NOISE: Bingo! And bangin’, bizzy Deerhoof

Taxes, zits, and coffee breath – these things are eternal. Add to that list “Rock ‘n’ Roll Bingo” at Blankspace in Oakland on Sept. 1. This third installment of the Oakland Art Murmur event featured the Bay’s winning bro-duo Moore Brothers and Santa Cruz chamber-goofers Antarctica Takes It (Bookends canceled, shoot). Most amazing – this writer took home an awesome prize (a fine alternative to the unicorn thrift scores): a tote bag design original by artist Tonya Solley Thornton. Bingo, indeed.

A few days later on Sept. 5, we stopped by Great American Music Hall to catch Marc Ribot’s Ceramic Dog (with longtime local Ches Smith on drums) and our pals Deerhoof.

Onetime guitarist-bassist Chris Cohen will be missed, but man, has John Dieterich stepped up, big time. The ‘Hoofies are approaching their songs from new, streamlined angles. Awesome, as usual. Before the show, drummer Greg Saunier had tales to tell from the road and Radiohead (Jonny Greenwood did their lights on their last show together in Europe, Saunier said).

Deerhoof was off to LA right after the show, he added, to finish mixing their forthcoming new album, Friend Opportunity, which the band worked on while out with Radiohead (it’s scheduled to come out Jan. 23, 2007). Next it was off to tour the East Coast with Flaming Lips.

When will we see Greg, Satomi, and John again? Not soon – the trio was also in LA recording and co-composing a score for Justin Theroux’s new film, Dedication, starring Billy Crudup, Mandy Moore, Tom Wilkinson, and Amy Sedaris. And a Milk Man ballet, inspired by the Deerhoof album, is in the works in October at the North Haven Community School in North Haven, Maine. Their likes won’t be seen again till Nov. 11 at RIOTT! at Bill Graham Civic. So count yourself lucky, Deerhoofies, that you saw ’em before they scampered off into the wilds again.

Of the top 10 questions I am most often asked about restaurants in the city, the top two by far are “Which is the best?” and “Which is your favorite?” Since “best” is a snake pit of competing considerations and unacknowledged biases, I am happier with the second, which is all about acknowledging one’s biases — about being in touch with the inner bias. For me, it is also far easier to answer, since my favorite restaurant in the city, the one I have recommended to inquiring minds for more than a decade, is Hawthorne Lane. (And a brief digression here for the honorable mentions: Firefly, Delfina, Gary Danko, and Boulevard, each reliably sensational in its way.)
How do I love Hawthorne Lane? Let me count the ways. The food, of course, has always been exquisite, though the many Asian touches favored by the original chef, Annie Gingrass, are much less in evidence under the current regime of Bridget Batson; the only more-or-less intact survivor I recognized from the old days is the Chinese-style roasted duck.
Speaking of survivors: the restaurant itself qualifies as one, having surfed the treacherous dot-com wave and its rough aftermath with grace and without frantic reinvention. The restaurant still looks much as it did when it opened in 1995: there is handsome ironwork on a glorious old brick building, a casual front room whose ovoid bar stands amid a ring of booths, and a regal passageway to the main dining room, with its exhibition kitchen, banquettes upholstered in rich fabrics (some floral, others striped), and plenty of paintings (most of the colorful-squiggly school) on the walls. The look, with its meant-to-last fusion of traditional and modern elements, is timeless and has worn well.
Best of all, you can offer this observation and many others across your table without having to shout to be heard. You might even be able to whisper, or at least murmur. For Hawthorne Lane has artfully managed noise from the beginning, and on that basis alone it long ago won my heart. The place is busy and it is lively, but while the cauldron of sound simmers and bubbles, it never boils over. The result is a restaurant in which it is possible to converse while enjoying the food, and for some of us this basic and ancient mix of satisfactions remains one of the heights of civilization.
The food would be enjoyable in any event. While I mourn the passing of the $28 three-course prix fixe option — offered in the dark autumn of 2001, when air travel was stunted and tourism anemic — I am glad to find that most of the main courses on the ever-changing menu are now available in half sizes (at reduced if not quite halved prices), an innovation that encourages the trying of more dishes and the ingestion of fewer calories while helping with money management. (Hawthorne Lane is expensive, and you could easily drop $100 a head there, but you can also spend quite a bit less and not cheat yourself.)
One of the few big dishes not offered in smaller guise on the main menu is the Chinese duck — but it did turn up as a downsized item (for $15) on the bar menu, inclusive of split scallion buns with which to make little duck sandwiches. We agreed that the finger-food angle was fun, but the dish on the whole seemed to be a little out of tune, with too much vinegar in the sauce, like a light on an overcranked dimmer. Could this imbalance perhaps be because the duck is a signature dish from a regime that’s no longer there?
Otherwise, Batson’s cooking is both passionate and elegant. From the fire-breathing brick oven emerges a small but memorable procession of clever pizzas, among them a pie ($12) topped with prosciutto, Mission figs, and arugula leaves: an artful combination of salty, sweet, and nutty, with plenty of white cheese to serve as emulsifier. Squash blossoms ($14), icons of summer, are stuffed with goat cheese and basil, tempura-battered into flute shapes, deep-fried, and presented on mixed greens with a pool of soffrito and cherry tomatoes.
Even more deeply imbued with the essence of summer, if that’s possible, is an heirloom tomato risotto ($13 for a half portion), intense with tomatoey-ness despite its golden color and enriched with plenty of parmesan cheese. The dish is like a distant, aristocratic relation of mac and cheese, with the differences as apparent as the familial similarities. We caught no plebeian echo, on the other hand, in the crisped striped sea bass ($17 for a half portion). The small chunk of filet was indeed well crisped, the better to stand up to a cap of peperonata and a few coins of fennel root (nature’s little breath mint) braised with leek and pancetta.
The half-sizing joyride ends abruptly at the dessert border. But this poses no hardship, because people seem routinely to share desserts in a way they do not always share savory courses. It helps that Hawthorne Lane’s desserts are big and complex; we saw a trio of the seasonal sorbets — spooned cornucopia-style into crisp fruit cups — arriving at the next table and silently wished that couple luck for the long march. For us, the matter at hand was the fetchingly named peach buckle ($9.50), a kind of stone fruit coffee cake with slices of Frog Hollow peach atop an almond streusel and cinnamon meal baked over everything, like stucco. TECHSPLOITATION I was in front of a computer when the Twin Towers went down. The morning light flooded Charlie’s tiny studio apartment kitchen, where she’d parked her computer desk in a spot that another person would have used for a breakfast nook.
“Holy shit,” she said. “Look at the Washington Post!” I stared blearily at the monitor, coffee mug in my hand, and saw pictures of smoke. Charlie continued clicking and clicking on news. It was everywhere: live streams and up-to-the-second photographs of the towers as they burned.
One had fallen. Then the other one did. That morning we consumed hundreds of images and lines of electronic text, at the edge of a future I couldn’t fathom. Shit was going to happen, that’s all I knew.
My phone rang an hour later: it was Ed, whose plane from Japan to San Francisco had been diverted to Vancouver. No planes were entering or leaving US airspace.
What happened in geographical space was just the thin end of the wedge.
Shifts more dramatic than anything I could have imagined occurred on our electronic communication networks. The phone system and the Internet formed a new ground zero, a place where “fighting terrorism” became a force more socially disruptive than terrorism itself.
In the weeks that followed, flags and half-baked, vengeful ideas
spattered the mediascape online. ISPs allowed the government to install “carnivore” devices on network backbones, thus allowing the government to eavesdrop on everybody’s Internet traffic. Passage of the USA-PATRIOT Act allowed law enforcement to send secret subpoenas to online service providers for information about their customers.
Those of us critical of the US policies that led to the attack literally whispered to each other about it. We were afraid to say what we thought of the government crackdowns.
Something changed the Internet forever during the surreal years after the attack on the World Trade Center, when we went to war with a country whose citizens and leaders had nothing to do with what happened on September 11, 2001. Data mining was weaponized.
The ability to track hidden information patterns in vast piles of
unsifted data, once the purview of obscure academic articles and some start-ups with weird names like Inktomi and Google, became the touchstone of government efforts to track down terrorists. If a lack of intel is what allowed the terrorists to get us, then by gum, the spooks were going to get as much intel as they possibly could.
As a result, we got John Poindexter pushing misguided programs like Terrorism Information Awareness (TIA), which would allegedly be a giant computer operation in which all the data in the universe would be crunched and “patterns” would emerge to lead government agents to dens of bomb-making bad guys. It also led to the NSA’s now infamous (and probably illegal) surveillance of all the telephone and Internet data passing through AT&T’s wires — as well as the wires of several other major network providers.
Both of these programs rely on the idea that you can find a terrorist
needle in a haystack of data. And both were made far more dangerous by the rise of consumer products like Gmail, Flickr, and MySpace — giant databases of personal information, often tagged with keywords for easy searching. As many pundits (including myself) have said, we’re creating our own surveillance treasure trove.
But what that analysis leaves out is something near and dear to the
American spirit: the people have weapons too. It isn’t just the
government that can turn data mining into a weapon. The citizens can do it too, often better. And so the years since the Sept. 11 attacks have witnessed a blooming of what Dan Gillmor calls “citizen journalism.”
When the mainstream media wouldn’t report what was going on, people turned to alternative sources of news, including online sources. Bloggers became the new investigative reporters.
The groundwork laid by these subversive data miners continues today. The community of online journalists and researchers revealed that an AP photo of the fires in Beirut had been doctored. Bloggers sounded the alarm when upstart photographer Josh Wolf was arrested for refusing to hand over to police video he’d taken of a G-8 protest in San Francisco.
It’s no accident that the rise of blogging coincides with the rise of
government surveillance online. The people are watching too. SFBG

I was on antidepressants for a year and just came off them recently. It was situational; I have no other psych history. I’ve always fantasized about being submissive but never seriously acted on it. But since I’ve been off the medication, I’ve experienced an intense surge of sexual interest. I’ve developed an online relationship with someone in which I am his sex slave–toy. I’ve just sent him some pictures of me. I’m a professional and my friends and family have no idea.

In my little subcultural corner over here, not a thing, but I wouldn’t be so sanguine about it if I had evidence that you wished yourself harm or were not, as they say, tall enough to ride this ride. You seem a cautious, even somewhat timid sort of girl though, and while that might hold you back a bit, it’s better to be held back than to hurtle blindly over a cliff.
I know a couple who established a relationship like yours, never intending to meet, let alone fall in love, and last time I heard, they were living on a boat and raising kittens. That’s rare though. More typically, what happens online ought to stay online, if you ask me. I don’t mean online dating; that’s fine, but if you’ve established a master-slave deal with this guy based on nothing but, well, mastery and slavishness, what are the chances you are otherwise compatible?
Keep Mr. Web Master–your Web master as a toy (he’s your toy as much as you’re his) and start from scratch. If you’re not out trolling for scary strangers who could actually hurt you and you’re not being driven so crazy by twisted desire (can’t you see the pulp-style illustration?) that you can’t maintain your respectable, professional standing, you don’t need counseling. You need to read some books (not the pulp kind, the kind they sell at nice sex stores), join an S-M educational group or attend some “munches” (coffee klatches for would-be perverts), and start experimenting with being the sort of sex slave who sheds her collar after a couple hours and goes home and feeds the cat. This sort of program, entered into knowledgeably and pursued in moderation, ought to get you where you want to end up: as a “slave” who commands respect and controls her own destiny. There’s no such thing in real life, but this is hardly real life, and that’s the point.

I’m not-so-recently divorced and starting to think about having sex again. Not a bad idea, but you don’t have to buy anything. (You really have been gone awhile, haven’t you?) Porn is free for the finding all over the Internet, and you should be able to find representations of not just BDSM scenarios but the exact BDSM scenarios you used to act out with your husband — minus the husband. Looking at or reading some of this stuff may not fully exorcise your husband’s unwelcome ghost — it probably won’t — but it is sure to help. BDSM also, unlike other sexual proclivities, has the advantage of being a spectator sport. If you live in or near or can visit a major metro area — the kind that can support a leather shop or two and has a gay pride parade featuring humans, not golden retrievers, being proudly leash-walked through the center of town — there will be some sort of club or private party circuit where you can see S-M in action. The disadvantage of live display is that the people are unlikely to look as good in leather panties as do the models on the Internet. Plus, you have to be polite to them and ask if you can watch — in short, you have to talk to them. The advantage, of course, is that you do have to talk to them and thus might make a friend or find someone who is neither your husband nor the ghostly afterimage of your husband with whom to do S-M. This is all very hard work, and for the confirmed introvert it (speaking) will never come naturally. But compared to being alone, lonely, haunted, and unable to masturbate, it’s got to be a breeze.

