, she found.

It "felt like everyone belonged there and [was] equally capable of learning. I didn’t always feel that in larger classes."

The Mills professors "don’t throw too much jargon at you, making you feel like you’re not smart enough," Rios adds. Instead, the professors step back to observe how students approach problems, then help them learn to problem solve from a more hard-science perspective. Rios now works as an Internet project manager at the Anita Borg Institute for Women and Technology, using her activism background to "explore ways in which we can use technology to advance women."

"I felt comfortable speaking in class and asking questions, where in a typical classroom I would not," says former ICS student Lisa Cowan, who has a BA in anthropology and is now pursuing a computer science PhD at UC San Diego. "The professors taught class in a highly interactive way, asking questions and encouraging discussion, helping us solve problems together, making sure all students thoroughly understood the material being covered."

PAVING THE WAY


The ICS program at Mills isn’t the first reentry program of its kind in the Bay Area. UC Berkeley opened a program in 1983 as a pathway to graduate study in computer science for women and minority students who were underrepresented in Berkeley’s crowded and competitive program. Two female Berkeley graduates, Paula Hawthorn and Barbara Simons, noticed in 1982 that the number of female graduate students entering the CS program was actually decreasing over time as the requirements became more geared toward people who had pursued a standard math or engineering track.

The Computer Science Reentry Program at Berkeley gave 159 students a concentrated education in upper-level computer science classes. Ten of those students have gone on to get PhDs. But the program had to fold in 1998 when California passed Proposition 209, which prohibited any state-funded programs that discriminate based on gender and ethnicity.

The interdisciplinary part of the Mills College ICS program’s name means students combine computer science with another area of study to produce their master’s theses. "It gives you a really broad brush," says Wetherby, the former casino worker. When a student comes to Spertus with a thesis idea, she always asks how it uses what the student has learned about computer science. But she also asks why the thesis is something that she, a narrowly trained computer scientist, couldn’t do. She finds the interdisciplinary approach helps students make more of a contribution and also realize they can do things that Spertus, who has a PhD from MIT, can’t.

While still at Mills, Wetherby had internships at IBM and Apple Research. When she was job hunting after the program, someone from Microsoft called her because her studies had combined computer science and education. Microsoft needed someone who could write educational programs to teach programmers about Microsoft tools.

Another Mills student, Liz Quigg, had already been an applications programmer at science labs before joining the ICS program. She’d crunched high-energy physics and moon-walk data. But the program’s interdisciplinary focus also helped her get into writing educational software. Afterward, she was able to help create educational programs for the science center at the Fermi National Accelerator Laboratory in Illinois.

"It was very useful because my job now is very interdisciplinary," Quigg says. "I work with scientists, teachers, and students. I cross different worlds." *

Sheri Wetherby was working at a casino in Tahoe when she decided to become a computer programmer. So she left Tahoe and came to the Bay Area to study. A few years later, she had a job at Microsoft.

Wetherby had hardly a lick of programming background before she got her MA in computer science at Mills College. Her undergraduate degree was in German and French. She’d taken some graduate courses at the University of New Hampshire, including a computer science course that inspired her to envision a second career in the field. But how, she wondered, could she find a program that would allow her to master computers, coming from a liberal arts background?

A friend told her about New Horizons, a reentry program at Mills that teaches computer programming to students with nontechnical backgrounds. "I found the small classes and individual attention helped me get a grounding" in computer science, she says, "before moving on to more advanced topics."

The New Horizons program is specially designed for grad students who don’t have an undergraduate degree in computer science. It consists of two undergraduate-level computer science classes per semester for students who also hold down jobs and family responsibilities. Students can choose to finish the New Horizons program with a certificate but most go on to pursue a master’s degree from the Interdisciplinary Computer Science program at Mills. The ICS program aims to build bridges between computer science and computer users and offers graduate coursework as well as a master’s thesis track.

Some New Horizons students find computer science too difficult or different than they expected, "but the majority are successful and happy," Mills computer science associate professor Ellen Spertus says. She recommends students with no CS experience try taking some community college courses in the subject first — to see if their eyes are bigger than their stomachs, in programming terms.

At a community college, students can take the prerequisite math and CS classes at a fraction of the cost before going to Mills, says Constance Conner, an instructor in the Computer Science Department at City College of San Francisco who studied in the ICS program at Mills. Community college "is also a good place to start if a student is not 100 percent sure" about a CS degree, she says. Then, if students’ appetites are still whet, the Mills program will guide them along a new career path.

CRISIS OF CONFIDENCE


Computer science is seen by many hopefuls as a lucrative but daunting field. In the public’s mind successful programmers are young, mostly male wizards who almost cosmically penetrate thickets of computer languages and database engineering to manifest unfathomable products. Spertus finds that many students going into her program suffer from low self-esteem — especially female students. She says they’ll be earning A’s in the program’s classes but will be convinced they’re not doing well and somehow "don’t belong." Her teaching style, simultaneously rigorous and nurturing, helps change their opinion, she hopes.

Introductory CS classes at most universities "act like weeder courses," scaring away all but the most confident students, Spertus says. Typically, up to half the students fail or drop out of introductory CS classes at other institutions. Spertus says this phenomenon hits women hardest because they may have less computer experience as well as less confidence.

Also, some students apologize for not having undergrad degrees in CS. Spertus always tells them computer scientists with a narrow focus are "a dime a dozen." But people like them, who know CS along with another field, are unique.

RIGHTING THE BALANCE


Erica Rios has been an activist since she was a teenager but became frustrated that activists were still using the same methods of organizing Martin Luther King Jr. employed back in the ’60s. She had a political science degree and a minor in Chicano studies from UC Davis. As a labor activist for small community nonprofits, she had to teach herself to use computers because nobody else knew how. She saw how technology was changing her native San Jose. She wanted to learn "how tech could be used to engage people in the issues that impact them but they don’t necessarily have a direct voice on."

Though Mills is a women’s undergrad college, it accepts male graduate students. Men typically make up roughly a third of the participants in the ICS program, but the majority-female environment creates a unique classroom culture. The different gender balance was helpful to Rios because she had a nine-month-old child when she started the program. She felt more comfortable bringing her daughter to her Java class than she would have in a male-dominated classroom — and less apt to fall behind on coursework.

The few men enrolled during Rios’s time brought a balance to the learning environment, she believes, while showing her that she need not feel uncomfortable as a woman in the computer science field. "There were two other men in class with me and about seven going through the whole program," says Barton Friedland, one of the men who just completed the ICS program. For him, it felt very different to study "with a preponderance of women, but that’s something you can learn from."

Friedland took some classes at Stanford before going to Mills. "There seemed to be this attitude where if you asked questions in class, people looked at you funny." If students admitted they didn’t know something, they would lose status, and they were supposed to figure out things on your own. Despite Stanford’s reputation as one of the top schools in the country, Friedland found Mills’s curriculum more thorough.

The smaller class sizes at Mills were also helpful, Rios says. At UC Davis the average class size is 300 in lower-level courses and 75 to 100 in upper-level classes; a class size of 12 to 15 students is more conducive to learning, she found.

It "felt like everyone belonged there and [was] equally capable of learning. I didn’t always feel that in larger classes."

The Mills professors "don’t throw too much jargon at you, making you feel like you’re not smart enough," Rios adds. Instead, the professors step back to observe how students approach problems, then help them learn to problem solve from a more hard-science perspective. Rios now works as an Internet project manager at the Anita Borg Institute for Women and Technology, using her activism background to "explore ways in which we can use technology to advance women."

"I felt comfortable speaking in class and asking questions, where in a typical classroom I would not," says former ICS student Lisa Cowan, who has a BA in anthropology and is now pursuing a computer science PhD at UC San Diego. "The professors taught class in a highly interactive way, asking questions and encouraging discussion, helping us solve problems together, making sure all students thoroughly understood the material being covered."

Careers and Ed: Cocktail frosh

Swanky-ass bars, high-end restaurants, sex, drugs — they’re all great things to love about San Francisco, but they can be cruel and constant symbols of failure to the scrilla deprived. With one-bedroom apartments currently priced at about $1,600 a month, cell phone bills hovering in the $75 to $150 range, and PG&E. religiously raping us for half our salaries, it’s amazing anyone can afford to live in this city, let alone enjoy its vast array of entertainment. But San Francisco has a secret. Unlike most cities, San Francisco pays its waiters, bartenders, and bussers almost $10 an hour. Add to that a healthy tip stash, and there’s at least a little disposable income to hit the town with.

Of all the jobs the service industry has to offer, bartending rules. We’re talking potentially $200 to $500 for six hours of work. OK, count me in. The major problem, though, is acquiring the skills to qualify. San Francisco has almost as many service-industry schools as it does bars and restaurants. Would I get scammed if I enrolled in one? With the ultimate goal of becoming a bartender, I spent a month researching the cultlike world of barkeep education, starting with a quest for the perfect school.

THE SEARCH


In order to minimize any money and time investments, I first looked for Web classes and free tutorials. I should have known better. Looking for a free or relatively inexpensive online course in bartending turned out to be a bigger waste of time than the hours I logged scouring the Internet for free porn as a young man. The sites of my youth always promised girl-on-girl action, fist-fucking, and bizarre fetish acts but only generated advertisements for sketchy online subscriptions or outrageously expensive chat sessions. The same was true, metaphorically, of www.bartendingcollegeonline.com, www.ebartending.com, and www.zizoo.com. Each one taunted me with screen shots and personal testimonies but wouldn’t give up the goods without a credit card number. So I passed on the virtual cocktail-slinging and set about finding a real-world educator.

ABC Nationwide Bartending School (www.abcbartending.com, 1-888-262-5824) looked promising but seemed a little too corporate for my taste. Other schools, such as National Bartenders School (870 Market, suite 828, SF; 415-677-9777, www.nationalbartenders.com), seemed legitimate but didn’t quite have the attitude and style I associate with the glamorous life of a bartender. I want to be Tom Cruise in Cocktail, not the sad barkeep from Billy Joel’s "Piano Man." I want to serve mojitos, cosmos, and lemon drops to drunk yuppies, ending every night with fistfuls of easy cash and invitations to cologne-drenched orgies. Glamour! Eventually, I seemed to find perfection in the San Francisco School of Bartending (760 Market, suite 833, SF; 415-362-1116, www.sfbartending.com), a school run and taught by local SF bartenders — sort of a FUBU for mixologists.