CHEAP EATS This week’s madcap adventure begins with a cute little kitten toddling into the chicken farmer’s life and saying, in effect, “Help!” Must of been abandoned by its mama. People sometimes abandon cute little kittens too, in the wild, but usually not out back behind the water tank. They leave them in a box by the road.
So OK, what to do with a cute little kitten, so small it can barely stand and doesn’t quite know how to eat yet? I took it inside my shack and showed it to a platter of milk and Weirdo the Cat. Maybe in the back of Weirdo’s indoor-atrophied peanut brain she would have enough residual mothering instinct to teach a hungry helpless furball how to lap up milk.
Weirdo sniffed the cute little kitten, hissed, and went and hid behind the wood stove. The c.l.k. toddled across to the milk, did a little Jesus dance, and continued to cry and whine. I called my brother and sister-in-love, who both have better brains than mine. “What to do with a cute little kitten?” I asked their voice mail.
Deevee called me back almost immediately and said, “No way. I just ran into Jen Hallflower today and she asked me if I knew where she could get a kitten!”
I was on my way to the city anyway, so I packed up the c.l.k. and took her with me. At the gas station in Petaluma, I got some medicine that came with a dropper, rinsed the dropper out with water, filled it with milk, and squirted it into the kitten’s eye. She cried little white tears onto her leg and licked them. So she knew how to clean herself. Good.
I dirtied her up with milk, and after practice that night we crashed at Earl Butter’s, me in the closet, where I like to sleep for nostalgic reasons, and the c.l.k. in bed with Earl, who, it turns out, has more residual mothering instinct left in the back of his indoor-atrophied peanut brain than Weirdo the Cat. By morning he had taught our kitten how to lap up milk from a saucer.
I wish you could of seen the chicken farmer at the height of his or her popularity, sitting outside at Martha’s on Cortland Street, waiting for Jen Hallflower. Almost everyone in the world wanted to talk to me and touch the c.l.k.
So, this is what it’s like to be a woman, I thought.
Psych. Well, Jen showed up and of course fell in love, because it really was the cutest thing you ever saw, so there went my five minutes of popularity. Oh well. And even though I did have a very delicious wild blueberry crumb cake with my coffee, that’s all I’m going to say about Martha’s on Cortland Street.
The Hallflowers are a band, with Jen and her sister and mom, and they sing so pretty you don’t know what to do with yourself. Kittenless, Earl Butter and me walked to the Castro and ate a proper Thai meal with the Cookie Diva, who’s in town for the summer from North Carolina. Remember? She’s the one who flew me a to-go order of pulled pork, hush puppies, and sweet tea, thereby becoming my Friend for Life and one of the first Cheap Eats Hall of Famers.
This was back when you could bring barbecue on an airplane. Remember?
Well, wait’ll you hear what I ate at Thai Chef on 18th Street, just past Castro. Fried chicken fried rice! You read me rightly. Fried. Chicken. Fried. Rice ($6.95).
I had never heard of such a thing before, but maybe because I rarely if ever even look at the Fried Rice section of a menu. Does this happen? Does fried chicken fried rice occur in nature or just at my new favorite Thai restaurant, Thai Chef?
In any case I ordered it of course and it was a strip of juicy breaded boneless chicken pieces, like a Mohawk haircut over a huge head of fried rice, with just the egg and not much else. Simple and soulful.
Earl Butter and the Diva ordered their things, and everything was great, but my favorite memory is of the prawn salad ($7.95), which was minty and lemony and oniony and just delicious. We discussed the difference between prawns and shrimp and I think decided that it all depends on what you’re wearing while you eat them.

Dear Las Vegas,
It’s over. I’m sorry. Well, not sorry, actually — more like glad, ecstatic even: a shot of ecstasy with a chaser of relief, let’s say. Not that it was much to begin with, just 48 infernal hours, like a dreadful bout of food poisoning, though your food is surprisingly not bad, considering that you’re, well … you, a great monument of and to fakery, phony Roman forums and bogus Venetian canals, a counterfeit Eiffel Tower and a falsified Greenwich Village, all of it raised in a hostile desert and peopled by an orotund race of buffet hounds who spend their evenings having their skulls pulverized by the howl of dreadful shows.
You still have them lining up for your buffets, these bottomless-pit families fresh from the casinos — for the family that gambles together stays together. (Did I see that on a license plate? I saw so very many license plates, moving so very slowly along the choked Strip under the glaring sun.) I give grudging credit there. And the family that stays together shops together, as we all know, or can infer from the shopping bags hanging in bunches from fleshy limbs, like giant paper fruit. And you’ve installed Daniel Boulud in a basement. But the Todd English place, Olives (in the Bellagio), is quite good and only moderately overpriced, as Vegas overpricing goes. Even the private-label cafés, with their white-bean soups and chicken-tikka wraps, are respectable, except for the coffee.
The coffee! Sacré bleu! O black water! One torrid morning, in desperation, I traversed the phony mountain with the phony waterfall — thumpity-thump music playing all the way, even along the sidewalk — to reach the Starbucks across the street. And was glad to do so.
The killer, for me, was the $2.50 surcharge slapped on a snifter of Rémy Martin VSOP cognac that was already costing $12.50 at some foofy little parasol bar in the Wynn. The fine print explained that the surcharge was for brandy either “neat or on the rocks,” as if there is any other way to have it! I asked the friendly barkeep about it and was told, “This isn’t a cheap place to drink.” No indeed, and not the point. When you offer something on a menu at a price you slyly will not honor, you are a shyster. Your bristling minion basically agreed, not that it matters, over and out.

CHEAP EATS A long-lost beloved cousin asks if I can still “write my name in the snow,” and it takes me two days to figure out what this means. I wasn’t sitting on my ass, either. I started out with slide rules, compass, protractor … 26 ounces of iodized salt poured into a Pyrex baking dish, by way of a working model (necessary nutrients supplied). I was able to write my name, kind of, with the eraser end of a pencil. But the grooves tended to fill in, and anyway, salt ain’t snow, as the saying goes.
It has in fact snowed and stuck up here twice since I moved to Sonoma County the first time, four years ago. I scoured my journals, diaries, and notebooks for any mention of having written my name in it.
Nothing. On the morning of the second day, not having slept at all, I brought in a team of grad students to help me brainstorm all the possible ways of writing one’s name in the snow — with a snowblower, a shovel, a motorcycle, boots, small rocks, bottles of ketchup, propane torch …
The Eureka Moment came, finally, a couple hours after lunch, when one of my assistants, in a fit of creative depletion, slammed shut his laptop and said, “Ah, piss on it.”
You will imagine the silence, please … the creak of my chair, turning to face him, the sound of spilt coffee dripping onto painted hardwood. The long pause as we all stared at each other …
Then, while they were popping champagne and dancing their various end-zone dances, I dashed off a quick e-mail to my cousin, saying, “Yes!”
For future reference, Cuz, and everyone else in the world, while I can certainly understand and respect that some questions strike some people as inappropriate, rude, or otherwise out of line, my own personal preference is to be asked and asked and asked. And I think I am unoffendable, so there’s no need to hem or haw or speak in code.
Ask!
“How do I make people understand,” I asked my old friend Ask Isadora, “that whether there is choice or not, if I had a choice, I would choose this?”
Being an expert on the subject, Ask answered me intelligently, articulately, and with eloquence, in English, and I listened and heard and understood. Then the waitressperson arrived with my waffle and it was so loaded with fresh, sliced strawberries that my memory was erased. You know, like when the UFO returns you to the cornfield and your entire consciousness shifts from that point of ultimate enlightenment to the mundane matter of where the hell the corn came from.
And in many cases, how to get out of it.
But corn is beautiful and so are strawberries and sausage patties and Ask Isadora. When I looked up from the Meaning of Life, or my plate, the matriarch of sex talk had a tear on her face and she opened her mouth and said, “Do you want my butter?”
I did! You know all about me and butter (and waffles and sausage). But a tear on a face is personal information, so I’m going to have to ask Ask for permission to continue — hopefully without finding out what the tear was for, so I can speculate.
My first thought whenever I see a tear on a face, of course, is too much hot sauce. And I think that’s what I thought in that split second before looking away and carrying on with my delicious waffle and our delightful conversation.
But as I write this, surprising myself with the memory, I have to wonder, because I don’t remember her using hot sauce. Now as you might imagine, through the years my attitude toward my food has reduced a lot of people to tears for a lot of different reasons, not always because it’s moving to see someone so mesmerized, intent, and on fire — what Catholics call “inspired by the Holy Spirit” and I call breakfast.
Ask Isadora had a very close friend who was transgender and died at 45 of something I don’t know how to spell but which I do know is commonly associated with taking estrogen. I’m 43. I’m going to go out on a seemingly sturdy limb and say that seeing me for the first time in years triggered a memory of that tragic loss. In which case, since I am in one sense Veronica or Victoria and others, it’s kind of like shedding a tear for my own death, how and whenever, and puts me in the weird and welcome position of being able to say, “Thanks, Ask!” SFBG

The reflecting pool

A chicken-and-egg — or maybe fish-and-roe — problem: do neighborhood restaurants tend to reflect the character of a neighborhood or does a neighborhood take its cues from its restaurants? The answer is probably both, since that is usually the answer to such trick questions, but in general there is more of the former than the latter, I would say. The truly revolutionary restaurant, the place that makes a startling announcement of intention on a street of sameness, birds of a feather flocking together, is fairly rare. Or, to exhaust this vein of sorrily mixed metaphor, a rare bird. Or fish.
You can hardly miss Pisces California Cuisine, a small seafood house that opened in March on a drab stretch of Judah in the outermost Outer Sunset, one of those descending western neighborhoods whose colorless, low buildings seem to melt into the gray sea. The whole area cries out for a massive repainting, perhaps from the air by one of the California Department of Forestry’s firefighting tanker aircraft, refitted to spray some actual color. Shades of red, orange, yellow, and pink would be nice.
Pisces’s facade is black: a bit stark but handsome nonetheless, and drastically unlike any of the nearby storefronts. Though the restaurant occupies a midblock space, it is easy to find, since black facades aren’t commonplace even in your most happening habitats. Inside, Pisces has the SoMa loft look: it’s an airy box, clean and spare, with exposed ductwork and sleek Euro-modern furniture. Behind the bar hangs a plasma TV tuned to ESPN for a slight sports bar effect: a sop to neighborhood sensibility?
The food, on the other hand, is full of casual metropolitan style and is available at both dinnertime and lunchtime in prix fixe guise. In the evening, $22.50 buys you three courses (chosen from a brief list), while at noon you pay $11.50 for two courses (from another brief list) plus tea or coffee. As a rule I am mesmerized by the siren call of the prix fixe; it is generally a good deal, reduces the job of sifting through choices (and later, parsing the bill), and tends to emphasize both the chef’s interests and seasonal treats.
At the moment there is no sweeter a seasonal treat than king salmon, now in its second summer of regulation-induced scarcity. So finding it on Pisces’s prix fixe list was like a sign from above: You must have this. And I did; but first I had a bowl of kabocha squash soup, electrified with some generous flicks of cayenne pepper and shavings of fresh ginger and poured over crisped strips of taro root to give textural interest. For color, a miniature bouquet of microgreens.
The salmon, a large filet, arrived on a berm of mashed potatoes ringed by a honey-soy emulsion, which resembled caramel sauce. Between the fish and the spuds lay a duvet of braised spinach leaves and slivers of shiitake mushroom. The fish, grilled to medium-rare, was excellent in its simple way, but even meaty fish like salmon doesn’t stand up particularly well to mashed potatoes. They could have been done away with entirely or reduced to an ornamental role or replaced by taro root in some form.
Across the table meanwhile, a bowl of excellent, thick chowder ($4) heavy with clam meat slowly disappeared, to be followed by a plate of batter-fried calamari ($9). The calamari pieces were on the flaccid side (oil not hot enough?) but were redeemed by a habit-forming sweet-sour barbecue sauce for dipping.
Despite the king salmon and “California cuisine” nomenclature, Pisces’s food is far from purely seasonal. Kabocha squash, for instance, speaks of winter. So does crab, which turned up in a good crab salad sandwich ($9.50) in the company of good fries. The salad carried a few flecks of shell, but I chose to interpret this as a sign that the kitchen is cracking and cleaning its own crabs even in the off-season. And let us not forget such beyond-seasonal dishes as seafood linguine, offered as part of a lunchtime prix fixe and featuring bay scallops, shrimp, and mussels — all farmable — in an herbed cream sauce. The beauty of a preparation like this is that it’s almost infinitely variable: you toss in a little of this, a little of that, whatever’s good today or (yes) in season — even king salmon — and it will still make people happy, especially if they’ve opened with a good Caesar salad, showered with croutons and squiggles of shaved parmesan cheese.
Desserts here are good if mainstreamish, and they make up in price what they lack in imaginative verve. The fudgey chocolate brownie cake ($5.75), for instance, topped by a little helmet of cherry ice cream, would probably cost at least $3 or $4 more at any comparable restaurant east of Twin Peaks while being not quite as big; Pisces’s version survived a two-front assault for several minutes. A crème brûlée (part of the prix fixe) wasn’t quite as shareable but did reflect stern and basic virtues: it consisted of a straightforward vanilla custard of just the right fluffy-firm consistency under a thick, brittle cap of caramelized sugar, and it was served in a plain, white, round ramekin of the sort you see stacked in cooking-school kitchens. While my austere, puritan self approved of the lack of ornamentation or embellishment, my other self — or one of them — couldn’t help wondering if a little garnish would have been entirely out of place. A sprig of mint is never hard to come by, and it is the season of berries after all — stone fruit too. Maybe cherries … black cherries? SFBG

CHEAP EATS Hey now, don’t forget about the Cotati Accordion Festival this summer. Every summer I tell you about it, and every summer you forget to go. I know because I live in Sonoma County and I’ve never been there either.
But of all our great country’s famous yearly thematic bashes that I haven’t ever once attended, the Cotati Accordion Festival is by far my favorite. It’s ridiculously fun, you can just tell. Mark your calendar: Aug. 26–27, downtown Cotati in the park with the statue of the accordion player, off 101 North less than an hour from the Golden Gate Bridge. You can’t miss it.
Me, I’m missing it. I’ll be in Idaho, like I am every August on that weekend, except this time instead of playing at the Council Mountain Music Festival, I’m going to be a professional cook for the first time ever. Boy am I nervous — and excited. Cause while my friends are recording the score for a movie, I’m in charge of feeding them and cleaning up and stuff, which will be like a dream come true for me, provided that one of the onions turns into Burl Ives and lectures me on dental hygiene while pointing ominously at a banjo.
One thing about driving a pickup truck is that every now and then you can have a bicycle in back, instead of bales of straw and sacks of feed and scrap wood. Get this: my pickup truck kerplunks on me early morning one morning in Rohnert Park on my way to Kaiser to get blood tested, and what do I have in back but … my bike!
So I biked to my bloodletting. I was fasting and needed coffee bad. And Pop-Tarts. Then, after all that, I biked down to Cotati, to the park with the statue of the accordion player in it, and I called my closest geographical girlfriend, Orange Pop Jr., in San Rafael and convinced her to come rescue-slash-have-lunch with me.
My hero!
I want to tell you a secret, San Francisco. Sonoma County has bigger burritos than you do. Example: Rafa’s in downtown Cotati, just south of the park with the statue of the accordion player, where OP2 and the chicken farmer sat outside under an umbrella on a beautiful day, talking about boys and of course chickens and, um, farming.
It’s a full-on Mexican restaurant, great atmosphere inside and out. Our waitressperson “she’d” me. Then she mal-recognized her “mistake” and apologized profusely and I had to comfort and reassure her that in fact she had made my day, as she all the while played with my hair. This was pretty cool.
Like my new pal OP2, the burritos are LA–style, which means that you have to ask for rice, if you want it. Which we did, but even without, Rafa’s burritos are about as big as … well, they’re two-mealers, and they run from $4.75 to $7.50, with chips.
Afterward, OP2 drove me to San Rafael and put me on a bus for the city, and I BARTed to West Oakland and borrowed my sister-in-love’s pickup truck just in time to drive back home and close my chickens in before foxes ate them. So that was a pretty transportational day for me.
But I have another brother who you haven’t met yet. His name is Santa Claus and he’s only 12 years old. Defiantly, he has two kids, a decent job, and a neatly trimmed beard and mustache. I picked him up at the airport a couple days later still with Deevee’s truck, and his luggage consisted of parts for mine from our family’s own private backyard junk yard in Ohio. Bless my brothers, I’ll be back on my wheels in no time.
Anyway, Nick’s his real name. It was his first time in San Francisco, so I took him to Oakland — to Penny’s Caribbean Café, which is in Berkeley, technically. But I refuse to believe it.
Then I took him to Oregon, where people dance. My new favorite truck stop is Mollie’s in Klamath Falls, not because they used to make a 12-egg omelet, but because they still do make chicken fried steak omelets. It has Swiss cheese inside, and gravy and gravy and gravy all over the top of it, and comes with hash browns and biscuits. You eat this thing and you can’t help thinking that the universe just hums with love, humor, and harmonicas.

Somewhere in the enchanted realm of West Marin stands the Olema Inn, and in its rustic-chic dining room, at the end of a warm weekend afternoon, a few of us gathered recently for an early dinner. Under the aging sun, the garden glowed a brilliant green, and the dining room, with its many windows, fresh white walls, and wood-plank floors stained a rich coffee color, seemed invitingly cool and uncomplicated. Heat stimulates some of us but enervates others, and as a descendant of peoples from bleak and snowy lands, I generally tumble into the latter bin.
Heat, among other things, can be an appetite killer for the enervated, and while this can never be altogether a bad thing in our land of overplenty, it might be seen as an issue in a fabulous restaurant. (The Olema Inn, we were assured by our local guide, was “the Chez Panisse of west Marin.”) Fortunately, the menu was a tripartite arrangement, with the middle section given over to an array of sub-entrée-size plates that turned out to be more than sufficient for the several members of our overheated party, especially when preceded by a soup or salad and accompanied by a well-chilled pinot gris.
It was agreed by acclamation that restaurant portions are often much too big — especially in the matter of starches — and the cause of a not-inconsiderable amount of after-hours distress. A happy antidote to this syndrome has been, in recent years, the tapas or small-plate phenomenon. Many trendy people have wearied of small plates and even carped about them in print, but this does not change one of small plates’ basic virtues: the providing of worthy food in modest but not tiny amounts whose overall effect is to convince the body that it’s taken in more than it really has.
We do not have to have small plates everywhere, because alternative solutions are already in place. Many restaurants offer half pours from their by-the-glass wine lists, while many others offer to split plates for sharers, for a nominal or no charge. How about, then, offering half-size main courses — a split dish for one? I hate and do not understand the Anglophone abuse of the word entrée, which means “entry” or “starter” in French, but I would accept the term halftrée if it meant the option of less massive main dishes. You couldn’t do this with every dish, of course, but you could probably pull it off with a surprisingly large number — half, at least.

San Francisco is full of a bunch of pussies. I’m sorry, it’s not that I want to say these things. I feel strongly that a woman’s vagina should never be used to describe something weak or negative. In fact I tend to correct people who use that word in such a way, being that I am shamelessly p.c. San Francisco is the only city in the world where I would have to spend more time defending the use of a single word in a single sentence than the overall meaning of that sentence.
But seriously, San Francisco is made up of a bunch of pussies and nothing could exemplify that more than its long and flamboyant rock history. If you held up the Bay’s rock résumé next to your average Midwestern state’s — Ohio’s, for example — you’d start to get the picture. No one is going to argue that San Francisco doesn’t deliver the goods when it comes to art-damaged, high-concept, performance-focused freak music, made by freaks for freaks, but let’s ask anyone who’s ever heard the Pagans, the Dead Boys, or Rocket from the Tombs if Californians can deliver the kind of ugly-faced raw violence that litters any Ohio rock comp. No, we can’t. Not counting Blue Cheer or Death Angel.
I’m not trying to start a turf war here or even a debate over whether Midwestern ugly rock is better than West Coast weirdo jams, but I am trying to help you understand why an unknown band from Columbus, Ohio, is the most exciting thing to happen to the local music underbelly in a long while. Would a trio of educated and liberated women from Berkeley call their band 16 Bitch Pile-Up? Or would any band from the Yay Area list a cache of instruments that includes a “PVC pipe,” a homemade “vile in,” “television feedback,” “a bag of beer bottles with a mic thrown in,” and “your face”? There is a reason why bands like Comets on Fire, XBXRX, and other non-noise locals are itching to gig with this band. Frankly, the Pile-Up is a needed shock to the system, bringing the kind of attitude, fierceness, and work ethic that grow in places where the rivers are flammable and national elections are stolen in plain sight.
HUNGRY LIKE A WOLF EYE
16BPU achieved a bit of cult status well before descending on the Bay. For the last four years they made Columbus a choice destination on any tour, running the art and music space BLD and offering floor space for all manner of riffraff. What began as studio spaces for fellow art schoolers, dropouts, and friends fast became an epicenter of East-meets-Midwest noise happenings. Yet in spite of their notoriety and a Wolf Eyes–style mile-long discography, there is little recorded evidence of their work readily available — although the long-out-of-print BFF (Gameboy, 2003) and Come Here, Sandy (Gameboy/Cephia’s Treat, 2004), their split 12-inch with brothers in cave-stomp Sword Heaven, are worth seeking out. It was their powerful live performances that engendered such reverence. Early on, one witnessed rituals of unique intuition and deep communal spirit — a group of women truly listening to one another and at the same time losing themselves in the fuck-it-all physicality of harsh electronic mayhem.
The Pile-Up is a satisfyingly lean Moirae-like triad, made up of Parkside sound person Sarah Bernat, Sarah Cathers, and Shannon Walters. The group — which previously existed as a five-piece in Columbus and as a four-piece featuring Angela Edwards of Tarantism for a brief and brutal West Coast tour — has never quite achieved its titular namesake’s size to form what Walters envisioned as a “symphony of terror.” Instead, the women have honed in and formed a unique power trio, capable of pulling off creepy junkyard jams à la the aforementioned Wolf Eyes, subtle vocal exhortations, and beautiful walls of searing white noise.
“It’s alchemy. In our case, the girls and I spend so many living minutes together,” explains Walters over coffee only minutes after having our guts reorganized by Damion Romero at a recent Noise Pancake performance. “We take care of each other. We often want to murder each other. We share virtually all aspects of our lives and with that comes a very developed sense of communication.”
Bernat elaborates, “We share a slightly twisted sense of humor that is fundamental to almost all of what we do and make.” Which is one way to understand a band that has released an album titled Make Like a Fetus and Abort.
When asked over e-mail how she’d respond to an easily offended West Coaster like me, Cathers offers, “I welcome any conversation on the use of language. It is one of my great joys — as I look for sounds that will make the greatest impact, that will send a chill up the collective spine and put your flesh and your psyche in the same presence. I love words that have that impact as well.”
MORE UTOPIA
What makes 16BPU fascinating is that beneath the intellectual muscle and blue-collar brawn is a group that is deeply sensitive, passionate, and emotional in their playing. Beyond the obvious (tough) love that they share with each other as friends, there is a seriousness to their music that stares right in the face of pain, anger, and fear with an absolute solidarity of purpose.
“I think what I try to convey through playing can only be expressed as a feeling of mortality,” says Walters. “Being very close to death and vitality simultaneously.”
“I can say we have seen a lot of nasty shit in our lives that can either make you want to leave the planet or create your own utopia out of dysfunction,” Cathers writes.
“All those themes are present,” Bernat concludes, “but they are present alongside equally positive feelings about strength, love, and perceptions of beauty.”
All of which makes me think that perhaps they fit into the Golden State after all. SFBG