It works like this: for about $300 (a slow night’s tips for the average SF bartender) you get hands-on training and insider information from a seasoned professional. The classroom simulates an average pub, with music, neon beer signs, and a supersize bar with a pouring station for each student. There’s homework every night, a daily quiz, and a final exam. Near the end of every minisemester, students get a consultation with a professional résumé builder who has magical contacts to the city’s premier restaurants and bars. It’s a boot camp for bartenders, taught by some of the toughest and most knowledgeable drill sergeants around. The slick Web site, affordable price, and sense of community won me over. After a few simple clicks I was all signed up for a two-week course ($295, financing available).

ORIENTATION


When I arrived at the SFSOB bright and early on a Monday morning, I was immediately greeted by Gretchen Mitchell, a veteran bartender who has served in more than 50 restaurants and bars in her 19 years in the industry. She wasted no time getting started. "All right class, answer me this: if someone comes up to my bar and tries to get a slow screw up against the wall, what am I going to do?" There were blank stares all around as the other students and I tried to think of the right answer. "Should I give a knowing smile and assume the position?" she said. "Hell no! I don’t think so. A Slow Screw Up Against the Wall is a mixture of sloe gin, vodka, and orange juice with a splash of Galliano. I know this, not because I have it memorized, but because I think like a bartender, and that’s exactly what we’re going to teach you to do over the next two weeks. Now get behind your stations and get ready for some action." She paused, then added, "You’re gonna thank me, guys. In no time at all you’ll be having ‘creamy sex on the beach’ with a whole gang of ‘redheaded sluts.’ And ladies, you’ll be serving up expert ‘blow jobs’ and ‘screaming orgasms.’ " With that, class had begun.

LEARNING TO POUR


I usually wait until around noon to have my first alcoholic beverage, but today was different. It was only 9:30 a.m., and here I was under the soothing neon lights of a real bar. Credence Clearwater Revival played in the background as I wiped down my section of mahogany, filled my ice chest, and got ready to make some drinks. Mitchell passed out laminated cards with pictures of simple drinks like tequila sunrises and screwdrivers and then drew our attention to overhead computer monitors. She was now the patron, and the other students and I were the all-powerful barkeeps. Laid out before us were soda guns, ice scoops, and quick-access mixers. Behind us were countless bottles of fake alcohol, glasses, and towels. We were ready.

"All right, guys, here’s how it’s gonna work: I’m going to walk you through the first couple of drinks, show you how to measure an accurate one-ounce shot without a cup, demonstrate the proper way to hold things, and so on. Then the computer is going to take over for a while. But before I do all that, I want to see what you already know." Mitchell took a breath, looked around, and then said, "Make me a screwdriver right now."

It seemed like an easy request, but as I fumbled around looking for orange juice and vodka, I realized I didn’t know how to mix them correctly. Mitchell watched as we tried to bullshit our way through the exercise. Some scooped ice with their glasses (a major no-no), poured in the orange juice, and then topped the concoction off with a haphazard shot of vodka. Others grabbed the vodka with two hands and then apprehensively poured it into an empty glass before adding the other ingredients. Our new sensei watched in disgust. Soon there were 11 crappy-looking screwdrivers sitting on the bar. The lesson behind the exercise was unmistakable: we didn’t know shit.

We spent the rest of the morning learning proper pouring techniques, standardized orders of mixing, and some light terminology. After lunch we came back and stumbled through a simulated happy hour during which the computer flashed orders while Mitchell marched to and fro shouting suggestions. I thought it would never end. With sweat pouring down my face, fake liquor soaking my shirt, and freezing hands, I poured drink after drink until Mitchell suddenly screamed, "Last call!" The computer stopped flashing. "Good job, guys," she said. "Shift’s over. Now clean up your stations and go home. Remember today’s lesson: bartending is a lot more complicated than you think. It’s not just Bukowski. It’s F. Scott Fitzgerald too."

The rest of the week followed a similar pattern. Mitchell lectured the class on a particular aspect of bartending and then turned the computer on and paced back and forth as we struggled to make drinks. Her teaching style grew warmer over time; eventually, she replaced her cold commands with a soft hand and a helpful voice. Under Mitchell’s guidance mixing drinks became second nature. I could pour a mai tai in a second. Mojitos, cosmos, dirty martinis — I could shoot them all out with ease. By the fifth day I felt like a pro, but I wondered if it was going to work. Would a two-week bartending course be all I needed to get a job? I sought the advice of some experienced bartenders.

THE REAL WORLD


According to Cory Norris, a bartender at an Irish pub in the Mission, the answer is no.

"Man, people come in with those certificates, acting like professionals, but once they get behind the bar, they’re fucking lost. The only way to get good at bartending is to jump in the fire. Those classes only work for people with big tits and blue eyes."

Another bartender, Tommy Basso, owner of Delirium, reiterated Norris’s sentiments. "You can’t learn bartending at a fucking school, kid. You’re gonna get back here and choke. You’re gonna have five dudes mad doggin’ you in the corner ’cause you forgot their beers, two chicks at one end of the bar stealing your cherries, two others chicks distracting you with their tits in the middle, and 20 drinks to make. You’re not gonna know what the fuck to do. Those schools are bullshit."