CHEAP EATS Let’s see, last week I ate at TJ’s Gingerbread House in West Oakland, and it wasn’t cheap eats because it was dinnertime on Georgie Bundle’s birthday. He’d always wanted to go there. As have I, and as has anyone else who rides BART and looks out the window.
Unless you have a very, very special occasion — which, if you don’t know Georgie Bundle I can’t even imagine what such a thing might be — satisfy your curiosity over breakfast. Get this: a salmon croquette, two scrambled eggs, grits, fruit salad, and orange juice for $6.95.
That’s good. Lunch is … reasonable. You can get jambalaya for $10.95, or crawfish pie, red beans and rice, or dirty rice for under 10.
The jambalaya’s great. Dinnertime: $24.95!!!
So: not cheap eats, like I said. Moving right along. Another place I ate last week was I had boat sushi at Sushi Boat downtown. Earl Butter talked me into this. If I hadn’t been sitting in the sun since eight in the morning on Hippy Hill, drinking free coffee and watching my new favorite surf band, the Del Mars, my brain might not have been sufficiently addled. But it was. Maybe it was all the surfy sounds that made me susceptible. Any case, I don’t regret it, because sushi, as always, hit the spot. But … not cheap eats.
Of course, sushi never exactly is cheap eats, give or take No Name Sushi. So what am I supposed to do, never ever write about sushi?
OK!
Earl Butter — what a card! First, during the tugging-on-my-sleeve portion of the enterprise, he insists to me that boat sushi is as cheap as No Name. I don’t believe him. He insists. I still don’t believe him.
But he continues to insist until, after we’ve finally found parking downtown and are hoofing the 37 blocks to Geary and whatever, he acknowledges that, oh, by the way, he hasn’t been there since the ’90s, when he worked for Chuck Schwab and was generally flush. Whereas now he’s a retired cabbie toiling tenuously for my little brother and only eating, I sometimes think, when I feed him.
So it’s a little before noon on a Sunday, and while everyone else in the world is lined up out the door at all my favorite Sunday breakfast spots, like Just For You and, um, Just For You, me and Earl rock right into Sushi Boat, roll down the stairs, and buddy up to the counter, where the boats are docked — just setting there, no cargo, no go. We’re the only ones there.
They seem to want us to order from the menu. But that defeats the purpose of boat sushi: to pull good-looking plates of sushi willy-nilly and at random from the cute little wooden boats as they circle around the moat. This is great fun for small children and Earl Butter, but I can see the restaurant’s point too: why would they want to prepare all kinds of random sushi plates for two clowns to pick a few, on whims, and then have to throw everything else away if nobody else shows?
After hours of intense talks, threats, and heated negotiation (or, in the real world, about a half minute of pointing and one-word sentences) Earl Butter and our waitressperson have reached a historic compromise: they will set the boats a-spinning, and we will order from the menu. The boats are just atmosphere.
By the time we’re done eating, however, there are a couple other pairs of people sitting around the counter, and the sushi chefs are starting to load cargo into the boats. So, instead of being done eating, we eat more.
Good, but not cheap eats.
Anyway, what I really wanted to tell you about was the amazing rooftop party I went to in the Tenderloin, where my new hero, a cat named Jerry, cooked this incredible load of paella — on a Weber! Watching that happen, and then getting some, was the highlight of my weekend, if not the whole summer so far.
But I only have space left to induct Jan Swearingsomething into the Cheap Eats Hall of Fame for inviting me. While I’m at it, I’d also like to induct Johnny Del Mar, who has been sending me Frank Zappa tapes for 5 to 10 years, even though I still don’t get it. And, since good things come in threes: Rimma D., who drove all the way to Penngrove one time to see Lord Exister play in a lesbian bar, and gave me bonbons.
In other words: people continue to rock, and the chicken farmer keeps on dancing to it. SFBG

Mandarin, though a Gen Xer by birth and a longtime resident of touristy Ghirardelli Square, still offers a matchlessly elegant experience in Chinese fine dining: a surprising number of genuinely spicy dishes, superior service, and wine emphasized over beer. *Mijita shows that Traci des Jardins can go down-market with the best of them. The Mexican street food is convincingly lusty, but in keeping with the Ferry Building setting, it’s also made mostly with organic, high-quality ingredients. CHEAP EATS Another weekend away, playing unlikely gigs in unheard of places, like Oregon and Idaho. This time: a punch-and-cookie country dance party down at the elementary school, a train depot, and a barbecue joint.
My new favorite rural Idaho restaurant: Sagebrush BBQ in New Meadows. It’s two days later and I’m still picking still-tasty morsels of pork from between my teeth. They must have fed us a hundred dollars worth of meat, on top of everything else. And we must have earned it, because I believe I saw three or four grandpas in our audience, in a fit of inspiration over our rowdy old-time cowboy music, order a beer.
The band was my brother Chris and me, as usual, but this time with our brother Jean-Gene the Frenchman on bass. Which was a novel and nice thing for us, but also kind of squirmy. It was clear that Chris — normally the smoothest of front men — wanted so badly to let everyone know that we were family, and his contorted efforts to do so without actually using the word “brother,” in reference to me, were … well, excruciating.
Conceptual considerations aside, there’s an unwritten rule in show business that you can’t just toss off multisyllabic words like “transgender” while wearing a cowboy hat. And “sibling” would have sounded fatally self-conscious. I sympathized with his dilemma, big time, but my hair and makeup weren’t helping matters by doing all the right things for a change; in one of those goofy twists of fate, in Bumfuck, Idaho, I think I might have looked about as pretty as I’ve ever looked.
Enormously complex problems such as this almost always have a ridiculously simple solution. On the third night, outside on the patio at the Sagebrush, long before any kind of semiformal introductions could have crossed the mind of even the most conscientious of band leaders, I stepped up to the microphone myself and said, tilting my head toward our usual spokesmanperson (whose hair, by the way, is even longer and probably prettier than mine, although legitimized by a scraggly Fu Manchu mustache), “This is my brother Chris.”
Clap clap clap. He tipped his cowboy hat to the crowd.
Then I gestured toward the clean-cut Frenchman to my right and said, “This is my brother Gene.”
Clap clap, tip of the cowboy hat, clap.
Problem solved! By way of gravy it occurred to me to keep talking. And this is one of my proudest moments ever in the area of public address. “Two of us come from San Francisco, and the other lives in Pennsylvania,” I said, pausing just long enough to make a little eye contact, let them take us in, live and in context, before adding, “Can you guess which are which?”
Instantaneously, you could see the fear and confusion melt from the brows of the elderly Idahoans, ranchers, and bikers. Or maybe it was me who relaxed, while they laughed and loved us, some of them even dancing on hot gravel wearing open-toed sandals, until three sets later we were all fast friends.
In fact, this might have been the first time in my extensive, illustrious career as a touring rock ’n’ roll superstar that I could have maybe actually gotten laid, almost — and not by an octogenarian, either. Some of our most enthusiastic fans were under sixty!
Two, in particular, were right around my age. Early forties. And everyone agreed that they were hot for me. This felt good. I wasn’t so sure, but they did make a point of advertising the fact, from the middle of the dance floor, or gravel pit, that they were going to be samba dancing in the Independence Day Parade down in Council, we should come …
Well, it’s Independence Day, right now, and I’m a long way from Council, Idaho. I’m in San Rafael. I just dropped the Frenchman off at a job site around the corner, where him, Chris, and Earl Butter are putting in an honest day’s work, mudding and drywalling and stuff.
Only one of my chickens died while I was gone, and I feel a little like a failure of a chicken farmer for not having ax-murdered her myself, before I left. Because I knew she was sick enough.
Anyway, this — this muddy, dry wall of words — is my very own, personal idea of an honest day’s work, and it was constructed by me over a cup of strong coffee and a pleasantly surprisingly good bowl of gumbo with more chickens and sausage in it than rice ($4.75). Where? SFBG

CHEAP EATS The chicken farmer has a high tolerance for surreality …
Woke up on a strange couch with a strange cat on my arm that was not Weirdo the Cat. It was a strange time of morning. I could tell it was morning by how badly I had to go, but it wasn’t the slightest bit light out. Went, came back and made love to the cat, but could not fall asleep.
I thought about things.
Things were pretty fucked up, almost everyone would have to agree — with the possible exception of me. Things are not fucked up, things are not fucked up, I said to myself, like a little engine, and the cat rubbed its dewy black nose against my white one. I knew it was going to be a kind of a day, but still could not sleep.
The instant it got the slightest bit light out, I bounced off the couch, found some coffee in the freezer, rinsed the French press, and made my new favorite cup of coffee. Wish I knew what kind, but the bag was blank.
Not a clock in the house, no phone. The radio on top of the refrigerator told me, eventually, that it was 5:55, the fog would roll off by noon, and traffic was not yet an issue. In a strange bathroom, I dumped one of the strangest loads of my life, a Dairy Queen Dream with a slight, spicy curry goat afterbite, followed shortly by two Solid Gold encores, pause, applause, and a lingering bouquet that could have raised Bukowski from the dead.
The cat seemed interested.
Put on my weirdest pants, with red, orange, and yellow flowers and big pineapples, a not-weird-enough shirt, watered the cat, played bite-my-finger-no-don’t-bite-my-finger with her, packed up my sleeping bag, and went across town to wake up my sister-in-love, Diane.
After breakfast we helped line Market Street for the Pride Parade and waved and went, “Woo!”
Diane became more interested in footwear. I lost her somewhere between the Shoe Pavilion and that other one, and wandered wonderingly until lunch, looking for someone, anyone I knew, and smiling a lot, even though I never found them.
I had already made a lunch date at Little Delhi on Eddy and Mason, just a block off of the parade. There were billions of beautiful, interesting people decorating the streets and sidewalks, but I like to be unfashionably early for things, so I sat inside at the counter and watched some soccer on TV while waiting for my new friend Elliott.
Gotta love an Indian restaurant with a counter.
Elliott showed and we sat in a booth and ate butter chicken ($7.99), saag paneer ($6.99), roti ($1.50), naan ($1), and rice. Everything was great. We talked a lot about a lot of things, including punk rock and bagpipes, but one subject we did not touch on at all was Mr. T Cereal, because that had already been covered in an e-mail. In which I apparently displayed such mastery of the subject of the obscure ex-delicacy that Elliott presented me a trophy, an old Yoko Ono 45 with a plastic lobster glued to it and the typewritten words: “you win.”
I was proud.
As they were clearing away our plates, a cockroach, to everyone’s embarrassment but mine, dashed from under one and paraded across the table. I waved, went “Woo!” and squashed it.
Then, instead of playing baseball, I rejoined the party. Called Earl Butter from a pay phone (50¢) and said, “Butter, get your straight ass down here and be proud with me.”
“Coming,” he said.
And he did, and we found a few things to dance to before the prospect of warmth, pork chops, and rum called us back to the Mission.
On Van Ness, trying to chase down a 49 that wasn’t even close to moving, we walked into an old pal who hadn’t seen me in a while. He’d heard, but had assumed it was a prank. My clownishness haunts me.
Our old pal’s married, having a girl, and he gave us both business cards. “You always seemed so masculine,” he said to me. Amused, like I like it. Not challenging.
“Yeah,” I said. Felt drunk, and left it at that. I’ll write to him, say: You know, no matter how fucked up and tangled things can get around you or just outside of you, one of the easiest things in the world to do is to close your eyes and take another breath, forget every single thing you know except aliveness. Something like that. Or: Baby, your body talks, you listen. SFBG

CHEAP EATS I had pretty much settled on spending a quiet night at home with a big bowl of popcorn and my new dehumidifier, but then I accidentally called Earl Butter and he said, in effect, "Do you know what time it is? What are you doing home? Get the hell in your pickup truck and get here."

"OK, yes," I said. "Bye."

It was Friday night. Almost all our friends in the world were playing at the Make-Out Room, for the Mission Creek Festival. Everyone was going to be there. I don’t know what I had been thinking, but I stopped thinking it, grabbed my toothbrush, patted Weirdo the Cat on the head, turned the dehumidifier all the way up, kissed the chickens on their beaks, and drove to the city with a big bowl of popcorn in my lap.

It’s an hour-and-a-half ride. I tried to think of it as a movie, an expensive and dark movie. About traffic. That may sound dull, but if you think of it in comparison to a date with a dehumidifier … well, it’s still pretty dull.

Anyway, I’m not a movie reviewer. I made it to the Mission in time to catch the back half of the show and to hug everybody and smile a lot and talk too much until my face hurt and I was losing my voice again.

And then when the live music ended (early), we all went to Little Him’s house and called it a party, and there were more songs, and tacos for me, from 24th Street, because I was all done drinking. When I can’t drink anymore, I start eating tacos. And in this way the party in my mind never stops.

It got late, Jolly Boy carted me and Earl back to 611, and I made me a cozy little nest in the closet and slept like a little baby bird, my dreams all a-flit with flowers and trees, butterflies, and other enchanted forestry. I’m going to tell you something: Love was in the air. At the Make-Out Room, at the after party, in the darkness in this closet. It had nothing to do with me, but it did have to do with my dearest friend in the whole wide world and my new favorite old friend, and the whole evening, in the songs, in the beer, in the blah blah blah even in the tacos there had been this sort of sizzle.

Compare that to dehumidification.

I was on Cloud 8. Still am, and I would like to tip my bandanna to Bikkets and the Neverneverboy, bless their big big goofy grins, tired eyes, and infecting electricity.

But I’m not a gossip columnist, so I woke up with an oniony tacover, extricated myself from the closet, and mumbled to Earl Butter, who was in the big room watching cartoons, "Coffee."

He turned off the TV.

We knocked on Jolly Boy’s door on our way out and he joined us at Java Supreme (Coffee: still a buck. Still!) Well, you can only leaf through a newspaper for so long on a Saturday morning in the Mission before you start thinking of Chava’s.

Jolly Boy broached the subject: "Whatever happened to Chava’s?"

Burnt down. Reopened between 24th and 25th on Mission, Earl and I answered in little bits and pieces. Disastrous atmosphere, basically a taquer??a, still great food. Almost in unison, we all stood up and started walking in that direction, with the understanding that it was a long way to walk and we would keep our eyes open for any better ideas along the way.

A better idea: La Quinta, my new favorite Mexican restaurant, on Mission between 20th and 21th. It has the feel of what Chava’s used to feel like. Family, old-school, everybody’s smiling, huge plates of food, cool, colorful, fruity paintings on the wall, a counter … A counter!

We sat at a table and fell in love with the place. I got birria ($7.50), and the goats were tender and less gristly than usual not that I have anything against gristle. But I know you do. Jolly Boy got huevos rancheros ($6.50), and Earl ordered some kind of thing with softened tortilla chips all scrambled up with eggs and stuff. I got to taste everything and everything was great. The tabletop chips were fresh and the salsa was delicious.

You know what, I think it’s cheaper than most places this day and age too. Check this out: Weekdays, between 7 and 11 a.m., you can get huevos rancheros, or other egg dishes, for $4.75. That’s with rice, beans, and homemade tortillas, and that’s just freakin’ beautiful.<\!s><z5><h110>SFBG<h$><z$>

Ficks’s picks (and one no-pick) at Cannes

1. John Cameron Mitchell’s midnight premiere of his sensitively X-rated Shortbus not only roused the Palais’s audience to a 15-minute standing ovation (a legendary feat); it brought out some of the deepest tears I have shed in my short life. Warning: The MPAA (which we now finally understand, due to Kirby Dick’s revolutionary exposé This Film Is Not Yet Rated) won’t know where to start with this sucker. It’s much more than the graphic sex; it’s the graphic honesty.

2. William Friedkin’s schizo-thriller Bug built to such a creepy and intense climax that dozens of viewers were screaming at the top of their lungs, freaking me out almost as much as Lynne Collins and Ashley Judd’s performances. Friedkin graciously accepted the comparison that someone made to the last 30 minutes of his 1971 classic The Exorcist. Yep, it’s that fucked up.

3. Fans of the transcendental cinema movement from South America (La Ciénaga, La Niña Santa, Los Muertos) have another reason to live with Paz Encina’s heavenly Hamaca Paraguaya. The film watches a couple as they softly pass the days, waiting for their son to come home from a war. Dozens walked out; the rest of us enjoyed quite the quiet masterpiece.

4. Nobody even those of you who skipped his subversively brilliant remake of The Bad News Bears should miss Richard Linklater’s brave adaptation of Eric Schlosser’s Fast Food Nation. It tackles the current circle of corporate consumption, from hiring illegal immigrants to unsafe working conditions to the processing of feces in your most favorite hamburgers (which ultimately get served to you by the apathetic future of America). This movie is required viewing for every single teenager as well as all y’all who think you know how bad things really are.

5. Donnie Darko writer-director Richard Kelly’s second film, Southland Tales, was the biggest disappointment of the festival (if not the decade!). This 2 hour and 40 minute disaster does almost everything wrong: Its pathetic politics are high schoolcoffee shop theories; its convoluted story lines are utterly irrelevant; and lastly (and most surprisingly), the characters come off as hollow, one-note ideas that either get one interesting sequence (Justin Timberlake singing a Killers cover) or many useless scenes (featuring Janeane Garofalo, Miranda Richardson, and Wallace Shawn, to name a few). Ironically including many exSaturday Night Live stars, this extravaganza comes off as an out-of-breath bad TV show. Ouch. (Jesse Hawthorne Ficks)

The server who performs from memory is either a virtuoso or a show-off and more likely the latter, experience suggests, with muffs and miscues an almost certain result. On Saturday last, we shepherded some out-of-town guests to the Napa Valley, where, between stops at the Hess Collection and the Mumm champagne works, a latish lunch was had at Bistro Don Giovanni, a 13-year-old Italian restaurant on the north side of the town of Napa, in a roadside building that, from 1991 to 1993, housed Jonathan Waxman’s heralded but troubled Table 29.

Our server knew that much, at least. Years ago we had eaten at Table 29 but couldn’t summon the name from memory; he pulled it from the top of his carefully coiffed head. On the other hand, he couldn’t remember what we had ordered; he nodded attentively as we spoke in turn, but petitions for soup (a puree of roasted tomatoes and red peppers, as I recall) and a mojito vanished into the ether, which was pleasantly scented by the wood-burning oven and did have a mollifying effect, it must be said. An iced coffee was produced only because we were given an opportunity to ask for it a second time, when he prodded us to order coffee or liqueurs with dessert. To his credit, he picked up on the iced-coffee flub and did not put it on the bill, but he seemed quite unaware of his other two misses, and we let them go, in part from fear that we would seem to have been keeping score. But then, we were keeping score, for that is what people do when they order this or that in a restaurant and the service staff forgets to bring it.

Writing orders down doesn’t automatically eliminate this problem. The server returning to the table to clarify an order due to illegible handwriting or having written down the wrong thing, or nothing is not an unfamiliar experience. It is embarrassing and sometimes a little irritating, but at least the server in question has a script to work from. The would-be memorizer who returns for a refresher ought to be handed a notepad, but at least there is the return. Setting plates of food before the wrong people is an easily corrected faux pas. The would-be memorizer who forgets having forgotten, on the other hand, is a blithe idiot, a discredit to servers everywhere.

A friend from LA said, upon stepping into Lettüs Café Organic, "I feel like I’m back in LA. On Rodeo Drive somewhere." Ah, Rodeo Drive, home of the Polo Store, haunt of Nancy Reagan. Lettüs isn’t quite the kind of place where you’d expect to see Mrs. R. she seems more like the Spago Beverly Hills type but the Rodeo vibe was palpable and even I caught it, though Lettüs’s Marina environs, its urban density of souls, have always seemed more Chicago than LA to me, more Lincoln Park. Of course, I once lived in Chicago; I have never lived in LA but have been to Rodeo Drive.

"Everything is good for you, and expensive," my LA friend continued, apropos the LA-ish menu at Lettüs. Ah, I thought, we could be talking about the Newsroom Café, that West Hollywood haunt (on Robertson, near Cedars-Sinai Medical Center, nowhere near Rodeo Drive but just across the street from the Ivy) of alfalfa sprouts, fat-free yogurt smoothies, and youthful pretenders to movie stardom, everybody wearing their fancy sunglasses inside which of course is not necessary at Lettüs.

The good-for-you part I could accept, for Lettüs, as its full name suggests, deals almost exclusively in organic food and relies as much as possible on local produce. The pricey part, on the other hand, I balked at; Lettüs isn’t exactly cheap, but it isn’t expensive, either, for what you get, with only a handful of items costing more than $10. Plus, you are afforded an opportunity to ponder the umlaut, a flourish that puts one in mind of, perhaps, a Swedish delicacy like pancakes with lingonberry sauce, though the menu is devoid of Scandinavian influence (except for smoked salmon); most of the culinary cues are either Medi-Cal or East Asian, which leaves one with a general impression that an outpost of Chow has collided with one of the ZAO noodle bars.

The most Scandinavian element of Lettüs (other than the umlaut) is probably the interior design, walls and ceiling of slatted, pale wood, with interstitial bars of fluorescent lighting and sleek, spare furniture. There is a certain saunalike feel to the look, or perhaps it is vaguely Japanese. Either way, it manages to be both rustic and urban, cool and warm, an appealing casual-sophisticated setting for the casually sophisticated food of executive chef Sascha Weiss. (His partners in the endeavor are Matthew Guelke and Mark Lewis; the restaurant opened near the end of last year.)

If Weiss’s food has a theme, it might be "when worlds collide": chipotle-scented black bean soup ($4) with avocado salsa on the one hand and, on the other, mango chicken or tofu lettuce cups ($8) shredded napa cabbage, a Thai-ish blend of ginger, cilantro, basil, and sweet-hot chili-tamarind sauce, and either baked tofu or grilled chicken bundled in swaddlings of Bibb lettuce for easy finger feeding. And if you have a third hand, how about some bruschetta ($5), points of grilled levain topped with white butter beans, roast garlic, cherry tomatoes, and basil?

Bigger dishes are available, of course, from various sorts of panini and open-faced sandwiches including an entrant of grilled chicken breast ($9.50) with marinated peppers and pesto quite as potent as anything you’d get at Chow to noodlier choices. Here we have a pasta ($8), fusilli sauced with arugula, sun-dried tomatoes, broccoli, and chickpeas, with a layer of olive slivers and gratings of parmesan cheese on top, a concoction surprisingly hearty despite the absence of animal flesh. There is also a plate of brightly acidic soba noodles ($7) warm or cold, your call tossed with julienne zucchini, carrot, and red bell pepper and a lime-sesame vinaigrette dotted with sesame seeds.

But in the main, the happiest course is probably to nosh. Most of the food lends itself to splitting and sharing, in particular the spring rolls ($6), rice-paper wraps stuffed with rice noodles, carrots, and lettuce, sliced into bite-size cylinders, and presented with dipping sauces of spicy peanut and sweet chili. Only slightly more cumbersome to divvy up is a salad of avocado and grapefruit ($7.50) nested in a carpet of peppery-nutty arugula and dressed with a grapefruit-juice vinaigrette; this is about as simple as it gets, and about as good, with butteriness, fruit, bite, and nose brought into a powerful harmony.

Given the confident eclecticism of the savory dishes, the desserts are surprisingly flat-footed. A pair of hazelnut shortbreads ($1) dipped in dark chocolate were not dipped in dark chocolate but presented to us naked. They were fine, crisp yet tender of crumb, but I felt obliged to ask after the missing chocolate. "We don’t have those today," our hapless server reported. Coffee cake ($4), meanwhile, was on the dry side despite an interspersion of blackberries and a streusel topping. Only the chocolate mousse cake ($5), served on a plate piped with raspberry sauce, was "dense" and "rich" as promised by the menu card moist, too, they could honorably have added.

A word on the table service, which is of the semi variety: You order at the counter, are issued a placard with a number, seat yourself (displaying numbered placard), and wait for the food to start arriving. The system is fairly efficient, though cafeteria-esque, and the placards aren’t the usual cheap plastic numbers but cast steel, with numbers handsomely embossed in gold. Nancy Reagan might not buy them if she saw them in a window on Rodeo Drive, but she would at least look. SFBG

Tea might be yang to coffee’s yin in the morning land of Caffeination Nation, but despite the presence, in yin as in yang, of humankind’s favorite stimulant, tea is surely one of the most soothing ingestables known to us. It is what you have a cup of when it’s raining, or you’re feeling blue or a little achy; as with chicken soup, its healing powers are legendary. The very picture of a cup of tea, wreathed by wisps of delicate steam, tends to set the mind at ease. And, of course, this isn’t just some gauzy, sentimental picture, since scientific investigation has found tea to be ample in the antioxidant compounds that help human beings resist disease.

It is beautifully appropriate, then, that we should find both chicken soup and a wealth of teas on the menu at Modern Tea, a gorgeous tea emporium and restaurant rather in the mold of the Castro’s Samovar Tea Lounge that opened recently in a gorgeous Hayes Valley space, of exposed brickwork, plate glass, and warm wood, that once housed Terra Brazilis. After that Brazili-Cal bistro closed, there was a brief and misplaced intermezzo of South Asian cooking under the name Tandoori Grill, but with the advent of Modern Tea, all is again as it should be: a distinctive and worthy endeavor in a strikingly stylish setting.