Basso and Norris scared me. Had my $300 been spent in vain? Had I been duped? In an attempt to assuage my anxiety, I went back to the SFSOB and asked Shawn Refoua, one of the other instructors there, about the real-world difficulties of gaining a foothold behind the bar. Refoua was familiar with the antischool attitude. "There is a scholastic component to every trade." he said. "I mean, can it really be true that bartending is so magical that you can only learn it in the field? That line of thinking just doesn’t make sense." Refoua has been teaching classes at the SFSOB for almost two years and has seen hundreds of students get good jobs. Like most teachers there, he keeps in close contact with his students via the Internet, using his MySpace page to notify them of job openings and changes in the industry. "I wouldn’t worry about people who say bartending schools don’t work," he said. "It’s true that a lot of people either fall into bartending or lie their way in. Maybe that’s why there are so many shitty bartenders around here. Many states actually require certification, you know."

As an SFSOB teacher, Refoua could be a little biased, of course. And real-world bartenders naturally look down on newbies. Any smart-ass could conclude, though, that both have good points. A self-taught bartender knows how to deal with a drunken crowd, and a school-taught applicant comes equipped with a deep understanding of liquor ratios, bar etiquette, and efficient pouring techniques.

I now feel confident enough to submit my résumé to all the places in my SFSOB counselor’s little black book. I can shake, stir, pour, mix, blend, and guess the ingredients in foreign drink names with ease. As far as handling belligerent drunks — well, I’m not worried in the slightest. My friends have taught me well. Just last night I had to stop one of them from jumping out of a fourth-story apartment, slap another in the face for throwing an egg at my girlfriend, and convince yet another to not buy more cocaine at 4 a.m. Bar owners of San Francisco, prepare yourselves. There’s a new cocktail jock in town. *

Mayor Chicken

The format is always the same: Mayor Gavin Newsom shows up at a carefully scouted location somewhere in the city with his perfect tie and perfect hair. He brings a cadre of department heads in tow, sending the clear message that he can deliver government services to the public. He takes a few questions from the audience, but the format allows him to deflect anything tough, to delegate any problems to department heads, and to offer a thoughtful “we’ll look into that” when the need arises.

There is no substantive discussion of anything controversial — and no chance for anyone to see the mayor debate contentious issues.

This, of course, is by design.

Newsom has made it very clear during his first term as mayor that he can’t take the heat. He is the imperious press release mayor, smiling for the cameras, quick with his sound bites, and utterly unwilling to engage in any public discussion whose outcome isn’t established in advance.

He has become Mayor Chicken.

So don’t expect any leadership from Newsom during an upcoming series of what the Mayor’s Office is calling “policy town hall meetings” that have been hastily scheduled this year, beginning Jan. 13 in the Richmond District with a discussion of homelessness. The town hall meeting is just politics as usual for Newsom. Since taking office in 2004, he’s held eight of these stage-managed events.

“He does a good Phil Donahue shtick,” says Sup. Chris Daly, recalling one such town hall meeting Newsom held in Daly’s District 6 after he was elected mayor. “Scripted town hall meetings are smart politics for Newsom.”

Scripted events weren’t what Daly had in mind when he wrote Proposition I, which calls on the mayor to appear before the supervisors once a month to answer questions. And these campaign-style events certainly weren’t what voters had in mind Nov. 7, 2006, when 56.42 percent of them approved the Daly legislation, which asks the mayor in no uncertain terms to appear “in person at regularly scheduled meetings of the Board of Supervisors to engage in formal policy discussions with members of the Board.”

Examiner columnist Ken Garcia — a conservative hack who regularly sucks up to Newsom — recently dismissed the voter-approved measure as “a silly, obvious stunt to play rhetorical games with the mayor,” which is how the Newsom camp would like to spin things. But Daly recalls how when he first mentioned the idea of a mayoral question time — back when Willie Brown was still in Room 200 — he was sitting next to then-supervisor Newsom, “who thought it was a great idea.”

It’s hardly an unprecedented concept. Ken Livingstone, the mayor of London, meets with his city’s assembly 10 times a year and presents a detailed report on initiatives and progress. But now Newsom is mayor, suddenly Daly’s idea doesn’t strike him as all that great any more.

While it’s easy to accuse Daly of playing political games, it’s not so easy for Newsom — who loves to talk about the “will of the voters” — to dodge Prop. I. Newsom’s decision to snub voters and avoid real debate was so obvious that he got beat up on both the Chronicle and Examiner editorial pages, on several prominent local blogs, and in television broadcasts. Perhaps that’s why he decided this week to show up and give a speech at the Board of Supervisors inauguration Jan. 8, the first time in years he’s set foot in those chambers. He’s trying to look like he’s complying with voters’ wishes when he’s really doing nothing of the sort.

 

THE “KUMBAYA MOMENT”

It didn’t have to be this way. As board chair Aaron Peskin’s legislative aide David Noyola told the Guardian, immediately after Prop. I passed, Peskin tried to “depoliticize the issue” by becoming the sponsor of a motion to amend board rules.

Peskin’s motion aimed to make space on the board’s agenda for the mayor every third Tuesday so he could address the supervisors on policy matters — a matter he planned to discuss at the Dec. 7 meeting of the Rules Committee.

But two days earlier the mayor took his first jab at ducking the intent of Prop. I. He sent the supervisors a letter in which he claimed that to truly serve the public interest “we should hold these conversations in the community.”

Next, Newsom sent staffers to the Rules Committee hearing, where members discussed how not to force the implementation of Prop. I down the mayor’s throat — and the mayor’s staff claimed they’d be happy to work with the committee to that end.