Not many changes have been made to that setting, except that the steam tables for the Indian buffet have been removed from the area in front of the elevated exhibition kitchen and the walls have been painted the color of green tea ice cream. The layout is the same, the taverna-style wood tables and chairs the same or, if not the same, so similar to their predecessors as to seem the same in memory. What has changed is the mood, the tempo; what was, not too many years ago, a bustling station of the night now has the slightly calmer, sunlit affect of a café, though a café that serves tea instead of coffee and is much better looking than its fellow cafés.

The animating spirit of Modern Tea belongs to Alice Cravens, whose pedigree as a teamonger is lofty. She has run the tea service for places like Chez Panisse, Delfina, and Zuni, and it is not surprising that, in opening her own place, she would adopt the ethos of those distinguished spots as her own, with an emphasis on sustainability, seasonality, and a certain earthy simplicity that manages to be consistent both with elegance and with tea. "We buy our ingredients direct from local farmers and businesses whenever possible," the bill of fare announces, "with preference towards organic and earth friendly farming methods."

I am a little surprised that there are no sandwiches on offer, even at lunch but perhaps this reflects a fierce determination to avoid any echo of English-high-tea, hotel-lobby cliché, such as cucumber sandwiches on white bread trimmed of its crusts. On the other hand, the soups are uniformly excellent, from the Tuscan-style chicken soup ($5.95 for a bowl at lunch, $6.50 at dinner) really almost a kind of minestrone, rich in carrots, onions, and chard, with shreds of chicken meat added to a gratifyingly thick "old style" French lentil soup ($5.95/$6.50), made with Puy lentils. (These are the terriers of the lentil family: They are small, gray green, and tough, though they turn a rich camel color when cooked and, if cooked long enough, become appealingly toothsome while producing an almost gravylike broth.) For sheer dietary virtue it would be hard to beat the quinoa chowder ($5.95/$6.50), which floats the pebbly Inca grain in vegetable broth with chunks of potato and, if you like, a sprinkling of feta cheese on top for a bit of salty sharpness.

Although the menu offers no sandwiches, bread is not completely absent. It turns up in an excellent strata ($8.25 at dinner), a savory pudding with goat cheese and roasted tomatoes, and in the lemon bread pudding ($4.50), a tiramisu-like layering (in an open-topped jar) of bread crumbs, whipped cream, and intense lemon custard. Other starches also appear, including rice noodles as the bed for a carrot and kale "coleslaw" ($8.25), leavened with hijiki seaweed and a sesame vinaigrette; this is one of the few Asian-influenced items on the mainly Euro-Cali menu. Potatoes turn up, in gratin form, as an accompaniment to chicken and sausage meatloaf ($11.75), three hefty slices of ground, herbed flesh, mixed with Italian chicken sausage and topped with streaks of a barbecuey sauce, that will do justice to the heartiest appetite.

A cautionary note on this last point: Modern Tea is probably not the place to go if you’re in the market for a heavy-duty, high-calorie dinner. Lightness and delicacy are central themes, and even the most substantial courses are meant to keep harmony with such fine teas as osmanthus silver needle ($5.25), a gently floral white leaf from China, or the barely richer sevan blend ($3.50), an Armenian herbal mix of chamomile, lemon balm, oregano, basil, bean core, hawthorne berry, linden fruit, and St.-John’s-wort. If you find you do need some last-minute ballast, an opportune choice is the chocolate sheet cake, a moist sponge cake sold in brownielike one-inch squares, dusted with powdered sugar, for $1 per. Duncan Scott Davidson interviewed Tiny Telephone honcho and Barsuk artist John Vanderslice for a piece in the May 3 issue of the Guardian. Here’s more from his interview with the SF singer-songwriter, who performs tonight, May 12, at the Independent.

On running Tiny Telephone, during an interview at the studio sometime in January

John Vanderslice: Basically, I keep my rates under market, so [the engineers] are always busy. I kind of use that leverage with them to have them be undermarket, too. So we’re affordable enough for a band. Every band has access to computers now, so you have to be. My whole goal was just to be sold out all the time. My business model was to, without question, have a waitlist every month. You have a client base where, if someone drops a day, it doesn’t matter. We just send out one e-mail to another band that’s on the list, you know what I mean? We’d just rather be generating 30 days of income at a much lower price.

When I started the studio, the reason I did it is that, another studio that we loved that we were working at, Dancing Dog in Oakland, closed. So we toured all the other studios, and they all had these sliding rates. It’s all bullshit. The typical studio business model is retarded. You know what it reminds me of, is the airline kind of model of wildly sliding rates based on the desperation of the client, you know?

[Vanderslice talks about JT Leroy at length before realizing he’s strayed off topic.]

JV: I don’t care if we talk about the studio at all. I mean, this has been central to my life for maybe the past eight and a half years and it’s starting to be an organism. It’s like a child, and all the sudden this kid is like a 12, 13 years old and I can now leave the house and not get a babysitter.

BG: Are you afraid you might come back and find the flowerpot broken, Brady Bunch style?

JV: Or I might come back and the kid’s huffing paint or something? There are things that happen when I’m not paying attention in the studio, but the crew down here…

BG: Do bands get loaded up in here? I mean, not like…in a bad, non-professional, non-rock ‘n’ roll way…

JV: I would say the insight I have into working bands is fascinating. I would say that the more successful the band is, both creatively and financially, the more they’re like an office. There’s laptops, wireless. There’s like organic Columbia Gorge lemonade, and there’s no alcohol. The more it’s like a weekend-warrior project, the more it’s a band that’s frustrated or trying to generate energy like they’re having a career, the more there’s cocaine and pot and alcohol.

BG: Yeah! We’re fuckin’ it up!

JV: “We’re gettin’ it goin’!” Sometimes it’ll be 4 p.m., and they’ll be kind of a little bit out of control. And what you want to say is, “You’re, like, at a construction site right now. You should be really mindful.”

BG: Well, they’re fucking paying $400 a day.

JV: They’re paying $600 dollars a day. Plus the tape.

BG: And if they want to fuck it off, more power to ‘em.

JV: The thing is you want to remind them, “Dude, you’re going to be in here for 12, 14 hours.” Tons of bands come in here and make a record in three or four days. Some bands are so efficient in the studio, it’s like a marvel. I’m not nearly as efficient. I don’t necessarily have to be as efficient, but it is expensive for me to book time in here. Like everybody else, when I book time in here, because it’s sold out all the time, it costs me $400 a day. I pay engineers what they charge. I pay rates to engineers.

What studios try to do is they try to be booked between 10 and 15 days a month, and they try to charge a fucking shitload of money. And what they do is that they have a lot of open days that are those days…because people call all the time, “Hey, are you open tomorrow? Are you open next week?” They’re always the worst clients. The least prepared, they always have a problem. They always have a story. Like, they tried to save money in some other studio, and they went there and it was fucked up.

The kind of clients I like — we’ll get a band that calls us up, like when we did Transatlanticism here, Death Cab called us like seven months before the dates and they’re like, “We want May 1 to June 20.” Those days never moved. It was like, booked. The deposit was in. Then seven months later, they show up, make a record, and leave. And not one day was ever shifted. The bands that are like that, those are the bands you want to have in your studio.

And there’s tons of bands that are not really… they’re making music for themselves or to put on their Myspace page, but they’re just as deliberate and they’re just as farsighted. That’s how this studio runs smoothly. I’ve cleared out a lot of the time for those bands.

BG: Any band that you thought was just totally not getting it and selling millions. Not the fact that they were selling, but that they were lame. Would you not record them?

JV: No. I think that we’re like a hospital. We’re like a responsible hospital with good gear that can only meet the patient in the middle somewhere. Like if you come in here and you’re a meth addict and you’ve been working the street for 15 years, we can only help you up to a point. But if you’re a healthy person and you need a heart operation, well, we have great equipment, right? We have good doctors. They’re not going to cut you open and leave shit in your body. We have sterile equipment. I tell engineers this metaphor and they’re like, “Dude, whatever. You’re overthinking.” But I really do think there’s something here. You know, we can’t save anyone’s life, all we can do is kind of not make mistakes. And also not provide gear that’s either dangerous or is out of date or is poorly maintained, poorly calibrated…

BG: You’re like a halfway house.

JV: Yeah. I’m a halfway house. Or a restaurant. Or a dry cleaners. The things that excite me are when we get things out of genre. When someone comes in and they say, “I’m going to make a 40-minute concept record that’s based on a sea shanty that’s about being on a whaling ship.”

BG: With their bouzouki.

JV: Yeah, with their bouzouki. And they get on ladders, and they have pails of water—I’m not kidding you, they do — and they do a concept album. And there’s no electric guitars, there’s all these weird instruments, it’s very obtuse, and it’s interesting. It’s anti-genre. It’s anti-rock ‘n’ roll. That’s fascinating to me.

Guitars or no guitars?

BG: When you saw the dude’s bouzouki, you said, “Anything but an electric guitar excites me.” You have old guitar amps…

JV: I love guitars.

BG: And you play guitar…

JV: I love guitars.

BG: Was guitar your first instrument?

JV: I love guitar. It’s just that, the thing is, it’s like, when you’re building a house, a guitar is like a hammer. It’s very useful. But if you’re putting in windows, there are other things that need to be there to balance out. There’s some sonic space that is not available when electric guitars are everywhere.

BG: In your own records, the last three, you seem to be going away from guitars.

JV: Yeah, going away from guitars, but the interesting thing is, the other day, I was thinking, “You know what? The next record, I need to make a guitar record.” Maybe it is because I’m collecting all these amps. And I do love guitar, but I think that for me, it’s more likely that I will deconstruct music when I see people stepping back from rock ‘n’ roll, you know, strictures, if guitars are not part of the equation. And they’re forced to build up melodic elements with keyboards, with rhythmic instruments, with strings, horns — things that are outside of the realm. I was listening to Otis Redding on the way over here. There’s some guitar in that. There’s a lot of other things going on in that. There are background voices used as harmonic, you know, shifting agents — things that pull you from key to key, that bring you into the bridge, that provide counterpoint to the vocal melody and the horns.

[JV starts to talk about the tug between digital and analog technology.]

On one side I do think that the Internet is the best thing that’s ever happened. Also, I live on the internet. Like, I’m surfing all the time. This studio was put together by the information I learned on the Internet. Most of my communication is through e-mail. The Web site is a very important part of my creative output. You know there’s like a thousand photos on the site? There’s tons of music that’s never been pressed that’s on the site. Tour diaries. That’s very important to me.

But, on the other side, the craft of making albums: I’m a purist. I’m an old, hard core recording purist. And the standards, and the quality of recording have been in a freefall since… Listen, the good and bad thing about consumer audio is that everyone can afford it and everyone can own it. I think that’s great. I think that’s actually better than the downside. The downside is that the quality of everything goes downhill. I don’t gripe about other people’s recording because I think that, if you’re going to complain, the proof is in the pudding: What the fuck are you doing? Sometimes people come up to me and they’re like, “I like this album, but I don’t like this album.” I don’t say anything, but I want to say, like, “Dude, I don’t care either way. Make your own record.” It doesn’t matter to me whether you like my record or you don’t like my record, and it’s OK either way. But the thing is, you need to make your own shit regardless of whether you like something or don’t like it.

BG: There’s the analog/digital tension, but it seems like you do stuff with analog that’s sort of like a sampling, a deconstruction, like you take a digital technique and analog-ize it.

JV: Absolutely. Well, I have been heavily influenced in the way that certain people make records. The Books. Four Tet. Radiohead is probably the most influential band for me of the past five or six years. I mean, I’m totally obsessed with Radiohead. Everything that they’ve done, really from OK Computer to Hail to the Thief. I think Hail to the Thief is one of my favorite records of all time. It kind of actually flew under the radar, but from an idea point of view: You can hear the process of six smart people in a room thinking about music. It’s fascinating on that level.

All things being equal, A and B, analog sounds so much better to me than digital. And it’s not that I’m just some Luddite in the studio. We have Pro Tools HD in here every other day. We have installed a Pro Tools rig, we have Radar, we have Sonic Solutions, we have every high end converter in here all the time. To me it sounds awful. Still. And I advise people all the time, like, “Listen, we’ll make more money off you if you record digitally. That’s all there is to it. You’ll take longer — even though you think it’s faster. You’ll edit everything, you’ll obsess.

I don’t care about the editing. It’s not the “cheating” thing that bugs me. Scott and I will be recording and flying back tapes on the reel — Scott Solter’s my engineer — and like, we’ll think, “God, if we could only just do this on a hard drive.” We don’t like to do things by hand — it’s just that they sound so much better. It’s like a hand-fashioned piece of furniture versus something that comes out of a machine. We can’t get the detail, the nuance, the taper, the finish right unless we do it by hand.