As a result of this “kumbaya moment,” as Noyola calls it, the Rules Committee decided to continue the item to the following week to have more productive conversation. Meanwhile and unbeknownst to them, 19 minutes into the hearing, the Mayor’s Office of Communications issued a press release outlining Newsom’s intent to hold a town hall meeting in the Richmond District on Jan. 13 — which the mayor said would substitute for complying with Prop. I.

“The Rules Committee was blindsided by the mayor’s press release,” Noyola says.

The mayor, of course, said that all the supervisors were welcome to attend his town hall event and participate in the discussion, giving the appearance he was happy to debate but wanted to do so out in the neighborhoods. But that was a lie: Newsom and his staff knew very well that under state law, the supervisors were barred from participating in any such event.

According to the Brown Act, if a quorum of supervisors wants to be somewhere to discuss business that may be before the board in the future — such as homelessness — and if it wants policy interactions, the clerk must give notice that the supervisors intend to hold a special meeting.

The board actually discussed Newsom’s invitation, and board clerk Gloria Young estimated it would cost $10,000 to $15,000 to staff. It also raised serious procedural and legal questions for the board.

In other words, Newsom knew the supes couldn’t just show up and ask questions.

“But if the mayor wants people to just sit and attend a presentation in the background, like at a speech or a Christmas event, then special meeting notice isn’t needed,” notes Noyola, explaining why Peskin ultimately dismissed the mayor’s invite as “childish” — and why Peskin now says he’d support making question time a charter amendment, thereby forcing the mayor to comply with the will of the voters.

 

WHO’S PLAYING GAMES?

While the Newsom camp continues to dismiss the Daly-authored Prop. I as “political theater,” the supervisor is quick to counter it’s the Mayor’s Office that’s playing games.

“They claim political theater, but if that’s what it takes to get serious policy discussions going, then so be it,” says Daly, noting he has had one private discussion with the mayor in two years, while Sup. Geraldo Sandoval has not talked to him at all. “Newsom claims he has an open door to his office, but so do I — and he’s never been to mine. For the mayor to refuse to discuss important policy items and hide behind ‘I’m afraid of Chris Daly’ is pathetic. Willie Brown probably would have come.”

Daly also observes that San Francisco’s government is structurally unique within California because it represents a city and a county.

“It’s an awkward setup in which there is little formal communication between the board and the mayor,” Daly says, “other than when the board forwards legislation to the mayor for him to approve or veto.”

It’s a structural weakness that hasn’t been helped by the fact that in the three years since he was elected, Newsom only appeared before the board twice — this week and for the board inauguration two years ago — both times giving a brief speech but not engaging in dialogue. It’s an anomaly without precedent in the history of San Francisco. (It’s customary for mayors to deliver their State of the City speeches in the board chambers, but Newsom has done all his at venues outside City Hall.) Most mayors also make a point of occasionally appearing at board meetings (Willie Brown would sometimes even take questions from the supervisors).

On Jan. 8, Newsom slipped in at the last minute and sat next to Peskin until it was his turn to make some brief remarks, an opportunity that immediately followed public comment, during which a baseball-capped woman pleaded with the supervisors to “please kiss and make up with mayor.”

After Peskin welcomed “the 42nd mayor, Gavin Christopher Newsom, to these chambers where you are always welcome,” Newsom rose — and was hissed by a few members of the audience.

“This is a city that’s highly critical of its leadership and that expects greatness from its leaders,” the mayor said. “I have great expectations of 2007…. The key is to work together on the things that unite us…. I look forward to engaging with each and every one of you.”

 

WORKING TOGETHER

This isn’t just politics — there are serious issues involved. Without the monthly question time the Board of Supervisors requested and the voters approved, it’s hard for the city’s elected district representatives to figure out if this mayor actually supports or even understands the issues he claims to champion.

Last year, for example, Newsom was happy to take credit in the national press for the universal health care package that actually came from Sup. Tom Ammiano. But when Ammiano got blasted by business leaders, Newsom didn’t rush to defend the plan; it was hard to tell if he even still supported it.

Business leaders didn’t like that the proposal required employers to provide health care insurance. But Newsom’s own staff recognized that without that mandate, the plan would never work. Did the mayor support it or not?

The situation prompted Sup. Ross Mirkarimi to characterize the mayor’s proposal as “a one-winged aircraft that doesn’t fly,” and it was left to Newsom’s public health director, Dr. Mitch Katz, to confirm that both the voluntary and mandatory pieces of the legislation are joined at the hip. “One can’t successfully move forward without the other,” Katz said at a July 11 board meeting, which Newsom, of course, did not attend.

Since then, the mayor’s commitment to the amalgamated health care package has been thrown into question once again, this time thanks to a lawsuit the Golden Gate Restaurant Association filed only against the employer mandate aspect of the legislation.

The GGRA, which filed its suit the day after the election, is a Newsom ally that funneled more than a half million dollars in soft money into Rob Black’s unsuccessful campaign against District 6’s Daly and into Doug Chan’s coffers for his disastrous fourth-place showing in District 4.

Asked if he knows where the mayor stands on the city’s universal health care plan, Ammiano told the Guardian, “We’ll be meeting with Newsom in the new year and asking for a press conference in which we both pledge to give our continued support for all aspects of plan, but that’s not yet been nailed down.”

Ammiano’s experience is one example of repeated communication breakdowns between Newsom and the board, which have severely hindered policy discussions and the cause of “good government” to which Newsom so frequently pledges his fealty. As a result, Newsom has often ended up vetoing legislation only to reveal in his veto letter that all the legislation needed was a few minor tweaks — changes he might have just asked for had he been more engaged.

Consider how a year ago, Newsom vetoed legislation designed to limit how much parking could be included along with the 10,000 units of housing that were to be built in downtown San Francisco. The legislation was proposed by Newsom’s planning director, Dean Macris, and supported by every member of the Planning Commission but one.

When Newsom caught heat from downtown developers over the measure (see “Joining the Battle,” 2/8/06), he sent surrogates to muddy the waters and make his position unclear until after it was approved by the board. Newsom vetoed the measure, then proposed a couple prodeveloper amendments that hadn’t been brought to the board discussions.

“I’m trying to get the political leaders to come to an agreement because the city needs this,” a frustrated Macris told the Guardian at the time.

A few months later the board was similarly blindsided when it tried to approve legislation that would have created a six-month trial closure on Saturdays of some roads in Golden Gate Park. Newsom’s board liaison, Wade Crowfoot, worked closely with bicycle advocates and sponsor Sup. Jake McGoldrick to modify the legislation into something the mayor might be able to support.

Everyone involved thought they had a deal. Then, for reasons that still aren’t entirely clear, Newsom vetoed the measure. One of the reasons he cited was the fact that voters had rejected Saturday closure back in the 1990s, before the construction of an underground parking garage that still never fills up.

“For what it’s worth, what really sells it for me on this issue of the will of the voters was the shit I went through after Care Not Cash, when the voters supported it and [my critics] did everything to put up roadblocks. And I was making a lot of these same arguments, you know, so this hits close to home,” Newsom told the Guardian a few days after he vetoed Healthy Saturdays.

His words seem ironic: he loves the will of the voters when it suits his interest but not when it requires him to act like a real mayor.

This isn’t the first time Newsom’s been selective in honoring what the voters want: he also refused to hold up the Candlestick Park naming deal with Monster Cable, even though voters rejected it through Proposition H in 2004.

Last October, Newsom’s veto of Mirkarimi’s wildly popular foot patrol legislation led to a humiliating 9–2 override in November, but not before he’d dragged San Francisco Police Department chief Heather Fong with him through the political mud and created an unpleasant rift between himself and his formerly loyal ally Sup. Bevan Dufty.

Newsom has tried to spin his refusal to engage in question time as something other than defiance of voters by proposing the upcoming series of town hall meetings.

“Bringing these conversations to the neighborhoods — during nonwork hours — will allow residents to participate and will ensure transparent dialogue, while avoiding the politicized, counterproductive arguing that too often takes place in the confines of City Hall,” Newsom wrote in his Dec. 5 letter.

But even the Chronicle and the Examiner — neither of which have been supportive of progressives in City Hall — have condemned Newsom for ducking this fight. On Dec. 18, Chronicle editorial writer Marshall Kirduff opined, “There is no end of topics to discuss — a Muni overhaul, a new neighborhood coming to Treasure Island, police policies, the ever-with-us homeless. The city could do with more debate even at considerable risk of dopey rhetoric. That means the mayor should step out of his office, walk across City Hall and face the supervisors. It’s time to bring on the questions.”

Meanwhile, Daly notes the mayor has been spending excessive time out of state, not to mention making frequent trips to Southern California. “I think we should subpoena the guy; he doesn’t know what’s going on,” Daly quips.

A classic example of Newsom’s cluelessness about the local political scene occurred live on TV shortly after 59 percent of San Francisco voted to impeach President George W. Bush and Vice President Dick Cheney. Asked during a Nov. 16 City Desk News Hour interview with Barbara Taylor about Proposition J’s passage, Newsom said, “I am told Congress is going to come to a halt next week, and they’re going to reflect on this new San Francisco value. Before you impeach the president, you should consider the guy who would become president. Why don’t you start with the top two?”

Yup, it’s definitely time to bring on those questions. *

Get in the Vans

Not surprisingly, a sneaker store was the meeting place for two young members of the popular East Bay hip-hop quartet the Pack, whose slow and smoldering bass-heavy runaway rap hit "Vans," about the "punk rock shoe," has the infectious hook "Got my Vans on, but they look like sneakers."

"Me and Stunna went to the same school. So we knew each other," Lil Uno said. "But one day we just both happened to be in the same shoe store … and it was sort of by accident how it all happened." That fateful day in 2005 set the stage for the formation of the four-member Wolf Pack, as they were originally called. On Dec. 19, Jive/Zomba, via the Too $hort imprint Up All Nite, released their national debut, Skateboards 2 Scrapers, an EP with seven songs that features two versions of their "My Adidas"–style sneaker hit for the hyphy age, including the "Vans Remix," featuring the godfather of Bay Area rap himself, Too $hort, plus an appearance by the "Tony Hawk of the ghetto," as the Pack call him, Mistah FAB. The disc should tide fans over until the release of the group’s full-length in April.

Speaking recently by cell phone from Berkeley, on a break from his School for the Performing Arts–tutored lessons, the now-17-year-old Lil Uno continued his sneaker-seeking tale. Stunna "had actually just bought a pair of shoes that I wanted, and I had just bought a pair of shoes that he wanted…. They ran out of his size, and they ran out of my size. So we actually ended up trading a pair of shoes for a pair of shoes." He laughed. "And then later on we end up making a song about shoes. Funny how things happen."