BG: And the whole digital thing just seems like a cultural, reactionary…you know, “it’s newer, it’s faster, it’s easier.” And I think artists seem to overestimate that. It’s like when microwave ovens came out, and everyone’s like, “You can cook a Thanksgiving dinner in it!” And a year later they were like, “You can heat coffee in it.”

JV: Yeah. Unlike the hospital metaphor, which is like a cart that has one wheel on it, the microwave metaphor’s perfect. It’d be better if I just didn’t tell bands anything. Use whatever format you want. But what I always tell bands is, “Listen. A good analog tape deck, properly calibrated, is like a fucking Viking stove, or a wood oven at Chez Panisse, where they put in the pizzas and the crostini or whatever, and your Pro Tools system—and believe me, I’m telling you this because I own the system. I paid a lot of money for it. People when they buy gear, their ears turn off. Because they don’t want the truth, you know what I mean? It’s like a fucking microwave! That’s all there is to it. It’s faster…

BG: A big, fancy microwave.

JV: Yeah, it’s a really fancy microwave with 50,000 adjustments. “Bread Crustener,” you know what I mean? It’s worthless.

[JV focuses on conspiracy theories and politics.]

JV: The stuff that interests me is Iran-Contra, Total Information Awareness. I’m much more into ground level, you know, stuff that’s happening right now. What did we do in Columbia? You know, what are we doing with the FARC? You know, why are we there?

I’m fascinated by politics. I’m interested in the most mundane things. Like, for instance, we found Saddam Hussein in a foxhole. One of the Marines on that team comes out a couple months later and says, “Listen, we fuckin’ found him in a house. We put him in that thing, covered it, got the film crews there…” That’s where I’m interested in. I’m interested in Guantanamo.

In other words, I’m interested in mainstream stuff. It’s not Area 51.

Later, John Vanderslice meets for another interview at Martha and Bros. on 24th Street.

BG: Do you realize that whatever you say is going to be completely overruled by Enya, or whatever is going on there.

JV: Should we check to make sure it’s not too loud? I can have them turn it down.

D: You’ve got that kind of pull?

JV: Oh yeah. I used to live down the street. I’ve been here, like, 9,000 times.

[JV asks them to turn it down, saying, “I really appreciate it. That’s great. Thank you.” Then he talks about coffee and tea.]

JV: Well, for me, I’m a tea guy. I actually drink coffee every two weeks. For me, the cleanest way to get caffeine is through really thick black tea.

BG: I get stomach aches from that.

JV: I know, you have to get used to it. It’s like hash or pot. It’s just different. You how you’re like, “Well, pot is kind of superior,” you know?

BG: Are you a big pothead?

JV: No. I don’t do any drugs. I barely drink. I mean, I like the idea of doing drugs. I have no moral quandary with drugs whatsoever. It’s impossible… because of singing…

[Coffee grinding noise.]

BG: Can you tell them not to grind any coffee?

JV: Yeah, totally. I’ll just unplug…no, I’ll trip the breaker. Singers get neurotic for a reason. I used to look at other singers and think, “Wow,” you know? Like, you’d read an interview with someone, and they would have these rituals. They’d have like steam machines or all these bizarre contraptions I thought totally unnecessary. But the thing is, the more shows you play, the more volatile your livelihood is. You’re tied to your health and your body. You know, anything that messes with my mojo. Alcohol. Never drink alcohol on tour. Never.

BG: You don’t drink it to “take the edge off” or whatever?

JV: I wish I could. But alcohol for me, it does something to my vocal chords that — I lose a little bit of control. I lose some resonance in my voice. So I never drink alcohol on tour. And then, there are times when you’re at the Mercury in New York and they give you 25 drink tickets and they’re like, “You can have whatever you want.” They’ve got all these single malts. I’m totally into single malt scotch. If they’ve got some weird shit I’ve never heard about, I want to drink it. So yeah, it’s a bummer, definitely.

BG: Do you do it after the set?

JV: I never drink after. It affects my voice the next day. Alcohol dries out your vocal chords. Like, if you put rubbing alcohol on your hand, you’ll immediately feel what it does to your skin.

BG: It dehydrates you.

JV: It dehydrates you, but because you’re passing it over your vocal chords, you’re a little bit more susceptible. Also cigarette smoke. It’s a problem.

Spy vs. spy

BG: What about this domestic spying bit? That sounds like a Vanderslice song.

JV: Yeah, that’s a hard one. I haven’t really felt the need to write about Total Information Awareness, yet.

BG: What’s Total Information Awareness? Is that the NSA’s acronym or something?

JV: That was the program that John Poindexter, from Iran Contra, was in charge of. It was like, basically, “we’re going to data-mine everything.” Of course, all the civil-libertarians on both sides of the fence go crazy when that stuff’s happening. Did you see the paper today? Grover Norquist, the anti-tax guy, basically the guy who spearheaded the repeal of Proposition 13 in California — the anti-tax California guy — is coming out now saying that he’s totally opposed to data mining. This is a hardcore, right wing constituency that Bush has tapped for a long time, and this guy is now coming after him.

BG: Well, now it’s without a warrant.

JV: Yeah. And that presses all their buttons, you know? That, hardcore, right wing, civil libertarian branch, which is fine with me. It’s great.

BG: OK, here it is. This is kind of random. “I’d harbored hope that the intelligence that once inhabited novels or films would ingest rock. I was, perhaps, wrong.” That’s Lou Reed. You seem to have a novelistic…

JV: There’s a lot of great lyricists working in music. I mean, you could look at the new Destroyer record. You could look at The Sunset Tree. You could look the new Silver Jews record. I mean, there are a lot of very literate, very verbally adept and complex albums coming out. I’ve spent a lot of time with those records. I think they’re rich, and interesting, and well-written enough to stand up on their own from a language point of view.

And you get into hip-hop — all the verbal inventions, most of it is in hip-hop. It’s not necessarily in indie rock.

There’s a lot of people operating on different levels. You could say, there’s a lot of arty stuff, purely political — Immortal Technique. He’s the farthest thing from a gangsta that you could get. Or MF Doom. Murs. There’s a lot of these guys that are super arty. Any Def Jux things or Anticon stuff, all that stuff is far away from “thug life.”

BG: Do you listen to a lot of hip-hop?

JV: Yeah. Like tons. The other thing is, you can even see people like 50 Cent or the Game on a different level. I think that when you understand that there’s a coded humor that’s going on in hip-hop. Like when 50 Cent says, “We drive around town with guns the size of Lil’ Bow Wow,” now, is that a threat, or is that a joke? I’m sorry, I laugh when I hear that. There’s so much humor in 50 Cent. C’mon, he lives in a $20 million dollar mansion in Connecticut. There’s a comedy side of the stuff.

And then there’s other mainstream people like Nas. Incredible lyricist, very complicated. He’s like a sentimentalist. I wouldn’t even say he’s a thug. He’s just always writing about memory. He’s so sentimental.

[I hip JV to Andre Nickatina.]

BG: The latest album [Pixel Revolt] is more straightforward. Before, you’ve done cut and paste stuff. It’s more linear. I mean, if you’re talking about hip-hop, there’s sampling. What do you think about that?

JV: Well, it’s hard for me. At some moments I would agree with you that the record is more linear. I mean, you’re saying that the new album is more linear, maybe orchesterally more simple, and more placid, more patient. But we’re doing remixes right now — Scott Solter is remixing the records. And we’re going in and listening to individual tracks.

It doesn’t seem that way to me, for better or for worse. It seems like there’s a lot of textures and a lot of very understated stuff that’s more complicated than on other records. There’s a brute force element that’s missing from that record on purpose. A couple weeks ago, before we started doing the remixes, I would’ve agreed with you, but now when I go back and I hear all these individual tracks, and I hear the textures that are underneath the vocals and some of the main harmonic instruments, to me there’s a lot of cross-rhythms. There’s a lot of harmonic shifts. There’s a lot of dissonance. It’s maybe more varied. It’s more of a relief. Like, Cellar Door has a lot of distortion, has a lot of compression, it’s all forward. Those impulses I have to over-orchestrate, and to, you know, over overdub, have been buried, but they’re still there.

BG: Why the remixes? You did a remix of Cellar Door.

JV: Yeah, called MGM Endings. One reason is that I put it out myself. I can sell them and make money off of them.

BG: You would love Nickatina. Basically, his big underground album that you can’t find is Cocaine Raps Vol. I. There’s this big thing about comparing selling tapes out of the trunk to selling coke.

[Talk turns to Tom Waits, recording at Prairie Sun, and then vocal chord damage and those who have used it in their music.]

BG: Being drawn to that Radiohead thing: You don’t use effects on your voice. Your sound guy doesn’t flip a lot of…

JV: And on records, I have these militant rules about what we can and can’t do as far as using effects. My rule for a long time has been, if we want an effect on an instrument, we have to record it that way. It’s all analog, we don’t use digital recording whatsoever.

JV: I was part of a group of people that met in the Bay Area. There were four of us that met at the Plant, and we voted on, for the National Committee, who we thought should be moved into the five spots, right? Then you can vote, as a Grammy member, you can vote on the next round. So basically we were like, pre-voting for the pool of five albums.

It’s interesting, because you have a lot of good albums that are in the pool. The pool is pretty huge. I mean that year there was some very good classical stuff, some really good jazz stuff, Elvis Costello…

BG: That’s apples and oranges.

JV: It’s retarded. What is this, a race? I did it because, when I got invited, I was kind of like, “Wow.” I was honored to be even — to even sit in a room with engineers that I really liked and get to talk about albums was fantastic for me. But, after the process, I thought, this is polluted.

BG: The engineering standards, or what you’re going for, your aesthetics, are totally different.

JV: And people in the room are pretty savvy. They have mixed feelings about the process. So they weren’t all gung ho, pro-Grammy, but I think that they felt that if they weren’t involved, then there would be decisions made… They wanted to be part of the decisions made to push good-sounding records up to the next level.

Tweaking in the studio

BG: Okay, so you’re interested in fucking around with your voice, as long as it fits into the rules of doing it live.

JV: I like using the analog instruments of the studio, meaning analog compressors and mic pre’s and effects as instruments. The great thing for me is, when you start combining all these things — the keyboard into some mic pre you found in a pawn shop into some weird compressor into delay. You get some almost unknowable reaction between these pieces of gear that were made in different decades, for different reasons, for different specs, for the BBC or for an airline company. And chasing down that kind of shit is fascinating for me. That’s part of the reason why I got into the craft of recording.

BG: Back to the studio—you’re annoying people, plugging in all these different things…

JV: It goes beyond that. To me, there is no sacredness to me of someone’s performance. People come in and spend a day recording something and then we erase it immediately. With them right there, like, “none of this is working, we’re going to erase it and move on.” I do it to myself all the time. I erase my own performances all the time. It’s not a feel-good session. You have to have a flamethrower mentality when you’re making records.

BG: So with Spoon and Mountain Goats’ John Darnielle…

JV: Well, those are different. You have to be more conservative working with other bands. It’s not appropriate. John’s singing a song about avoiding family trauma by playing his stereo loud and listening to dance music. It’s a beautiful narrative; it’s a wonderful song. It’s not necessary that you play a vibraphone through an old Federal military tape rack.

BG: The Spoon album’s sort of a deconstructed album.

JV: I would say that they’re more appropriate…

BG: Everyone’s recorded at Tiny Telephone, but you’ve only recorded a couple of people yourself. Like for instance, Steve Albini, another analog master, sought after everywhere. Everyone goes to him to get the “Albini sound” — they want it recorded like that, in that studio, sounding like that. And then, half the time, people come away with, “Well, he’s a dogmatic asshole. That’s not how we wanted it to sound.” But they did want it to sound like that.

JV: Well, the engineer in the equation is Scott Solter. He’s the guy I always work with. I mean, Albini’s a recordist. Albini is not there to become editorially involved with production decisions or with performance decisions. He is there simply as a recordist. In many ways, he’s an old school engineer. And once you understand that philosophy, you shouldn’t have any beefs with it, or you’re in the wrong place. You should understand that he’s going to set up microphones that he likes and understands, in a room that he likes and understands, and use gear that he thinks accurately describes what’s happening from a sonic perspective, and that’s it. That’s his end of the bargain.