Indeed! But what happened immediately was Lil Uno invited Stunna to a party in San Francisco. It was at that party that he met producer-rapper Young L and rapper Lil B, who had already started recording music together. "The next day they asked me to go to the studio…. It was all four of us. And since then it’s been the Pack," Lil Uno said of the very young group (the oldest member is 19). So confident is Jive in their success that it has designed a limited edition Vans skateboard. Vans, the lucky shoe company getting all the free promotion, is planning a Pack shoe.

Meanwhile, the Pack have been busy. Since forming in 2005, the tireless group has recorded more than 150 songs; put out several regional rap full-lengths, including their Wolf Pack Musik series; been taken under Too $hort’s wing; and used MySpace to full advantage in getting heard.

"They’re inspiring because despite their young age, they are really creative and also really eager about learning about music and the music business," said Taj Mahal Pilghman, general manager, project coordinator, and engineer-producer. "And $hort has really taken the time to let them go in and do their thing and then school them afterwards."

"Vans" was just one of many songs the Pack posted on MySpace. "[‘Vans’] took off. It ran, and there wasn’t really any stopping it," Lil Uno said. His fellow band member Young L, who produced the track, added that "MySpace gets about 25 to 30 percent credit for us getting signed…. But without it, we would have had a much harder time being heard."

Regardless, Young L, now 19, is as surprised as his fellow Packers about the unbridled success of "Vans," which is currently heard in numerous amateur videotaped dance numbers posted on YouTube. "We didn’t think it would be such a hit. With that song we were just having fun, really," the skilled young producer explained. He laced up the track for the minimal hypnotic beat in no time, using Reason and ReCycle software. And the voice that recurs throughout the song saying "Young L" but sounding like "You’re new" (the phase that has become the Pack’s trademark) is a vocal he cranked out on the FruityLoops program.

For the upcoming album, however, he wants to "incorporate more real instrumentation," and at press time, he was meeting with Lil Jon, who will reportedly coproduce it.

Young L, who grew up soaking up the sounds of "Too $hort, 2Pac, the Cash Money crew, as well as Jay Z and Rock-a-fella," doesn’t think the Pack should be stuck to any one sound, as is threatening to happen. "We have hyphy songs," he said from Berkeley. "But I don’t think we are a hyphy group, because hyphy is based on high-energy, hyperactive lyrics and beats, and our sound is more varied than that." One example is the Miami bass–styled track "Candy" on Skateboards 2 Scrapers, which at times echoes 2 Live Crew’s "Get It Girl" and other Luke tunes. "We’ve always been into Miami bass, especially Lil B, who has always been into Uncle Luke," Young L added. "We just love good music!" *

Maykadeh Persian Cuisine is a great date restaurant, classy but not too pricey, and there are lots of veggie options both for appetizers and entrées. NOB HILL/RUSSIAN HILL

Ah Lin offers Mandarin-style Chinese cooking in an easy-to-take storefront setting on Cathedral Hill. The dishes are well behaved and tasty, with only an occasional flare-up of chile heat. La Folie could be a neighborhood spot or a destination or both, but either way or both ways it is sensational: an exercise in haute cuisine leavened with a West Coast sense of informality and playfulness. *Bodega Bistro has a certain colonial formality — much of the menu is given in French — and it does attract a tony expat crowd. Hayes Street Grill started more than a quarter century ago as an emulation of the city’s old seafood houses, and now it’s an institution itself. The original formula — immaculate seafood simply prepared, with choice of sauce and French fries — still beats vibrantly at the heart of the menu. Ararat Mediterranean Tapas affords the view-minded a good setting from which to scope the foot traffic at 18th Street and Castro, along with a Turkish-scented Mediterranean menu rich in small plates and some bigger ones too. The menu’s smash hits include coins of lavash-wrapped beef (a kind of Middle Eastern beef Wellington), an enslavingly good shrimp casserole, and a coil of baklava with lavender honey. Aslam’s Rasoi reinvents a gently fading curry house as a high-powered rival to Dosa, in the next block. The food is fiery and elegant, and the menu strikes a fine balance between fleshly and fleshless choices. Caffe d’Melanio is the place to go if you want your pound of coffee beans roasted while you enjoy an Argentine-Italian dinner of pasta, milanesa, and chimichurri sauce. Dosa serves dosas, the south Indian crepes, along with a wealth of other, and generally quite spicy, dishes from the south of the subcontinent. Front Porch mixes a cheerfully homey setting (with a front porch of sorts), a hipster crowd, and a Caribbean-inflected comfort menu into a distinctive urban cocktail. One of the funniest bits of post-dot-com cultural effluvia was a television ad in which a crestfallen yuppie keeps replaying a video of a CNBC broadcast announcing a NASDAQ of 5,000. (That index, as I write these words, is at about 2,400 — a far cry from 5,000, but a decent cry too from the deep crater of 1,100 or so that swallowed the sad yuppie’s stock portfolio.) The spot was funny mainly because of the Cinderella effect: clock strikes midnight, glittering carriages turn back into pumpkins, never to glitter again, apparently, since time — unlike videocassettes — cannot be rewound.