BG: Well, there’s always the “the drums are too loud; the vocals are too low.” I love his records…

JV: I think he’s a total genius. I think you could listen to Rallying the Dominoes, the Danielson Family record, and well, you couldn’t necessarily say anything about the balance of that record compared to like, Jesus Lizard. It’s a totally different recording. He may perceive that, you know, the drums are loud in the Jesus Lizard, so they should be placed loudly in the mix. Because that’s what’s happening to them when you play in a room, you know?

But the thing is, Scott and I work tag team. Tiny Telephone is very separate from us working as a team in production and engineering, because the only people that I’ve ever worked with has been Spoon, and I was relatively a small part of that new Spoon record. Like basically, I recorded with them for eight days. They probably spent 60 days on that record. So I would imagine that they had a lot of other decision makers, you know, Mike McCarthy. Jim Eno, the drummer, is a great engineer in his own right. The Darnielle stuff is different because I feel that I understand where he’s coming from and where he wants to go in the studio and I can translate his narratives into a different setting from him sitting in front of his Sony boombox, you know, six inches away.

BG: Going back to the whole thing about rock as literature. I think Cellar Door sort of plays itself out like that, even though they’re not necessarily the same characters. It’s very novelistic. Most rock bands are very first person. Do you get a lot of misunderstanding on that?

JV: Oh, yeah. Someone asked me about my two sons the other day. I mean, yes, people either infer that I’m almost unglued psychologically or they infer that I’ve had a family history and a romantic history that’s really dangerous and fucked up.

BG: John Darnielle has a lot of that stuff, right? But he still does a lot of fictional stuff.

JV: He does a lot of fictional stuff. I think he does more fictional stuff that people realize. He lives in a nice house. He has a wonderful wife. Now, that doesn’t mean he doesn’t have demons the size of Detroit in his brain.

BG: I think he does. “I dreamt of a house / Haunted by all you tweakers with your hands out.” I love that line.

JV: Dude, I played with the Mountain Goats. I did a West Coast and an East Coast tour, and I sang that song with John every night. That’s probably one of my top three songs of all time.

BG: With your stuff, though, how much of it is…? I might be totally wrong on this, but you can tell with a song like “Speed Lab.”

JV: But “Speed Lab” is a metaphor for starting a band or starting a studio, and having those things implode. So “Speed Lab” is, while it’s not about a speed lab, a meth lab…

First off, I have a great sympathy toward a lot of different people. I have sympathy for people who work in methamphetamine labs. I’m sure there’s a lot of people who work in meth labs, they might have been backed into it, it might be a family business. Who knows? And, to me, you know…[sings] “Recording Studio, brr nanna nanna…” You know what I mean? Speed lab…let’s put a finer point on it. What’s interesting about writing about stuff is that you sharpen the blade, that you exaggerate, that you explode personal experience. And become so super egocentric that every slight becomes this great, damning. Listen, if you really write down Morrissey’s gripes on a piece of paper. OK: “Lonely, sad…”

BG: “Horny.”

JV: Yeah, “horny.” Maybe, yeah—“would die in a car wreck.” That’s not the beauty of writing. Like “Up Above the Sea” on Cellar Door. That song, I mean, do I really have a bluebird that haunts me? But is it about depression? Maybe. Is it about Saddam Hussein? Maybe.

BG: Do you think that you’re constantly looking to metaphor-ize your own experience?

JV: Yeah, definitely. Because, part of it is that it’s an allegory. I feel saner. I feel more human and I feel more normal and more cope with stuff if I write music. So evidently, this is very important that I translate something that’s going on up here onto the page. But my own aesthetics dictate that narrative is interesting or it’s egregious.

BG: Some people are naturally diarists. Andre Gide, Jim Carroll…that’s what they’re known for. Do you think that there’s something in you that’s naturally, in music writing? That’s a fictionalist?

JV: Yeah. Absolutely. I would’ve been comfortable if I’d had the skills to be a novelist. And I would’ve been comfortable if I’d had the connections and the wherewithal to do it all again, to be in movies. What I’d really like to do is make movies. I mean, I would never do it. I think people who switch crafts, I mean — good luck. It would take me 20 years to figure out cameras. I would like to be a cinematographer.

BG: Do you ever write?

JV: I stopped. I did a couple of interviews for DIW, I interviewed Grandaddy, I did a Radiohead Hail to the Thief review, I did an article about Pro Tools, and that was it. I was like, “Man, it takes so much. Writing is hard.” It took me forever to edit myself, to finish a piece. I’m very wary of anything that takes me away from writing music. It really is hard enough. Touring is, like, you put walls up.

BG: Do you do a lot of in-stores and stuff like that?

JV: I came up with this idea that on the day Pixel Revolt came out, that I was going to play a bunch of free shows around the country. And that it was all going to be non-transactional, all ages. Doesn’t matter where it was. Acoustic guitar and voice, that’s all it was going to be. And it could be anywhere. So I played in, like, a bake sale. I played tons of record stores. I played an art gallery. A house party. I played a backyard. I played tons of on-airs. Between the shows, I probably played 35 times that month. And they were all open free shows.

I was able to rent a car, drive from place to place, and just show up with a guitar and play. We would have contests. Like I played at Amoeba in LA, and I invited everyone at the show to bowling that night. We had enough people for seven lanes of bowling. So then we have this contest: Whatever lane had the highest score would get into my next show for free.

Anything that’s like, getting out of a dark club with a bunch of graffiti. That’s fine, but when you do that every fucking night. It’s like, anything to get you away from that is great.

SONIC REDUCER I used to think of myself as the ultimate freak magnet, fending off moist-haired gents with a fetish for girl bands. Damp palms. Foam bubbling at the corners of the mouth. Barely discernable vertigo spirals in their bloodshot eyes. Cute, huh?

But the Court and Spark have me beat. We were sitting around the high-ceilinged kitchen of their Alabama Street Station studio/flat and talking about making their new album, Hearts (Absolutely Kosher), when vocalist-guitarist MC Taylor and guitarist Scott Hirsch suddenly leapt to their feet and started pawing through a drawer by the stove. Drummer James Kim bolted down the hallway. Was it something I said or … ate?

No, they all simply hit on their most memorable piece of fan mail, which Kim pulled from his shadow files. "This is classic," Taylor said, forking the letter over. "This explains to you what the Court and Spark journey is all about."

The script on the wide-rule binder paper was large, loopy, and ever so shaky, and its author told of hearing a song from the band’s last EP, Dead Diamond River, then embarking on his own river of no return: "My life is rough. In May my mom died after having colon cancer surgery. I lost my dad months earlier to lymphoma. For 41 years I’ve been struggling since a child living with severe type 1 diabetes. Not having any health insurance is difficult. My yearly medical expenses are now over $5,000, not including doctor and lab costs. I do without. I hope you will seriously consider sending me a promo copy of your new amazing CD to brighten my life at this difficult time." The missive closed with a San Jose address and came with a checklist of meds.

Of course, the soft hearts of C and S sent the letter-writer the disc and never heard from their diabetic sad case in the South Bay again.

Score one crazy diamond for C and S, but what’s the attraction? Are the crazies seeking the healing qualities in the band’s shimmering Cali rock ’n’ soul? Are they looking to levitate alongside the group’s increasingly psychedelic yet still hard-to-quantify sound. Am I asking the wrong people? Not for nothing did Taylor first consider titling the new album I Want to Be a Gallant Rider Like My Father Was before Me, after a line in Werner Herzog’s The Enigma of Kasper Hauser. Like Herzog, C and S seem to draw, or be drawn to, those blurry border towns between Insanity, Texas, and Epiphany, Mexico.

Despite Hirsch’s disbelief that their audience actually comes to see them perform rather than the other bands on their bills, C and S are 50 times more comfortable in their collective skin than the first time I spoke to them, around 2002, shortly after the release of their lovely 2001 second album, Bless You.

"We’ve always been the lone wolves out there," Taylor ponders. "But we’ve also played on every kind of possible bill you can possibly imagine, and on good nights, actually, we’ve been able to make it work. We’ve played with everyone from Devendra to Bob Weir."

It’s at home, however, that the onetime UC Santa Barbara students found a sense of freedom last year, tinkering with Hearts to their hearts’ content, experimenting with instruments like harp and hammered dulcimer, and falling in love with Farfisa organ and throwing it, along with a wah pedal, over everything all while also working on Michael Talbott and the Wolfkings’ new album and the beginnings of Willow Willow’s record. They’d rent, say, a really good, $10,000 mic and then cram everyone into their space to share costs. "We’d wake up earlier than anybody else, since we lived here, and we’d set up and drink coffee and do it," says Hirsch, who also teaches recording at Bay Area Video Coalition.

It may sound too pat for these courtly Mission dwellers, but it looks like they got out of their musical comfort zone by digging deeper into their literal one. "It’s like that Steely Dan quote, ‘We used to spend five months just trying to figure out what chair we were going to sit in in the studio,’" Hirsch says with a laugh. "That’s the kind of freedom that we like and that we found for ourselves and that maybe they had too, because they would also record a million things and pick just one thing from that. That’s why their records sound so good, I guess." SFBG

CHEAP EATS My first two girlfriends were boys. My next three were girls. My wife was a crustacean, and it’s hard to tell with crustaceans. Crawdad and I have been divorced now for closer to two years than one, and I’m starting to get to be about ready to squeeze someone, maybe. Question is: procedure. I’m in a funny position, and I talk about it, and my friends say, "Online dating. Online dating."

In the world, there are not a lot of people lining up to date chicken farmers of ambiguous gender and weirdo ways. There are some people, but not a lot of people. There are five people. And probably in general they are not hanging out at my new favorite restaurant, or haunting Bay Area scrap yards and baseball fields. No, they’re at home in front of their computers, online, looking for love. Cool. Because while the world is beautiful, exciting, fun, unpredictable, unimaginably immense, and inspiringly odd, the Internet allows you to type in exactly what you’re looking for.

Of course, the big huge question on everyone’s mind right now, online and off, is: Well? But which kind is the Chicken Farmer going to go for? M. Male, I think, probably, this time. But it’s been a while, and I’m scared. So a man with a small penis. And a sense of humor. And, since I may as well shoot myself in the other foot too while I’m at it, a 1990 Ford F-150 pickup truck, lime green. Oh, and an open mind.

I see the wisdom in online dating. I do. You can’t pack all this information into the creases on your forehead, or what color shirt you wear, or the world’s best pickup line. Even if you manage a long conversation, there are some things you’re not going to be able to say unless you drink a real lot, and then you run the risk of not being understood or, worse, wetting your pants.

In print you can be very clear. You can be sober. You can know exactly who you are and exactly what you want, and, in exact American English, you can spell it out: "B W MTF TG CF seeks M w/SP (or F w/SSOD) for F, F, and maybe F. No V!" … where V = vegetarians.

This column will appear on the World Wide Web along with a valid e-mail address that I will no doubt have to change soon due to a deluge of four or five offers. There. I am officially online dating. But I still don’t have a cell phone. Does this make me eccentric?

How about if I start hanging out all the time at Café International, my new favorite coffeehouse in my new favorite neighborhood, the Lower Haight? I went there on Saturday afternoon to see my new favorite band, the Mercury Dimes. Earl Butter (of my new favorite band, the Buckets), was with me, and we ran into Mike and Tom from my new favorite band, the Shut-Ins. What a place!

Earl ordered a Turkish coffee, and the Chicken Farmer ordered a chicken turnover with salad. The Mercury Dimes were taking a break. Then they started to play again, and they were my new favorite band. Old-time music. Two fiddles, banjo, guitar, bass, no mics. And when they sing, they just all belt it out together.

I’m not a music reviewer, but the chicken turnover was great. It was perfectly turned over, and the salad had grapes on top of it, and olives with the pits still in them, and all kinds of other stuff. Nice, big salad. I forget what it costed. Probably exactly what you’d expect it to cost. Otherwise: sandwiches, bagels, soup, Middle Eastern things, a Cuban thing, um, international things. Eclectic, good, friendly, artsy. Reminds me of the Mission District’s beloved Atlas Café (only friendlier) and not necessarily because that’s where I’ve usually seen the Mercury Dimes. The layout’s very similar, counter to your left, music all the way back. Then beyond that there’s an outdoor patio.

And lots of very beautiful, cool-looking, real live people hang out there, just like at the Atlas, having coffee, reading newspapers, and thinking about sex or sports, probably for all I know wondering where their next eggs are going to come from. But what’s a chicken farmer supposed to do? Talk to them?

No lie. This is the truth: I have laryngitis right now, but I’ll be back. Meanwhile, imagine me on a gorgeous day like today, in front of my computer, eating lemons and drinking tea. SFBG