You will not find many pumpkins on the streets these days in the vicinity of Third and Brannan streets, nor for that matter anywhere south of Market. Maybe a few smashed ones around Halloween. What you will find, especially during business hours, is a lot of gleaming, late-model German automotive metal, and I don’t mean Volkswagens. If you didn’t know better, you might well think the big grandfather clock in the hallway had stopped ticking just short of midnight — at the stroke of 1999, say, when all the city was a stage for the profligate spending of venture capital.

When Aom Phanthong and Chris Foley opened their Thai restaurant, Koh Samui and the Monkey, in a warehousey building on Brannan near Third Street in 2003, the venture capital had all been spent. The New Economy’s tide had gone out, leaving a desolate beach scattered with flotsam, and there was little or no reason to think it would rise again. A postindustrial hipster Thai restaurant in SoMa was, in this sense, late for the train. But the food was good, the prices moderate, the vast expanse of polished wood floorboards a work of art, and by these and other means the place survived an interval of exhaustion.

But where there was once exhaustion is now … exhaust. At noontime on a weekday, the area’s streets are choked with cars moving and not, and inside Koh Samui it’s like a staff meeting for the Industry Standard, with everybody in $300 pairs of jeans. There is something disorienting about the observer’s experience here — do I wake or sleep? was it all a dream, or is this the dream? — yet the food is good and not expensive, and the floorboards are remarkably gorgeous. And a more relaxed tone, for those so inclined, can be found in the evenings, when the menu opens out from its prefab, slam-bam-thank-you-ma’am choices (including a bento box) into a longer and more leisurely list that encourages a degree of musing. The slower heartbeat at dinnertime is a clue that while this neighborhood is more residential than it was a decade ago, it will be more residential still a decade from now.

A signature element of Thai cooking is sweet heat, an artful combination of chili firepower with some kind of sugariness. At Koh Samui, you’re more likely to notice the latter than the former; even "spicy" dishes, we were told, are basically medium hot, while sweetness turns up all over the place, sometimes unchaperoned by any heat at all — in the cucumber salad ($3), for instance, a petite ramekin filled with cucumber slivers (and a few carrot threads for color counterpoint) and a vinaigrette almost balsamiclike in its honeyed weight.

Far more sweet than hot too is the golden, marmaladelike sauce accompanying the bags of gold ($7.95), a quintet of rice-paper sachets filled with minced chicken and shrimp, lightly deep-fried, and tied off at the top with dark green threads of nori. The bags would not look out of place hanging from a Christmas tree, though the minced meats inside were reticent and I could have done without the deep-frying. Fritters, on the other hand, we expect to be fried in some fashion, and Koh Samui’s sweet corn patties ($6.95) are worth the hot-oil tariff: irregular little bundles of juicy corn kernels in tender-crispy envelopes. The menu claims a curry spicing, but this was too faint to be noticed; cucumber reappeared as a condiment, this time cubed and tossed with slivered red onions in a vinaigrette more tart than sweet.

Big dishes feature lots of vegetables, even when the advertised ingredient is some sort of flesh. The firecracker sizzling seafood hot plate ($12.95) — fajitas, Thai-style — included a wealth of broccoli florets, green beans, and strips of green bell pepper (lots of green!) in addition to shrimp, squid, scallops, and crab claws. Wok-fried chicken breast ($9.95) added red bell peppers to the green, and also basil, with its distinctive peppery perfume. Prawns with cashew nuts ($10.95) offered a pleasant crunchiness — along with yet more green beans and bell peppers, this time in a sauce that tasted largely of soy.

Considering the congestion and pace at noon, the food is notably polished. A quick set lunch ($10.95) opened with two skewers of tender-grilled beef, along with mildly spicy peanut sauce to dunk them in, and finished with an excellent red-duck curry. (The poultry appeared in its coconut-milk bath as boneless slices still in morning coats of gold-roasted skin.) And grilled pork ($10.95), presented as strips of meat with sticky rice and mango salad, was juicy enough not to need peanut sauce. But most impressive were the po sod ($7.50), a trio of fresh spring rolls like little bells, filled with shrimp, mint leaves, and rice noodles — and no monkey business with the deep fryer! *

DVD-Arrr! Jason Shamai’s Mexico City Pirate Diary…Uncut!

One highlight of this week’s 2006 Film opus is Jason Shamai’s tale of DVD buying and watching in Mexico City. Here it is, sans the cuts required for it to fit into the newspaper:

When I got to Mexico City’s main ceremonial drag, where national parades and military marches are flanked by the Art Nouveau-style Palacio de Bellas Artes and the most striking Sears department store building you will ever see, it had transformed into a full-on tent city: blue tarp, camping tents, and thousands of political cartoons (ranging from the dryly satirical to the scatological) flowed east for at least half a mile and filled the Zócalo, the city’s vast central plaza where people had already been camped for weeks. Just a few days before, Mexico’s highest electoral court had confirmed National Action Party (PAN) candidate Felipe Calderon as the country’s next president. His opponent Andreas Manuel Lopez Obrador (AMLO), who challenged the cleanliness of the election that had him losing by a little over half of a percentage point, had asked that his camped-out supporters stay right where they were until they could force a vote-by-vote recount. The recount had been denied and Calderon was now certain to replace outgoing president Vicente Fox, but AMLO’s supporters were still there in their virtual city within a city.
